The concept of quarantine restricts the movement of people to prevent the spread of illness. ust south of Hellertown in northern Bucks County where Routes 412 and 212 converge lies the small, quiet village of Springtown, where sturdy pre-Revolutionary War through 19thcentury structures, barns, and outbuildings present tangible reminders of its agrarian, independent past. Designated as a National Historic District in 2007, Springtown has about 30 extant structures that date from 1739 to the late 1800s. If you spend time with Scott Strock, a Springtown native whose family’s roots go back to its earliest beginnings, you’ll discover a great deal about this scenic village. Strock and his wife, Diane, also born and raised in Springtown, now live in western New York State. But Springtown, nestled against the south slope of a range of hills that define the boundary between Bucks and Northampton counties, is never far from their thoughts as they visit their ancestral home regularly. “When the time comes, Diane and I will be buried in the Springtown Cemetery, and I will be the fifth consecutive generation buried there, dating back to the very beginning of that cemetery in 1873,” he says. “Our ancestry in the Bucks/Northampton area goes back well before that. Diane and I have 29 direct ancestors who are considered Revolutionary War soldiers, and we had some notable ancestors in surrounding counties even before that.” Raised in a home at Church and Center streets in town, not far from the historic early-19thcentury Eakin farm where his father grew strawberries, tomatoes, and other truck crops, Strock can trace his ancestry back to those who built or owned about five of the buildings that are part of the Springtown Historic District. They include the former White Horse Tavern, Kookert’s Tavern, and the Mansion House, built by Conrad Hess (1745-1832), a fifth greatgrandfather of both Scott and Diane Strock. “Springtown, like most old small towns, used to be fairly independent with butchers, general

stores, blacksmith, coach maker, a newspaper and later even two car dealers,” Strock says. “Now it is mostly a bedroom community like everywhere with just a few services. Like most of southeastern Pennsylvania, although settled by the British, Pennsylvania Germans overwhelmed the area prior to the Revolutionary War. I’ve found that most everyone who is descended from any of those early Pennsylvania Germans are at least distant cousins.” Strock has vivid memories of his boyhood days in Springtown, riding his bike through the countryside, and never worrying much about anything. “It was still rural. We never locked any doors,” he recalls. “You just didn’t think twice about doing that. Now you learn to appreciate those days and realize how unusual it was.”

Abundant fresh water springs that gave the village its name flow into Silver Creek, supported early settlement and led to industries such as a tannery and fish hatcheries. Strock says residents would not hesitate to fill containers of fresh, cool drinking water from springs that
would never run dry, even in the hardest of droughts. “It was crystal clear and pure,” he says. For a taste of Springtown’s past, the Springtown Inn, 3258 Main St., allows guests to step back in time while enjoying a first-class menu and hospitality. A former stagecoach stop built in 1830, the inn maintains much of its original charm—hardwood floors, stone walls and stained glass, two working fireplaces, and historic photographs over the bar. Following in the footsteps of a long lineage of owners, Bobbie Gianguzzi, inn manager and a veteran of the restaurant business, and Carol and Douglas Tweed, became the owners of the inn in December 2018. “We wanted to keep it a restaurant in the country and maintain the quality and everything about it,” Carol Tweed says. “We’re not a chain restaurant,” Gianguzzi quickly adds.

TRAVEL TO THE PAST WITH DIANE AND SCOTT STROCK Originally scheduled for April, but now postponed to October 18 at 2 p.m, Springfield Township Historical Society’s Church School, at 2165 Route 212 in Pleasant Valley (GPS Coopersburg) Diane and Scott will discuss Springtown genealogy as part of the Springfield Township Historical Society’s program schedule. The event is free. This program will be chock full of fascinating information, thoroughly prepared by a couple who have a passion for family history and Springtown.
In addition to the regular menu, the weekly schedule includes a buffet every Monday night, steak night on Thursday, a happy hour on Monday, Thursday and Friday, and Seafood Sundays. Steaks are the specialty. When asked what they’d recommend most from the menu, Filet Mignon Oscar topped the list. “It’s just delicious and tender and you get the crab meat with a chef-made hollandaise sauce with grilled asparagus and potato croquettes,” Gianguzzi says enthusiastically. Beyond the menu, the inn owners offer hometown hospitality, always striving to make connections. “We try to get to know each of our customers, what they drink and what they like to eat,” Tweed says. “They’re not a number. They’re part of our family and part of what makes Springtown special.”

any people refer to their pets as “fur babies” with good reason: just as with human children, pet owners are responsible for everything their pets need, including medical care when necessary. The staff at Allentown Animal Clinic (AAC) has been a healing force for ailing pets since the 1980s.

