letter from the editor I don’t know about you, but September is when I start feeling a little pep in my step again. Gone are the deathly hot days and coming in fast are the cool nights and crisp mornings of early fall that make me eager to get outside and experience new things. When these days arrive, one of my favorite things to do is load my old mountain bike into the car and head to the D&L trail for a good, long bike ride—pedaling as long as my legs last, with the hope of making it down to Mueller’s, where I can cancel out all my exercise with a big sandwich. I also love a good hike on South Mountain, where I can lose myself in the trees, breathe in that earthy and invigorating forest air, and breathe out all my worries (unless, of course, I find a tick crawling up my leg, in which case I promptly freak out). Spending time in nature, especially this time of year, has a way of helping me hit the reset button when things get nuts. It’s even been scientifically proven to reduce blood pressure and levels of the stress hormone cortisol. In fact, that’s why licensed counselor Colin Moriarty started his business Reset Outdoors, which takes traditional counseling and turns it into an outdoor adventure. Learn all about their innovative approach—and get a list of the best places to hike in the Lehigh Valley—on page 58. Something about the cooler weather also gives me an itch to get out of the house and explore. My current obsession: Southside Bethlehem, which is just about as cool, fun, and quirky as it gets. Learn all about its vibrant history and the best things to do there on page 14. In this issue you’ll also find inspiring stories about a Bethlehem-based henna and hand-poke tattoo artist (page 28), a non-profit that’s helping counter PA’s looming farmer shortage (page 46), and more. When traveling over the New Street Bridge from the north side of Bethlehem, views of notable brick facades and towering church steeples morph slowly into modern storefronts and lively collegiate crowds. The rows of colonial homes fade into the background while bespoke glassware, local homemade baked goods, and a funky art scene come into full view. Within the more urban, packed, diverse environment of Southside Bethlehem lies a history and culture somewhat unseen in other parts of the Lehigh Valley—filled with industry, immigration, and progress.

This area was sparsely populated until the movement of the Lehigh Valley Railroad in 1856, with the iron and coal industries following close behind. With trade and production booming, the official Southside Bethlehem borough was founded ten years later. As it turned out, the banks of the Lehigh River were a perfect spot for an industrial change and also an educational one. Asa Packer, owner of the Lehigh Valley Railroad, also established Lehigh University in South Bethlehem in 1865. This industrial shift spurred a massive influx of immigrants from much of Europe, traveling with the promise of steady work when Bethlehem Steel reorganized in 1899. With executives taking up residence in the upper area of Fountain Hill, the lower area of Southside Bethlehem became peppered with churches and working class neighborhoods. The population grew throughout the early 1900s with immigrants making up about 70% of those living in South Bethlehem. With this surge of people, small businesses, markets, and neighborhood establishments arose.

Third Street became a hub of farmers’ markets and block parties as well as a main thoroughfare of local cigar shops and other businesses. Because of the work at the steel mill, the Southside bloomed through the second World War and employed over 30,000 people by 1945. The 1950s and beyond saw civic and community progress and growth. Even after the closing of Bethlehem Steel in 1995 after 140 years of industry, those who settled in South Bethlehem brought diversity and rich cultural pride found through the main streets of Southside Bethlehem to this day. Many locals will tell you that Third and Fourth street offer some of the best the Valley has to offer when it comes to homemade no-fuss cuisine. The opening of the Sands casino and various ArtsQuest venues, including SteelStacks, brought jobs (and thus, people) to the Southside again, adding to the crowd of Lehigh University transplants. ArtsQuest also operates multiple events throughout the year, including local charitable functions, movie nights, free concerts, and even more on their ten-acre space under the lights of the old Bethlehem Steel blast furnaces.

In 2015, the SouthSide Arts District was formed. Composed predominantly of volunteers, this non-profit group is working to make the Southside a welcoming place for local patrons, businesses, and visitors alike. They’ve created First Friday, which allows you to leisurely stroll main streets surrounded by local music, food, and in-store specials; and their upcoming Greenway Market Fare in September plans to celebrate the surrounding farms that help to feed those on Southside. “We want our diversity and heritage to be respected and celebrated, and our community stakeholders to work together to continue planning a vibrant future,” says Missy Hartney, manager of the SouthSide Arts District. With the infusion of local art, food, and new businesses, you’re sure to find something fun to do or see on Southside even within a few blocks. We couldn’t possibly list all of the notable attractions, but keep reading to discover a few of our favorites!

