On April 1, 2024, Egyptian Hills Resort underwent a significant transformation, becoming the Marion/Shawnee National Forest KOA Campground. Along with this change in name, we have made substantial improvements to our facilities.

We now boast 44 campsites and 12 cabins, providing ample accommodation options for our guests. Additionally, we have introduced a K9 kennel to cater to our campers who wish to bring their furry friends along for the adventure. Our campground now features an incredible playground, a brand new floating water park, a bounce pad and inflatable waterslide, ensuring endless fun for visitors of all ages.

One of our most noteworthy enhancements is the complete remodel of the Marina store, now stocked with $100,000 worth of merchandise. Whether you're in need of camping essentials or simply craving a snack, our store aims to cater to your every need, eliminating the hassle of traveling to town for supplies.

Furthermore, we are thrilled to announce the opening of a new burger bar on weekends, where we will be serving a delectable array of offerings including hamburgers, fries, chicken tenders, chicken sandwiches, and more seasonal delights to come as summer unfolds. Join us every Saturday and Sunday for live music, and kickstart your Sundays with rejuvenating yoga sessions on the lake.

Jim Anderson has been a driving force in building the Lake of Egypt community, stated one of those who has worked with him on a number of community projects.

Anderson has made the Lake of Egypt his home since two years following his retirement in 2009, after he and his wife, a retired teacher, did research and studied blue prints, hired an architect and a builder to complete their dream home. His wife helped make the plans and had many ideas completed in the beautiful home that sets on two acres and boasts a private beach on a cove in The Peninsula development.

Anderson said his family, that includes three sons and their families, along with ten Anderson grandchildren, have always enjoyed water sports and enjoy coming to their parents' lake home for vacations.

Anderson serves as president of The Peninsula Home Owners Association, with its sixty-two homes and 285 property owners. All the property owners are not full-time residents.

He is the "go-to person" when a problem arises in the subdivision, that was annexed into the village of Goreville a few years ago. Very proud of where they live, Anderson attends the Goreville Village Board meetings each first Monday of the month, where he works very well with Mayor Larry Vaughn and the board members.

Although he was once accused of being from Chicago, when he was presenting ideas at another lake meeting, he made it perfectly clear that he grew up on a farm, with a sister and three brothers, near Vergennes, a very small town.

Anderson graduated from Elverado High School, where he enjoyed playing basketball. Not wanting to continue as

a farmer, he graduated from Southern Illinois University in Carbondale, with a degree in chemical engineeering in 1978.

He worked for the Southern Illinois Power Cooperative for a few years, after which, he found his position boring.

He then transferred to a water department in Iowa where he was promoted to manager. He continued to climb the ladder of success, with other positions in central Illinois, St. Louis, and other locales before his retirement.

He had met his wife, thanks to mutual friends, and their first date was water skiing at the Lake of Egypt. They have always enjoyed water sports and returned to Lake of Egypt to purchase the property for their retirement home.

Anderson has become very involved in the lake community, joining the Lake of Egypt Association of Property Owners (LEAPO) and becoming president at The Peninsula.

The three main objectives in his neighborhood include: Improving the roads and streets; security for the residents; and fire protection.

There are presently 7 or 8 brush fire volunteers in The Peninsula, with assistance from the Goreville Fire Department and the Lake of Egypt Fire Protection District, when needed. A structure, no longer used by the LEFPD, located on the nearby Tunnel Hill Road, will soon be put to good use by the volunteer firemen of The Peninsula.

In the past few months, a major project has developed in Johnson County, with Anderson and three other communityminded members of the county, forming an organization called Ptell, that is attempting to solve the problem of unfair property tax increases, It is a complex and ongoing problem, that Anderson has become very involved in.

He agreed it will be a struggle to solve this very unfair

situation, but he is determined to help provide a final positive result. The committeee is putting together plans, utilizing the Property Tax Extension Law Limitation Statue.

Some four hiubdred county taxpayers met earlier this year in the Vienna High School Commons in response to the committee's invitation to present information to the public.

Anderson is also working with another committee in his development to create covenants and rules, to protect the residents of The Peninsulas, present and future.

"Our neighborhood is pretty active," Anderson pointed out, telling of their game night, movie night, parties, quarterly meetigs and annual meeting.

They also have a committee that holds trash pick-ups along the I-24 ramps. Yes, Anderson can sometimes be seen sharing this mundane chore with his neighbors.

Anderson serves as a deacon of the Second Baptist Church in Marion, where he also teaches a class.

"I have been trying to retire sincetire since 2009, but sitting in an easy chair isn't so easy when you are a "go-to" person.

However, the Andersons take off each February and head to Florida for five weeks, enjoying a cruise, for a getaway, after which they are happy to return to the beautiful Lake of Egypt.

EGYPTIAN HILLS RESORT HAS OFFICIALLY...

It’s been an unlikely transformation.

There was a time, not that many years ago that Lake of Egypt’s Egyptian Hills boasted a small marina where crappie anglers would gas up their jon boats and perhaps purchase a candy bar or soft drink.

That is a distant memory. Egyptian Hills is now home to the Marion/Shawnee National Forest KOA campground. What was once the equivalent of a small town gas station is now a family vacation destination.

