Chicken Breasts Dijon Bob Kramer bkramer@lacademy.edu INGREDIENTS • 8 boneless chicken breast halves • ½ cup Dijon mustard • ¼ cup olive oil • ½ cup white wine • 1-2 tsp. dried tarragon OR 1-2 Tbs. fresh tarragon to taste • 1-2 cloves fresh garlic • salt and pepper INSTRUCTIONS Preheat oven to 350°F. Place chicken in a baking dish in one layer. Blend sauce ingredients in a bowl or measuring cup. Pour sauce over chicken, turning to coat chicken breasts on all sides. Bake 40 minutes uncovered. This is a very flexible recipe. I have made it in smaller quantities (half recipe) and have quadrupled it for a party. I have left the chicken to marinate in the sauce for a few hours, but I usually just whip up the sauce and stick it in the oven. Leftovers are great for chicken salad or sandwiches. Enjoy!