On the surface, American Bank is just like most other financial institutions. It provides all of the usual services (savings accounts, checking accounts, loans). But if you look deeper, you’ll discover some interesting differences.

PATTERNS & COLORS TO

For starters, although American Bank has customers in all 50 states, there’s no massive network of branch offices. Everything happens within its single location on Tilghman Street in Allentown. Unlike larger banks, it’s 100% locally owned and operated. And it’s the only bank we know of that can trace its roots to turkey farming! In the 1960s, American Bank cofounder Fred Jaindl, the late turkeyfarming entrepreneur, landowner, and philanthropist, began investing in several smaller banks in the area. In 1976, he became chairman of the executive committee of the former First National Bank of Allentown. By 1989, he’d purchased stock in Sovereign Bank (now Santander), joined its board, and became chairman—where he oversaw a period of tremendous growth. But Fred had even bigger plans: Just a year after retiring from Sovereign in 1995, he unveiled plans for a new project: American Bank of the Lehigh Valley.

American Bank create a community-centered bank that had a nationwide presence, one that could service customers in the Lehigh Valley and across the United States,” says Mark. And they accomplished that by turning to technology that barely had a toehold in the financial world: the internet. “At the time, Security First Network Bank was the only other bank in the country using the internet to give its customers access to their accounts,” says Mark. Mathematician-philosopher Alfred North Whitehead once said, “Every really new idea looks crazy at first,” so it isn’t surprising that some people outside the company were dubious about the concept. “But all of the founders were on board with that structure,” Mark adds. “They saw it as a way to keep costs low and to pass those savings onto our customers.”

Small but Nimble In the decades since its founding, American Bank has hit many notable milestones, including being named one of the safest banks in America by MSN Money in 2012. But even though it’s received national recognition, American is still, at its heart, a community bank. “Our management team is located in the Lehigh Valley, our board members own 80% of the stock, and even our call center is in our building — no outsourcing,” Mark says. “That means our customers can be assured of quick turnaround, and decisions will be made right here in the Valley.” Chris Persichetti, chief lending officer, explains how that centralization headed


off a potentially nightmarish situation for a brand-new client: “We were acquiring a new business customer and, during the complex transition from the former bank to ours, that bank suddenly cancelled the client’s ACH [automated clearing house] account,” he says.

That meant the client (with a payroll of about $250,000 per month) wouldn’t be able to issue new payroll checks until the account was restored—and its employees were expecting those checks in just two days. “Because we have a single location, everyone we needed to address the issue and help the customer — the lending department, the bank manager, and the deposit operations manager —was immediately available,” says Persichetti. “Their teamwork enabled American Bank to complete the changeover process in just 24 hours, and all the paychecks went out on time. I can’t imagine a large bank being able to pull things together that quickly.”

Perhaps its most dramatic assist came about in mid-2017, with the resurrection of Camelot for Children. “Camelot has had a real impact on children of need in the Valley,” Mark says. “Children with cancer, cerebral palsy, cystic fibrosis, Down Syndrome. They provided many social and educational opportunities for those kids —even a summer camp for 50 to 70 children.” But after 30 years of operation, the nonprofit agency simply ran out of money, and was planning to shut its doors. That is, until American Bank (and other Jaindlaffiliated companies) stepped in. The entities pledged $100,000 toward keeping Camelot alive. “Many of our staff members are donating their time and talents to the organization as well,” he says, “and summer camp attendance was about 50% higher than it was last year. It’s gratifying to see Camelot go from being in a difficult situation to prospering.”

The self-taught henna and tattoo artist sits on her couch with her left leg elevated. On her forehead is a mining headlamp. She has a beer to one side of her, her boyfriend to the other. She’s streaming The Office on her TV. With delicate precision, Priya Rattan, 25, lowers a set of three needles just above her right knee and starts to poke. She’ll slowly do this for about an hour and a half until her mandala tattoo is complete.

“I’ve always loved tattoos,” Rattan says. “I wasn’t comfortable enough to get a tattoo machine myself, so when I learned about the stick ’n poke method, it seemed really cool.” Stick ’n poke, or hand poke, is an oldschool way of tattooing. It takes longer— the artist is literally poking one dot at a time to create the ink art—but may also hurt less, Rattan says, explaining that tattoo machines are basically needles on a vibrating brick.