The area obtained its KOA designation April 1. Micah Merrrill, managing partner of Marion/Shawnee National Forest KOA, said KOA has different designations for its facilities – journey, holiday and resort.

“We really should be qualified as a resort, but we don’t have a pool, so, we’re a holiday,” Merrill said.

While the campground might not have a pool, it sits on the scenic hills of the 2,300-acre Lake of Egypt. Guests at Marion/Shawnee National Forest KOA have access to swimming, boating and some of the best crappie and bass fishing to be found in Illinois.

Merrill said attaining KOA membership is a major step for the resort.

“The infrastructure and name recognition are the biggest things,” he said. “It’s been an incredible company to work with. I’ve been to Montana twice for training. The other campground owners are phenomenal. The whole infrastructure they’ve set up is amazing … reservations, their process of checking people in and checking people out, their software.

“I really like the minimum standards they have. If people go to KOA, they know they are getting clean bathrooms, nice furniture.”

The Marion/Shawnee National Forest is far more than a campground.

“We have 44 sites,” Merrill said. “We have five different styles. We have gravel sites with lake views. We have concrete sites, concrete sites with gazebos. We have tent sites, patio sites. One of the things that make us unique, probably moreso than other campgrounds is our amenities.

“We obviously have the water activities. We have the floating water park. We have canoes, kayaks, paddle boards and paddle boats. You can rent pontoon boats and jet skis. We have probably one of the biggest playgrounds in Southern Illinois. And, we have a good fishing lake. We get a lot of people who bring their own boats. That’s one of the good things, you can rent a slip as well. We have a lot of people bring ski boats, fishing boats and pontoon. ”

The campground boasts large sites, up to 50X80, so there is plenty of room to relax.

The property also contains a number of cabins that can accommodate large gatherings.

“It really is a destination,” Merrill said. “Here’s a typical weekend from Memorial Day to Labor Day – Friday, we have a movie night with a 30-foot screen. We have live music from Nashville on Saturday and Sunday and yoga on the lake on Sunday morning. We have about 50 people a week every week. We do a pancake breakfast.”

Many people use the facility as a base for activities throughout Southern Illinois. However, Merrill said he recently booked a family from New York state that is using Marion/Shawnee National Forest KOA as its vacation destination.

“They said we’ve heard such good things about it, they want to come and stay a week,” he said. “Those folks are coming for the campground.”

In addition, Merrill said many locals have been utilizing the resort because it gives them access to Lake of Egypt, a privately owned impoundment.

The facility will be open April 1-Oct. 31.

“We have great staff,” Merrill said. “We have staff we’ve retained for years and years and years. Customer service … you read our reviews, that’s what we are about.

“We’re brand new. Currently, we have a lot of availability. Word of mouth is getting out there.

responsibilities, Furtak also sees himself as an ambassador to SIPC’s customers and the residents of the Lake of Egypt community.

The sole reason Lake of Egypt came into existence in 1963 was to serve as a cooling lake for the power plant built by SIPC. The plant was built to serve the needs of rural customers and farmers in Southern Illinois.

Furtak, a native of Palatine, has a degree in accounting from SIU. He has served SIPC as an accountant, controller, vice-president of risk and strategic planning, vice-president of administration and finance/chief financial officer and interim CEO.

The lake has proven to be an economic engine for the region.

The lake lies in Williamson and Johnson counties, the two counties in Southern Illinois that have seen population and economic growth over the past 30 years.

“From a property tax standpoint, I believe SIPC is the No. 1 property tax property payer in Williamson County,” Furtak said. “The houses around the lake hold a lot more value than many of the houses in the rest of Williamson and Johnson counties.”

Yet, the primary purpose of the lake was to assist in generation of electricity.

The power plant uses the water to generation and cooling purposes. The warm water is then returned to the lake. One of the side effects of re-introducing the warm water is longer

A lot has changed at Lake of Egypt since 1963, both in terms of the science of generating electricity and the demographics of the community. Once a remote location, Lake of Egypt is now a population center in both Williamson and Johnson counties.

Since it was impounded, Lake of Egypt has gained a reputation as an outstanding fishery, and it also serves as the water source for The Lake of Egypt Water District.

“We take water out of the lake to cool and for power generation, and it’s returned to the lake,” Furtak said.”

consumption. One of the very interesting things is the district was recently recognized for having some of the best tasting water in the country.”

The popularity of the lake means SIPC devotes more time and energy to the lake itself than it did in the 20th century. As an example, Furtak said the cooperative helps maintain a quality fishery. Due to increasing pressure in the last decade, the crappie population suffered.

“SIPC helps stock crappie,” Furtak said. “We did fish studies over the years and discovered the crappie population was getting decimated. Voluntarily, SIPC set up a stocking process, I think it was 20,000 white crappie a year. The whole purpose was doing what we could to maintain the health of the lake for people that like fishing there. Why? Community.

“The development occurred. With that comes pressure. We have a huge number of fishing tournaments on weekends. There is concern from homeowners about the traffic on the lake. We don’t want to be overbearing with rules, but we have to think about safety. Our involvement is increasing.”

SIPC has always had a complicated relationship with its customers.

“We call them member-owners,” Furtak said. “The whole cooperative model is service. We’re driven by the three R’s: Reasonable rates and reliable power that’s environmentally responsible. That’s our mission statement. That’s the driving

force of everything we do.”

