THE “NASSE”, ANCIENT ART OF FISHING
T
he reed processing is another important activity in Gallipoli thanks to its most famous work: the fish trap. It is a sort of cage which, once equipped with bait, is placed in the sea and used to trap fish. Once they are attracted by the bait, once inside they have no chance. In reality today few people are still able to work the reed, and many of the works that are made are mostly intended for tourists, intrigued by these particular objects. In the old town centre you can meet the last reed masters, often sitting on the steps of churches to work and cheer up passers-by.

Primitivo in purity aged in oak barrels. Intense ruby red, warm and aromatic scent, full flavor. A sweet red but with character that is affected by the beneficial influence of the Ionian Sea.

Sliced fried scamorza cheese
Ingredients: one scamorza cheese (better if smoked), 2 eggs, breadcrumbs, flour, salt, pepper extra virgin olive oil Cantina Coppola Beat the eggs adding salt and pepper. Cut the scamorza cheese into slices and pass them first in the flour, then in the beaten eggs and make the last pass in breadcrumbs, to make them crunchy. Prepare a pan with some Cantina Coppola extra virgin olive oil and wait until it gets very hot. At this point you can fry your slices of scamorza cheese, taking care to cook them on both sides. Prepare a container with absorbent paper to dry the excess oil and enjoy them hot. A quick but tasty dish.

he second door that separates Lecce's past and its present is Porta Napoli which, together with Porta Rudiae and Porta San Biagio, guard the historic centre of the city, as if to defend it from modernity. Porta Napoli, located near one of the headquarters of the University of Salento, dates back to 1548 and was built in honour of Charles V, as a sign of gratitude for the fortifications that he had built in the area. It was built over another door, that of San Giusto, under which there were the remains of the Saint, who is one of the patron saints of Lecce. An excellent starting point to discover the treasures of one of the most beautiful historical centres of Salento.