Rattan, who graduated with a biology degree from East Stroudsburg University in May, has been stick ’n poke tattooing for two years. But she got her start in tattoo art through henna when she was a freshman. “I was lonely and didn’t have any friends,” she says. “My dad brought me henna cones to stay busy. I practiced on myself, and then other people on campus saw them and asked me to do henna on them. One of the first people who asked me for henna turned into one of my best friends. We’re still close, even after she’s moved to Japan and then North Carolina.”

fresh ink In 2015, when Rattan was a sophomore, she started her Instagram account, where she posted photos of her work. From there, her hobby gained momentum, all through word-of-mouth. In September 2015, she made her own henna paste for the first time; she orders the henna powder from India and makes it in her apartment in Bethlehem. “I don’t know of many henna artists in the Lehigh Valley,” says Rattan, who had her first paying client at the Easton Flea in October 2015. “I thought, this can be a niche for me. And it’s going well.”

So I gave her a full henna crown on her head.” The other crown was for a friend who reached back out to Rattan when she was battling cervical cancer. She asked for a peacock down the side of her head. “I love how empowered those ladies feel,” Rattan says. “It’s not for my own satisfaction. When my work is done, and [my clients] are so in awe, that makes me giddy inside. I’m so happy.”

It’s an unalome, a traditional Indian design that represents the path to enlightenment. “The squiggle lines in between signify trials and tribulations you go through in your lifetime,” she says.

Rattan has two offices, so to speak. She adorns her henna clients at Lit Coffee Roastery and Bakeshop on Bethlehem’s South Side, where her boyfriend is a Monocacy Coffee roaster. Her stick ’n poke office is just down the road at Bonn Brewing, where she recently inked a bartender: a mandala covering his entire knee. It took two five-hour sessions. “I do a lot of tattoos at Bonn on Sunday when no one’s in there. It’s like my own little speakeasy for tattooing,” Rattan says.

Rattan, whose latest tattoo is the Bonn logo, sets up shop at a table in the back corner. She’s taken tattooing classes and blood borne pathogen classes. “I order all of my supplies by the book,” she says, noting that she uses sanitized, packaged needles, green soap for sanitizing skin, and vegan ink. “If I don’t want it in my body, I don’t want it in somebody else’s body.” While Rattan’s henna clients run the gamut—men, women, young, old—it’s a niche group of clients who choose the old school, hipster stick ‘n poke. But one of those clients doesn’t fit the hipster mold: Rattan’s grandmother, who’s in her 70s. “She approached me,” Rattan says, laughing. Last year, when her grandmother was visiting from England, where most of Rattan’s family lives—and where Rattan was born—she asked her granddaughter to replicate a tattoo her late husband—Rattan’s grandfather—had. “He had an ikonar, a symbol of the Sikh religion, on the top of his left hand,”

Rattan says. “She asked me to get it done, the same design on the same part of the hand.” Rattan will continue to adorn and ink clients through the next two years of school: She’s attending Northampton Community College in the fall for an associate’s degree in fine arts. She plans to merge her passion for art with her biology degree to become a medical illustrator for textbooks. “It combines both of my worlds seamlessly,” she says. “If I can help kids learn while they also see my art, that’s so awesome to me.”

Executive Chef Jonah Hendershot recommends ordering this entrée rare, or at the most, medium rare, for fullest flavor. The meat, seasoned simply with salt, pepper, and a mix of house-grown herbs such as tarragon, rosemary, and parsley, is served with a roasted shallot demi sauce. Partnered on the side is a fresh vegetable medley with summer squash, carrots, asparagus, or whatever arrives from the greenhouse that day, plus a mound of mashed Russet potatoes punched up with a just-right amount of fresh garlic. Wine suggestions on the menu provide an optimal pairing selected by an expert.

Thanks to a special conservation program that began in Pennsylvania 30 years ago—one that helps limit development on farmland—Lehigh County has now preserved over 23,000 fertile acres on more than 300 farms, in perpetuity. But over the years, as the amount of preserved land grew, there was a new challenge: finding farmers to actually cultivate it at a time when people were getting out of farming. The solution: a farmer training program called The Seed Farm, on a 44-acre stretch of county-owned property in Emmaus. “The Seed Farm was formed as an effort to make sure there were new farmers ready to take over the land,” says Lindsey Parks, who serves as executive director. This year, The Seed Farm is supporting three new farms as part of its farm incubator program, in addition to running a workshare training program for people who want to get a taste of farming without fully committing. After a few years of building up a customer base and working out the kinks with the farm manager’s help, they’re then ready to move onto a more permanent location. Traditionally, the farms in the incubator program have been focused on smallscale vegetable production. But this year, The Seed Farm sought to diversify the types of farm businesses they hosted and wound up with two cut-flower farms and a beekeeper who wants to produce mead. “I have been so excited to see the local flower industry growing like it has,” Parks says. “Until recently, you’d only see vegetable growers with a small section of flowers at farmers’ markets. But the popularity of locally grown flowers has grown so quickly that we’re seeing

Previously, The Seed Farm offered an intensive apprenticeship training program. About 30 students have graduated from the program and an impressive 17 now own or manage their own farms, while others have gone on to work in farm-related industries.