SIPC is not involved in the booming real estate industry around the lake. In fact, Furtak said the amount of development came as something of a surprise to the company. But, through it all SIPC’s commitment remains providing a reliable source of energy to its customers and neighbors.

That means adapting to changing conditions.

“In November 2022, SIPC made the decision to cease operations of Unit 4 (a coal-powered unit) – that’s the tall stack,” Furtak said. “At the same time we immediately purchase power agreement from a solar company. It’s an energy that is provided by solar generation – a carbon free resource.

“There were economic pressures, but we recognized the issues that were coming. It cost a lot of jobs with the closure of those units.”

It’s evident that the model for power generation and distribution is changing … rapidly.

Furtak noted that two pieces of legislation, one state and one federal law, set serious limitations on creating energy by burning fossil fuels. Those laws will eventually dictate future approaches to energy generation and distribution. Furtak expects both laws to be in litigation for a number of years.

At the same time, the demand for energy is growing.

“The thing is, all we’re seeing is growth (in demand) throughout the nation we haven’t seen in generations,” Furtak said.

Together, those facts make putting a long-term plan in practice quite challenging.

“Typically in the industry, it’s a 30-year decision window,” Furtak said. “The problem today is we get rule changes every 2-3 years. The planning horizon has complicated. What is the hot, shiny object today is the dull boring one tomorrow. Do we look out for 10-30 year horizon? Absolutely, but It makes it extremely difficult to long-term plan.”

Conversely, he said SIPC isn’t going anywhere.

“If we aren’t generating power, we’ll be purchasing it,” Furtak said. “We will provide adequate energy to our clients as long as there is energy to be acquired.

LAKE OF EGYPT RULES & REGULATIONS

SOUTHERN ILLINOIS POWER COOPERATIVE

Lake of Egypt is a private lake; its primary purpose being to furnish water for the generation of electricity. The waters and shoreline may be used for recreational purposes subject to the following rules and regulations.

These rules are enforceable by SIPC Lake Patrol. The Illinois Department of Conservation and local law enforcement agencies including the sheriff's departments of Williamson and Johnson counties may also take action for any violations of state law and local ordinances and SPIC reserves the right to seek their assistance and/or to request prosecution of anyone violating state law or local ordinances. See IDNR website for official sundown times.

1. SHORELINE AGREEMENT

A. Shoreline property owners who have a boat dock on or make use of the shoreline abutting their property shall execute a standard Southern Illinois Power Cooperative Shoreline Agreement.

2. ZONING

A. Recreational Area: All areas of Lake of Egypt except "Restricted Areas" are open to boating and fishing.

B. Restricted Area: Areas marked "Restricted" are not open to recreation. Authorized boats only are permitted in these areas.

C. SKIING

• Limited to northern wide area of lake.

• Skiers shall not ski closer than 100 feet from shoreline or buoyline.

• Skiers will ski in counterclockwise direction. This applies to Jet Skis also.

• No skiing after sundown.

3. BOATS – TYPES PROHIBITED

A. Racing type boats.

B. Boats with loud, open or uninhibited exhaust systems.

C. Pontoon boats exceeding 28 feet and hull boats exceeding 20 feet.

D. Boats with toilet, kitchen or lodging facilities.

E. Boats (except when docked) that have closed sidewalls where all occupants are not visible to passing boats.

F. Any boats using full ballast tanks or any other equipment, apparatus, or design for wake surfing.

4. BOATING REGULATIONS

A. All provisions of the Illinois Boat Registration and Safety Act will be enforced on the Lake of Egypt. (See Manual).

B. All boats shall carry a container acceptable for holding litter and refuse and must be emptied in litter barrels, not in lake.

C. All boats will display anchor lights and, when moving, running lights after sundown.

D. Boats will not anchor within 25 feet of lake buoys or buoy line.

E. No one under the influence of alcohol may operate a boat on the Lake of Egypt.

F. Racing is prohibited.

G. 35 miles per hour speed limit.

H. JET SKIS – State Law – same as for boats.

• Not allowed on lake after sundown.

5. FISHING

A. Bass tournaments, fish-offs or other competitive fishing events for prizes will register their events at a marina on Lake of Egypt. No bass tournaments or fish-offs will be allowed from June 1 thru September 30 except on a catch-measure-release basis.

B. NO TROTLINES OR JUGS ALLOWED IN SKI AREA OR COVES OFF THE SKI AREA. ALL TROTLINES AND JUGS MUST HAVE NAME AND ADDRESS ON EACH JUG AND TROTLINE. JUGS AND TROTLINES CANNOT BE PUT IN BEFORE 5:00PM AND MUST BE REMOVED BY 8:00AM.

C. Crappie limited to 30 fish per day per fisherman.

D. Largemouth bass - 4 fish per day < 14" in length and 2 fish > 16" in length.*

E. Walleye 14" minimum length - 6 fish per day.

F. Hybrid striped bass 18" minimum length - 3 fish per day.

G. NO CASTING OF LURES WITHIN 10 FEET OF DOCKS, BOATS OR BOAT HOUSES.

H. Private fish and/or aquatic stocking prohibited.

6. Boaters will not anchor boats for picnicking or fishing within less than 100 feet of shoreline near residence so as not to interfere with the privacy of the homeowner.

