A taste of the exotic with a Punjabi Dessert! Rose flavoured Phirini (Serves 4) Ingredients 500ml full fat or semi-skimmed milk 1/4 cup ground rice ½ cup sugar according to taste 2 tsp rose water a few natural pistachio nuts to garnish

Whilst we all love to cook spicy Punjabi food desserts are often overlooked. Punjabi people have a sweet tooth and really appreciate a good pudding. This one is amongst the most popular. Incredibly quick and easy to make, it’s sweet comforting and fragrant and of course totally delicious! Ground rice is an ingredient that has gone out of fashion but is still very easy to come across in Supermarkets and Asian shops. Garnishing with dried rose petals (or fresh f you prefer) and pistachios not only looks lovely but tastes delicious too.

Method 1. Set the milk over a low flame. 2. Add the sugar and the rice flour and stir. 3. Continue stirring until the mixture starts to thicken, this usually takes 5 to 10 minutes until you have a consistency like thick custard. 4. Turn off the heat, add the rose water and mix well. 5.
