Running a successful hotel is like seeing your family achieve That’s the view of Jody Marshall, Resort General Manager at Macdonald Forest Hills Hotel & Resort. And he ought to know – hotels are in his blood as his mother is a chef and his father, a hotel maintenance manager. Jody, a South African, has only been in post for three months but already, he reckons he’s “Living the dream”. He was a linguist by profession – but has a strong pedigree in the hotel business, having twice won the coveted Scottish Hotel of the Year accolade run by Catering in Scotland – the only hotelier to do so. This is also his third position as general manager – a post he enjoys. Jody said: “Business has been really good – but we have to keep on building it. Our primary aim is to increase resort business in the local market. We’re aiming to attract a range of customers – families, couples and the corporate market.”

Macdonald Forest Hills Hotel & Resort in Aberfoyle offers 55 rooms and 65 lodges with stunning views across to the Trossachs. There’s fantastic Scottish fayre on offer in The Garden Restaurant, which boasts an AA rosette for its fresh seasonal menu and impressive wine list. Or relax in the less formal atmosphere of the Rafters Bar and Bistro, noted for its high-quality family-friendly dishes. The Vital Health & Wellbeing Club and Spa has a splendid blend of luxury and tranquility with a full range of fitness facilities including heated pool and gym. Jody said: “We cater for every sort of event and we are keen to promote ourselves as a venue for private functions, for example weddings, parties and special events.”

Let’s do Lunch! Recently opened in Buchlyvie Abi Reilly, Sean Lacon and their team have quickly got into full swing. A very friendly welcome from our waitress Lauren who explained the menu and dealt with each table very efficiently. The chef today was Jamie who also did an excellent job. There is a very comprehensive breakfast menu available from 10.00am until 12.30pm, comprising a tempting selection of morning rolls, continental breakfast selection of cereal, croissants. Various omelettes are also available. Homemade pancakes with various toppings. A full cooked breakfast is available from £ 6.50.

We had a selection from the lunch menu listing, one having smoked mackerel pate, salad and oatcakes, followed by Goujons of cod in very light batter - delicious. My partner started with Stornaway black pudding, salad and homemade apple chutney. This was followed by a classic macaroni cheese, toasted bread with garlic butter. Again delicious. The dinner menu has an interesting selection of meat dishes, fish dishes and pasta dishes. Vegetarian options are available. At present you can bring your own wine and pay £3.00 corkage. In the fullness of time this will be replaced

by an in house wine selection list. There is a childrens playroom adjacent to the dining area, enabling parents a respite while eating. A very pleasant lunchtime. We are planning to return for the dinner menu soon! Review by Mr & Mrs Archibald (Thornhill)

Ground Bean & Bistro is a new cafe/restaurant in Buchlyvie serving fresh, locally sourced homemade food.

NOW OPEN ! Bring your own bottle but we will be licensed to serve alcohol by the Summer. High-End Breakfasts, Light Lunches and Dinner Specials Run by the former Manager of The Old Mill, Abi Reilly, and the former Head Chef, Sean Lacon. Child friendly with childrens area.

Free Range Chicken Breast Stuffed with Spinach and Katy Rodgers Crowdie Perfect for summer dining and it’s quick too. Stuffed chicken breasts are so simple to make and ready in just 30 mins. This recipe serves 4 people and uses award winning Crowdie from our local farm where we also get our Ice Cream.

• 1½ tsp olive oil • 1 large garlic clove crushed • Knob of butter

Don’t feel like cooking? This recipe will make an appearance on our specials over the summer.

Method 1. Melt butter in a pan, add spinach and as soon as it changes to a dark green, take off heat and put in a bowl with crushed garlic and crowdie Mix together lightly.