7. Swimming is prohibited except at approved beaches marked by buoys. Air mattresses are prohibited outside of beach areas.

8. Skin diving, scuba diving and landing of sea planes in lake are prohibited.

9. The use of kite tubes is prohibited on the lake.

10. Wake surfing is prohibited on the lake.

11. Hunting is not permitted on or over the lake nor is the transportation or discharge of firearms or other weapons permitted on or over the lake.

Allison Hasler has always been passionate about improving the quality of life in rural communities. With over 11 years in the public health field, particularly focused on rural health disparities, Allison's career has spanned various roles in local, county, state, and federal government entities. However, her journey took a transformative turn in 2018 when she and her husband Michael built and operated Dam Near Lake of Egypt Cabins, LLC, a micro cabin business that offers a unique experience for visitors to Southern Illinois. Their venture into the hospitality industry was not their first entrepreneurial effort. In 2008, after moving to Southern Illinois from Newton, IL, a small farming community, Michael launched "American Shoreline," a successful barge company for residential shoreline improvements. By 2015, the business was sold, paving the way for their next venture, Kentucky Lake Boat Charters, the first privately owned pleasure boat chartering company on Kentucky Lake and Lake Barkley. This period was both exhilarating and exhausting, solidifying their love for the hospitality industry and teaching them valuable lessons about business operations and customer satisfaction.

Inspired by their success and the joy they found in hospitality, Allison and Michael decided to sell the yacht and focus on their cabin venture. Allison's vision for Dam Near Lake of Egypt Cabins was clear: create a business she herself would want to frequent, offering chic, modern, and comfortable accommodations. This commitment to quality and guest satisfaction quickly paid off.

By 2020, the couple had expanded their offerings to three micro cabins and one managed lakefront property. Realizing the potential for growth in the short-term rental market, Allison left her full-time role with the City of Marion in 2021 to fully dedicate herself to their property management company, Southern Illinois Vacation Rentals (SIVR). By the end of 2021, SIVR was managing ten properties.

The rapid expansion continued, with SIVR adding more staff, including an assistant manager and broker, by 2022. By the end of that year, the company managed 20 properties. The growth didn't stop there; in 2023, SIVR added a dedicated headquarters and laundry facility. Today, as an S-Corp, SIVR has a CEO, COO, and Chief of Maintenance, managing nearly 40 properties and continuing to grow.

Individually boxed meals are a terrific way to transport and serve a meal on the go without all the fuss of a lot of extra props. In a previous issue I featured a boxed lunch that I designed with boating in mind. I designed the following menu with specific friends and the beach in mind. The thing I really like about individually boxed meals is no matter the occasion you can create something unique and something that makes everyone feel special!

There are some things to keep in mind when preparing food to be served outside. Mayo and products made with mayo are usually frowned upon for outdoor dining because microorganisms can grow rather quickly if food isn’t kept refrigerated. Actually, it’s not really the mayo in and of itself that is the problem. The mayo technically becomes a problem when it is combined with other foods. Since mayo is always combined with other foods then deductively, serving it outside in warm temperatures is something that deserves thought and planning. This is what the FDA has to say about it… The key is to never let your picnic food remain in the “Danger Zone” — between 40 °F and 140 °F — for more than 2 hours, or 1 hour if outdoor temperatures are above 90 °F. This is when bacteria in food can multiply rapidly, and lead to foodborne illness.

Now, the last thing we want to do is make one of our guests sick from foodborne illness but if you follow the rule above all will be good. So, for this menu I prepared everything the same day or the day before the party and stored everything in the refrigerator until I left for the beach. I had the car running with the AC on prior to transporting. We ate as soon as the food arrived. Literally, only 30-45 minutes passed between the food leaving the refrigerator and it being eaten. The boxes could also be put in a cooler with ice packs to prolong the amount of time it could be outside but if you choose this plan be sure to protect the boxes from moisture. This was a super fun meal for everyone…seriously, how often do you get homemade cold, fried chicken and lemon tart at the beach? Be sure to personalize the box by writing a message (I used “Friends don’t let friends beach alone.”) or putting a sticker on top, wrap the box with twine or ribbon, include decorative napkins and don’t forget the plastic eating utensils.

pink lemonade jell-o shots

In support of one friend’s love of things lemon and in celebration of her birthday I wanted to include a fun little element to start the evening off. These Jell-O shots are adorable and were quite the hit.

Ingredients

8 large lemons

1 cup pink lemonade

2 envelopes unflavored gelatin

1 cup vodka

A few drops of pink food coloring

Directions

1. Cut the lemons in half. Using a small spoon (grapefruit spoon works great), hollow out the insides. Place the lemon halves cut side up in a muffin tin.

2. In a small pan add the lemonade. Sprinkle the gelatin on top allowing it to bloom, undisturbed for about 5 minutes. You should see a textured pattern start to form on the top.

3. Place the mixture on low heat. Whisk the mixture until the gelatin dissolves which should take about 5 minutes. Do not let the mixture boil.

4. Remove from the heat and let the mixture cool for about 10 minutes. Stir in the vodka and a few drops of pink food coloring.

