I

t started with that dress when Liz Hurley burst on to front pages around the globe in 1994. The occasion was the premiere of Four Weddings and a Funeral in London and Liz arrived on the arm of then boyfriend Hugh Grant in an achingly tight, split to the waist, black Versace dress seemingly held together with giant gold safety pins. Strangely she had no idea of how she looked before she set off to sizzle on the red carpet. “I couldn’t see much as I was living in a very small flat with Hugh, and we didn’t have a full length mirror. I remember wriggling around a bit to check nothing shifted, which it didn’t, and then running out the door.” The daughter of Angela, a school teacher mother, and father Roy, a Major in the British Army, she had a proper English upbringing and speaks with great love for her late father. “He was the most loyal, loving and straight up man ever and always punctual. I hope I’ve inherited a few of those characteristics - I’m always on time, at least.” Her early career choice was dance but her focus shifted to acting. Strangely for someone who is lauded as one of the world’s great beauties, her foray into modelling didn’t eventuate until she was asked at 29 years of age by Estée Lauder. “They approached me out of the blue and asked me to work for them. I was staggered, as I’d never modelled before in my life. Now I’m in my seventeenth year and I still love working for them. They’ve been very loyal and supportive to me and stuck with me through thick and thin. They also taught me to make an effort with my appearance and now it’s a habit. I don’t look glamorous every day as I work and have my son to look after, but I watch my weight, don’t drink much alcohol, don’t go out much and try not to bite my nails.” That association with Estée Lauder evolved into a campaign to raise awareness of breast cancer. “Estée Lauder’s daughter in law, Evelyn Lauder, co-invented the Pink Ribbon in 1992 and formed the Breast Cancer Research Foundation the following year. Every October I go round the world raising funds and awareness for the foundation. We’ve raised over $320 million to date and fund 162 research scientists. I am passionate about talking to women about their breast health. We’re all scared of breast cancer, but we now know that if a localised breast cancer tumour is detected early, it is 90% curable. That’s why it’s so important to get the message out and tell every woman to see their doctor regularly and get a mammogram every year if over the age of 40. I know many women who discovered their own tumours by self examination. It is one of the most important things a woman can do for herself once a month and it’s free. Your doctor can show you how to do it and it should be done at the same time of the month, every month.” 6