Ingredients • 4 large chicken breasts, about 170-200g • 5 heaped tbsp crowdie • Sea salt and black pepper • 200g baby spinach

3. Lay open chicken breast on board. Spoon a quarter of the ricotta mixture onto the middle of the

2. Cut a deep slit along one side of each chicken breast, without slicing right through, then open it out like a book.

chicken, then fold the sides together again, to enclose the filling. Wrap in cling film. Repeat with the rest of the chicken breasts and chill for 1-2 hrs to firm up slightly. 4. Heat the oven to 180°C (gas mark 4). Heat a heavy-based frying pan and add the olive oil. When hot, fry the chicken for 2 mins on each side until skin has browned, then place in oven. Cook in the oven for 12-15 mins, depending on size, or until the meat feels just firm when lightly pressed. 5. Rest the chicken, covered with foil, in a warm place for 5-10 mins. 6. Serve with new potatoes and salad.

Cyclists welcome! Wet clothes can be dried in our drying room. We are happy to top up your water bottles.

Dogs welcome in the pool room. We don’t mind muddy paws!

Board games are available or sit on the sofa in front of the fire with a book from our library shelf.

Customers flock to cosy country pub The finest fare and the friendliest service from Alice and Mark

What do you do when you have established a popular restaurant with a growing clientele?

enjoy a drink or a great meal out.

Take on a pub as well.

Both sets of menus include traditional Scottish fare with a modern flourish.

“Running two places at once has involved the odd mad dash – but one of the major attractions was hat the Old Mill is only 20 minutes away from The Inn.

Alice and Mark Silverwood took over the Inn at Kippen back in January last year and quickly turned it into a successful, atmospheric restaurant with a small but busy bar. They had their hands full building up the popular eatery – but when the opportunity to take over the Old Mill Bar and Restaurant in Killearn came up – they couldn’t resist. The Old Mill is the other side of the coin from the Inn. It’s a good old-fashioned pub with 14 |

The pub features live music and sports TV and a great new range of events is being planned including gin and whisky tastings. Definitely not ‘pie in the sky’

When someone like David Stewart is at the helm ,his enthusiasm for what he does ensures the customer is well looked after. Clearly illustrated menus leave the diner in no doubt what will arrive whether sitting in or looking for a hearty takeaway in this beautifully refurbished Cafe/Restaurant in the heart of Callander. Stewart Tower Dairy Ice Cream is sold exclusively here with dozens of flavours to choose from, this Italian gelato-style recipe has a creaminess that is rare to find and is tantalising the taste-buds! After being made aware that David is to enter the world pie championship to be held in Dunfermline in November, it was of course necessary to sample one - for me a steak and black pudding creation. A good decision .David believes in using the best of ingredients and the end product surely reflects his policy. The friendly staff are on hand at all times and the service was superb. When it came to ordering puddings we were not disappointed

as David’s wife Rachel does all the tasty home baking and again the quality shows through, wonderfully fresh and luxurious, from a warm home made scone to a slice of cake Rachel knows how to entice her customers back with this standard of baking. Being a coffee fanatic, it was pleasing for me to see a professional coffee machine, fuelled with the finest Italian Lavazza coffee bringing a little taste of Italy to Callander! All together a lovely lunch experience and we will be back, good luck David in November. Any enquiries about buying wholesale pies or booking a function at Taste of the Trossachs are welcome. Village pub

makes welcome return A warm welcome waits you at the Blane Valley Inn. It’s not easy taking on a pub in these tricky financial times – but Jamie Wray reckons he’s got the Blane Valley Inn moving in the right direction. This attractive, newly-refurbished hostelry at the foot of the Campsie Fells, is attracting a growing number of customers – from near and far – who are in the market for good food and drink and great service from friendly staff. Jamie, who took over the Inn just over a year ago, said: “We are in the process of rebuilding the Blane Valley Inn’s reputation as a great village pub. “We’re a more family-friendly place now, offering a menu that is more attractive to youngsters. “Our dishes are based on local produce, delivered fresh every day. “We offer everything from top-quality traditional pub food to specialities from our in-house smoker. “Our new stonebaked pizza oven is also going down well with customers young and old and our takeaway service is proving popular too.” Why not pop along for a refreshing pint – or sample tasty dishes such as The Highland Tower – a delicious blend of haggis, black pudding topped with poached egg and mustard sauce. Main courses include good old steak, sausage and ale pie plus a range of quality meats smoked over hickory, maple or oak wood and prepared with the pub’s secret recipe. There’s also a vegetarian selection and a great range of pastas, seafood, burgers and grills – something for everyone in fact. Drop in for a pint and a chat – or treat you and yours to some top pub food at the Blane Valley Inn.

