jolie

She is the face of dreams but behind that exquisite countenance is a woman of great passion for the many aspects that complete her life.

f Elle Macpherson is forever more to be known as The Body then Angelina Jolie should be The Face. A visage of exquisite proportions, she is the daughter of Hollywood royalty via her father Jon Voight and American actress Marcia Lynne “Marcheline” Bertrand who died in 2007. She has been such a huge part of mass culture for so long via her beauty, her acting and the many public escapades, that it is difficult to comprehend that so much has been crammed into a tick over 39 years. Her latest role to hit the cinemas is her overpowering title role as the Queen of Mean, Maleficent. Based on a fictional character from Walt Disney’s ‘Sleeping Beauty’, Jolie has mesmerised and terrified as the Mistress of All Evil who, upon not receiving an invite to a royal christening, curses the infant Princess Aurora to “prick her finger on the spindle of a spinning wheel and die before she turns 16.” Sinister doesn’t do her portrayal of this role justice but it is a part that has delighted Angelina because as all actors know, playing a villain is so much more interesting. In a recent interview with Entertainment Weekly she recounted how the role had always loomed large in her life from an early age. “She was just my favourite as a little girl. I was terrified of her but I was really drawn to her. I loved her. Maleficent was always so elegant. She always was in control. And to play her was difficult. I worked on my voice a lot. She’s bigger than me. She’s on a different level of performance that I have never done. She’s very still. She’s very sure of herself, but I couldn’t figure out her voice, I kept playing with these different types of British voices, making my voice darker and scarier.” Whatever she drew on, it certainly worked with reports that child co-stars were sent screaming from the set when this imperious, horned, dark haired woman with the piercing yellow eyes came into full view for the first time. The transformation from one of the most beautiful women on the planet to Disney’s scariest villain was a process Angelina was passionate about – not only who the character was, but what the character looked like. One of the first costume elements to be created were Maleficent’s iconic horns which presented specific challenges. Seven-time Academy Award winning special makeup effects designer Rick Baker worked very closely with the Hollywood superstar to achieve the desired look. “The horns were one of the big issues because no one would want to walk around all day with big horns on their head,” relates Baker. “So, I wanted to make them as lightweight as possible.” Baker and his team sculpted at least four different designs of horns. “I did some drawings and modelled some of the designs for the horns on the computer. He also had contact lenses made to complete the look of Jolie’s Maleficent. “Angelina designed them. The lenses were hand-painted by an artist who is an expert in that field.” The attention to detail was worth the effort because the effect, as it is meant to be, is suitably chilling. She is listed as an actress, film director, screenwriter, author and humanitarian worker. With all the publicity that follows she and Brad Pitt aka Brangelina, it is often forgotten that she is a multi-awarded actress. Having an Oscar, two Screen Actors Guild Awards and three Golden Globes sitting on your mantelpiece are a testament to an amazing talent. Those awards produce a commensurate pay packet and the recognition from Forbes as being the highest paid actress in 2009, 2011 and 2013. Receiving all that money plus ongoing

endorsements, she could easily have lived a lavish lifestyle of endless parties and openings and ignored many of the woes of the world but decided to do something worthwhile with her fame and beauty. She actively promotes causes that touch at her heart as a mother and global citizen. Upon receiving the Jean Hersholt honorary Oscar for humanitarian work she said in her acceptance speech how having a child had changed her perception of the world. Being responsible for another human being gave her an outlook that meant she had to do what she could to help in whatever way she could. A simple statement but conveyed by someone of her stature, it carries a lot of weight. Most notably she turned her focus to the plight of refugees where she is a Special Envoy for the U.N. and through her former role as a Goodwill Ambassador for the United Nations High Commissioner for Refugees. Where Angelina goes the press is sure to follow and her work in shining a light on the poorest and most disadvantaged citizens has won universal praise and effectively saved the lives of countless people. Never one to sit still for too long she has been involved in two major projects of late. The first is as Maleficent and the second had a local flavour with a recently finished stint on the Gold Coast and in Sydney where she took on the gruelling role of producer/director of ‘Unbroken’. The story is of World War II hero Louis Zamperini, a former Olympic track star who survived a plane crash in the Pacific and spent 47 days drifting on a raft. He was then captured by the Japanese and spent more than two and a half years as a prisoner of war in several brutal internment camps. It was his unbreakable attitude to life that first inspired Jolie to tell the story made even more so when they met. “I have such a huge responsibility to get it right because I love him so much and because he's helped me so much in my life,” she explained in a recent interview. 10

