Dimitrov, the Tower Bar’s maître d’ and man about town. Dimitrov’s replacement, Gabé Doppelt, had no restaurant experience, but she did have a suitably glamorous backstory—as former editor of Mademoiselle and lieutenant for Condé Nast legends Tina Brown and Anna Wintour. For the past four years, as Dimitrov charmed the ultra-A-list crowd at the private Bungalows, Doppelt finessed the egos of the Tower Bar’s still-star-studded clientele.