5. Pour the mixture into the lemon halves and refrigerate until set, usually about 4 hours.

6. Once they are set take a sharp knife and cut the halves into wedges and serve!

chilled asparagus with lemon vinaigrette

Bring a large pot of lightly salted water to boil. Drop in the asparagus and cook for 2-3 minutes or until just tender but still crisp. Do not overcook. Drain quickly and immediately drop the asparagus into an ice bath for 2 or 3 minutes to cool down.

Coat with lemon vinaigrette. !/4 cup fresh lemon juice, ½ cup of olive oil, kosher salt, coarse ground pepper. Sprinkle asparagus with a little parmesan.

hellmann's the original potato salad

I am quite certain you all have this recipe somewhere but seriously the basic recipe is such a good place to start to get the perfect potato salad. Based on my family’s preferences I make the following tweaks… add an additional 1+ Tablespoon vinegar add an additional ½ teaspoon salt add an additional 1 teaspoon sugar add another ½ cup of celery (love the crunch),

add 1 to 1 ½ teaspoons yellow mustard add 2-3 additional hard-cooked eggs (love lots of eggs)

add a couple of Tablespoons of fresh parsley, chopped sprinkle paprika on top before serving

Ingredients

2 pounds of russet potatoes, peeled and cut into 3/4 -inch chunks (5-6 potatoes)

1 cup Hellmann’s mayonnaise

2 Tablespoons vinegar

1 ½ teaspoons salt

1 teaspoon sugar

¼ teaspoon ground black pepper

1 cup thinly sliced celery

½ cup chopped onion

2 hard-cooked eggs

Directions

1. In a 4-quart saucepot, cover potatoes with water; bring to a boil over medium heat. Reduce heat and simmer 10 minutes or until potatoes are tender. Drain and cool slightly.

2. In a large bowl, combine Hellmann’s Mayonnaise, vinegar, salt, sugar and pepper. Add potatoes, celery, onion and eggs and toss gently.

3. Serve chilled or at room temperature.

Note: I prefer to boil my potatoes whole, peel and then cut them into cubes. I don’t know if it is a better prepping method but I do like the result better.

yummy buttermilk biscuits

These biscuits are simply delicious. The rolling and stacking technique will assure beautiful flakey layers so you definitely don’t want to skip that step. Slather some honey butter on one of these babies and it is like heaven (only with calories, lol).

Ingredients

4 cups all-purpose flour

½ teaspoon baking soda

4 teaspoons baking powder

1 ½ teaspoons kosher salt

2 teaspoons granulated sugar

12 Tablespoons cold unsalted butter, cut into small cubes

4 Tablespoons cold Crisco

1 ½ cup buttermilk

Directions

1. Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper and set aside.

2. In a large bowl, whisk together the flour, baking soda, baking powder, salt, and sugar. Add the cold butter and shortening. Use a pastry blender to mix the butter and shortening into the flour mixture until the butter resembles large peas. Make a well in the center of the flour mixture and pour the buttermilk into the well. Stir just until combined.

3. Turn out the dough onto a lightly floured work surface. Roll or pat the dough into a 1/2 -inch thick square. Using a bench scraper or long knife, cut the dough into 4 squares, stack the squares on top of each other, and roll or pat the dough into a ½=inch thick square. Repeat the cutting, tacking, and rolling process 2 more times.

Finish by rolling the dough into a ¾-inch to 1-inch thick square, depending on how thick you want your biscuits to be.

4. Using your bench scraper or knife cut the biscuits into 16 (2inch) squares. Place the biscuits on the prepared baking sheet, about ½-inch apart, and freeze for 15-20 minutes.

5. Bake the frozen biscuits in the preheated oven until golden brown, about 15 to 18 minutes.

cold fried chicken

I believe the key to the best cold fried chicken is a recipe that will assure it retains some crunch even after its refrigerated. The combination of brining, allowing the chicken to dry a bit before frying and allowing it to cool completely down after frying and before refrigerating all contribute to the overall crunchiness of the chicken.

Ingredients

1 quart buttermilk

Kosher salt

Black pepper

2 sprigs of parsley

2 sprigs of thyme

4 cloves of garlic

1 onion sliced

3 lbs. chicken legs (I think they are easiest to eat at a picnic, but you can use any chicken pieces you like)

3 cups all-purpose flour

1 Tablespoon paprika

2 teaspoons onion powder

2 teaspoons garlic powder

Pinch of cayenne pepper (optional)

48 oz. vegetable shortening (I use Crisco…because my Momma said so.)

Dill pickle slices, hot sauce, i.e.

Directions

1. In a large bowl, whisk the buttermilk with 2 teaspoons of salt and 2 teaspoons of pepper. Add the chicken pieces, the parsley, thyme, garlic and onion. Cover with plastic wrap and refrigerate overnight. Do not refrigerate more than 24 hours…the buttermilk will start to breakdown the proteins and the chicken will become mushy.

2. In another large bowl, whisk the flour, paprika, onion powder, garlic powder, cayenne (optional) with 1 Tablespoon of salt and 2 teaspoons of pepper. Set aside.

3. Once your chicken is finished brining remove the chicken pieces allowing the buttermilk mixture to cling to the chicken. One piece at a time dredge them in the flour mixture. Place the floured pieces on a rack to dry. Let dry for 20-30 minutes.

