t's true, Salento is beautiful all over. From the coast to the hinterland, from the Adriatic to the Ionian Sea, all the places of our territory arouse emotions. If you want to trace an itinerary, a route to discover the main places, in addition to Lecce, you can find 3 places: Gallipoli, the Pearl of the Ionian Sea, with its historical island centre and unique sea; Santa Maria di Leuca overlooking the Mediterranean Sea and its millenary history; finally Otranto, the gateway to the East and the easternmost place in Italy, crossroads of peoples and cultures. Ingredients: 500gr of aubergines, 200gr of grated pecorino cheese, 200gr of breadcrumbs, 2 eggs, basil, salt, pepper and extra-virgin olive oil Cantina Coppola After washing the aubergines, cut them and, to remove the bitterness, put them in a colander with salt and a weight on top. Cook them in salted water, squeeze them and grind them. Add cheese, breadcrumbs, parsley, basil, eggs, salt and pepper and mix everything together. Prepare the meatballs, dip them in breadcrumbs and fry them. A simple and tasty dish.

UNDERGROUND OIL MILLS

The important past of Gallipoli and its central role in the production and trade in oil are evidenced by the presence of underground oil mills, underground centres for the production of light oil. You will find several of them in the historical centre of Gallipoli, those that have been recovered and made visitable over time. Entering them, you will find everything as it was several centuries ago, with the same equipment. Surely there is not the same frenzy of production, but you can imagine the moving that animated these centers. Today Gallipoli has partly lost this commercial vocation but the oil, no longer the glaring one, remains an important product for the whole Salento, known and appreciated all over the world.