Dr. Debra Schoenberger opened the practice in the basement of a dental office in the 2800 block of Walbert Ave., near the clinic’s current location. “Dr. Schoenberger operated it on her own for years,” recalled Dr. Judy Rutkowski, DVM, lead veterinarian at AAC. “As her business grew, she hired me as her first associate. Just a year later, she retired, and I bought the practice.” The clinic moved to its present location at 2640 Walbert Ave. in 1994. Today, the Allentown Animal Clinic’s five doctors treat the full spectrum of dogs and cats, as well as more exotic animals. “That group includes snakes, lizards, guinea pigs, rabbits—we even saw some pot-bellied pigs during that fad. Those are unusual animals for this area,” she said. (But owners of sick pet fish must go elsewhere.) Rutkowski relies on a staff of about 25 to keep things running smoothly, and the lineup includes veterinarians, licensed veterinary technicians, veterinary assistants, and a coterie of customer service reps, kennel personnel, and other support staff. Because of the clinic’s long hours (8:00 a.m. to 8:00 p.m. Monday through Friday and 9:00 a.m. to 4:00 p.m. on Saturday) the staff rotates through various shifts. “Basically, everything that a physician can do for humans, we can do for pets,” Rutkowski said. And a pet’s medical care can be practically as complex as our own. The staff at Allentown Animal Clinic is trained in such areas as internal medicine, surgery, cardiology, dermatology, fracture repair, and diabetes management, among others. But, just as your own family physician would do, if your pet’s needs exceed AAC’s capabilities, the clinic will refer you to a specialist.

But that’s not always the best approach. “Misinformation is so prevalent,” Rutkowski said, “and it’s difficult for people to wade through it as they search for facts. It can be dangerous to listen to unknown sources. Instead, develop a good relationship with a trusted medical professional. That’s how you’ll get accurate advice.”

ith warm weather approaching, this is the perfect time to make your list of some essential home maintenance tasks. In fact, experts say that homeowners often miss many of them, which can have serious consequences. Taking the time now to maintain your home, likely your single largest investment, is a lot easier, not to mention less expensive, than dealing with big repairs later on. Here are selections of key to-do items that can be worked on this weekend, based on areas of your home.
Clean your refrigerator’s condenser coils. Most refrigerators have condenser coils either along the bottom or back of the unit. These coils can collect dust and pet hair, and when dirty, force your refrigerator to work harder to stay cold. This, in turn, uses more electricity. Be sure to clean your refrigerator’s condenser coil once a year—or more frequently if you have pets that shed. You can use the hose from a vacuum cleaner to suck out dust particles and debris. Deodorize the dishwasher. Your dishwasher needs periodic cleaning so it will continue to perform well and do its job. Be sure you clean the filter (usually located on the bottom inside the tub), too. Check the aisle where you buy dishwasher detergent for some easy-to-use dishwasher cleaners and deodorizers.

Clean the ice maker. This includes the water filter (if yours has one), and many new ones with ice/water through the door have an indicator that lights up. The filter helps keep your system from having a mineral buildup, which can impact the taste of the ice. Don’t forget to periodically clean your ice maker’s collection bin. If you don’t use ice frequently, it freezes into a big block and can make the ice dispenser work harder than it has to.
IN THE BATHROOM AND LAUNDRY ROOM Clean bathroom exhaust fans twice a year. These exhaust fans help eliminate odors and remove moisture that would otherwise land on surfaces, keep the room humid, and worst-case, turn into mold. Eliminate shower head buildup. Did you know that minerals in our water build up over time and can clog the holes in a shower head? To remove calcium deposits and other gunk, fill a small bag with one cup equal parts water and distilled white vinegar and attach it to the shower head’s nozzle with a twist tie, and let it soak for 20 minutes, and then flush the shower head with hot water before using it. This should also help give you better water pressure, as a bonus. Keep your washing machine mildew-free. Want to stop mold from festering and growing in your clothes washer? Run a cup of white vinegar through the washing machine, using a cleaning cycle or a normal cycle with hot water, or check online for a cleaner you can just easily add. Also, if you have a front-loading washer, remember to keep your washing machine’s door open to allow the rubber seal to dry out. Clean the dryer vent. Most people know it’s important to clean the dryer lint screen in between loads to prevent fires (and also help the dryer work more efficiently). Did you know that failure to clean the dryer is the leading cause of clothes dryer fires, according to the U.S. Fire Administration? Dryer vents should be cleaned at least once a year, and there are even dryer vent cleaning kits to make things easier.