4. While chicken is drying line a large baking sheet with paper towel and set a rack on top. In a large frying pan (cast iron works great) heat the shortening to 325-350 degrees F. Fry the chicken in batches being careful not to overcrowd. Cook the first side with the lid on and the second side with the lid off. Your chicken should be golden brown and an instant-read thermometer at the thickest piece should register 155-160 degrees (carryover cooking will get you to the perfect 165 degrees). Transfer the chicken to the rack and let cool for about an hour and a half or two hours. Refrigerate.

Today’s homes have as much thought and style brought to the outdoor areas as to their interiors. Patios, porches, and sunrooms all offer homeowners a peaceful sanctuary as a prescription for their stressful lives. Creating your perfect outdoor space will be the result of the successful combination of many design elements: landscaping, stonework, carpentry, furnishings, lighting and accessories. Careful pre-planning will be the key to the creation of your personal sanctuary, so begin with creating your personal wish list.

Start your plan with a few simple questions…How many seating areas do you want and have room for in your area? Do you plan to frequently entertain outdoors? Do you spend time outdoors in the evenings simply relaxing? Do you want a dining table as part of the design? Do you want a TV as part of the design? All of these questions will be the starting point of your design.

Next on the wish list will be comfortable furniture. This should be the most important element in your design. Many outdoor furnishings have been manufactured to withstand all that Mother Nature can bestow. The age of folding, vinyl

strapped furniture is definitely now obsolete. Many furniture pieces of today look identical to indoor furniture but have been constructed and designed to stand up to all the outdoor elements. Just as with interior furniture, outdoor furniture comes in many levels of quality.

In a sunroom, the furniture only needs to be sun and fade resistant. If on the other hand you are planning a patio with little to no cover, you will need outdoor furniture tailored to harsh sun, wind, and other outdoor elements. Manufactures have categories such as “Outdoor Limited Exposure” and “Outdoor Weatherproof.”

Speaking of outdoor drapery, Sunbrella and other fabrics made for outdoor use can be used to soften an area or provide shade as the sun moves. There are outdoor blinds that also offer

protection from intense sun. These outdoor shades are made to allow wind to pass through while being tethered so they do not flap in the wind.

Just as you would indoors, you will want exterior lighting and perhaps an area rug or two. Area rugs made for exterior use are woven with special yarns that can withstand rain and dirt, much like Sunbrella fabrics.

So, after your wish list is complete, it is time to combine all the elements to create your outdoor dream area. Taking time to plan and making an investment in design will make your outdoor personal sanctuary truly your own.

Spring Crappie Fishing on Lake of Egypt

Springtime crappie fishing is upon us and there is no better time than Spring on Lake of Egypt. Crappie Fishing in the Spring is fun and rewarding especially with the proper techniques and equipment. Spawning starts when the water temperatures hit the 56 to 65 degrees area. For Lake of Egypt that tends to be in April. Finding fish during the prespawn/spawn time frame typically leads to large fish and a live well full of great eating. During this time crappie will move into shallow water areas where the water temperature rise rapidly.

As the water warms up crappie tend to spawn in 1-6 foot of water, usually in the backs of protected coves, shallow island areas, under overhanging banks, on or near flooded brush and timber, or vegetation. Don’t be fooled however as all spawning does not take place up shallow. That’s right they spawn everywhere and some of your bigger fish will stay out in deeper water this time of year.

As crappie move up to the spawning areas techniques vary. Most will cast a curly jig up against shorelines with a slow retrieval back, while others might choose to use a float with

a minnow or plastic as a bait. Regardless of the method its usually a moving game. Cover shoreline. It’s the key. You will hit a hot pocket and then move on to the next. At the end of the day, you will have a live well full of great fish.

Anglers have a lot of equipment to choose from these days. But overall, this is a casting game. I love using my 3 Pound fishing rods and tackle (www.3poundfishing.com). If I plan on casting all day, I will utilize The Kings Tails, a dynamic 8-footer that is sure to please every angler. If I choose to go deeper or think I might want to hit some piles as well there is no better rod, then the HAMMER10. This 10-footer allows you to set the hook immediately and feel the lightest of bites.

All colors reign supreme this time of year as the fish won’t be picky. Cast close to the bank and retrieve. If you choose a minnow setup with a float let it sit and then retrieve. If you like plastics, cast and retrieve until your hearts content. I have done many tests to try to figure out the best method, I would say they are equal regarding fish caught. It really is angler choice this time of year.

Of course, I guide on the lake, so I do recommend taking a trip with 3 Pound Fishing Guide Service. It’s the easiest way to get an idea on the techniques and areas in which you want to concentrate on. Although my boat is one of the

most technological boats in the industry, you don’t need all the equipment during this time frame. A Jon boat with no electronics can get it done as well. That’s what makes the spawn so much fun. But if you want the fast pass to success, a guide trip will get your spawn fishing experience on the lake off on the right foot.

What was underway at the Lake of Egypt on April 1, 1992, and April 21, 1992?

