Editor’s Letter

On Setting The Right Goals I was looking through the list of goals I’ve set for myself last year, the ones I’ve checked done, the ones hanging still on the list; then I realized there were a couple of goals carried over from the year before, or maybe a year earlier as well. I paused there for a while and I asked myself, why haven’t I managed to reach these two goals, not just once but on two consecutive years? This has brought me to two points, commitment, and honesty with oneself. On the very first day of the year, we sit down with a pen and paper listing down the goals we want to reach for the year. Rather filled with excitement to accept new challenges, we add one goal, then the other, and so on. But how many of these goals are really set from the heart? From all the success stories we listen to from people around us, either on talk shows, social media or others, our goals have become standardized and to some certain extent have been narrowed down to, “save more money”, “get promoted” “revamp the house”, “upgrade the car” , so on and so forth. We set these goals because we were made to believe that this is what accomplishment should look like. But again is that really what your heart desires? When you begin to set your new year’s resolution, think about impressing yourself before anyone else. Think about what makes you truly happy. Your new year’s resolution shouldn’t always be a long list of big, massive dreams. It doesn’t have to be only about the savings, the new house, the car, and the job promotions, because life is filled with so many simple pleasures. Doing acts of kindness, making your loved ones happy, reading new books, or even something as simple as growing a new plant or watching the sunrise and morning walks can be listed down as goals. And no, it doesn’t make you little, it doesn’t make you small, if it is what nurtures your heart and brings you inner joy, then be it, let that be your new year’s resolution. This very year, before you hold down your pen and list the goals, listen to your heart first. Is this what you long for? Is this what you are wholeheartedly willing to commit to? Is that what makes you happy and content? The answers will lead the way, the heart will lead the way. It is only when you’re honest enough with yourself about the real goals you aim for, that you will be able to reach them.

IDIA: THE ART OF WELLNESS ARCHITECTURE We sat for a delightful talk with Ehab Mokhtar, Founder and Managing Director of IDIA to learn more about the firm’s holistic concept. Upon graduation from the Faculty of Architecture at Cairo University Ehab worked with Egyptian architectural masters Gamal Bakry, Abdil Halim Ibrahim, and Shehab Mazhar following which in 92 he established his own design firm. An eternal student Ehab continued his studies attaining degrees from The American University in Cairo, Harvard, the Massachusetts Institute of Technology (MIT), and INSEAD. Under Ehabs direction, IDIA designed and built landmark projects for Alex Bank, The Industrial Modernization Center, The Ministry of Culture, and The American University in Cairo.

FIRST, WE WOULD LIKE TO KNOW ABOUT YOUR JOURNEY IN DESIGN INDUSTRY AND THE STORY BEHIND WHICH IDIA WAS FOUNDED Design is my passion, in founding IDIA I wanted to create something that reflects that passion and approach to design. I wanted a culture comprised of visionaries who do not fear trying something new, pushing boundaries and exploring new possibilities . COULD YOU PLEASE TELL US ABOUT YOUR PHILOSOPHY IN DESIGN? I focus more on people and their experience rather than the purely physical aspect of design. That’s a guiding concept for me. Allow me to explain. In our latest project we incorporated a rather novel design concept known as “Wellness Architecture”. While the concept itself does not deviate radically from our previous approach of incorporating environmentally friendly aspects into our design the decision to proceed with wellness architecture encapsulates our approach to design. In studying our project, which was a compound in Sokhna, we began with a survey, 90% of the people surveyed wanted a space that would allow them to relax and be healthy. This is no surprise given we live in one of the most stressful cities in the world. From this we began researching different options that would allow us to not only

satisfy this need but ensure that in its implementation we would develop something that incorporates cost consciousness, because obviously it needed to be affordable, along with sustainability. It’s a heavy list. The sum of it is, that in the end the space you choose is not only about how it looks but more significantly does it speak to you on a number of levels. BESIDES DESIGN, WHAT OTHER SERVICES DOES IDIA OFFER? We are an integrated design firm and as such offer a wide range of services that go beyond the conventional architectural and interior design to include product and service innovation, and project control. WHAT SETS IDIA APART FROM OTHER FIRMS IN THE SAME INDUSTRY? We are definitely not one to follow the crowd. I believe our strength lies in truly looking for and trying to satisfy what people need, not necessarily what they want, that is the core of our success. This human centered holistic approach, along with strong technical background translate into a well-engineered product. When I started this company 25 years ago, it was about making people happy by providing healthier lifestyles in their homes. I think this still holds true today. WHICH IS MORE IMPORTANT FOR WEIGHT LOSS?

