I can always picture him in my mind as the phone rings. If it’s during the day, he might be brushing out one of the horses, mowing the massive lawn, or building something in his woodworking shop while wearing paint-stained Wrangler jeans and a flannel. If it’s at night, he’ll be sitting on the couch next to my mom and their two lovable labs, watching some cop drama like Blue Bloods or an adventure-fueled reality show like Alaska: The Last Frontier—probably eating a scoop (or five) of ice cream, because he’s “earned it.” And he has. Whatever he’s doing when I call, he always picks up. And whether I greet him with excitement, tears, or despondency, he’s always ready to listen and dole out measured, thoughtful advice. If I’m working myself to death, staying up too late and getting up too early to accomplish everything, he’ll remind me, “you can’t burn the candle at both ends.” If I’m so overwhelmed that I feel paralyzed, he’ll tell me “one thing at a time” and “be in the moment, even if it’s hard.” But even when he doesn’t know exactly what to say, our conversations still have an innate ability to ground and guide me—even if he’s just rambling on about his day. You see, my dad is perpetually doing something. He always has a new project or adventure, whether that’s re-painting the barn or taking sailing lessons for the first time in 40 years. I’ve never known him to be bored or complacent, and growing up, he made sure I wasn’t bored or complacent either, always encouraging me to try new things—like galloping full-speed through the woods on Sassafras, my slightly manic mare—even if they scared me. And I was better for it. By the time I hang up the phone, I almost always realize that I’ve been overthinking and under-doing, and that to feel whole and happy, I need to act. Lucky for me— and everyone in the Lehigh Valley—there are so many opportunities to shake up your normal routine and try something new and adventurous. Grab some friends and go white water rafting (page 42), catch a play at the PA Shakespeare Festival (page 50), sample PA Dutch fare at the Kutztown Folk Festival (page 60), or spend a day learning about local wines at Folino Estate (page 38). Oh, and give your dad a call and buy him something nice (page 30)—the 17th is Father’s Day, after all!

American Pickers is a popular series that premiered on the History Channel in 2010. From vintage film posters to antique motorcycles, the show follows Mike Wolfe and Frank Fritz around the country in search of the most interesting and valuable items for sale. Like these reality television stars, Maritza and Rudy Lopez also make their living telling and selling the history of America one piece at a time. But, they do it in our own back yard and all under one roof at the Zionsville Antique Mall.

zionsville antique mall It began in the spring of 1994. Like many of us often do, Maritza and Rudy dreamed of one day making their passion a business. The dream became a reality when, during a leisurely drive, they noticed the perfect building for sale. The next day, they refinanced their home, bought the property, and put everything they had on the line. “I was an antiques enthusiast in love with vintage merchandise and collectibles,” says Maritza. “Rudy wanted to restore old cars. At the end of the day, we were both antique buffs. And, although we had plenty of doubts about what we were doing, with the support of our family and our community, we just went out and did it,” she laughs. Although they may not have known it at the time, the Lopezes were living the American dream of starting their own successful business. Twenty-five years later, they’re delivering one of the most unique shopping experiences anywhere on the east coast, right here in the Lehigh Valley.

With approximately 200 booths, Zionsville Antique Mall is 30,000 square feet of retail space with thousands of unique pieces of merchandise on display, from antique Pyrex mixing bowls that have become all the rage to matchbox cars to signage from old businesses. Each booth carries a different vendor’s (i.e. collector’s) product. Besides a friendly approach to educating customers, their business model allows them to keep overhead low, so they can showcase the widest selection of merchandise. As the company grew, Rudy left his thirdshift job with Stanley Vidmar and joined the effort full-time. Today, Zionsville Antique Mall is also managed and led by Rudy and Maritza’s daughter Melissa.


Her experience growing up around the business and love for interior decorating drives her to find new ways to introduce the mall to those who may not know it exists.