According to the 'Round the Lake column in the local newspaper,

The Goreville Gazette: "Another not-so-great weekend for fishing tournaments here on the lake, with a Sunday downpour. However, in spite of the rain and cold weather, there were sixteen entries in the West County Hooksetters Club Tournament, starting from the Egyptian Hills Marina. Mo list of winners was available when I called.

Bass are moving into the shallows and jigs and spinner baits are your best

bet for catching them, said one of the experts. Another one, a crappie catcher, said they are being caught at depths of two feet. "They are starting to shallow up. Catch them with minnows and jigs.",

I continued to hear a tapping, long after I stopped typing, on a recent early morning. I thought I was going bonkers or had a ghost in my office. After searching the house, I realized it was a woodpecker attacking the garage with a rat-a-tat-tat and a vengeance.

The wildlife is taking over out here. A blue jay couple is building a nest in the hickory tree, just beyond our kitchen window. Someone in the neighborhood has a flock of guineas, including two white ones, which not for good brakes on my car, would have been goners on a recent day.

It's a small world! Neighbors, George and Mary Thiel recently met an uncle and aunt of mine in a store in Vienna, Ray and Shirley Parr of Cypress.

The Thiels recently enjoyed having their daughter and her family down from Chicago, Tina and Joe Musolino, Joey and Bobby. They spent five days, and it was very cold for fishing, but Joey did catch a little one. Also visiting the Thiels, lately, were his brothers, Roy and Robert. They all enjoyed St.

Patrick's Day at Mary's brother and wife, Larry and Doris Weber's for a dinner of corned beef and cabbage.

The Webers visited in Salem, recently, bringing back his mother, Ellen Weber, home with them. where she enjoyed visiting in the Thiel and Weber homes here in Crestwood Estates.

Marilyn Jones, over in Cedar Ridge, has been working for the Arthritis Foundation Campaign for several weeks. Anyone who would like to contribute can call her or the Channel 3 Telethon next weekend.

Called "Winter Texans" by the locals, visitors were made to feel veey welcome said Edna and there were many activities that kept them busy.

Not too much is gomg on at the country club right now, with the chilly and rainy weather, according to Betty Jo Faulkner, manager. The leagues will begin in May and the senior members will begin playing in April. The first tournament will be the "Guys and Dolls" in June.

A Neighborhood Watch is being organized in Clifty Bay with the assistance of the Williamson County Sheriff's Department. Residents involved in the new program will be trained. Anyone interested in volunteering can call 997-6541.

Ever notice on the microwave popcorn package the warning about re-heating the popcorn. I have ignored that warning for years, but after a fire in my microwave I have promised .my favorite husband to never do it again. The interior of the microwave was totally destroyed and the house smells atrocious. And, not one smoke alarm sounded. Yes, we had to buy a new microwave.

An appointment with our tax accountant on Saturday was not the highlight of the week. Ouch!

Happy Birthday to Lelamd Smith, who turned 74 on March 29, and with his wife, Frances, and a multitude of neighbors. enjoyed Sunday dinner at Kew Gardens.

Our son, Joel, and his two boys, Matt and Luke, dropped in on Tuesday to swap some carpenter work for supper, a great swap for us."

And, now to April 21, when the weather continues to be the main topic of conversation, as it constantly changes, with a succession of rainy days, followed by one or two filled with sunshine, then back to rain, and last week that turned to sleet, then rain and more rain.

Garden making, lawn mowing, and washing windows are all projects that have been put on hold until everything dries out. Although some brave souls have been seen attempting to mow.

The Eagle Point Bay Association is holding a birthday table potluck on April 24 at 7:30 p.m. with each table decorated in a theme.

Pat Kavanaugh of Chicago who was visiting her mother, Mary Ventura of Eagle Point Bay, won a lipstick for having the widest smile, Each lady present was made more beautiful and a good time was had by all.

Another lake event on our social calendar was the rummage sale over at Eagle Point Bay, where I discovered a basketful of treasures, which I snuck in our house, without showing them to my favorite husband, who has threatened to have me committed if I don't stop bringing in more junk.

Young Andrew Jones came by on Saturday morning collecting for the Arthritis Foundation, a very worthy cause. amd by a very polite young man. His mom, Marilyn, broke her leg during the last snow, while sledding with her two sons and is now hobbling while wearing a brace. Andrew's dad, Terry, suffered a heart attack a few weeks ago and is also on the mend.

The lake water is about as high as it gets and continues spilling over the spillway, taking with it some of the smaller stripers and other fish. The water is also muddy in certain areas, but this helps the crappie fishermen. Or, so I was told by one of our fishing experts over at the marina.

Crappie can be caught near the banks with minnows. Bass can be found in the shallows with spinner baits and rat-l-traps.

Catfish have been caught lately, but with no outstanding sizes.

I have spotted fishermen wearing yellow slickers, ski masks, gloves, and other apparel out in the fickle weather of last week, as well as short sleeves over the last weekend.

Dragging my favorite husband along, I went antiquing in the Sesser/Rend Lake area on Saturday afternoon, stopping at the Southern Illinois Marketplace.

Guests at our house were scarce last week with the exception of kids and grands. But, Sunday brought in a parade of company, some with fishing poles. And, they all enjoyed the pie and coffee.

Different birds are seen each day and one morning I spotted a large flock of tiny sparrows that I could identify as chipping sparrows, using binoculars and a bird book.