But in 2016, the apprenticeship program ended after it became too difficult to compete with other organizations offering similar programs for which participants didn’t need to pay tuition. “The programs we offer are quite resource intensive, but we currently only have two staff members, so it’s difficult to access the money we need for this type of production,” Parks says. In June, The Seed Farm announced plans to become a part of the Community


Action Committee of Lehigh Valley (CACLV), which runs the Second Harvest Food Bank, to help ensure that the organization can continue its mission. The new partnership, which will likely be approved this fall, could provide many new opportunities for The Seed Farm, including working with urban farms in Allentown, creating farm programs for kids, and growing produce for the food bank. “There are so many opportunities for feeding people in the Lehigh Valley that—up to this point—we haven’t been able to focus on. We’re looking forward to working with the food bank to open up that communication between farmers and lower-resource communities,” Parks says.

How to Support The Seed Farm The Seed Farm has one major fundraising event every fall: a fun, fancy, farm-totable dinner in one of their greenhouses, featuring gourmet food cooked by local chefs. This year’s dinner is on October 7, 2018, and features silent and live auctions where you can bid on everything from art to jewelry to gift certificates to specialty dinners. (Buy tickets online at theseedfarm.org) Parks also loves inviting community organizations to host events at the farm. In the past, they’ve had popular outdoor theater productions and yoga workshops. “There’s so much potential and so much that can be done here. If you have some kind of event or workshop that you want to offer to the public, we’re here as a resource for that.”

It’s a bright summer morning, and Lorenzo Marinelli and his laptop are bathed in sunlight pouring through the large windows at Easton coWorks at the Karl Stirner Arts Building. “I was looking for a local coworking space because working from home is not what everyone thinks,” he says. “It’s very lonely; you can’t get up and talk to other people, and you’re easily sidetracked.” Marinelli, a principal of Starfire Consulting, a global market research firm, had previously rented office space in Philadelphia until he realized that the digital nature of his profession allowed for more freedom and flexibility. Inspiration often strikes without warning, bringing life-changing ideas swiftly into crystal clear perspective. For therapists Connor Moriarty and Joshua McSparin, inspiration for their meditative outdoor adventures struck one beautiful day while kayaking on Lake Nockamixon. It was that day the two friends conceptually founded Reset Outdoors.

The positive results of mindfulness and spending time outdoors are cumulative “I’ve always enjoyed the outdoors,” says Moriarty. “I grew up camping and paddling and all the stuff you do when you live in the middle of nowhere. Once I stumbled into counseling as my chosen profession, I decided to pursue a focus in trauma, which is a particularly intense specialty in the world of psychotherapy and mental health.” As a result, after about five years of working in intense public agencies, Moriarty found himself pretty close to burning out. “Josh and I were sitting on our kayaks, and I forget which one of us asked why we couldn’t do this with our clients,” he recalls. “So we started doing research and, as luck would have it, there’s a growing body of work drawing clear links to the outdoors and mental wellbeing.”

reset outdoors Reset Outdoors officially launched in July of 2017. Leading up to that date, Moriarty and McSparin put in close to a year’s worth of research and development, surveying literature on similar approaches across the world to help them find a strong theoretical foundation for doing what they do. “Psychology is a little less concrete than medicine, but you still need a good body of research before anyone adopts something as an intervention,” says Moriarty. “We did our homework, and the evidence was strong. Physicians and psychiatrists will regularly prescribe time outdoors—simple walks in green space, and preferably, if you have access to it, trees and water.”

How it Works As part of its unique counseling option, Reset Outdoors offers a plethora of low-impact outdoor activities, including trail walking, hiking, kayaking, stand-up paddle boarding, biking, geo caching, yoga, snowshoeing, and team-building activities—each of which is lead by a counselor who helps maximize the positive benefits of these restorative outdoor experiences. Soon, rock climbing, river paddling, and multi-sport excursions will join the list. The key idea behind Reset Outdoors is what Moriarty calls “active mindfulness”— letting your senses wander and seeing what you notice. His company’s individual counseling sessions, group counseling sessions, and team-building exercises all rely on this simple idea. The positive results of mindfulness and spending time outdoors are cumulative and just take a little practice to perfect, he says.