“Where Pottery Barn and Restoration Hardware sell reproductions, we have the originals.” “Aside from the work ethic of my mom and dad, the key to our success is simple,” says Melissa. “We provide a fun shopping experience where you can find one-ofa-kind items for your home that have personality, history, and value.” This is what makes them different. Today, they’re delivering that experience and selling unique merchandise from just about every time period, culture, and area of the globe. “We have customers that love it so much that they spend all day here,” says Melissa. “You can’t compare the experience of shopping here to buying online. It doesn’t even come close,” she explains. With quality and variety in mind from the onset, the majority of merchandise on display is vintage, collectible, or antique. It comes from old farms, barns, estates, and people who, for one reason or another, have stored antiques and unique collectibles for generations. “Where Pottery Barn and Restoration Hardware sell reproductions, we have the originals”, says Melissa. “In fact, from time to time, we see them here looking for items they can reproduce and sell to the broader market at a premium.”

When they hear these statistics, patients are often surprised—and terrified. Lori Riccardi, a 57-year-old kindergarten assistant from York, knows those feelings all too well. Throughout her life, she’d had countless sunburns and never thought to protect herself. So a few years ago, she decided to schedule a dermatologist visit for a head-to-toe skin check and to look into a tender spot on her foot that would often bleed. The doctor removed it and gave her a clean bill of health. But the spot came back. So she made an appointment with another doctor who biopsied it and scheduled her to see a local surgical oncologist right away. Initially, Lori wasn’t alarmed. She thought it was something that could easily be removed with outpatient surgery. And it was, for the time being. Fast forward a few months, however, and there were other signs of problems including swollen lymph nodes—three of which were cancerous.

told her they concurred with Dr. Agarwala’s care plan, it confirmed what she already knew – he was her guy. “It’s natural for patients to gravitate toward the biggest name. But many of those big-name places know us now, and I have colleagues there that will refer to us. Patients are surprised when they hear ‘hey, you can go locally for that same treatment.’”

Finally, one of Lori’s local doctors recommended an expert that he referred to as the best skin cancer doctor in the region, Sanjiv Agarwala, MD, at St. Luke’s Cancer Center, who frequently conducted clinical trials that might be a good fit for her.

Although he treats other forms of skin cancer, Dr. Agarwala finds melanoma particularly exciting to study because it’s relatively uncommon. “Because it’s rare, you have to collaborate,” he says. “I work with investigators around the world. It’s a small group of us, so it’s perfectly normal for us to call or text each other. Because we are in constant communication, it allows us to make advances quicker.”

Lori got an appointment and made the two-hour trip to see Dr. Agarwala the next day. After some tests, they realized they were dealing with Stage 2 Melanoma and that her cancer had spread, which eliminated her from the current clinical trial. So they made a plan to remove some of the cancer, and after a couple months, she was cleared for the next clinical trial.

For Lori’s treatment, Dr. Agarwala’s team decided that Keytruda®, a type of immunotherapy specifically indicated for melanoma that has metastasized, would be the logical next step. It was powerful enough to help her own body attack the cancerous cells.

year and a half with no side effects, and all cancer has been kept at bay. The outcome may have been different for Lori if not for the clinical trial. Nearly all of Dr. Agarwala’s patients are on a clinical trial, and at the end of the day, he says, what matters is finding the right clinical trial for each patient. “It doesn’t matter how many clinical trials you can offer if you aren’t offering the right ones,” he says. He credits the Clinical Trials team at St. Luke’s for seeking out the best trials and making them available to patients locally. “Our strategy at St. Luke’s is to select clinical trials that really move the needle on cure rates. The advantage of us offering our own clinical trials is that they are built from the ground up and are located right here,” he says. “We can also offer our patients a lot more availability and face-time.” Now, Lori and her husband of 32 years are back to enjoying their beach house (always sitting under an umbrella with a hat and sunscreen, of course) and spending time with her two adult sons. She gets scanned every three months to monitor for changes, but all is good so far.