label magazine winter 2014

“I have such a huge responsibility to get it right because I love him so much and because he's helped me so much in my life.” The other recent issue that has garnered world-wide attention was her public declaration that she had undergone a double mastectomy as a preventative measure against breast cancer. As a carrier of the BRCA gene mutation she was considered a high risk of breast cancer and wrote an essay for the New York Times entitled “My Medical Choice.” The decision and subsequent reaction had a profound effect making her feel much closer to the many women from around the world who write to tell her of their ongoing struggles with breast and ovarian cancer. Jolie is also genetically at risk for ovarian cancer, which took her mother’s life at age 56, but has stated that she will face the decision of removing her ovaries when it is time and with the best medical advice she can muster. No matter what happens with the rest of her life, this remarkable young woman has done more than most to make the world a better place. Through it all she carries with her a sanguine almost ethereal air about her as if this too will pass. With Brad Pitt and their six children, she spreads her time between being a devoted wife and mother, advocate for refugees and work in the film industry. Beautiful yes, but that skin deep façade covers a person of great depth and compassion and that only adds to her allure. Maleficent is in cinemas now. Behind the brand A courageous career leap from advertising to fashion pushed Michelle Aznavorian to launch her own label at just 24 years old. Though less than one year in business, Misha Collection is already caught in a social media love storm with celebrities and fashion identities eagerly awaiting Michelle’s next move. What drove you to finally leave the advertising industry to pursue fashion? I have always been passionate about business and the fashion industry. My dream was to be a buyer, travel the world and build collections. What did you learn about design from trading second hand high-end garments? People will pay or wear anything if it’s a high-end designer brand. Once I purchased a hideous yellow Armani blazer from a vintage store for $10. I then sold it for $200 on eBay. In which occupation did you gain the best insight into the fashion industry? I gained a huge insight on fashion from my first ‘real’ job as an assistant buyer for a fashion company. I had an amazing boss (mentor) whom taught me everything I know about the industry. What motivated you to launch Misha Jewellery? How did this venture evolve into clothing imports and, later, your own label? I had been thinking of selling items online; jewellery seemed a good idea at the time. Due to the success of ‘Misha Jewellery’, I decided to try my hand at designing women’s apparel. I had discovered a gap in the market. I could see a real opportunity to create high-end, on-trend pieces at affordable prices and not long after Misha Collection was born. Who is the Misha Collection woman? She is elegant, sexy and chic. What attributes do you bring to design that distinguish you from other labels in your league? Each collection is designed with utmost attention to detail; each piece in the collection is an expression of understated glamour and class. What is your source of inspiration when designing new collections? European trends have a huge influence when designing new collections. What is your ideal day away from your desk? Shopping, of course. 26

Fashion Week

Sydney’s Carriageworks shook with the anticipation of new designers and the birth of trends in April. More than 80 designers unleashed their latest collections and Label has the wardrobe scoop for Spring/Summer 2015. Ae’lkemi ran red hot down the runway on models bedazzled with heavy golden bling. Brocade is back again in suiting and evening wear, featuring flickers of feathers, lace and sequins on sheer. Alex Perry’s catwalk was graced by uber-model Alessandra Ambrosio sporting bold blocks of colour and daring hemlines. Glistening snakeskin rang throughout the collection, with delicate lace and bejeweled fine fabrics. The purest whites shone at Anna Quan, as well as racy cuts through carbon black – a favourite in sheer at Daniel K. Serpent and The Swan saw models slither in liquid leather and metallic baroque patterns. Will Be wooed audiences with animal prints in grey scale, while Bec & Bridge opted for linear love and a powdering of lavender. Floral themes were a favourite in cobalt at Carla Zampatti and again in shades of rose by Caslazur. We Are Handsome woke up the palette, sporting exotic pops of aqua, oceanic blue and flamingo pink to set off summer.

The Coconut

Craze

Coconut oil is all the rage from the pantry to the bathroom cabinet. Though it has been used in Eastern medicine for many years, the west is just catching on to this wondrous multi-tasker. Inner health

As a traditional treatment, coconut oil is used to combat colds and flu, gingivitis, menstrual ailments and constipation, as well as fixing skin infections, burns and rashes. Health and beauty go hand in hand as up to 52 per cent of coconut oil is made up of lauric acid, containing antibacterial, antifungal and antiviral essentials. Also making up 2.9 per cent of cow milk and 6.2 per cent of human milk, lauric acid is vital in strengthening the immune system and creating a barrier for the skin against irritants and infections. 75 per cent of lauric acid is medium chain saturated fatty acids, which our bodies convert to monolaurin to heal candida and herpes. Other healthy fat components include medium chain triglyceride caprylic acid and capric acid, which accounts for 10 per cent of the coconut oil make up. Caprylic acid penetrates fatty cell wall membranes and is effective in attacking the bacteria that causes boils, sinusitis and food poisoning. This acid is also used in the sanitation of food contact surfaces.