For long years, the general rule of weight loss was “calories out” more than “calories in.” Just as simple as that. However, with the never-ending weight-loss trends, it’s hard to tell if this rule actually works or not, especially that some diets require you to eliminate a whole food group altogether, leaving you wondering if that’s what you need to know. This is exactly when macros are what you need to determine what you need to lose weight. WHAT ARE MACROS AND WHY DO THEY MATTER? Macros is short for macronutrients, which are protein, fats, and carbohydrates. Almost every food on the planet is divided up into a complex combination of these three macros. Moreover, macros are actually how calories are made up. Yet, not all calories are created the same; that’s why counting calories alone may not work; besides, it hardly tells if your diet is well-balanced or not. You can eat, for example, 2000 calories a day; if they all come from carb-loaded food without including whole foods, then you’re losing loads of the nutrients that your body needs to function properly. This is when you actually need to bear in mind your macros consumption. THEN, WHICH IS MORE IMPORTANT WHEN IT COMES TO WEIGHT LOSS? The short answer is, both are quite significant. So even if you’re careful with what you consume in terms oc macronutrients, you still need to take care of your calories consumption. Even those who eat clean and avoid processed food completely can still gain weight if they’re consuming more calories than their body actually needs. This could actually be your best bet because, unlike restrictive diets, you’re allowed to eat all you want as long as you factor it into your target macros and calories. You can even budget your calories across your week, which gives you spaces to eat more on some days, but keep it down at others without messing up your plan.

WHERE DO YOU FIND YOUR INSPIRATION IN CREATING THE MENU? Creating palatable dishes depends 60% on the availability of products and 40% on the chef ’s talent and knowledge. I believe that a meticulous selection of products is essential to create exquisite dishes of high quality and distinctive taste. So, it depends on the availability of products according to the season that I find my inspiration to create unique fusion dishes.

COULD YOU TELL US HOW YOU REACHED WHERE YOU ARE TODAY AND WHAT INSPIRED YOU TO FOLLOW A CAREER AS A CHEF? My culinary passion is something I took after my father; he was also a chef. I used to watch him cook and accompany him while he shop for the products, and at that point I realized I have a passion for cooking and decided to become a chef. My father then advised me to join a culinary school to study the basics and build a strong foundation in that field. I joined 3-Star Michelin in France, and I was really excited to see how things work in the kitchen. I learned what’s it like to work with a team and chefs, how to choose good quality products and create the right taste. From here the story began, at first started working at restaurants and later on I decided to join hotels and hospitality industry because it is there where you learn beyond the culinary skills, which is how to manage a team. YOU’VE WORKED IN SEVERAL COUNTRIES WITH DIFFERENT CULTURES. WHAT DID THIS ADD TO YOU AS A CHEF? Actually, I love to take the best from every culture. If a chef doesn’t try to understand the culture of a certain country, it will be challenging to work with and manage his team in the kitchen. I’ve worked in several regions across the world, from east to west, each with its own