lyme Epidemic

A tiny insect called the deer tick, the size of a mere poppy seed, is wreaking havoc on the health of thousands of people across the country. Researchers now estimate that these nasty little blood suckers infect over 300,000 people with the bacterial infection known as Lyme disease every single year. This number has been steadily increasing for more than a decade. Cases of tick-borne diseases doubled from 2004 to 2016, with 82 percent of those cases being Lyme, according to the Center for Disease Control and Prevention (CDC). Most cases of Lyme disease are contracted between the months of May and October. Meaning: Right now, your risk is at its highest. And not so lucky for all of us: Pennsylvania leads the pack. “Pennsylvania has led the country with cases of Lyme for the past three years, and the Lehigh Valley is one of the larger density areas,” says Jeffrey Jahre, M.D., infectious disease specialist at St. Luke’s University Hospital Bethlehem Campus. “We’re not talking about something exotic, we’re talking about something that’s now commonplace.”

SYMPTOMS TO WATCH FOR After an infected tick bites you and starts feeding on your blood, it may regurgitate some of its stomach contents back into the bite site, thereby transferring the Lyme bacteria (Borrelia burgdorferi) into your body. Pretty nasty, right? After this happens, most people who have contracted Lyme will notice their first symptoms within two to 30 days. Typically, early Lyme disease symptoms consist of flu-like symptoms, including fever, headache, and fatigue as well as a gradually expanding rash that looks like a bullseye and is larger than a half-dollar coin in size, says Dr. Jahre. This rash is present in about two-thirds of people infected with Lyme. If left untreated, additional symptoms may develop after a few months. According to the CDC, these can include: Severe headaches and neck stiffness, an irregular heartbeat, severe joint and muscle pain, facial palsy, shooting pains and numbness in hands and feet, and short-term memory problems.

DIAGNOSIS AND TREATMENT Many people can make a full recovery from Lyme disease if they catch symptoms early, even if they progress to some of the more serious symptoms mentioned above. Here are a few different scenarios and what treatment might look like for each: • If you find a deer tick attached to you, and you know it’s been there for less than 24 hours, remove it and monitor yourself closely for the symptoms mentioned above. If you feel fine after 30 days, you’re probably in the clear and do not have Lyme disease. • If you find a deer tick attached to you that’s engorged and you suspect it’s been attached for a while, talk to your doctor about prescribing you a single, prophylactic dose of an antibiotic like Doxycycline. “This can be very effective at reducing the transmission rate and preventing the development of Lyme disease,” he says. • If you don’t spot the tick, but you notice classic Lyme disease symptoms including a bullseye rash and flu-like symptoms, go see your doctor ASAP. They will likely prescribe you antibiotic treatment for anywhere from 10 to 21 days.

• If you’re symptoms aren’t quite as obvious– maybe you have all of the flu-like symptoms and some joint pains, but no rash–you should still see your doctor and ask for a blood test to help confirm or rule out a Lyme JUNE 2O18

HOW TO PREVENT TICK BITES

Of course, your best bet to avoid Lyme is to steer clear of ticks. Easier said than done, but Dr. Jahre offers up a few tips:

• Home Safety Assessments • Bathroom Safety/Grab Bars • Lift Chairs/Stair Glides • Medical Alert Systems • Multi-dose Medication Packaging

• Avoid ticks’ natural habitats: These include brushy, damp, overgrown areas. That means it’s important to keep your lawn mowed and stick to the trails when you’re out hiking. • Use the right repellent: Look for repellents containing the active ingredients DEET, Picardin, and IR3535, all of which can be safely applied to the skin; and consider applying Permethrin to your shoes and clothing, which can be extremely effective at preventing ticks from getting on you in the first place. • Do a tick check: After spending time outside in nature, check yourself and your kids. Sun Safety 101 BY FREDERICK JERANT

We’re just weeks from the official start of summer—and while we’re all excited about backyard cookouts and beach trips, all that time spent outdoors means your sun exposure is at its peak. Why should you care? According to the American Cancer Society (ACS), more skin cancer cases are detected each year than all other types of cancer combined – and its incidence is increasing. Most skin cancers are caused by overexposure to two types of ultraviolet rays found in sunlight: 1) UVA rays, which can damage the DNA of skin cells and contribute to wrinkles and other long-term health effects; and 2) UVB rays, which also damage DNA, are implicated in most skin

cancers, and are the chief cause of sunburns. Fortunately, there are many ways to protect yourself while outdoors. Here are just a few.