Liz’s profile and career continued to advance including high profile acting roles in Bedazzled, the spy spoof Austin Powers with Mike Meyers and working as a film producer. “I produced two movies with Simian Films and it was an incredible amount of work, but extremely satisfying. The skills I learnt have definitely helped me with my swimwear business Elizabeth Hurley Beach – the process of development, pre production, production, post production and marketing are pretty much the same, no matter how diverse the product.” The catalyst for producing and designing her own beachwear line in 2005 was a desire to have a business that would suit her busy schedule and not disrupt son Damian’s life. “I decided to venture into beachwear not only because I’ve always been obsessed with holiday clothes, but also because it’s an area where women, regardless of shape or size, can either look amazing or really get it wrong. I like to come up with styles, prints and colours that make women look great and feel fabulously sexy at any age. I get inspired whenever I see a well dressed woman on vacation. I spend all my holidays looking at how women dress and feel on the beach.” As a woman who appears to have everything – beauty, career, child and a new engagement ring how would she describe herself? “I think the characteristics that best describe me are that I’m extremely hard working, have a startling amount of energy and can be very tenacious if I want to achieve something. I hope my friends also think I’m loyal. I rarely watch TV but now that I’m in Gossip Girl I do watch that show every week.” As for being out there modelling swimwear at the age of 46, how does she keep herself in such extraordinary shape? “I put myself under pressure to remain slim because I do model my own bikinis. I watch what I eat most of the time, but have little treats now and again. I walk every day with my dogs and force myself to run a bit but I hate it. I love Pilates and yoga but don’t do them regularly. I am extremely active though, have a lot of nervous energy and don’t sit still much. I do stomach and bottom exercises whilst I wait for my bath to fill each night.” Elizabeth Jane Hurley, mother, model, actor, film producer, fashion designer, activist for women’s health and soon to become Aussie Liz with her engagement to cricketing legend Shane Warne! On that note Label asked if she had noticed any difference between Australian men and the English male. MY WORD Shanan Harmelin – through a looking glass She is the smiling face of one of our most successful restaurants. Shanan Harmelin, co-owner of Glass with Patrik Gennari, is something quite rare – a born and bred Gold Coaster. “I spent my school life at Star of the Sea in Southport. There was always something about food for me because even as a kid I was interested in cooking so it was only natural that when I left school I became an apprentice chef. My organisational skills were always pretty good and it wasn’t long before I secured jobs managing restaurants in Broadbeach. I was 20 at the time and I was in charge of Da Carlo and Riva in Broadbeach. It does seem young but if you’re good enough you’re old enough.” Like most young people, Shanan got the travel bug and when she was offered a job with Bungee Downunder in Cyprus jumped at the chance and spent a wonderful six months learning new skills, cultures and languages. The call to the restaurant business was always strong and soon she ventured over to England where she secured a job in London managing ‘The Parson’s Nose’ in Fulham, ‘The Phoenix’ in Putney and ‘Café Pasta’ in Chiswick. “Living in England was a wonderful experience. In total it was three years away. While I really enjoyed the pub culture of London, I was married to Billy, fell pregnant and knew it was time to come home.” Apart from her position at Glass, Shanan is best remembered locally for her role in managing Manos Restaurant in Main Beach, a position she secured after her English adventures. “It was so much fun working there with owner Mick Ellison for over nine years. These were great times, the business was always busy and we had so many regulars that it felt like one big extended family. So many became, and still remain, wonderful friends but when Mick sold it I found it was time to move on so I quickly got a position with Patrik Gennari at Koi in Broadbeach.” A year quickly went by and Patrik recognised something in the super-efficient Shanan that he thought would work well for an up-market restaurant he wanted to open in Marina Mirage. “The multi-million dollar refurbishment had been finished and he approached me offering a partnership in his new restaurant – Glass. I really couldn’t quite believe it for a while but he knew what he was doing and it was such a great opportunity I couldn’t say no.” It was an amazingly generous offer but Patrik’s reasons, when quizzed, was that he wanted someone he could trust, would work hard and really look after the customers and regulars. “Patrik took a big risk on me but isn’t that what business is all about? I still pinch myself that I am co-owner of one of the best restaurants on the Coast – it’s a dream come true.” As co-owner of Glass, the hours and the responsibilities are huge but it is a position Shanan relishes. “Honestly, I look forward to going to work. Running a restaurant is essentially about looking after people – customers and staff. However it’s being able to retain the vast majority of the staff since we opened in what is a transient industry that gives me the most pride.” Then she’s off to see to a new face walking in the door with that mega-watt smile beaming out a welcome.

Charlie Brown is the flamboyant over the top Australian designer with a flair for publicity that knows no boundaries. If it gets media attention for her designs, this American born whirlwind sees no problem with it. She’s hired celebrity models as diverse as Lady (Sonia) McMahon and Cathy Freeman to super models such as Jerry Hall and Helena Christiansen and continues to be a media darling. To celebrate the release of her new Rio inspired Spring/Summer collection, she spoke to Label Magazine. You’ve been in Australia for nearly 30 years. What has changed the most about Australian fashion in that time? The changes have been enormous. The food, fashion, even the men – I’d say just about everything. You have used celebrities such as Linda Evangelista, Jerry Hall, Jade Jagger, Helena Christiansen and Jodie Kidd in your campaigns over the years. Which of those was your personal favourite and why? While I would like to answer it would be a bit like kissing and telling.