Body benefits

When the 3pm sugar cravings hit, have coconut oil on hand. Good fats will satisfy your sweet tooth more than carbs due to their high nutritional value and slow-release energy. A healthy alternative to trans fats that are commonly related to heart problems, soaring cholesterol and depression, the medium chain saturated fatty acids in coconut oil are metabolised in the liver. There, they are instantly converted to fuel for muscular and brain functions instead of being sent to fat storage. Coconut oil’s ease of digestion and protection against insulin resistance is linked to lessened abdominal obesity in women and will reduce bloating caused by irritable bowel syndrome and microbial stomach bugs. Type 2 diabetes risks are offset by the combatants of insulin resistance and sensitivity to insulin is improved, according to a study released by the Garvan Institute of Medical Research. Coconut oil will boost metabolic rates to kick off extra kilos. Research has shown people who consume two tablespoons of coconut oil per day burned more calories than others who consumed less. Make crepes a little less dangerous for your waistline - cooking at high temperatures will release free radicals in olive oil, which is far more flavoursome as a final drizzle. Coconut oil has a smoking point of 180°C, far more tolerant than butter, which smokes at 149°C, or sunflower oil at 107°C. 38

label magazine winter 2014

Beauty value

Coconut oil is all for hydration help, strengthening the skin’s connective tissue, fighting drooping and lines. As medium chain fatty acids are naturally present in our skin’s oils, coconut oil will supplement a healthy balance and rid your skin of eczema and psoriasis. Shaving with coconut oil is ideal for sensitive skin and will moisturise simultaneously without the razor burn. In your beauty bag, coconut oil makes a dewy cheekbone illuminiser with a light dab on top of foundation and acts as makeup remover when applied with a cotton pad and circled around the eye area. Shockingly, it also doubles as an eye cream. Add some bicarbonate soda for a soothing scrub on the face, or brown sugar for harsher skin cell removal on the feet and body. For hair, take a scoop of oil and run it through your roots. Leave it in for half an hour or overnight and then shampoo and condition to eliminate oily residue. If you suffer from bed hair, a small amount of coconut oil with pat down fly aways and frizz. For sufferers of dry hands and feet, coconut oil will hydrate nail beds and add a heavenly fragrance to your massage. Cosmedic update Vascular skin conditions on the face and legs can be treated effectively and easily with the new Excel V (Cutera) system at Cosmedic & Skin Clinic.

F

or the many Australians coping with the physical, emotional and social effects of vascular skin conditions, the search for a simple and cost-effective treatment is frustrating. Help is at hand because Dr John Flynn from Cosmedic & Skin Clinic has taken delivery of the first Excel V (Cutera) on the Gold Coast and is treating his patients’ facial and leg vascular skin conditions with this new, non-invasive, laser system. The Excel V system uses a unique high-power green laser to precisely treat visible vessels, broken capillaries, spider veins, vascular lesions and skin discolouration. The laser light is absorbed by abnormal blood vessels in the skin, which heats and eliminates the vessels, ultimately restoring normal skin tone and colour. The technology in the Excel V has been proven effective in treating a wide range of skin conditions, including rosacea, facial veins, port wine stains, cherry angiomas, telangiectasia and spider veins on legs. Excel V also incorporates the latest innovations in cooling technologies enabling the doctor to deliver higher doses directly to the affected lesion with less pain than traditional laser systems. People seeking healthier looking skin are often faced with the untenable options of invasive medical procedures associated with undesirable side effects or costly cosmetic creams and makeup that only temporarily mask the underlying condition. While non-laser treatment options exist for these skin conditions, such options are associated with significant limitations. Dr Flynn has stated that the Excel V laser system provides a safe and effective alternative to non-laser treatment options for these skin conditions. “Excel V provides a reliable, non-invasive treatment that is easier to use and well tolerated by patients,” said Dr. Flynn. “The design of the laser includes a unique cooling mechanism to prevent damage to surrounding skin, and best of all, there is no downtime for patients.” 42