AVOID PEAK HOURS

But don’t think of it as your best protection, either. All of them let some UV rays pass through. Typically, higher SPF numbers offer more protection than lower-rated ones. But that difference is incremental. The ACS says SPF 15 sunscreens filter out about 93% of UVB rays, SPF 30 sunscreens filter out about 97%, and so on. As always, follow application instructions, which often means reapplying every few hours, especially after swimming.

PUT A LID ON IT

UV light is strongest between 10 a.m. and 4 p.m., so it’s smart to avoid sunlight (as much as you can) during those hours. And remember that UV rays easily penetrate cloud cover, so be careful even on overcast days.

COVER UP

Hats with fairly wide brims (2” to 3” or more) can shade practically your entire head. Be wary of baseball caps, though. Your neck and ears – two prime spots for skin cancer – will remain exposed.

SLIP ON SOME SHADES

It’s tough advice after being bundled up all winter, but lightweight, long-sleeved shirts and long pants or skirts offer a good bit of protection from UV rays. Some manufacturers even produce clothing with built-in UV protection, and the level of blockage will be noted on the labels.

Like hats, bigger is better. Look for labels that indicate the level of UVA and UVB absorption. Your best bet: Those that block 99 to 100 percent of both UVA and UVB light. No label can mean minimal to no protection.

5 Signs You May Have A Hernia & What to Do About it A hernia is a protrusion of an organ through an area in the body in which it normally resides. Although hernias commonly occur in the abdomen if part of the intestine, bowel, or bladder pushes through a weak spot in the muscle wall, they can also develop in the upper thigh, belly button, groin, and chest. There are a multitude of reasons hernias occur explains Dr. Emanuel Nogueira of St. Luke’s Upper Bucks Surgical Group. “Male or female, young or old, they’re relatively common and we’re all susceptible. Anything that causes an increase in pressure on an already weak tissue can expedite it. Although it can be congenital or present at birth, it is more often caused from lifting or moving heavy objects, straining during a bowel movement, or chronic coughing.”

In some cases, there may be no visible signs it exists; in others a hernia is symptomatic and creates visible bulging, pain and discomfort. A hernia causing pain may indicate that its strangulated, a serious condition requiring immediate medical attention because it cuts off blood supply to the intestines and abdomen. Although exercise, maintaining proper weight and smoking cessation can help to prevent a hernia, it will never repair itself or go away on its own. Repair to a hernia is a function of age, general health, type, and severity. The tear or hole can be as small as a dime or as large as a dinner plate and fixing it requires a surgeon to move the protrusion of the hernia back into the abdominal cavity. Following repair, the weakened tissue that contributed to the problem is closed and reinforced with stitching or synthetic mesh. Some surgeries require an incision that can vary from three to six inches; others can be done laparoscopically, a minimally invasive procedure in which the incision can be less than a centimeter. Simple repairs for an umbilical hernia can be performed in as little as twenty minutes. More complex procedures can take several hours. In most instances, repair is performed as an outpatient procedure and the patient is able to go home