brought loud laughter from the girls! If faced with the problem of how to entertain the family for a few hours, let us suggest Loch Lomond Sea Life aquarium at Lomond shores. We took our grand daughter and her friend with us to enjoy the afternoon. Look at the excitement and fun on their faces !! Breath easy with powerful, natural treatment New clinic helps respiratory & skin disorders Sufferers from respiratory and skin conditions have welcomed the opening of a unique new clinic in Glasgow which draws on an age-old traditional curative process.

salt treatment reduces the negative effect of bacteria and oils. Graham, who suffers from asthma said: “I tried the salt treatment

found in salt caves by creating an environment rich in microscopic particles of salt. “They used what is called a halogenerator, which creates its own micro-climate. “Minute particles of salt work at a cellular level. In terms of respiratory problems, the salt particles get deep into the lungs, helping to clear out mucus and aid breathing.

myself and saw the benefits after only one or two sessions – and I was convinced there was a wider market for the treatment. “Salt therapy has a fascinating history. It really started out as what was an old wives’ tale.

Salann Halotherapy, run by husband and wife team Graham and Ashley McFarlane, is the first centre of its kind in the west of Scotland. It specialises in the use of salt therapy to treat respiratory conditions and infections by reducing inflammation and killing bacteria. It also has beneficial effects on certain skin conditions because the

“It originated in Eastern Europe where it was reckoned that people who entered salt caves felt invigorating effects. “People scoffed at the idea that it was anything other than superstition – and it wasn’t until around 200 years ago that a Polish physician proved that it actually worked. “Then, in the mid-80s, Russian researchers recreated the conditions

“The treatment works on everything from coughs and colds to asthma and bronchitis.” Graham said that the same principle applies to skin conditions. He said: “The salt particles settle on the skin helping to remove dead skin, bacteria and harmful oils and this helps the skin to regenerate. “It is beneficial to sufferers from dermatitis, eczema and psoriasis for example.” Salann Halotherapy is now open for business in Glasgow’s Woodlands Road. If you have a respiratory or skin condition that is proving tough to treat, why not sign up for a free consultation and talk to an expert who can recommend the appropriate treatment. The Lodge is also proud to welcome our newest residents: Laochan (which means ‘little hero’ in Gaelic) is a purebred Highland bull and Kinchie (named after the whisky ‘Glen Kinchie’) is a purebred Whitebred Shorthorn bull. The Whitebred Shorthorn cattle breed is on the critical list as there are fewer than 500 breeding females left so we are hoping Kinchie can help us preserve his kind. MugStock Festival It’s More Than Just Music… New festival at Mugdock Country Park, 7th - 9th August 2015
includes outstanding acts from the sublime vocal talents of Siobhan Wilson, laser harp extraordinaire Theremin Hero (Britain’s Got Talent 2012) to the contagiously delightful carnival sounds of Orkestra del sol. MugStock will provide all the key ingredients required while festival go-ers make memories with family and friend’s old and new, everyone is invited to this exceptional party! A few years back, a crowd of likeminded people came together and discussed the possibility of putting on a show, a really good show. Not one to make them financially wealthy, showcase their knowledge of the industry or even to put them on the map, they wanted to provide people with an experience so memorable that it would provide tales for generations to come. And with that Mugstock was born. MugStock is a new boutique festival set just North of Glasgow. It’s a not for profit event run by an experienced team of skilled and passionate volunteers who love music and all things extraordinary. The weekend will span 7-9th August and the ever expanding line-up

