• Allentown was home to several notable breweries, including Horlacher Brewery (closed in 1978), and Neuweiler Brewery (closed in 1968). • Civic Theatre of Allentown is a historic community center that hosts theatre, arts education and film. It is located on 19th Street and was developed in 1928. The theatre’s annual showing of “A Christmas Carol” will be in its 24th year. • Parkettes National Gymnastics Training Center, which has been the training ground for numerous Olympians and U.S. national gymnastics champions, is based in Allentown. • The tallest building in Allentown is the PPL Building, standing 23 stories high.

• Bethlehem has six distinct National Historic Districts within its confines. It also has two National Historic Landmarks. In 2012, Historic Moravian Bethlehem, where the Christmas City began as a mission community in 1741, was designated a National Historic Landmark District, one of only six in Pennsylvania. • Bethlehem built the first water works in America in 1762 to pump water for public usage. • The Moravian Book Shop is the oldest continuously operating bookstore in the world, dating to 1745.

• Bethlehem Steel was founded in 1857. The last cast at Bethlehem Steel was made on November 18, 1995. • The electric Star of Bethlehem atop South Mountain was erected in the late 1930s, is 81 feet high and has 246 LED bulbs. • Lehigh University, founded in 1865, was ranked #35 in U.S. News & World Report’s 2010 ratings of America’s best colleges. • Moravian College is the sixth oldest college in the nation. • Musikfest, a 10-day festival each August, draws more than a million people to the city each year. • Historic Bethlehem has more original 18th-century buildings than Colonial Williamsburg. DID YOU KNOW? • Easton is believed to be the site of the first Christmas tree in the country. • Easton was the site of one of the three original readings of the Declaration of Independence on July 8, 1776. • The Peace Candle (non wax) in Centre Square shrouds the 75-foot veteran’s monument every holiday season. • The Treaty of Easton was signed in Easton by the British colonial government of the Province of Pennsylvania and the Native American tribes in the Ohio Country. • The Lenape Native Americans originally referred to the area as “Lechauwitank,” or “The Place at the Forks.”

• The city is home to Crayola products, which are sold in more than 80 countries. • The Crayola Experience™ houses “The World’s Largest Crayon,” 15-feet long and weighing 1,500 lbs. • The National Canal Museum in Easton recently moved into its new home after 15 years at Two River’s Landing in downtown Easton. The museum is now located at the Emrick Technology Center in Hugh Moore Park in the city. • Historians of angling believe that Samuel Phillipe, an Easton gunsmith, invented the six-strip split-cane Bamboo fly rod.

• Easton served as a major commercial center during the canal and railroad periods of the 19th century, transporting for the steel industry. • The Easton-Phillipsburg high school football rivalry played on Thanksgiving Day is considered one of the largest and longest-standing rivalries in American high school football. The first game occurred in 1905.

BURGERS, BETHLEHEM & ‘BAM!’ – A CONVERSATION WITH CHEF EMERIL LAGASSE Celebrity Chef Emeril Lagasse thinks Lehigh Valley has the right ingredients to make a restaurant successful, so much so that he’s opened three of them in Bethlehem, Pa. The world-renowned chef took some time recently to share a little bit about his inauspicious beginnings, what brought him to Lehigh Valley, his favorite meal to prepare and even where his famous ‘Bam!’ catch phrase came from.

AT WHAT AGE DID YOU BEGIN YOUR CAREER?

HOW DID YOU DISCOVER LEHIGH VALLEY?

I started working in a Portuguese bakery in my hometown in Massachusetts when I was just 10 years old. I started out as a dishwasher, but soaked up everything I could from watching the kitchen. By the time I was 12, the owner started letting me bake—small things at first, like a simple cornmeal bread—but eventually I was able to prepare all types of breads and pastries.

I was first invited to visit the area by Bob DeSalvio, president of the Sands® Bethlehem. I remember seeing the old steel mill site and just loving the rich American history that stems from Bethlehem and the Lehigh Valley. I spent time exploring the area and saw the beautiful geography, local agriculture and rich culture of the region—and I felt like my vision for the restaurants aligned with our partners at the Sands.

WHY DID YOU DECIDE ON A CULINARY PROFESSION?

I’ve always felt the most comfortable in a kitchen. Growing up, I was really good at music, too, but there always just seemed to be this draw back to the kitchen. I actually received a full scholarship to the New England Conservatory of Music, but I turned it down to go to culinary school at Johnson and Wales.

WHAT MADE YOU DECIDE ON OPERATING THREE VENUES HERE?

I knew I wanted to have three very different restaurants in the Sands®. I’ve always wanted to do an Italian restaurant—so that’s where the inspiration for Emeril’s Italian Table came from. I love the fresh, bold flavors of Italian cooking. With the Chop House, I was wanting to bring delicious, locally sourced meats and vegetables to the table. And who doesn’t love a good burger? I had a lot of fun working on Burgers and More, sourcing the best ground beef I could find and perfecting all the other accompaniments. Continued on next page >> DiscoverLehighValley.com 13

HAVE YOU BEEN FORMALLY SCHOOLED AS A CHEF OR DID YOU FOLLOW A LESS TRADITIONAL PATH?

To eat, I love a good oyster po-boy with crispy French bread and hot, thinly battered Gulf oysters. As for cooking, I really enjoy making a dish that reminds me of my childhood—a caldo verde soup. It’s a Portuguese-style soup made with kale, potatoes, chorizo and fresh herbs.

I first learned to cook from my parents—my mother, Hilda, and father, John. But I also followed a more traditional cooking path by going to the great culinary school Johnson and Wales University. After I graduated, I worked in kitchens in Europe, New York, Boston and Philadelphia before moving to New Orleans to become the chef at Commander’s Palace.

IF YOU DIDN’T BECOME A CHEF, WHAT WOULD YOU BE?

I guess I would have followed my other passion when I was younger, which was music. I played drums and also taught myself the trumpet, trombone and flute. Maybe I’d be playing in a restaurant somewhere …

WHEN IN LEHIGH VALLEY, DO YOU GET TO EXPLORE THE AREA? IF SO, WHAT PARTS ARE YOUR FAVORITE?

I enjoyed visiting a few local farms. In the restaurants, we use as much local produce and products from vendors as possible when in season. And of course I have to go out to eat while I’m there, and recall a delicious meal at Bolete restaurant. Walking around town, the steel mill in Bethlehem is aesthetically intriguing and full of history—the history of American industry. WHAT IS THE HISTORY BEHIND THE PHRASE “BAM!”?

“Bam” was a term I started using early in my days in the kitchen—before I was on TV. I would be prepping and cooking after long hours on the line, and I started shouting it out as a way to keep the guys alert. I began using the phrase on my first TV show, too, to keep the cameramen awake. After filming for hours, I’d add an ingredient and yell, “Bam!”—to keep them energized and on their toes. I truly consider Julia Child a mentor. I was very fortunate to have met her and worked with her early on in my career. I was featured on her show—I loved teaching her how to boil and peel crawfish! And later on, I got to return the favor by having her on my show.