We are keen on indulging our guests in a unique dining experience where they can relish the authentic taste and culture of each cuisine. Our objective is to deliver quality and, and to achieve that we work with the best chefs from different countries to bring their expertise and masterful skill in creating fine dishes. WHAT IS YOUR CULINARY PHILOSOPHY? For chef to different, first he needs to love what he does. The culinary talent is all about passion. IN YOUR OPINION, WHAT ARE THE ATTRIBUTES OF A SUCCESSFUL EXECUTIVE CHEF? A chef cannot be successful without his team. Simply, the chef can’t succeed in kitchen operations without a good team. For a chef it is important not only to select the right calibers, but also to invest in them by offering a continuous learning exposure and passing your experience and knowledge to them. With the right attitude bringing together friendliness and professionalism, a chef will create a happy and productive working environment for his team and will reach impressive outcomes together. HYPE UP WITH SOME POSITIVE MUSIC This one may be news to some people, but ,actually, happy tunes were proven to elevate your mood, according to a study on the psychology of music. This should be great news to music lovers. So, start your day by plugging in your earphones and play your favorite upbeat music and let it work its magic on your mood. MAKE A WORKSPACE MAKEOVER A messy environment can leave you feeling stressed and jittery. It is always recommended to declutter your surrounding environment to avoid feeling frazzled and at unease. Besides, a chaotic place send signals to the brain that work keeps piling up and will never get done. Instead, keep your desk organized, make your stuff easy to locate, and remove any dirty mug that may be lying around. That way you don’t feel frustrated every time you glance at your desk.

HEALTHY PUMPKIN BREAKFAST RECIPES 5-INGREDIENT PUMPKIN PROTEIN PANCAKES INGREDIENTS • 2 Tbsp Butter, for Frying • 8 Egg Whites • 1 Cup Pumpkin Puree • 2 Cups Vanilla Protein Powder (I Used Whey Protein) • 1 Tsp Pumpkin Spice (or A Mix of Cinnamon, Nutmeg & Ginger) • 1 Tsp Baking Powder INSTRUCTIONS 1. In a large bowl, mix all ingredients for pancakes together until just combined. 2. Heat butter in a large frying pan over medium heat. Add a small spoonful of pancake mixture to test, making sure skillet is hot enough to add pancake batter. Once bottom of tester pancake starts to form, flip and then remove from heat. 3. Add pancake batter by large ladle scoop, cooking four pancakes at a time and flipping once a bottom starts to form, about 5 minutes. 4. Freeze pancakes up to 2 months, reheating in microwave on high for 1 1/2 to 2 minutes or reheating in the toaster. Top with optional toppings and serve! CREAMY VEGAN PUMPKIN QUINOA BREAKFAST INGREDIENTS • 1 1/2 Cup Uncooked Quinoa (Rinsed) • 12 Ounces Almond Milk • 8 Ounces Of Water • 1 Cup To 1 1/2 C Pumpkin Puree (A Few Tbsp For Topping As Well) • 1 Tbsp Coconut Oil • 1/3 Cup Additional Coconut Cream Or Coconut Milk • 1/3 Cup Unsweetened Shredded Coconut • 1 Tsp Cinnamon (And Some For Topping) • 1/2 Tsp Cinnamon • 4 Tbsp Maple Syrup Or Honey • Any Additional Toppings Such As Nuts, Gluten Free Oats Or Granola, Coconut Sugar, Etc. • Optional 2–3 Tbsp Of Coconut Sugar Or Raw Sugar If You Want It Sweeter • Optional Pinch Of Ground Ginger INSTRUCTIONS 1. If you are using a rice cooker, rinse quinoa and place in rice cooker. Add milk and water and press rice setting. 2. If you are making this on a stove top, bring water and milk to a light boil then add quinoa and cover on low to medium low. 3. About half way through cooking (8 or 9 minutes) stir in your pumpkin puree. Cover again and wait till it’s cooked and quinoa is fluffy (about another 8-10 minutes or so). 4. Turn off rice cooker or put on warm. If using stove top, turn off heat and keep it on the burner. 5. Add in your coconut oil, liquid coconut cream (or canned coconut milk), and spices. Mix thoroughly 6. Add in your shredded coconut and maple syrup. 7. Spoon into bowls and top with 1 tbsp additional pumpkin and more cream or coconut milk for extra creaminess If you’d like. 8. Sprinkle with additional cinnamon. Garnish with toppings of choice; granola, nuts, etc.