Sourcing performers and musicians of the highest calibre, offering sustenance from the finest breweries and gastronomic maestros the UK has to offer, MugStock Festival’s pledge is to offer young and old revellers alike the opportunity to enjoy an interactive experience set amidst the stunning natural surroundings of Mugdock Country Park. There will be a surprise at every turn, an encounter you need

to consider whether it actually happened and memories to cherish for a life time. MugStock Director and regular festival goer Alan Govan is delighted that the first MugStock is already proving to be quite the subject of conversation. “We are looking forward to this growing in reputation and becoming one of Glasgow’s most successful festivals, foreseeing this first one in particular to launch with style. And it will. With our fundraising campaign already having smashed its target and offers of help, both financially and physically coming in fast and furiously, it’s clear how important this festival is becoming to so many people and the community”

Do you work all year round?

I have more than 20 years of practical gardening experience, which began with my organic market garden business. I set up and ran the kitchen garden at the Nick Nairn Cook School for 10 years, supplying veg, specialist salads, herbs and cut flowers.

Yes; there are always different seasonal tasks to do in the garden. Although most gardening is done between spring and autumn, October to February is a great time to design, plan and prepare new borders and do hard landscaping.

I’ve completed a number of garden makeover projects and recently helped Buchlyvie Primary School create an allotment and cookery school and I head up their garden team. I strongly believe that all children should have an opportunity to grow their own food and enjoy gardening. It’s been fantastic seeing the pupils have fun at the allotment and we hope to expand their “outdoor classroom”.

What made you turn to garden consultancy? I’ve spent the last 6 years creating my own 6-acre garden near Buchlyvie from scratch – there’s woodland, flower gardens, areas for cut flowers, a prairie garden, an orchid meadow, my veg garden and more. It’s been an amazing experience, full of costly and hard won lessons but I am proud that I have learned from my own mistakes. I now have an arsenal of knowledge about what will and won’t

grow in our climate and I want to help other people make wise choices, save money and enjoy beautiful plants that thrive in our local conditions. I have planted thousands of plants, many of which I have propagated myself from cuttings, divisions and seed. My joy of producing plants for free has steered me into wanting to help others discover the thrill of propagation.

How do you differ from a landscape contractor? Plants are my passion and my area of expertise, whereas other landscape companies tend to specialise in hard landscaping. I offer a very personal, one-to-one tutoring service as well as design – my aim is to empower people with the knowledge of how to care for their own garden. By providing an ongoing maintenance schedule tailored to each client, they can develop and improve their garden each year. As every woman knows, a makeover is nothing without a maintenance regime and aftercare!

Any other interests? I’m writing a book about my garden and have a vast photo library, as garden photography is another passion. I also make wreaths and natural Christmas decorations from plant materials gathered from my garden. Hollynairnwreaths Tel: 07773 590516

Which areas do you specialise in? I specialise in vegetable and cut flower gardens, roses, prairie planting, gardening for the birds and bees, gardening with chickens and tough plants for Scottish gardens. As our winters are so long, I like to work with plants that have great shape, texture and movement as well as colour.

Holly’s Top Gardening Tips for June & July Blue and purple Iris sibirica are wonderful early June plants, which enjoy a damp Scottish soil. Perry’s Blue is a great and reliable showstopper. With orange welsh poppies, it’s hard to find a better colour combination. Order mail order bearded iris now if you have a sunny, sheltered and well drained area (mine are in gravel by a south-facing wall) Plant out dahlias in June when frosts are over, put plenty of manure/compost in the planting hole and stake them. Cover the soil around the stems with sharp grit or a copper ring to prevent slugs nibbling. Plant out bedding plants. Ben View nursery always has a great selection of hanging baskets – order/buy them now the frosts are over. Keep picking sweet peas and deadhead repeat-flowering roses to encourage new by blooms. Pictures Paul Saunders Photography