Patients will often say the results of the laser treatment surpassed their expectations. This unsolicited comment came from a patient who was delighted by the results and ease of treatment. “Before I received my laser treatment, I was always self-conscious of the redness in my face. After receiving treatment with Excel V my skin immediately became clearer and healthier looking. The treatment session was surprisingly comfortable and just felt natural”. Treatment with the Excel V laser system can be customised to each patient’s unique skin condition and can be adjusted to treat different depths and sizes, from superficial blemishes to deep vascular scars. Three of The besT wines from ausTralasia To sip and savour. Beer is made by men, wine is made by God. So said Martin Luther circa 1500 and who are we to argue with such an esteemed opinion. With that in mind here are three delicious drops worthy of any table. The first is the 2011 Amisfield Pinot Noir from the Central Otago region in New Zealand. A bright, dark fruit focused, spicy with subtle oak and fine grained powdery tannins, it is blessed with a vibrant ruby colour. The nose is exceptionally aromatic and complex – think of fresh red cherries, baking spices and fine oak. The second is the 2009 Voyager Estate Chardonnay from Margaret River. A bright green, straw colour which exhibits strong citrus aromas. The textural palate is long and intense, driven by a tightly woven core of lemon pith and grapefruit with a clean, flinty mineral finish. Lastly we have another New Zealand wine from the Marlborough region. The 2012 Vavasour Sauvignon Blanc is a meticulously made wine with grapes selected for intensity and concentration. The bouquet shows passionfruit and white peach aromas and the palate has ripe fruit flavours with mineral notes. Enjoy! labelmagazine.com.au

Slow-roasted tomato sauce for spaghetti

This slow roasted tomato sauce is one of the most tempting options for non-meat eaters with intense, delicious flavour from the garlic, capers, anchovies and olives. It freezes well and like many dishes, tastes even better the next day – Antonia Haralambis. 80ml extra virgin olive oil 2 kg very ripe tomatoes, cut into 1 cm slices 2 red onions, sliced 2 cloves garlic, crushed 50g salted baby capers, well rinsed and drained 8 anchovy fillets, each cut into 3 120g pitted Kalamata olives Freshly ground black pepper Sea salt 1 tablespoon tomato paste (concentrated purée) 500g spaghetti 40g grated parmesan cheese ½ bunch flat-leaf Italian parsley, chopped ¼ bunch basil, leaves shredded Garnish 40g toasted pine nuts 1 handful flat-leaf Italian parsley, chopped Extra parmesan cheese Preheat the oven to 200°C. Use two large roasting dishes (non-stick if possible) to layer the ingredients. Start with a splash of the olive oil, then divide the tomato, onion, garlic, capers and anchovies between each dish, add another splash of oil and scatter on the olives and pepper. Finish with another splash of olive oil. Place the dishes in the oven, then turn the temperature down to 170°C and roast for about 1½–2 hours, or until soft and a little caramelised, but not so that all of the liquid has evaporated. Turn the mixture every 20 minutes or so to avoid burning. When cooked, combine the contents of both dishes, taste for seasoning and add the tomato paste. Add salt sparingly, as the capers, anchovies and olives will all provide saltiness. Cook the spaghetti in plenty of salted boiling water, drain, reserving ¼ cup of the pasta water. In a large bowl, mix the cooked pasta with the roasted tomato sauce and parmesan, adding some of the extra cooking liquid if necessary. Mix in the parsley, basil and a dash of extra virgin olive oil. Transfer to a large platter. Scatter the pine nuts and parsley on top and serve hot or at room temperature with extra parmesan cheese. Makes 5 cups pasta sauce. Serves 6.

Rogala

The first time I made rogala was by default. I planned on making a strudel but didn’t have any apples, so I used only cinnamon and sultanas and made small rolls. Not satisfied with the result, I added jam and nuts and my rogala were created. My sons have grown up with the smells of my cooking, but my rogala is always the family favourite – Helen Spicer. 225g plain (all-purpose) flour 225g self-raising flour 3 egg yolks 115g caster (superfine) sugar 150g sour cream 100g unsalted butter, at room temperature 1 teaspoon vanilla extract Filling 175g chocolate hazelnut spread 175g apricot jam 60g roughly chopped walnuts 80g finely chopped mixed dried fruit or raisins 1 egg white, lightly whisked 110g sugar Start this recipe the day before serving. Place the flours in a large bowl and add the egg yolks, sugar, sour cream, butter and vanilla. Mix by hand until a soft dough forms. You can also make it in the food processor. Shape the dough into a log, cover with plastic wrap and refrigerate overnight. Preheat the oven to 180°C. Line a baking tray. Cut the dough into six pieces. Roll the first piece into a rectangle about 20x30cm. Spread on a light coating of chocolate hazelnut spread and jam. Sprinkle with some of the walnuts and dried fruit and roll into a firm roll, seam side down. Trim the ends and cut the roll into 8 even pieces. Brush the top of each piece with the egg white and then dip the top into the sugar. Place on the prepared tray, sugared side up. Repeat with the remaining pieces of dough. Bake for 30 minutes, or until golden. Makes approximately 48 rogala. labelmagazine.com.au