For a hernia that is not bulging or causing discomfort, repairing it immediately will prevent it from becoming more serious, creating additional problems, or becoming strangulated. “Whether a hernia is asymptomatic and pain free or symptomatic and bulging it should always be addressed as soon as possible using a health network and physician certified as a center of excellence. Every case is unique and different and personalized care for my patients is vitally important. Choosing a specialized surgeon familiar with all of the treatment options is always recommended,” says Nogueira. Dr. Emanuel F. In his prime, Paul Ferency of Forks Township was a 6’5”, 350-pound wall of muscle—and he knew how to use it. “I was among the top 5% of people on earth when it comes to strength,” he says. This might seem like an exaggeration, until you learn that Paul competed in 54 world championship matches to determine the world’s strongest man, played in Scotland’s Highland Games (participating in events like the caber toss and hammer throw) for 25 years, and spent six months traveling with Joan Jett and her entourage as her personal bodyguard. More recently, he served as the Strength and Conditioning coach for Lafayette College. But then, a series of unexpected medical issues sapped nearly all his strength. One day he walked into St. Luke’s University Health Network’s Anderson Campus with flu-like symptoms, but was quickly diagnosed with a urinary tract infection (UTI) so severe that his kidneys began shutting down. As toxins leached into his bloodstream, his condition turned to sepsis, a dreaded, potentially life-threatening complication of uncontrolled infections. “Although he had been relatively healthy before, the combination of sepsis and severe kidney injury left him with profound muscle weakness,” says Geeta G. Sathe, M.D., a physical medicine and rehabilitation specialist at St. Luke’s who was Paul’s attending physician for his two-week stay in the ICU and subsequent stay in the main hospital. “Paul’s chronic gout flared up at that time, too, resulting in great pain in his knees and ankles.” In his own words: “I was so immobile and getting progressively worse,” says Paul. “I couldn’t move at all.” Fortunately, that’s one of the many situations in which a branch of medicine called physiatry (also known as physical medicine and rehabilitation, or PM&R) can lead to remarkable improvements. Broadly put, physiatry works to enhance, improve, restore, and maximize functional abilities for individuals with impairments that affect the brain, spinal cord, nerves, muscles, ligaments, tendons, and bones. “Physiatrists help to diagnose and treat those conditions by using tools such as imaging, medication, injections, assistive technology, or personalized exercise plans,” says Dr. Sathe. They also explore the level of rehab needed: Inpatient? Skilled nursing facility? Home therapy? Outpatient? The answer will differ for every patient, and can shift during the recovery process. “Because rehab is an ongoing process, we can help long-term patients transition from one service level to another,” she explains.

And while many medical practices concentrate on a single body part – kidneys, for example, or the heart – physiatrists take a more holistic approach. They will collaborate, as needed, with other physicians, physical and occupational therapists, speech and language pathologists, social workers, prosthetists, and other service providers.

Overall, his experience with St. Luke’s was quite positive. “The staff was really compassionate,” he says. “When I got to ARC, they took one look at me and realized that a standard-sized patient bed wasn’t going to fit me, and they managed to find one that would in just a few minutes.”

But physiatry goes beyond the physical self. “We engage the patient’s personal support system, social situation, and so on. Education is a huge part of the job, too. We describe the challenges of the process, expectations and goals, a projected timeline, even the possibility that a deficit may remain—and how to deal with that fact,” she says.

Since his initial discharge, Paul has experienced several setbacks—a coronary ablation, diagnosis of prostate cancer and another UTI—but he’s powered past those obstacles like a true champion.

In Paul’s case, he entered the Acute Rehabilitation Center (ARC) at St. Luke’s University Hospital Bethlehem for two weeks of intensive inpatient physical and occupational therapy. And while some patients may find the challenges of rehab to be daunting, Paul was a big proponent of the program. “Because of his background in sports and fitness, he knew how and why the process works,” says Dr. Sathe. “And he had a great attitude—he’d even cheer on the other patients!”

“I was among the top 5% of people on earth when it comes to strength.” “When I got to rehab, I was pretty immobile,” Paul recalled. “But they got me moving twice a day, every day, for about an hour each time. We worked on regaining my balance, walking, and strength-building exercises like the stationary bike. I enjoy working out, and when they put the challenges in front of me, I just ate that up.”

He continues to work out at home—after 45 years of training, he has plenty of gear—and plans to return to some serious weightlifting when he’s able. “I don’t need to be the strongest man in the world anymore,” he says. “I just want to get back to where I can do things easily.” And with that kind of attitude, along with the skills he’s learned, he’s sure to succeed.

Now a comprehensive program is available on an outpatient basis for patients who require longer-term rehabilition needs. Activities that most of us take for granted, such as grooming, eating, even using the toilet, may have to be relearned as step-by-step processes. The center focuses on three general workout areas: • Strength and endurance, using free weights, kettle bells, resistance bands, weighted ropes, and other gear. • Cardiovascular development, with an equipment arsenal that includes treadmills, elliptical machines, and Airdyne-style full-body bikes.