“You really just need 20 minutes a day… maybe you get out for a walk at lunch, or on the weekend for an hour, hour and a half,” he says. “Those results immediately start impacting your brain. You reduce levels of the stress hormone cortisol. Your heart rate drops. Do that with some regularity, and those results last for upwards of three months. It’s not a magical fix, but if you are able to keep those stress levels down for a good amount of time, the positive benefits are tremendous.” Moriarty is the principle full-time counselor and co-director of Reset Outdoors, and McSparin, also a codirector, practices as a consultant. Both are certified kayak and stand up paddle board instructors. Soon, Moriarty’s wife Emily will be licensed to practice with Reset Outdoors as well. Her debut will correspond with the early autumn grand opening of the business’ new location on 3rd Street in Bethlehem, just above Domaci.

Who They Help Initially, the big focus for Reset Outdoors was on working with “helping professionals”—police officers, doctors, firefighters, and others whose main objective is to help others. But their clientele quickly expanded. “When we were testing the model, enough people outside of helping professionals still felt like they benefitted from the experience,” says Moriarty. “So now we work with anybody who wants to re-establish the balance in their life, and improve wellbeing.”

More convenient access to state-of-the-art medical care for the Bucks and Lehigh County regions draws closer each day, as construction continues on a new $100-million St. Luke’s University Health Network facility in Quakertown. The 30-acre campus, scheduled to open in late 2019, will provide a welcome complement to the network’s existing Quakertown hospital on Park Avenue. “Our new hospital will be much more visible to the public,” says Dennis Pfleiger, president of St. Luke’s Quakertown campus. “It will be a full-service facility, dedicated to acute-care patients.” It will offer 40 beds (with the capacity to expand to 80), and all rooms will be private.

Healthier Tomorrow The new campus will enhance St. Luke’s importance to the local community as well. “It will allow us to bring in new specialists and new inpatient and outpatient services to our area in the future,” he says.

The evening’s menu will be a true collaboration. The quartet of chefs plan to pool their knowledge and skills to create a one-of-a-kind meal, rather than presenting independent creations. “Dining outdoors and discussing the future of healthcare in our community will be a wonderful way to get people involved with our organization,” says Pfleiger.

Shawn Doyle, co-owner and chef of Macungie’s Savory Grille, says he’s looking forward to the event. “It’s for a good cause, and I feel close to St. Luke’s – I was born there.” What will be on the plates? At press time, Shawn couldn’t say, for a very practical reason. “We plan to go farm-totable as much as we can,” he explains, “so we’ll be using locally produced products whenever possible.” He adds that the final menu will depend in part on exactly what’s available as the date draws closer. But he did reveal that the food would be “a bit upscale, but served family style.”


De-Stigmatize Mental & Behavioral Health Issues While the new hospital is getting plenty of attention, Pfleiger is quick to point out that the existing facility on Park Avenue will continue to serve the community. It will still house the medical office building, radiology, cardiac/pulmonary rehabilitation services, the infusion center, and wound center. In addition, plans include expanding the number of inpatient behavioral health beds. And that couldn’t happen at a better time.

St. Luke’s takes a holistic approach to treating behavioral disorders. As of 2016, it was estimated that 45 million adults in the U. S. are afflicted with some type of mental illness (encompassing mental, emotional, and behavioral disorders), according to the National Institute of Mental Health. That’s over 18% of our adult population. Pfleiger says St. Luke’s Quakertown takes a holistic approach to treating behavioral disorders. Programs include art therapy, group therapy, pet therapy, and even some programs devoted to developing better life skills, such as anger management. One well-known Quakertown native, who knows the first-hand benefits of addressing behavioral issues before they become destructive, is legendary guitarist

We capture the sound and style, but make them our own,” he says. Thatcher adds that he’ll be playing acoustic instruments that night. And while the rest of the band will be plugged in, they won’t overwhelm his sound. The program will also include a Q&A session with Thatcher about his struggles with panic disorder. Thatcher battled panic disorder for over two years, with severe attacks occurring two or three times a day, every day. “Self-medicating didn’t work at all,” he says. “I finally got professional treatment – therapy and some medications – and learned meditative techniques, including the ‘relaxation response,’” a technique that involves gradually relaxing every muscle in the body, breathing slowly and deeply, and trying not to dwell on negative thoughts.