Pollo con salsa

Pollo con salsa is a classic Argentinian dish still found in many restaurants today. My mother’s recipe fills the house with the delicious smell of garlic and tomatoes. It is the perfect winter dish, served with rice, pasta, couscous or on its own. I love to bring it to the table in the pot I make it in, tempting my guests with its rich, vibrant, colour and aroma – Veronica Leydman. 2 tablespoons olive oil 1 large red onion, thinly sliced 1 large red capsicum thinly sliced 6 cloves garlic, crushed or to taste 8 skinless chicken thigh fillets (or drumsticks) 500ml chicken stock 1 x 400g tin diced Italian tomatoes Sea salt and freshly ground Black pepper 1 large handful flat-leaf Italian parsley, roughly chopped

Freekeh salad

I was a vegetarian for over 30 years and so I always found myself looking for new ideas with interesting grains. This recipe combines a number of my favourite ingredients – peas, pomegranate and red onion – Robyn Kaufman. 3 red onions, finely sliced into rings 30g caster (superfine) sugar Sea salt and freshly ground Black pepper 125ml balsamic vinegar, plus extra for drizzling 3 tablespoons extra virgin olive oil, plus extra for drizzling 400g packet freekeh 2 bunches asparagus, trimmed 160g peas ½ bunch coriander roughly chopped 200g feta cheese, crumbled

You will need a large deep frying pan with a lid. In the pan, heat the oil, add the onion and fry over a medium heat for 10 minutes, or until soft. Add the capsicum and garlic and fry for another 5 minutes until soft. Remove from the pan and set aside. Add the chicken pieces to the pan and brown well on each side. Return the onion mix to the chicken in the pan and add the stock. Cover with the lid and cook over a low heat for 30 minutes, or until just tender. Stir in the tomatoes and season with salt and pepper. Sprinkle the parsley on top and cook, uncovered, for a further 15 minutes, or until done. Serves 4.

Preheat the oven to 180°C. Place the onion on a baking tray and sprinkle with the sugar, salt and pepper. Pour over the balsamic vinegar and drizzle with the olive oil. Roast for about 30 minutes, then toss and continue roasting until caramelised and golden, about 1 hour. While the onion is cooking, rinse the freekeh well. Place in a saucepan and cover generously with water. Bring to the boil, reduce the heat to low, then simmer for 20–30 minutes, or until the freekeh is tender but still firm. Rinse and drain thoroughly. Place in a salad bowl. Blanch the asparagus in boiling salted water for about 2 minutes, and then refresh immediately in cold water. Drain and cut into 2 cm pieces. Cook the peas in boiling salted water for 1 minute, then refresh. Toss the caramelised onion with all its cooking juices through the freekeh. Add the asparagus and peas, then the coriander and feta. Season to taste with salt and pepper and, if necessary, dress with extra olive oil and balsamic vinegar. Serve at room temperature. Serves 12.

Granny’s shortbread

My mum used to make these delicious, buttery fingers for the small homebaking business she started when we first moved to Australia. An easy recipe that never fails, it is one of my kids’ favourites. Grease a 30x20cm baking tin. Process all the ingredients in a food processor until you have a slightly crumbly dough. Tip the dough into the prepared tin and spread out evenly, pressing it with your fingers or a flat spatula until level. Prick all over with a fork. Bake until golden on the edges for about 1 hour. Remove from the oven and, while still in the tin, immediately cut into fingers with a sharp knife. Leave in the tin until cool. Sprinkle with the extra caster sugar and remove from the tin to serve. Satisfying your winter appetite can be a challenge when compromising between the hearty and the healthy. Fruits take a citrus turn, with lemons, mandarins, oranges, kiwifruit and grapefruit ripening on the branch. It’s hard to resist treating yourself to roasted fresh potatoes, but for a low GI approach, seek out this season’s bounty of brussel sprouts, carrots, fennel, silverbeet and spinach – better yet, with a hint of whole grain. The Definitive Guide to Cooking Grains, Seeds and Legumes will add some serious crunch to your Sunday lunch. Molly Brown deciphers barley from farro and shares the best way to cook with every grain from chia to lentil. Available from bookstores nationally for $39.95, by Hardie Grant Books.

