In 2024, our objective to cultivate fruit excellence led to some outstanding collective achievements.
Fruitology® was created by Les vergers Boiron five years ago as a scientific discipline, offering food professionals an added dimension to the tasting experience. This unique approach enables us to understand the subtleties of different fruits and provides us with carefully selected words and specific terminology to better appreciate fruit flavors, deepening awareness of the diversity of fruit and the environmental and human conditions contributing to their cultivation. The 5th anniversary of Fruitology® inspires us to continue sharing this expertise, making our knowledge more accessible in order to spark creativity and advance the quest for fruit excellence.
As a mission-driven company, our purpose is rooted in our core values and formally incorporated into our business statutes. We continue to focus on building sustainable supply chains and using the planet’s precious resources consciously. We are committed to taking a responsible approach to gastronomy and developing an inspirational company - once again certified as a Great Place To Work for the third year in a row.
We have been creating connections every day throughout the world for over 80 years. Whether you come to visit our exemplary production site in France, or we come to you with demonstrations, training sessions or events, all these exchanges have continued to enrich us.
As we look ahead to 2025, we are filled with enthusiasm. We will continue to make solid progress to ensure even more responsible fruit solutions without compromising on the quality you expect and deserve. We will continue to establish links with skilled pastry professionals, chocolate makers, ice cream makers and bartenders looking for fruit excellence and innovation. We will continue to forge and nurture relationships with iconic artisans around the world who share our values, ambition and raison d’être.
We strive for fruit and gastronomy that connect and care for the Living. Like a compass, this mission guides every one of our actions. Together, let’s continue to add new chapters to our beautiful story and keep demonstrating our values.
Let’s cultivate fruit excellence.
Alain Boiron, Chairman Grégory Watine, CEO
The Boiron family establishes a fruit-trading business at "Les Halles de Paris".
Invention of the frozen fruit puree – a revolution for fruit artisans. Les vergers Boiron begins to grow internationally.
An office is opened in Hong Kong, and a subsidiary is created in the United States.
Our experts invent Fruitology® The business is relocated to Valence, surrounded by the orchards of France’s Drôme region.
Les vergers Boiron becomes a a mission-driven company.
Like a virtuous circle, excellence is the result of successive actions designed to continually improve quality at every stage.
SELECTING THE VERY BEST FRUIT IN THE WORLD
Everything begins with the meticulous work of our buyers who identify the best growing regions and the best varieties of fruit around the world.
ASSEMBLING: AN ART THAT REQUIRES UNIQUE EXPERTISE
Once the fruit is classified according to its properties, our experts blend several batches of varieties from different sources or harvest periods. The result is a fruit puree with consistent flavor, quality and texture.
PROCESSING WHILE ADAPTING TO THE CHARACTERISTICS OF EACH FRUIT
To retain its organoleptic properties and flavor intensity, each fruit undergoes a specific pasteurization process.
SERVING SUPERIOR-QUALITY FRUIT SOLUTIONS AROUND THE WORLD
Our distribution network extends across the globe, giving international chefs access to our solutions all year round, wherever they are.
INSPIRING FRUIT ARTISANS
Our products and our Fruitology® expertise deliver a precious ingredient for use in desserts, beverages and even savory dishes, created by artisans of flavor. We're proud of our humble contribution to a taste for the good things in life, creating memorable moments to share among friends.
50+ flavors

In 2024, les vergers boiron became a mission-driven company. This means that we deliberately incorporate our social and environmental goals into the heart of our business model, with our purpose formally incorporated into our business statutes.
"We strive for fruit and gastronomy that connect and care for the living."
“By becoming a “société à mission,” the company commits to developing its business with a clear awareness of the challenges we share with both the world of farming and the living world in a broader sense. It is not just a matter of words. By securing this responsibility in our business statutes, we make a real commitment. We must ensure that all those who share our ecosystem are also focused on the same purpose, so that together we can chart a path forward with sincere and ambitious objectives, and transform intentions into actions.
This is just the start of our journey, and it’s so exciting to feel involved in contributing to a meaningful business project!”

Fruitology® created by Les vergers Boiron in 2019, is a patented discipline dedicated to the study of fruit and its transformation into fruit purees. It is based on sensory analysis, a scientific discipline that uses the human senses as a “measuring tool”. The characteristics of our fruit solutions are therefore evaluated by engaging all five senses.
Wine has oenology, cheese has caseology, and now fruit puree has Fruitology®!
WHY USE FRUITOLOGY ® ?
To have additional words and terms that highlight the qualities of fruit creations by providing precise information about each fruit, such as their origins, the varietals, the harvesting and processing methods, as well as their organoleptic properties.
To describe sensations experienced during the tasting process, with words to characterize specific perceptions and subtleties.
To compare different purees with the same flavor, by identifying their unique attributes.
To pair flavors , creating new combinations by mastering aromatic notes.
To enhance creativity by drawing on an accessible tool that encourages experimentation.

In the 20th century, we invented the market standard for frozen fruit puree packaging, when we introduced our 1 kg lidded tray. Now in the 21st century, we are driven by a new ambition: to reduce our use of fossil-fuel plastics. This has led us to purchase the raw materials for our packaging from certified supply chains that use materials produced from recycled vegetable oils that would otherwise go to waste.
How does it work?
Starting in January 2025, Les vergers Boiron will purchase the equivalent of 100% of the material used for its lidded trays, lids and tubs in a biobased material that is ISCC+ certified based on the mass balance approach*.
Les vergers Boiron is investing in reducing the use of fossil-fuel resources by contributing to the development of the bio-based plastic industry. Our packaging remains recyclable** and its functionality remains unchanged.