Sweep the chimney. If your home has a wood burning fireplace, it’s important to have it inspected at least once a year. Smoke can leave behind ash and carbon deposits, called creosote, and this needs to be removed periodically because it can lead to chimney fires and carbon monoxide leaks. Inspect trees and limbs near your home. If you have trees close to your home, you’ll want to hire a professional arborist to do an annual sweep of your property. These specialists can identify early signs of disease or rotting. Then, follow the arborist’s advice on what foliage to trim or cut down.

Brookside Country Club traces its 1920s roots to Harold Witwer and Harold Jones, co-owners of the eponymous sporting goods store in downtown Allentown that closed in 1992. They conceived of a country club that had a relaxed and friendly atmosphere, and the local community jumped on board. “The property was known as the Brookside Farm, one of several local farms owned by James Singmaster, who was a very wealthy Macungie businessman in the 1890s,” said Ted Parcel, a board member and the club’s operations chairman. In November 1929, then-mayor of Allentown Malcolm Gross broke ground in an unusual way: chopping out a divot with a gold niblick (roughly equivalent to a modern 9-iron). Six months later, a nine-hole course was ready for play; by that October, Brookside boasted a full course as well as a swimming pool, tennis courts, 6,000 new trees, and other improvements. Meanwhile, the old stone building remained a quaint part of the landscape. Modern-day club members often claimed that it was the oldest halfway house in the U. S., and Parcel started researching its history a year or so ago. “The Lower Macungie Historical Society examined it and confirmed that it was built during the 1830s. It was likely used as a summer house. Those were usually built in cooler, shady areas or near creeks,” he said. Its primary function, in Brookside’s early days, was housing for the club’s assistant pro and his wife, who cleaned the clubhouse, Parcel added. It must have been a spartan existence for the couple; they used the clubhouse facilities (then located across Brookside Road) for eating and bathing, and there was no provision for heat, although a hole between the first and second floor indicates a coal or wood stove may have been added later. Parcel estimates it was converted to its present use sometime in the 1950s or -60s, but it stayed true to its rustic roots. Step inside and you’ll see reclaimed barnsiding on one wall, accented with farmhouse-style décor; the others are covered with circa-1960s wood paneling. Its countertop
is a solid slab of cherry wood, complete with the original bark on the outside edges. The second floor is used mainly for storage, but the bathroom features an old sewing machine cabinet converted to a working sink. Some newer resorts and clubs have quite elaborate refreshment facilities—the one at Silo Ridge Field Club, a gated community in New York, reportedly offers a sundae bar, venison jerky, cured duck, and a frozen margarita machine. “Some even have a food-service phone line on the course,” Parcel said. “You can call in your order and continue to play. It’ll be ready when you get there.” Brookside’s offerings are far more modest— crackers, candy, beer/soft drinks, hot dogs, clubhouse-made sandwiches, and the like. Certainly not fancy, but suited for grab’n’go purposes. Parcel estimates that about 70 percent of the club’s golfers stop there during a round, and the average visit lasts about five minutes.
Altogether, it’s a simple operation, one that’s more an amenity for members than a money-maker. Its age notwithstanding, the stucco-covered stone building is an anomaly in itself. Parcel said, “Halfway houses were never that common. Some of our members are in the Golf Association of Philadelphia league, and play on older courses. I asked them about halfway houses and learned that the few they’d heard of had been torn down.” In fact, modern golf course design has obviated them. Old courses used the classic “front nine/back nine” design, but modern courses follow a sort of double-loop: their first nine holes begin and end at the clubhouse, as do the second nine.

Always go to the home inspection. The inspector reviews important details that may have been missed at showings. If termites are found, for example, treatment arrangements can be made in advance of settlement. 4. Make a clean offer. The fewer things to negotiate, the better! 5. Always go to the home inspection—it’s worth repeating since many people just don’t go. For most, it’s the largest purchase they will ever make, so it only makes sense to check out the property before closing.

