“It’s a local food truck, that’s very popular out there. It’s called Quesadilla Mobilla and it’s right in downtown Moab. It always has a line. I got an Enchanted Chicken quesadilla with slowroasted chicken, sautéed corn, peppers, refried beans and cheeses. It was awesome. Probably the best quesadillas we’ve ever had.”

“This was Mesa Arch at Canyonlands National Park. Wind erosion causes many of the arches. When you’re driving out there, you’ll see arches that are starting to form. It may be hundreds of years from now, but you see concave areas in the rocks and those are arches starting to form. And the current arches will go away eventually. They will erode or collapse while new arches are formed. It’s constantly changing — you just can’t see it in a human lifetime.”

“It was breathtaking — just waking up and sitting out there and having a cup of coffee. It was the kind of thing that made you forget daily life. You could breathe. You had that crisp air and you realized as far as you looked, there was nothing but open space. You don’t realize how much open space there is.”

“Most of the trip was hiking, but we wanted to give the girls a new activity, a new experience. They had never zip-lined before. The place was called Raven’s Rim Adventure Tours. They have 400 private acres. They take you on a Jeep ride up the range; it’s crazy steep. And we did six different zip lines across six different canyons. The longest one was about three-quarters of a mile long. It felt much more secure than I thought it would be. I absolutely loved it.”