Prune plum trees. If you’ve finished your first crop of peas, cut them down but leave the roots in the soil to fix nitrogen. Sow peas, mange tout, beetroot, carrots and salads in the garden and basil in the greenhouse or kitchen window sill. I scatter fennel, coriander, chervil and parsley seed in any bare patches of my flower garden as they are a good green foil to flowers and have superb autumn seedheads; they also make weeding that bit tastier! The annual, Phacelia tanacetifolia is beautiful and loved by bees, sow this green manure in any bare spaces. If, like me, you love peonies visit Binny Plants nursery in Uphall, West Lothian for the most incredible treat!

Difficult Decisions Faced with ‘pension freedom’, people need sound financial advice more than ever. More than a quarter of all British people approaching retirement don’t know where they will put their pension savings after April 2015. This particular finding from BlackRock’s latest Investor Pulse survey* highlights a growing need for financial advice, given the recent changes to the pensions regime. This, the second of three articles on Britain’s savings habits, looks more closely at some of the survey’s results. The key change which has just come into effect is that pension savers are no longer required to buy an annuity – they have ‘pension freedom’. One direct result, as BlackRock’s research shows, is that fewer than one in ten future retirees now say they are likely to purchase an annuity. And 28% simply don’t know what they will do with their retirement savings. The need to take personal responsibility is growing, but the lack of retirement planning and financial knowledge means that many people

58 |

are reluctant to act. The majority of people say they do not know how much they should be saving, and 44% haven’t started saving for retirement at all.

people lack the financial awareness

While the average UK investor would like to maintain three-quarters of their current income after they retire, they underestimate the size of the pension pot needed to realise their expectations. Those surveyed would like to achieve, on average, £26,000 a year and think a pot of £259,000 towards an annuity will do it. In fact, they would need a pot of £479,000.**

However, faced with the freedom to

Lack of confidence

People have a distinct lack of confidence in their retirement plans. Only 32% of them believe they will enjoy a comfortable retirement, and 38% think they will never be able to retire fully. Nearly half (45%) say they are concerned about outliving their savings.

Cakes or

Carvings? Gifts & Ways to Celebrate! 21st June

Two bits of advice for this day, be original and only spend what you can afford. For example most men love cream cakes, get him one very big one or a selection of special pastries. Men also love chocolates just like the rest of us, so get him a beautiful big box. The latest from his favourite recording artist should go down well. How about a clock you can shout at to silence the alarm? Or one that you can throw at the wall with impunity? Things good to eat or drink are always welcome. A mini hamper of Continental meats, some wild boar or venison sausages, a selection of Scottish and foreign cheeses, pots of luxury preserves or honeys should keep his stomach happy for the following days. A compendium of

62 |

herbs and spices will add flavours to future meals, and a selection of sauces will add variations to his favourite pasta. And to wash all this down, a half case of his regular wine, or a gift box containing two bottles of fine champagne will help him celebrate his special day with your mother. If you don’t want to be practical, be impractical. Get him something that’s no use to anyone other than as a beautiful object - a small carving, a silhouette, an unusual pen holder for his desk, executive toys or a miniature watercolour or print. On the other hand, if your father is on the ’traditional’ side, he may well welcome socks, a tie, after-shave and the rest, only you will really know; but

do take the honest decision, don’t plump for the obvious just because it’s the line of easiest resistance. And if you really can glean no inspiration from the above, go to your local bookshop. Get him a book on one of his passions, interest or hobbies. If he doesn’t have a hobby, choose one for him. Beware though, be sure it’s something two can join in with. If he gets securely hooked, your mother will see neither hide nor hair of him, and she won’t thank you for that! It’s all a matter of thought and imagination. Just tour the shops and get ideas from advertisers in Parklife, you are bound to find the very gift that shows on Father’s Day, how much you really appreciate him.

