The true story

True Burgers fills Enelly’s

How do you fill a new fast-food restaurant, in a hopeless location, that no one has heard of? By serving true burgers with gourmet buns. Enelly´s opened in the outskirts of the Swedish town Örebro in 2012. The rumours about their tasty burgers spread quickly, and hungry customers have filled the 800 m2 restaurant ever since. – I had a vision of a fast food concept serving really good burgers. Mainly because I love burgers and there were no such place in town, says Adam Dagdelen, founder and owner of Enelly’s. Today Enelly’s runs two large restaurants and are planning a nationwide franchise concept, with six new restaurants opening in 2015. They buy all of their burger buns from Lantmännen Unibake. – The bread is extremely important, that’s why we use different buns for different burgers. We are also constantly looking for new recipes to keep our customers happy, says Adam Dagdelen.

Burger Architecture A burger is not just the sum of all its ingredients – but the synergy of flavours and textures created between the buns. Burger Architecture is about building burgers in the right order, with the right ingredients.

Bun Creates the first visual impression and it’s texture and flavour determine the overall eating experience. Toast to bring out the flavours!

Sauces The sauce combinations you choose will either highlight or overpower your other flavours. The amount you need takes some tricky research.

Vegetables Use the freshest, best quality ingredients you can find. Chop salad and vegetables regularly to keep them crisp and flavoursome.

Cheese This can make or break a burger. It should compliment and highlight the other flavours, not dominate the burger.

Patty Use the freshest ingredients possible, preferably from organic and free-range sources. Fat is flavoursome – don’t go for low-fat burgers!


True burgers in practice There is more than one way to make a great burger. Here are three of our top burger recipes complete with their Burger Architecture blueprint. All recipes make 10 hamburgers.

Dry Rubbed Hottie A dry-rubbed beef patty, with smokey chili jam and a classic ‘slaw, served on a Brooklyn Burger Bun. Ingredients • 10 Brooklyn Burger Buns – from Schulstad Bakery Solutions • 10 Beef patties • 200g Red onions • The rub • Chili jam • Coleslaw Toast the bun to bring through the flavours. Smear Chili Jam on the bottom bun, followed by lettuce. Place the burger patty and put coleslaw and sliced top of it. Finish with the top bun.

The sourdough bun works perfectly with the crunchy and creamy coleslaw by balancing the sour flavours.

The rub

• 100g Light Brown Sugar • 30g Black peppercorns • 20g Green peppercorns • 20g Paprika • 20g Garlic Salt • 10g Sea Salt

• 75g Red Chilies • 75g Mixed Bell peppers • 500g Jam sugar • 300ml Cider Vinegar or Red Wine Vinegar

• 100g Red Cabbage • 100g White Cabbage • 85g Carrots • 30g White sweet onion • 85g Mayonnaise • 20ml White Wine Vinegar • 15g Chopped parsley or chives

With a pestle and mortar, combine the ingredients. Rub onto a burger patty 30 minutes before grilling.

Deseed the chilies and cut into 4 pieces. Pulse in a food processor. Do the same for the peppers. Combine the ingredients. Over a low heat dissolve the sugar in the vinegar. Add the chili and pepper mix. Leave to simmer for 10 minutes. Stir only if it needs to be. Remove from heat and leave to cool. Once cool, ladle into sterilised jam jars for safekeeping.

Finely slice the cabbage and onion. Grate the carrots. Gently combine the mayonnaise and vinegar. Toss all together with the chopped herbs.


The butteriness of the bun works wonderfully with the umami flavours from the beef, mushrooms and the truffle oils.

Umami Burger

A delicious gourmet burger, packed with umami flavours from mushrooms and truffle oil. Served on a buttery Brioche Burger Bun. Ingredients • 10 Brioche Burger Buns – from Schulstad Bakery Solutions • 10 Beef patties • 10 slices / 200g Mild cheddar cheese • 400g Mixed fresh mushrooms (Shiitake, button mushrooms, etc) • 200g Pickled red onion • 100g Romaine Lettuce • 300g Truffle Mayonnaise (gently add truffle oil to a premium mayonnaise) Toast the bun to bring out the buttery flavours. Place Truffle Mayonnaise on the bottom bun, followed by sliced Romaine Lettuce. Place the burger with melted cheese slice on the lettuce. Top the burger with mushrooms, followed by pickled onion and finally add some more Truffle Mayonnaise. Finish with the Brioche top bun.

The Chili bun boosts the hot and spicy flavours from the other ingredients.

El Mexican

A tangy Pulled Pork burger with a taco seasoning on a Hamburger Bun with Chili. Ingredients • 10 Chili Burger Buns – from Schulstad Bakery Solutions • 1.8kg Pulled pork (preferably from slow cooked pork neck) • 100g Grated cheddar cheese • 200g Iceberg lettuce • 400g Fresh guacamole with chili • 200g Tomato salsa • Nacho chips Toast the bun to bring out the flavours. Place lettuce on the bottom bun, followed by a good layer of guacamole. Place pulled pork on top, and add a little seasoning. Garnish with crushed nachos, a small amount of grated cheddar, and a teaspoon of tomato salsa. Place the Chili bun on top.

Boost your burger As a restaurant offering a gourmet burger, it’s key to understand that it’s the small details that makes your burger stand out.

Toast it! Always toast the bun before serving! This brings through the flavours and gives the bun a freshly baked texture. Use a frying pan with some oil or butter to get a beautiful, shiny crust. If you want to spice things up, toast the bun after frying bacon or onions to make the bun absorb the flavours.

Fry them again. And again. Double frying is the secret behind thick-crusted, crisp fries. Fry on low heat the first time, and increase the temperature for the second run. Some fries enthusiasts even go for a third one.


Your signature here Style the bun to make your signature dish unique. Create a glaze by mixing chili sauce and honey, and make decorative patterns on the top bun.

There’s more than ketchup Serve your burger with sauces and dips to create an interesting mix of flavours. Add garlic, curry or lime to mayonnaise for a new take on a classic sauce.