What was the catalyst for striking out on your own in 1995? I was designing for Howard Showers and I got fired. You are often described as having a great eye for design. Is that something learned or a natural talent? I’ll take that as a compliment. When you launched did you have any problems with copyright and Charles M Schulz and the ‘Peanuts’ gang? Yes but we overcame them and continue to trade under my name. Originally your designs were focused on the clothes but now you have branched into all areas – accessories, sunglasses, jewellery. Is it because you can’t stop designing? It was more a reaction to the demand to have things in the stores. It’s simple – what the consumer wants, the consumer gets. You have been quoted as saying that my designs have to sell. Fashion can be very esoteric, an insider’s club if you will, but you deliberately march to your own drum. Do you have friends who are designers? “Yes I do have some but they would never admit it.” Your life from the outside sounds like a movie script? (Laughs) At times it seems like a horror movie and then at others like the pilot for a crime show. Women in Australia are getting bigger in terms of the average size is now 12-14. Does that influence your designs? I’m not influenced by the fluctuations of women’s bodies. It’s a natural progression - it doesn’t happen in one season so we design for our customers and what they want. If not a fashion designer, is there another career path you would like to try? An airline stewardess has always appealed to me. I like the idea of travelling and trolley dollying up the aisle. Your clothes would sell very well overseas – any thoughts of taking the label to the US or Europe? That would be wonderful but at the moment I’m concentrating on our domestic market.

developed by cosmetic surgeons to remove stubborn fat deposits that do not respond to dieting and exercise. These fatty bulges are most commonly found in the thighs, hips, abdomen, buttocks, knees, ankles, calves and arms. When is Liposuction desirable? Liposuction may be used to improve

your overall body appearance by reducing and re-contouring localised collections of fat. It is neither a substitute for weight reduction nor a cure for obesity. A consultation is the first step and Dr Flynn will discuss with you whether this operation is right for you. How important are psychological factors in relation to this procedure?

Emotional stability is the primary factor to be considered before any aesthetic surgery is performed. A “new body” does not guarantee a new life or an end to all personal problems. Are you a good candidate? The best candidates for Liposuction

are healthy men and women with good skin elasticity and realistic expectations. “Realistic” means that improvement, not perfection, is the goal. The fatty bulges should be localized to a few areas and the individual should be near their ideal body weight. It is not meant to replace good eating and exercise habits or to counter obesity. After surgery: Patients are mobile immediately after Liposuction. Keep

in mind that healing is a gradual process. Light exercise is usually permitted within a few days. You may feel a little bruised and sore

as if you have over exercised that part of the body, but you should be able to resume work in a few days. The new you: Remember, Liposuction is a surgical procedure and your body has to heal before you see the full benefits. Your results will likely be visible within two or three weeks, but the full effect may not be fully evident for six months to a year after Liposuction in some cases. You should maintain a balanced diet and exercise regularly to fully enjoy the new you for years to come. Alternative treatment: Abdominoplasty (tummy tuck) is an alternative