Practically every gym promises to make you better, faster, stronger—but St. Luke’s Fitness & Sports Performance Centers are a bit different.

• Metabolic fitness, through developing effective workload and recovery patterns to make your metabolism more efficient, both inside and outside the gym.

“We offer medically based fitness centers,” said John Graham, senior network administrator for fitness and sports performance, “and we take an individualized approach to enhance the health and wellbeing of our clients.”

Workouts at the center needn’t be solitary sessions, either. There are over 100 assorted group exercise classes offered each week.

The center welcomes practically everyone, regardless of physical capacity. “We see all sizes, shapes, abilities, and fitness levels here,” Graham continues. “And about 50 percent of our clients have some kind of chronic disease or disability. Many are fully mobile, while others rely on scooters to get around.” All programs include constant monitoring and evaluation, both to measure progress and to evaluate goals. Losing 40 pounds won’t happen overnight, and regular evaluations, including body fat composition analysis, can help determine whether your program is on-track or needs adjustment. Goals can change over time, too. After attaining a certain level of fitness, you might want to go further. “You’re welcome to stay in our program for as long as you

wish. Some clients have been with us for more than 20 years,” Graham says. “In every case, their goals have changed – and they’ve continued to reap benefits. We look at fitness as a lifelong activity.”

Their lives may depend on being able to wear 60 pounds of gear as they handle high-pressure hoses in 600-degree environments.” These programs focus on building jobrelated aspects of strength, power, speed, agility, and metabolic fitness. And, although it’s hospital-affiliated, there’s no need for a physician referral and no waiting for insurance reimbursement.

Pennsylvania Shakespeare Festival BY JENNIFER HAY

“Great actors, great artists, great plays.” That’s what Patrick Mulcahy, producing artistic director, says will be the highlight of the 27th season of the Pennsylvania Shakespeare Festival, which runs from June 1 to August 15 at the Labuda Center for the Performing Arts at DeSales University’s Center Valley campus.

This year’s festival will feature three plays by the festival’s namesake: Twelfth Night, King Richard II, and All’s Well That Ends Well, along with the bard-inspired Shakespeare in Love, and the musical Ragtime. Younger audiences can enjoy Alice in Wonderland and Shakespeare for Kids, a one-hour production for preschool and elementary age students that is celebrating its 10th anniversary this summer. “We are producing some of the best plays in the English language that have been tested, sometimes across centuries, and we hire decorated and gifted artists to bring them to life,” says Mulcahy.

Invite them to the Prologues, which are held in the theatre before each Shakespearean play. These walk you through the play in advance so you have a better idea of what’s going on. “Usually, after that,

they’re hooked,” says Mulcahy. “No one is born loving Shakespeare. Someone has to properly introduce you.” The productions will likewise feature a mix of old and new faces. “With a company of actors in recent years that includes Tony and Emmy winners and nominees, we have a great pool of actors to draw from, and still each year we find new actors who are extraordinary,” says Mulcahy. Many audience favorites are returning, while new actors include Christian Coulson, who played Tom Riddle in the Harry Potter films (and who will play be playing King Richard II at the festival); Brandi Burkhardt and Nkrumah Gatling of Broadway fame; and Richard White, who voiced Gaston in the animated Disney classic Beauty and the Beast. King Richard II, making its festival debut, will be the 30th of Shakespeare’s 38 plays to be offered at the festival, while Twelfth Night, an audience favorite, returns after a 10-year absence. “No two productions are the same, which is part of the magic and ephemeral nature of live theatre,” says Mulcahy. Mulcahy will be directing Shakespeare in Love, his first non-Shakespeare play at the festival in about 15 years. “I’m a fan of the playwright Tom Stoppard, who was one of the screenwriters on the film. His wit and invention is a great match for this epic romance that has everything: man meets woman, man writes the greatest love tragedy of all time, woman gets to live fully and authentically in a period when that was nearly impossible. And with meticulously managed systems of logistics in place, long-standing area seafood markets provide swimmingly fresh catches abundant enough to rival most shoreline locales. From farmed freshwater trout to saltwater mollusks, crustaceans, and cephalopods (yes, octopus, we’re talking about you), local consumers can jump into a diverse pool of aquatic fare that extends far beyond tasty-but-predictable salmon. Richard Cox, who operates Chestnut Street Seafood in Emmaus with business partner Carl Strauss, reports that an annual uptick in seafood interest—especially clams—starts