RELATIONSHIP EXPECTATIONS: REALISTIC VS. UNDERMINING

It is a common human trait to set expectations, but how much of expectations is allowed, and when do expectations reach an unhealthy and unrealistic level? In relationships, one expects from their partner to meet their needs on every area of existence from intellectual growth, financial stability, and living habits, to emotional and sexual compatability. The problems usually arise when our needs are not met in accordance with the metric of our expectations. In other words, when our partners attempts to meet our needs their way and within their capabilities while we have set higher expectations in their course of actions, we start to feel disappointed. Many argue that in relationships, the lower the expectations, the less the arguments and conflicts. Truth is. every relationship should be built on solid pillars; hence, partners seeking affection, kindness, respect, trust, communication, time, and consideration in one another are in fact not setting high expectations, but rather seeking the fundamentals. When it comes to expectations, it is a set of perceptions and demands that if not met the way we want, we begin to perceive our partners as not investing enough in the relationship, while in fact they may be trying to meet our needs, their own way. The problem with expectation lies less on what we seek and more on whether our partners meet these expectations according to our judgement, and at this point expectations can be harmful to the relationship. So, how can we identify unrealistic expectactions? 38 | DECEMBER 2019

EXPECTING MORE DEPENDENCY ON ONE ANOTHER One of the inherited misconceptions about relationships is that a happy couple should be doing every activity together and meet at every area of interest. As many may think that happy couples are those who do everything together, it is on the contrary. The most stable couples are those who are able to manage one another’s differences and understand that independence doesn’t threaten the relationship’s stability. Expecting your partner to spend all their free time with you isn’t only


on our own. Moreover, maintaining a certain level of independence in a relationship creates a healthy amount of distance and eventually results in a desire for closeness and appreciating your quality time together.

EXPECTING YOUR PARTNER TO CHANGE Accepting differences is crucial, so long as these differences don’t cause conflict in the core values of one another. Truth is, it is highly unlikely that two people can totally match on all areas of interest. When you try to force change on your partner in terms of their interests, habits, preferences, and the type of activities you engage in together, even if they try, the change is going to be temporary. One of the biggest mistakes we do when choosing a partner is that we rush into things turning a blind eye to some of their habitual traits thinking that later we can change them. The question is, do we really accept our partners with all their flaws as we claim? Or do we expect them to be the person we picture in mind and set our expectations accordingly? Bitterness and relationship gaps begin to grow bigger when we start blaming our partners for not being someone they never were before.

However, expecting your partner to be your savior or the healer of your past traumas is not fair. Most of us carry heavy baggage from the past, whether childhood issues that had stemmed from a flawed upbringing, relationship traumas, fear of loss, and a lot more. Projecting issues from the past on your partner and expecting them to be the savior will lead them to feel emotionally drained positioning themselves as inadequate partners. Healing is a journey that you alone can take the lead of. Your partner, on the other hand can be your supporter, to make the road easier for you, but they shouldn’t be handled the responsibility of the process. It is in setting the right expectations, and communicating openly and with utmost transperency about one another’s needs that both of you will pave the way for a healthier and a happier relationship. How many times have you walked down a grocery store and come across a scene where a child begins to throw a tantrum for wanting to own something from the shelf and find the parent yielding so easily? Several times, we bet! In this day and age, we come to witness a growing generation of teenagers with a false sense of entitlement. This behavior is rooted back in their childhood upbringing and the problem starts at the parents’ end. It usually begins with over-praising, overpampering, and over-indulging, giving the kids way much more than they actually need. Elaborated further, children begin to get a false sense of entitlement when they’re overly praised or rewarded for tasks that should be done as a habitual daily routine. However, it is important to clarify that there is nothing wrong with rewards, but consider rewards only for achievements instead of mediocre efforts. As a parent, you may not be paying much attention to it now, but a sentence as short and brief as “I want it now.” should raise many flags. A child with a false sense of entitlement grows up to be an ungrateful partner or an employee arguing over a promotion they didn’t work hard enough to earn it. Hence, this issue if not addressed at an early age, will develop into serious personality disorders at a later age of maturity. FIRST, HOW DO YOU SPOT SIGNS OF ENTITLEMENT ISSUES? 1.They expect rewards for good behavior. 2.Only concerned about themselves and barely considerate of the needs of others. 3.Lack of contentment and always wanting more. 4.Feel like the rules don’t apply to them. IT’S TIME FOR A CHANGE IN APPROACH No matter how deeply rooted their sense of entitlement; it is never too late to take corrective action. Start with yourself as a parent. Ask yourself what core values you wish your child to grow with. Following these simple steps will help you deal with your child’s entitlement issues. 1. Teach them to practice gratitude. Start by encouraging them to write thank you notes whenever they receive gifts or nice gestures from family members. This can later develop into teaching them to count their blessings. 2. Set clear limits with your kids. Be assertive when the answer is “No”, make it clear enough to them and stand firm on your response. Also as a parent, don’t feel you need to give them everything they ask for. 3. Teach them to be considerate and to think beyond themselves. An entitled child barely thinks beyond their needs or takes into consideration the needs of other. Start by helping them donating their old toys or clothes. In doing so, they learn to become caring, compassionate and become givers. 4. Teach them that to earn something big, they need to work hard for it. When a kid grows rewarded for every single action or task no matter how small, they don’t develop a sense of accomplishment and accordingly their perception of success is going to be flawed.