treatment for abdominal fat collections especially when there is already a lot of loose skin. Patients with a lot of stretch marks also experience less skin retraction after Liposuction and may benefit from an Abdominoplasty. The new Body Tite system helps improve skin tightening. You should always keep in mind that the desired result is improvement, not perfection. Zeltiq, Cool Sculpting allows for fat reduction by freezing the fat deposits and is a great process for small collections or as an alternative to Liposuction. Glass by name and glass by design – that is the concept behind Glass Dining and Lounge Bar at Marina Mirage. Situated slightly above the luxury boats moored in the Marina and with panoramic views of the Broadwater and beyond this is a destination that has very quickly become an institution with locals and visitors alike. Designed by powerhouse Gold Coast architectural practice DBI Design, the restaurant is literally a place to see and be seen. The refurbishment of Marina Mirage was created so that anyone standing at the Eastern end of the famous shopping complex could look west and see through to the Marina. The $1.4 million fit out by owners Patrik Gennari and Shanan Harmelin has enhanced both their eatery and the beauty of this iconic shopping centre. The bar cost over $80,000, the kitchen, yes, it too is open for all to see, features a glass (what else) range hood with neon lights and allows diners to enjoy the sights and sounds of having a working kitchen buzzing away in the background. Of course, as beautiful as it is, all that expense and effort would mean nothing if the restaurant was not producing food and service of the highest order. Industry favourite Shanan Harmelin runs the front of house with a friendly efficiency that belies the effort required to make everything look serene. The metaphor of a swan gliding across the water whilst paddling furiously is an apt one. Executive chef David Pommier oversees a kitchen constantly striving to achieve the very best for each and every client. The menu is constantly updated depending upon the seasonal produce available. Some recent notable inclusions to the list of entrees include Pan Seared Scallops with prawn toast, sweet corn puree and a sesame oil emulsion. Another addition is the mouth watering Roasted Baby Quail in Serano ham with sage and drunken sultanas, coco and apricot puree with petite mustard green in noir balsamic butter. To the mains chef David Pommier has introduced a stunning version of the always popular confit of Bangalow Pork Belly adding celery custard, poached scallop, salmon boudin accompanied by an apple and walnut crumble. Seared Squid Salad with Lime & Coriander Serves 4 2 tablespoons soy sauce 1 tablespoon caster sugar 2 tablespoons light flavoured oil 500g cleaned squid, scored on the inside and cut into strips 1 red onion, thinly sliced 150g snowpeas, halved on the diagonal 150g sugar snap peas, halved on the diagonal Handful mixed herbs, such as coriander and mint Lime dressing Combine the soy sauce, sugar and oil in a medium bowl and add the squid. Leave to marinate for 10 minutes. Preheat a barbecue or frying pan until hot. Cook the squid, in batches if necessary, for 1–2 minutes each side or until just cooked (longer for thicker squid). Place the onion, snowpeas and sugar snap peas, herbs and cooked squid in a bowl. Pour over the lime dressing and toss gently to combine. Lime Dressing 2 garlic cloves 4 coriander roots 1 teaspoon sea salt 1 teaspoon ground white pepper 2 green chillies, finely sliced 1 tablespoon caster sugar 2 tablespoons lime juice 2 tablespoons fish sauce

1 avocado, peeled, stoned and roughly chopped 1 small red onion, finely sliced Large handful coriander leaves 3 tablespoons sweet chilli sauce 2 tablespoons lime juice 1 tablespoon sesame oil Arrange the lettuce, prawns, mango, avocado, red onion and coriander leaves on a plate. Whisk together the sweet chilli sauce, lime juice and sesame oil and dress the salad. Salt & Pepper Whiting Serves 4 75g (½ cup) plain flour 2 teaspoons dried chilli flakes 2 teaspoons freshly ground black pepper 600g small white fish fillets or sliced larger white fish fillets 3 tablespoons fish sauce light flavoured oil, for frying grapefruit salad 2 limes, cut into wedges Combine the flour, chilli flakes and pepper in a bowl. Marinate the fish fillets in the fish sauce for 5 minutes, then drain one by one and roll in the spiced flour. Heat the oil in a deep frying pan over medium to high heat until hot. Fry the fish in batches for 2 minutes or until golden. Remove from the pan with a slotted spoon, drain well and place on paper towel to drain completely. Serve with the grapefruit salad and lime wedges.

Grapefruit Salad 2 red grapefruit, cut into segments Large handful mint leaves and coriander leaves 1 small red onion, cut into thin wedges 2 teaspoons fish sauce 1 tablespoon caster sugar 2 tablespoons lime juice

1 small butter lettuce, torn 750g cooked prawns, peeled and de-veined 1 mango, peeled, stoned and sliced

Combine the grapefruit, mint, coriander and onion in a bowl. Whisk the fish sauce, sugar and lime juice together in another bowl and pour over the salad.