Put the raisins into a small saucepan and cover with the apple juice. Bring to the boil, then let the raisins soak for about 30 minutes until they are nicely plump. Preheat oven to 160°C. Grease a 23cm square cake tin with butter and line the base with baking paper. In a large bowl, mix together both flours, the baking powder, bicarbonate of soda and mixed spice. Beat the eggs and sugar together for about 2 minutes until foamy, then add the sunflower oil. Fold the dry ingredients into the egg mixture, then stir in the raisins with their soaking juice, the carrot, citrus zest, pecans, all of the sunflower kernels and 1 tablespoon each of the pumpkin and chia seeds and linseeds. Mix well – the batter will be quite stiff. Scrape the batter into the prepared tin and bake for 1 hour. A skewer inserted into the middle should come out clean when done. Leave to stand for 10 minutes, then turn out onto a wire rack to cool for 15 minutes. Peel the paper off and turn the cake the right way up. Allow to cool completely before adding the topping. To make the topping, beat the cream cheese with a wooden spoon and add the icing sugar. Put in the refrigerator to firm up a little, then spread the topping over the cake. Scatter with the remaining seeds and cut into 16 squares.

W

inter is here and I have to admit there are very few places I would rather be than here on the Gold Coast with our crisp nights and clear blue days. As ever there has been a lot on and even more things planned for the next few months. Mother’s Day is always a huge event with families gathering to enjoy lunch or dinner with their beloved Mum. This year we had a special menu for the day courtesy of our executive chef David Pommier. Two of the favourite dishes were the slow poached lobster tail with salt roasted celeriac and Tonka bean emulsion. The other was whole baby flathead fillets pan seared with seasonal vegetables and prawn broth. A great sign for a chef is seeing the plates coming back almost licked clean. However the absolute favourite on the day was our vanilla bean crème brulee with honey and rosemary tuille. We have also had our fair share of celebrities in the past few months. Bruce Springsteen and members of his E Street Band dined with us during their stopover in Brisbane and were simply a delight to have in-house. Low key and no fuss, they just wanted to relax and enjoy themselves. Legendary Australian cricketer Adam Gilchrist dropped in as did Jackie Gillies and her husband Ben. Jackie is one of the stars of The Real Housewives of Melbourne and it wasn’t that long ago that Ben, who was the drummer in Silverchair, was getting all the attention. That is reality television for you. This is difficult to believe for me because the time has literally flown but June marks the fifth anniversary of Glass throwing open the doors for business. For co-owner Patrik Gennari and I, there have been so many great friendships made during this time. It literally

has been a case of weddings, parties, anything. If there’s a need for a great venue to celebrate, Glass has been able to provide the food and the service to make the occasion memorable. Boat Week is part and parcel of everything that happens in connection with the Sanctuary Cove International Boat Show. ‘Out of the Blue’ is an annual cocktail party held in Glass for those interested in hearing what is new in and around Marina Oceanus, the marina that sits in front of Glass. Boating luminaries mix and mingle, the wine flows, canapés are consumed and everyone gets a chance to ease in to what is a hectic week of activities centred on the Boat Show. The renovations for our ‘Feasting Room’ are complete and it looks spectacular. To complement our new ‘baby’, a special menu has been devised to enhance the experience of enjoying time in this intimate and private dining area. We have had some wonderful feedback from those who have indulged and if you would like to experience a unique dining experience, please give me a call to discuss our dining options. Also don’t forget our Moët White Sundays. Relaxing on the deck on a sunny Sunday afternoon while our resident DJ spins tracks that will enhance the mood make this the best way to relax on a weekend. Moët White with in season fruit rocks, literally. May your glass always be half full,

Celebrity Diets Nothing the top celebrities do is ever ordinary and when it comes to losing weight their diets range from the quirky to the downright weird. air Diet

baby FooD Diet

Madonna was linked to this fad diet promoted by the French followers of Breatharianism. The trick is to hold food to your mouth but don’t consume it. Besides looking but not tasting they eat nothing but a water and salt soup concoction. The belief is that one can live on energy from sunlight and not need nourishment from food.

In an odd way this sort of makes sense. As 14 servings of baby food equal approximately 1,000 calories, celebrities such as Jennifer Aniston and Reese Witherspoon use this unique diet and eat only jars of baby food, in addition to a “healthy” dinner. Apparently this lose-weightquick fad diet is just as delicious as it sounds.

Seven Day Colour Diet

Drunk Diet

Christina Aguilera diet regimen is at least colourful. Her idea is that every day she will eat a different colour – Monday may be orange, Tuesday can be green, and Wednesday is yellow. There may be method in her madness because it obviously works.

Nothing Lady Gaga does should be a surprise and when it comes to diets, she hasn’t let us down. The singer says she drinks whisky while she works but then commits heavily to exercising, even when battling a hangover, to keep herself in tip top shape.

iCe Cube Diet

Cookie Diet

Famed for her weight transformation for movie roles, Renee Zellweger uses this extreme diet. It involves eating ice cubes throughout the day to curb hunger. “As long as I get that ‘constant feed’ feeling, it’s semi-tolerable,” she has been quoted as saying about the bizarre “food” choice.

