Alice & Mark Silverwood moved to Scotland from Brighton 18 months ago to run Venachar Lochside outside Callander. Having worked in hotels, restaurants & pubs all their working lives, the Inn at Kippen was too good an opportunity to miss. They are both passionate about food and equally as passionate about their new home here in Scotland, trying to get out mountain biking and walking whenever possible. Mark, as Head Chef, is bringing local Scottish food to the fore front of the new menu and is very pleased to be be able to trace the provenance of all ingredients used at The Inn at Kippen. We are incredibly excited and proud to have the opportunity to really make something great at The Inn at Kippen.

What’s the best thing about being in the hotel/restaurant Business? We both love talking to customers about our ideas and sharing our enthusiasm for food, particularly local Scottish produce which we aim to make the focus of our menu’s here at the Inn.

What’s going to be your Signature dish on your new menu? We have a theme running through our menu of sharing platters from Rannoch charcuterie to Lamb three ways for two to Sunday Roast to share for two or more.

What’s your ultimate comfort food? Venison Stew & dumplings followed by steamed chocolate pudding & a large glass of wine!

We hope to make the Inn a central part of the community and hope to encourage back local people who, perhaps, haven’t visited the Inn for a while. We are also very keen to bring in families and are running some special offers. We are open for breakfast, lunch and dinner (except on Monday & Tuesday evenings when we shut at 6pm for food – the bar will still be open until 11pm though) plus we are serving coffee and gorgeous homemade cakes all day every day.

The Clachan inn, Drymen Lunch at the clachan inn in Drymen is a comforting experience , with traditional decor and a welcoming fire. This historic establishment , first licensed in 1734, has, as well as the restaurant , a bar providing real ales and a large selection of whiskies etc. We settled for a starter of Potato skins, certainly the best we have tasted, accompanied by a coronation dip and a tikka dip. Main courses were a Rosemary, Bacon, onion and red wine reduction Lamb Burger which was excellent. This dish

was accompanied by fresh salad and chips. The other main dish was whole tail scampi which was accompanied by peas and chips. Both were delicious. We were unable to manage dessert, but we settled for excellent coffee to finish off what was a very good experience.

An ideal stopping place for anyone looking for good quality wholesome food, served by very welcoming and pleasant staff. Follow us on

pasta with winter ratatouille Ingredients 200g/7oz sweet potatoes, peeled & cut in wedges 200g/7oz parsnips, peeled & cut in large pieces 200g/7oz carrots, washed & cut in large pieces

Preparation method

110g/4oz red onions, cut in quarters

Preheat the oven to 200C/400F/Gas 6. Place all the vegetables & the garlic on an oven tray & drizzle with the olive oil & honey. Add the sprigs of rosemary & season well. Cook for about 20 minutes until all the vegetables are tender and browned. While the vegetables are in the oven, cook the pasta according to packet instructions. Remove vegetables from the oven, squeeze the cloves of roasted garlic over the vegetables & tip everything in a saucepan. Add the passata, bring to the boil & allow to simmer gently for a minute or two. Serve on top of the pasta & garnished with chopped rosemary.

Frosts can still be a hazard, so keep vulnerable plants protected at night if frost is forecast. March winds are also notorious for their ferocity so check exposed plants are well supported. Now is the time for a thorough spring clean; weed and dig over your borders incorporating as much organic matter as you can those chilly winds will really help to dry out the soil. Mulch bare soil once you have done the work and remove moss and weeds from paths, terraces and driveways. They may be boring tasks but if you don’t get on top of the garden now (especially the weeds!) it will be a nightmare for the rest of the season. Make new beds and borders - mark the shape with sand trickled from a bottle, remove the top layer of growing vegetation and dig the ground over, incorporating as much organic matter as possible. If you are making a bed in the lawn, remove the turf and stack it upside down somewhere out of the way - after a year or two it will rot down into fantastic compost. Alternatively chop it up and bury upside down in the planting hole a good spade’s depth down. Beware - if you just dig it in the buried grass will regrow and regrow and regrow and...