CD: Yes. Look at houses that have been on the market for a long time (multiple years) as potential opportunities. Often, these homes just need updating or are priced too high. MP: Have there been many changes to the real estate industry during your 43 years of experience?
CD: Oh, my goodness, yes! The biggest is the Internet. Before, we would get calls asking about proximity of power lines, neighbors, barking dogs, and now people can check Google Earth and get most of their answers. Zillow, and similar sites, have helped the industry tremendously. Buyers can search any location, at any time of the day or night, and see photos of properties. They can even do a drive by to see if there is enough interest for a showing. Years ago, we had to rely on other realtors, or the MLS (multiple listing service) to find houses for clients. The Internet has helped us know our market better.

MP: What are the current trends in home buying?

CD: Smart houses are big right now. Buyers want to check houses from afar, turn lights on and off and check security from their cell phones. Kitchens and baths are always important, but more so now. Outdoor entertaining is also trending, and people have been spending more time and effort on pergolas, outdoor grills and kitchens, ponds, and waterfall features that spill into swimming pools.

Aquatic specialties are supplied by Seafood Unlimited, a respected purveyor in nearby Quakertown.

DIRECTIONS
Hollandaise: Place egg yolks in a blender jar (or use a mixing bowl if whisking by hand). Add lemon juice and process until well combined. Next, slowly drizzle in the warm melted butter while mixing continuously. (Butter that is too hot can cause the sauce to curdle.) Add salt and cayenne pepper and continue blending until mixture emulsifies and thickens. Mix in chopped tarragon and set aside. Sauce may be kept warm in a water bath. Filet: Allow steaks to rest at room temperature for 30 minutes before cooking. Blot dry with a paper towel. Season both sides of meat with kosher salt and pepper while heating a cast iron skillet or other ovenproof pan over medium-high for 2 to 3 minutes. Add olive oil and butter to pan and spread evenly with a brush. Place filets in skillet and sear each side for about 1 minute. Place skillet in an oven preheated to 425°F to finish cooking until medium rare, about 4 to 5 minutes. Transfer steaks to a plate, tent with foil, and rest for 5 minutes. Asparagus: Grill asparagus to desired doneness, drizzle with olive oil, season with salt and pepper. Crab: Melt butter in a small pan, add crab, and warm gently, being careful not to break up lumps of crabmeat. To serve: Place each filet on a plate and put 3 to 4 asparagus spears on top, followed by sautÊed crabmeat. Drizzle with hollandaise, sprinkle with parsley, and enjoy!

t’s tough to fathom how anyone could hurt a lovable, fuzzy animal that only seeks love and affection. And yet, it happens. Cruelty to animals is a very real problem in our world. According to the Humane Society, as many as 10 million pet dogs and pet cats are abused each year, often by people who also abuse their children and spouses. It’s horrifying to think of, and from intentional harm like animal fighting to general neglect, or even mutilation for breed modifications to ears and tails, cruelty to animals is wrong on every level.
SAY NO TO ANIMAL CRUELTY Luckily, good people in the world are standing up for the rights of animals, and you can, too. “My mission is to ensure that all animals are treated humanely in accordance to Pennsylvania State animal cruelty laws,” says Humane Police Officer Barbara Morgan. “Along the journey to that mission my heart breaks and is filled with joy. The ability to help not only the animals but also the community is a blessing.” If you see something amiss, report potential abuse or neglect to your local authorities or in Lehigh County, by calling Officer Morgan at 484-619-2074. Advocacy needs to start somewhere for those that cannot protect themselves.

First, thinly slice the red onion and put the slices in the jar. Fill the jar 3/4 of the way with apple cider vinegar, and the rest of the way with warm water. Sprinkle in the salt. Although not necessary, ideas for add-ins include minced garlic, sliced jalapeño, maple syrup, sugar, spices—or whatever else you think might work. Get creative! Mix everything together in the jar. Close the jar and let rest on your counter at room temperature for 30 minutes, then refrigerate and enjoy 1–2 hours later.

esigner Awnings has seen numerous changes since the business opened 20 years ago as Designer Patio Rooms. “As our business developed, we expanded our services and changed the name to Designer Home Improvements,” said Dario Tiberii, owner.