Jersey Shore’s Snookie is a little cooky or she likes diets that rhyme with her name. The Cookie Diet allows you to eat up to nine 60calorie cookies a day with one allowed every two hours to ward off hunger. She uses it to drop the kilograms that come with her binge drinking lifestyle.

viCtoria’S SeCret Diet

grapeFruit Diet

Believe it or not, being a Victoria’s Secret model is hard work. How would you like to parade around in skimpy lingerie with the whole world watching? Adriana Lima consumes only protein shakes mixed with powdered egg, washed down with 4.5 litres of water while also exercising once or twice a day to get in shape for the big parade.

Grapefruits as a diet aid have been around for years and as one of the world’s healthiest foods, they contain an excellent source of vitamin C which supports the immune system. Pop diva Jennifer Lopez believes that the aroma allegedly affects liver enzymes and promotes weight loss and always carries a vial of grapefruit oil to sniff.

CoConut oil Diet

maSter CleanSe Diet

Ever wondered how Miranda Kerr keeps her enviable figure in such good trim? Coconut oil is the answer with the Aussie supermodel Miranda Kerr eating four tablespoons a day, either by putting it on salads, cooking with it, or putting it in her cups of green tea.

Bootylicious Beyoncé uses a liquid lemon juice mixture to quickly slim down when she needs to shed some weight. The diet requires six or more servings of the juice a day as well as a saltwater flush and herbal laxative.

home style Inside the home of Con and Carol Makris.

T

he view from the cloistered world of the Palazzo Versace condominium of Con and Carol Makris is of the pool area, yachts anchored in the marina and then on to the Broadwater. “The condominium was a bare shell except for the flooring and kitchen when we bought it. I had my own ideas so I asked Barbara Sibson to come on board and work with me. I had used her previously because I don’t have the time to be chasing fabrics and samples. It is so much easier if you are busy to get a professional because they can go away and then come back with the swatches in the colours that were discussed.” The word that comes to mind is plush. Pale gold tones emanate from the paintwork giving the lounge, dining room and study a glow which is offset by the plush darker tones of the furniture. Above everything though, this is a home where Con and Carol can walk in, close the door, be completely private and yet they are only a very short walk from the main hotel lobby and their beloved Marina Mirage. “When it comes to décor I wasn’t really after a particular style but because we do look over the water I was after something that would work in with that view and yet still be a comfortable home where we can literally put our feet up. We are in Palazzo Versace but it had to be liveable. Barbara did suggest using black which I wasn’t sure about at first but when we put it together with the other fabrics and furnishings, it worked very well. I love the process of putting all the elements together but once it is all done, I’m not someone who wants to keep fiddling with the layout. Con simply said do what you like but make sure there is a big television set there,” she laughed. A luxury setting, yes, with obviously expensive fixtures and fittings but the condominium retains a warmth that only comes from being enjoyed and lived in by people who love it. Money can’t buy that. 62

One of my favourite pieces is a glass bottle of liqueur from Vienna which has glass sculpture of a soccer player inside. The gateway to Asia, Singapore is the surprising sum of many parts that make it the perfect holiday destination for you and your family.

Opposite: The perfect place for quiet reflection at the Pavilion Pond, Sentosa. Clockwise from top left: Sumptuous fittings add a luxury touch to your stay in Sentosa; The Hi-SO rooftop pool at the Sofitel So Singapore; The Cliff restaurant Sentosa – a heavenly haven for exquisite dining and fine wines.

Xperience Singapore is famed for its many dining options but one that has garnered rave reviews is the recently opened Xperience restaurant and bar in Sofitel So Singapore. The buzz word for Xperience is ‘experiential’ dining which in essence means that diners will be able to design their own customised menus, based on different culinary experiences. Crunchy, juicy, smoky, creamy, silky, spicy or zesty – you request it and the chefs will prepare it. Tapping into the increasingly world-wide trend for sharing and tasting, dishes will be available in three sizes – XS for tasting, XM for a personal size and XL for sharing. Bespoke dining at its best with you the customer in total command of your dining Xperience.