The plastic owl we set out last week is apparently workimg to scare the woodpeckers away.

Sinbad, our great hunter cat, delivered his latest catch to the front door, a tiny baby mole."

And so it was, back in April, 1991, at the beautiful Lake of Egypt.

MidAmerica Plastic Surgery Patient Testimony with Avéli

At MidAmerica Plastic Surgery, we are lucky to have such amazing patients that continue to share their journey with us! At the beginning of 2024, we focused on the popular phrase, “new year, new you.” We are thrilled to say that we have been able to help several individuals accomplish the “new you” they were dreaming of! In this article, you will get a special look inside our patient’s treatment diary throughout their Avéli treatment. Each question was developed and sent to our patients with the goal of educating others who might be interested.

Q. Can you briefly summarize your goals and describe any factors that led to this decision for treatment?

A. I wanted an option to reduce the appearance of some of my cellulite- primarily some deeper ones that were located on my buttocks. Compared to creams or lasers which logically didn’t make sense in terms of the guarantees they make, this seemed like the only option that could actually treat my concern.

Q. Can you briefly describe your experience at your consultation?

A. Unfortunately, Dr. Diederich did not perform my consultation.* With that being said, I had questions and concerns post procedure that he readily answered.

Q. Tell me about your healing process after your procedure.

A. Immediately following the procedure the most notable concern I had was leaking. By the evening, I was quite sore in the buttocks and back of my thighs. Going to the restroom was the most difficult- the pressure a toilet seat places on those areas was incredibly uncomfortable. However, with that being said, taking only ibuprofen was more than sufficient to deal with the pain! Because of the compression garments and such, I didn’t really pay attention to bruising until the next day - it was a situation of it looked much worse than it felt. Day two, I still appeared to be leaking, but later discovered it was because my lipofoam was soaked and had never dried. Due to this, at the end of the day I did my best to dry out the lipofoam before I used it with the compression garments again. Once I did this, I didn’t have any soaking through clothes or garments and any leaking could be managed with some gauze pads. I continued

to have soreness - I can’t recall for how long - but by day four I wasn’t taking ibuprofen. Sitting in certain types of seating - such as a toilet - continued to be uncomfortable because of pressure points. By one week, the bruising had *drastically* improved. I’m literally shocked at how much it had gone down based on how bruised I was the week before.

Q. What are you most excited about moving forward?

A. Having a smoother appearance overall. This procedure removed my large butt dimple! It’s not something everyone sees, but just the fact that I can see it’s gone has been a great confidence boost.

Q. Do you have any tips or tricks to share with other patients during the process?

A. Purchase legitimate compression garments! Trying to use workout pants or biker shorts will just make it more difficult to work with the lipofoam and to take off and on. While the practice will most likely give you some pads to use in your car on your way home, I’d recommend having some incontinence pads available for the first couple of days for car, home, and

work if you decided to go back right away. The first couple of times when you are either changing gauze pads or going to the restroom, just make sure you don’t have something on the floor that you don’t want to stain as there could be some leaking; I always kept some paper towels nearby so I could have easy cleanup.

By one week, the bruising had *drastically* improved.

6 Tips to Avoid Solar Scams

Illinois is currently one of the best markets in the United States. Not

only do residents have access to the federal tax credit that makes solar a viable option; Illinois also has its own incentive, with legislation protecting the citizens' right to install solar on their property.

The positives of the incentive and legal protections have a downside; many businesses are drawn to sell the product here, including some with low standards. Homeowners are inundated with high pressure sales tactics. It seems some will go to any length to get a homeowner to make a quick decision, saying things like, ‘this deal is only available now,’ and the like.

There have been reports of unscrupulous sales teams misrepresenting themselves as the utility to gain unwarranted trust. At least one utility has spoken out that they don’t sell solar, nor do they endorse a specific company.

In addition to this type of misrepresentation, some solar companies are also not meeting the requirements of the utilities. When this happens, the homeowner has to fight, and pay, to have their systems interconnected. The most extreme situations involve hiring a second company to file permits and finalize work, adding additional costs beyond what was contracted in order to limit the cost of having a non-operational PV system.

What can a homeowner do to protect themselves?

1. Go Local. Even better if the company has a brick and mortar facility you can visit. This removes the risk of not even being able to contact

the company, in addition to all the known benefits to shopping locally.

2. Get multiple quotes. While price isn’t the only important factor, this can help the homeowner avoid overpaying. It is not uncommon for folks to be pressured into an overpriced system (40-100% more).

3. Expect an informative consultation. The homeowner should know how the system will work, how to take advantage of incentives, and the terms of warranties. Look for a company willing to put in effort to ensure that the client is informed.

4. Check the reviews. Frequently, the companies that are bad players have horrid reputations online. This can quickly eliminate unwanted options and allow more time to focus on reputable installers. Check multiple sites and sort by negative reviews.

5. Ask for a referral. Credible companies that are committed to customer satisfaction will be able to put a prospective customer in touch with one that is in their area or on their utility or has a similar proposed system. This can provide confidence based on experience.

6. Reach out to the utility. Has the company been successful in getting systems online in a timely and professional manner. While a utility isn’t likely to guide a client to a specific installer, it may be obvious how they feel about a bad player.