Designed and Made in Orkney, Scotland

Sea & Surf... Sheila introduces New Collection to Loch Lomond Well-known Scottish jewellery designer, Sheila Fleet, has been watching the waves over the winter. Sweeping, swirling designs have adorned her workbench, many master-patterns and enamel colours have been tried and tested. Now Sheila is looking forward to sharing the completed pieces at her Meet the Designer event 25 July – 2 August 2015 in her Gallery in Jenners at Loch Lomond Shores. Sheila grew up on a farm on Hoxa, South Ronaldsay, surrounded by the land, sea and sky. Her early shoreline drawings gained her a place at Edinburgh College of Art

in the 1960s. Years later the sea inspired bold forms in silver with vibrant enamel colours as Sheila began working on her own jewellery collections. Sea & Surf is the very latest collection she has dedicated to the sea.

Do join Sheila and her team at Jenners, Loch Lomond Shores for Meet the Designer, a warm welcome and many exciting new designs await you!

Sheila Fleet holds an OBE for services to the UK jewellery industry and an Honorary Degree from the University of Edinburgh for outstanding jewellery design. All her jewellery is made in her Workshop by the sea in Orkney.

Art forged in the furnace Two prestigious commissions for artist Elspeth Bennie Elspeth Bennie has a growing reputation as an artist and blacksmith highlighted by two recent prestigious commissions. The first, for the SANDS charity, is based on a large forged iron screen which incorporates butterfly and caterpillar-friendly plants. The butterfly is one of the symbols chosen by the charity, which now has a dedicated memorial garden in the New Dumbarton Cemetery. The second is for three large copper and brass pictures depicting various aspects of the whisky industry. The latter was commissioned by the Scotch Whisky Experience and the pictures now found in their corporate function suite in the Royal Mile. Elspeth, based in Glasgow’s Balfron area, combines the traditional blacksmithing methods of heating metal and forging it while hot with new techniques such as plasma and laser cutting. This combination of skills makes the greatest use of creative expression. Ongoing projects can be followed on Facebook by liking Elspeth Bennie Artist Blacksmith.

Best two one Act Plays in Scotland FADS is extremely proud to host a special evening of drama to be held in Fintry Sports club on Friday 26 June at which the plays placed first and second in the Scottish One Act Play competition recently held on Orkney will be performed. The FADS play ‘The Path of True Love’ was placed third. We reluctantly have to agree that while the FADS play was terrific, these two were just that wee bit better! The plays are :• The winner - Kirkintilloch Players in ‘Her Slightest Touch’ by Toben Betts and

• Kirkton Players in ‘Trip of a Lifetime’ by Bill Cashmore & Andy Powrie This is a fantastic opportunity to see two superbly produced and acted plays. There two clubs are past winners of both the Scottish and British competitions. The Kirkintilloch play will appear at the British Final in Bracknell one week later. Tickets for these events are not yet on sale - but keep an eye on our website (, our Facebook page ( and also watch for posters and other publicity. Don’t miss them!

The eight metre high, pyramid shaped structure is the fourth and final installation in the first pilot project for Scottish Scenic Routes – a Scottish Government initiative designed to encourage visitors travelling along scenic tourist routes to stop and see much loved views in a new way, helping to boost the local economy. ‘An Ceann Mòr’ was designed by

Daniel Bar, Stephane Toussaint and Sean Edwards who formed BTE Architects after winning the architectural competition. The striking structure is clad in sustainable timber which, over time, will fade to a silver-grey to blend in with the landscape. With 31 steps, the iconic landmark offers elevated views, or, for those with limited mobility, a tunnel through the centre of the ‘pyramid’ opens up to reveal the same stunning vista. ‘An Ceann Mòr’ ’has been designed to the highest standards of accessibility including an all-abilities path from the car park, which is already a popular stopping point for coaches.