Clean and repair your garden tools, book the lawn mower in for a service and check garden furniture for any rot. (See pg 25 for City Mowers advert to service your mower or pg 27 for Fraser Robb) When it is warm enough, treat sheds, fences and trellis with wood preservative; brushes and rollers are fine for most things, however a sprayer is well worth buying for tricky projects such as woven panels!

Beaconhurst Tri-Scholar Selected for National Squad

One of Beaconhurst School’s triathlon scholars helen mitchell recently won a coveted place in Scotland’s national training squad.

Helen, from Gargunnock, was picked to join Triathlon Scotland’s Foundation Performance Programme based on her performances at various triathlon races during the year and following a tough selection day. She will now take part in training sessions with the organisation’s coaches who prepare promising triathletes for success at the highest levels. Helen, 14, says: “I’m so pleased to have been chosen and looking forward to being part of the squad. Her talent and love for triathlon – where competitors swim, run and bike in a three-stage race – led her to join Stirling Bike Club and Stirling Swimming Club so she could work on the various disciplines. She also continued training and competing with Stirling Triathlon Club and last year, her efforts were rewarded with a scholarship at Beaconhurst which helps her combine a tough training regime with schoolwork.

Helen says: “Getting the scholarship is great because I can train at the university pool in the morning and then walk to school. “Beaconhurst also has drop-in sessions where I can get help if I am falling behind with my work and, as a tri-scholar, I get time out of nonessential subjects such as PE to train. Helen has ambitions to represent her country at the highest level - but also plans to keep up with schoolwork and go to university to study languages. National 5 Strategy Delivers Breadth and Depth of Learning at Lomond School As we enter 2014 we see the implementation of National 5 examinations across Scotland, which are the replacement examinations for Intermediate 2 and Standard Grade Credit level qualifications. These represent a modern and refreshed version of the former public examinations for pupils in S4, with new, challenging material and an increased focus on the skills emphasised in the Curriculum for Excellence. This has now made its way through to the examination years for pupils in the Senior School phase and encourages skills such as teamwork, enquiry-based learning, individual study skills, problem solving and creativity, as well as the vital acquisition of concepts, theory and subject knowledge needed for successful entry to Higher level study. The Higher examination remains the

Lomond School has given significant thought to the implementation of the National 5 programme and is remaining with subject choice for pupils at the end of S2 to join a two year approach to a broad range of National 5 examinations. Lomond pupils will select 8 subject choices in contrast to many schools who are slimming down to 6 or sometimes 5 subjects only. Headmaster, Simon Mills: “It is important to offer pupils as broad a range of subjects for National 5 to enable the maximum choice for Higher in S5. It is also vital to encourage the best preparation for pupils with a good mix of Sciences, Maths, English,

Humanities, Modern Languages and practical creative subjects. Pupils need exposure to many different concepts as they can then bring these together more powerfully for a mature understanding in S5 and S6 as they prepare for entry to University, further education and employment pathways.” All pupils at Lomond are now using their own individual iPads, supplied as a standard part of school equipment from P6 onwards, to help develop digital literacy and enquiry skills. For a few years now we have been growing our own vegetables in the Benview greenhouses. As we only pick them to order - so they are not sitting on a shelf for days - they couldn’t be any fresher or have less food miles! Consequently our produce has gathered a loyal following and formed the starting point for our Farm Shop which opened in 2012. As we grow them on site or at our sister site near Stirling (as in the case of our highly praised strawberries) the fruit and vegetables are necessarily seasonal. To expand on what we can do ourselves we have selected a wider range of foods to stock, the emphasis being very much on Scottish producers. More than 90% of the cheeses we stock are Scottish, from the beautifully tangy, mature Isle of Mull Cheddar through Lanark and Dunsyre Blue cheeses, to creamy Caboc and Morangie Brie. We occasionally have other British cheeses such as Black Bomber from Snowdonia and Stilton (especially nearing Christmas) and one or two products from further afield like the unique Gjetost from Norway, a sweet, goats milk cheese resembling caramel. Fresh eggs are produced on a farm just a mile away from Benview. Many of our jams, chutneys and cordials also come from a local supplier, within 5 miles of the Farm Shop, honey is mostly from Angus and Rape Seed oils and salad dressings from Summer Harvest in Perthshire. Biscuits and cakes are predominantly Scottish and include a selection of gluten free varieties. Follow us on