INTERVIEW WITH CHEF VIKRAM GHORPADE

Known for his dedication to placing authentic Indian dining on Cairo’s culinary map, Vikram Ghorpade is widely regarded as one of Cairo’s most distinguished chefs. In his interview, chef Vikram opens up about his journey and experiences. He spent 20 years mastering his craft between Hyderabad, Goa, Mumbai and Cairo with some of the biggest names in the industry, before joining Indira in Holiday Inn Cairo Citystars to enhance Cairo’s Indian food scene and continue to spice and amaze. 1. WHAT INSPIRED YOU TO PURSUE COOKING PROFESSIONALLY? My parents appreciated family gatherings around good food, a tradition which encouraged me to pursue the profession of cooking so my family gatherings were the key to this profession; my parents valued our daily gatherings around food as it creates a feeling of warmth and happiness. So I grew up aiming to spread this warm feeling among people. This profession helps you to make people happier as food is the center point of many family gatherings, when everyone sits together at the table and shares life and every celebration of togetherness. It is the most inspiring part of my profession. In addition, this profession takes a lot of creativity and innovation. 2. WHAT INDIRA IS ALL ABOUT? Indira opened doors in 2008, and was one of the pioneers to introduce Indian cuisine created with authentic cooking techniques in Cairo. Indira’s philosophy is to go beyond just delicious food that attracts people. Guest’s experience is the most important thing for us. It’s not only about food or service; we offer a complete environment that brings an authentic Indian dining experience to Cairo. Nowadays people go out not only for food, but for experience. Moreover, as Indira is located in a hotel like Holiday Inn Cairo Citystars, guests have a lot of expectations due to the elevated level of service the hotel offers. We try to fulfill this experience through a continuous development of our chefs and staff. Consequently this is reflected in our goal which is providing an authentic delightful dining

experience. Eventually we care about keeping our Indian dining experience simple and true. We also prepare food according to guest’s taste using a variety of spices and flavours. 3. WHAT INSPIRES YOUR COOKING? As I mentioned earlier, I grew up in an environment where family gatherings around good food was valued, this was a great inspiration for me, yet what currently inspires my cooking styles is guests’ satisfaction. I like to see Indira’s guests enjoying their favorite dishes with a smile on their faces. I am always keen on creating a warm, simple and authentic environment which attracts guests, not to mention great food. 4. WHAT ARE YOUR FAVORITE INGREDIENTS? I love using saffron, cardamom, lamb and local (baladi chicken); they are very tasty but not easy to find. 5. WHAT DIFFERENTIATES INDIRA FROM ANY OTHER INDIAN RESTAURANT IN TOWN? Using fresh high quality ingredients, our special presentation, authentic flavours and sincere personal interaction with our guests are what really distinguish Indira. Indira is a great restaurant that brings to the forefront different techniques and elements of Indian cooking. Creating awareness about Indian dishes in Cairo has been most challenging and rewarding. Moreover, Indira is one of the unique restaurants in Egypt which specializes in truly authentic Indian cuisine.