To meet this need, littleneck clams for steaming are kept in plentiful supply, both farmraised and wild. “Wild clams tend to be a little bigger and more expensive,” he reports, adding that shellfish must come from an approved supplier. “The bags are inspected and tagged, and if they’re over 40º F they have to be rejected.” To enjoy clams raw on the half-shell, Cox suggests the larger top-neck clams—and notes that any opened or broken clams should always be discarded.

When buying this or any other whole fish, Cox says to look for clear eyes and red gills. “If there’s yellowing on the belly, that’s a sign of histamine development,” he says. Walk away from this or an ammonia odor indicating spoilage. However, don’t confuse decomposition with the slightly fishy scent that occurs in small fish. “Little fish have a little smell, and that’s normal. But if you’re not comfortable, don’t buy it.”

At Todd’s Island Seafood in Allentown, owner Todd Koch meets demand for shrimp with catches from Gulf waters. “We get wild product,” he says. “I’m not opposed to farm-raising, necessarily, for any kind of species, but I just don’t care for the texture or flavor of farm-raised shrimp.” Along with raw and steamed offerings, the shop prepares rotating features such as Jambalaya and ready-tocook Garlic-Herb Jumbo Shrimp Skewers. (There’s a call-list for customers looking for these and other prepped favorites, such as Flounder Florentine.) Moist and meaty sea scallops are another popular choice, though buyers should make sure they’re getting top-quality “dry” scallops. “That means they are natural—the only kind we sell. They taste so sweet when they’re raw,” says Koch. “‘Wet’ scallops, which are cheaper, are treated with a chemical process that preserves them and lets the scallops absorb water. If you taste a processed one raw, it almost burns your tongue.” Processing also means the scallops will emit water and won’t caramelize when trying to sear them in a hot pan. “You could be paying for 12 to 20% water,” he continues. “I don’t care what the price is: They’re not worth it.” For many seafood connoisseurs, soft shell crabs offer the quintessential taste of summer. The availability of this often-fleeting delicacy—blue crabs, most famously from the Chesapeake Bay, that have shed their hard exoskeletons and are eaten in their entirety, little legs and all—is dictated by many factors, from weather conditions and moon phase to predation by other sea creatures. The supply may linger into early October or dwindle in August, so grab them while in stock. Grilling, sautéing, and deep-

With the largest quilt sale in America, the Quilt Barn has garnered worldwide attention. Each year, well over 2,000 quilts are submitted for entry, though only the finest 1,500 examples of colorful craftsmanship and skill are accepted for display and sale during the festival. “They have to be of a certain quality,” explains Sharadin. Of those selected, Quilt


as potato filling, pepper cabbage, and cottage cheese with apple butter. Several whole pigs are also roasted each day. Vendors across the festival grounds offer corn pies, apple dumplings, funnel cakes, shoo-fly pie, and other delights. Aromatic hearth-baked loaves of bread and giant cinnamon buns are pulled from the wood-fired Festival Bake Oven, among the oldest such traditional outdoor ovens in the state. And a Beer Garden enables guests to quench their thirst with local and regional brews and wines. For a non-alcoholic beverage, go with an old-fashioned birch beer. It will “swallow itself well,” as they say in Kutztown.

Why: The Lehigh Valley chapter of Bikers Against Bullies is holding a charity motorcycle ride to benefit St. Luke’s University Health Network. For a donation of $20, motorcycles and classic cars can join the ride. Registration begins at 11 a.m. and the ride goes from 1 - 2 p.m. Food and entertainment to follow at the Silver Creek Athletic Association for riders and non-riders.