Place the garlic, coriander roots, salt, pepper, chilli and sugar in a mortar and pestle and pound to form a paste. Add the lime juice and fish sauce and stir to combine. Set aside. Prawn & Mango Salad

Among the many new dishes to the Moo Moo Broadbeach menu, which are sure to become firm favourites, are ‘Sashimi of Wagyu’ with artichoke pesto, pine nuts, fennel jam, sage and fennel pollen. Moo Moo has also added a vegetarian tempter – ‘Zucchini Flowers’ with mozzarella, quail egg, olive and truffle vinaigrette. With 3.5 million units sold around the world Toyota Yaris has certainly hit the mark with buyers. Now the third generation of Yaris is about to hit the show room at Grand Motors Toyota and the staff at the Ferry Road dealership are expecting an influx of customers, all eager to try and buy. The changes to an already successful brand have been attributed to the feedback from Australian drivers. The chassis and steering for the next-generation Yaris hatch will suit Australian conditions and driver expectations. The Toyota Technical Center in Melbourne contributed to the steering calibration and local Toyota engineers confirmed the overall chassis package for Australia will provide sharp handling, similar to that preferred by European drivers. Two features in the next-generation Yaris make it highly suited to Gold Coast city driving – a small turning circle and added power assistance at parking speeds. While it is slightly longer than the previous model it possesses an urban-friendly, tight turning circle of 9.4 metres. The adoption of electric power steering across the Yaris range also provides greater ease and range of turning. Grand Motors Toyota is also excited about the new layout. The interior design has an overall clean, stylish layout; a sports leather stitched steering wheel gives the driver a sense of luxury matching in with the sports trim on the seats. Metal look trim

accents are another stand out feature, making the new Yaris a home away from home on those long trips. The interior load space has grown to nearly 350 litres, extending to 768 litres when the split fold rear seats are lowered flat. Rear access through the tailgate will also be better for large boxes etc, as the aperture has increased in width by 20mm. Body rigidity has been improved to reduce twisting and excessive suspension movements, particularly at the rear. The result is greater driving enjoyment, better rear-wheel grip, sharper steering response and improved driving stability during turning. Standard fit in all but the entry level Yaris will be the Toyota Touch audio system, which provides touch screen controls, Bluetooth, a USB port and a rear parking camera. Buyers will then be able to upgrade to the full Toyota Touch and Go system, which adds full map satellite navigation, as well as a range of information services that can be accessed via mobile phones via a customer portal. In short this is a car perfectly suited to Gold Coast conditions – stylish, easy to drive, functional and loaded with modern features. Insurance and risk management with Hamish Broadbent The year 2011 will be remembered for natural disasters – Brisbane floods, North Queensland Cyclones, Christchurch earthquake and the Japanese tsunami. Unfortunately, many people only found out after the devastating events that insurance did not cover them. The Brisbane floods revealed many homes in riverside suburbs were effectively uninsured. Humans also create damage to our surrounds – the English riots caused millions of dollars damage to shops, cars and homes, while the recent oil spill off the coast of New Zealand created environmental damage. Insurance again plays a part. Closer to home, if you are an employer, principal contractor, or home, car or boat owner, you are also at risk of causing damage to an individual’s health and well being, as well as property damage. Once again insurance plays an important role. We are all familiar with compulsory third party insurance for our cars – without it your car is not registered and is not permitted on the road. CTP insurance protects you from claims against your assets. Few of us could personally pay out a claim. CTP insurance therefore ensures the injured person can receive payment from an insurer who has the resources to pay out a claim. However, what about other forms of transport? Boats do not have the same requirement for CTP insurance. Persons on other vessels and those performing underwater activities are at risk. Unless the owner obtains insurance, all are exposed. Home and contents insurance sometimes extends to asset stored within it which cause personal and property damage away from the home – for example, damage by bikes, toys and even kites. However, home insurance is not exhaustive - as a homeowner you may still be exposed if damage occurs to persons or other property on your land. Invited persons may not be covered by your policy. As an employer or principal contractor, you must also be conscious of ensuring safe worksites and that your staff or casuals are protected by appropriate insurance, usually through WorkCover. Recent courts cases arising from assaults to employees and an injury from seemingly routine workplace practices reminds the employer of the need for robust procedures and risk assessments. Everything we do in life caries a risk. Such risks cannot always be eliminated. Ensuring you have the right kind of insurance will assist in mitigating your exposure and protecting your assets.