F

ive million people a year can’t be wrong. That is how many visitors Sentosa, the utterly unique island paradise that nestles against Singapore, receive on an annual basis and it is a compelling reason to visit Singapore. Covering a land area of only five square kilometres, it has rightly laid claim to the fact that it is Asia’s favourite holiday destination. Part rain forest, part beach resort, part theme park and part shopping destination, it has managed to make itself a singular destination for all levels of tourists. Making the most of its unique island destination, the Singapore Resort & Spa, managed by Accor, is currently undergoing a massive refurbishment that will place it at the forefront of luxury tropical resorts in Singapore. Set amidst 27 acres of lush gardens, the hotel boasts 215 spacious rooms including suites and villas and is very popular with the booming wedding market thanks to its grand ballroom and extensive terrace with sea views. You will feel a million miles away from the city, thanks to the peacocks that roam the gardens and the direct access to Tanjong Beach and the Sentosa Golf Club, but the CBD can be reached in just 15 minutes. The hotel is expansive enough that the renovations will be carried out without interruption to guests and the first section to be completed will be the famous and award-winning Spa Botanica which will be unveiled in July 2014 when it relaunches as the country’s first Le Spa. With several treatment rooms, a mud pool, labyrinth garden and waterfall and pool to relax in after your treatment, Le Spa will be an oasis of relaxation and rejuvenation. The hotel will relaunch as the Sofitel Resort & Spa Sentosa when renovations are completed in 2015. Sentosa didn’t get to become a stand-alone, award winning destination without offering a diverse range of things to see and do. It has things up high in the sky such as the Singapore Cable Car or Tiger Sky Tower or the down low thrills that come from hurtling down the Skyline Luge. For something a little more sedate you can head over to Butterfly Park or take in the Sentosa Nature Discovery. If rest and relaxation are your thing, the island has more than 3.2km of white sandy beaches with pristine water lapping the shore. Watersports of all kinds are available or if you are after 11 attractions in one easy location head to Imbiah Lookout. It has a range of new and exciting attractions that will appeal to all be it an adventure-seeker, nature lover or history buff, there will be something fun and exhilarating for you. Don’t think because you have visited Singapore in the past that you have ‘been there, done that’. Nothing could be further from the truth because this is a city that flourishes on change, new developments and reinvention. The Lion City thrives on activity and the electric pulse of the city, day or night, picks you up and carries you along. Here are our things to see and do. If you’re a fan of Avatar then head along to the 101 hectare Gardens by the Bay. An extraordinary array of flora and fauna are housed in bio-domes but the big drawcard are the magnificent Supertrees. These 50 metre super ‘plants’ are part of a choreographed light and music show every evening. Clarke Quay is party central for those looking for something to do until the early hours. Situated on the river, it is the number one destination for those who like to party or you can take a walk from the Fullerton Hotel along to Robertson Quay and check out the multiple riverside dining options. Wonder Full by name and wonderful by nature this amazing convergence of light, music and sound is a free display using light and laser to stunning effect. Operating at least twice a night, this is a stunning array of visual effects using interweaving lasers, searchlights, LEDs, video projectors and giant streaming water screens. Epic doesn’t quite do justice to the size and scale of the Marina Bay Sands integrated resort. Costing a reported $8 billion dollars, this multi-development has changed the landscape of Singapore forever. Even if you don’t gamble, MBS is a must do simply to take in the shopping and other delights of this amazing development. Singapore is also home to the world’s largest oceanarium at Marine Life Park. Ocean animals abound or you can make the Adventure Cove Waterpark part of your fun. For something a little different, Singapore is home to a dazzling array of cultures living together in one peaceful society. Predominantly a Chinese population but Malays, Indians and Eurasians and other minority groups all co-exist in Singapore’s cosmopolitan landscape. Chinatown and Little India are easily accessible or you can check to see what festivals are on during your stay to fully immerse yourself in what makes Singapore tick. Singapore has made an art form out of catering to visitors from around the world. Clean and well-ordered, the city is famous for its non-tolerance of anti-social behaviour and is the perfect family friendly destination for travellers wanting to have an Asian holiday without the excesses prevalent in other cities. The MRT (Mass Rapid Transit) is as easy to use as you can imagine and will get you to any of the city’s many attractions in air-conditioned comfort without fuss. Shopping, adventure, relaxing or enjoying some of the best dining in the world, this is one city guaranteed to never let you down. It is the embodiment of so much to do, so little time.

TestDrive Label’s Kate Bennett takes the new BMW 4 Series Convertible for a spin.

A THE TECHNICAL STUFF The 435i comes in a huge variety of types and sizes. Convertible or coupe body styles, with rear or all-wheel drive, and with a choice of four or six cylinder engines and an added choice of six-speed manual or eight-speed automatic transmissions. Plus it also comes in a Sport line or M Sport line and in the ultimate note to comfort while you are driving, has an optional three setting neck warmer. What will they think of next? Petrol consumption was a modest 7.4L/100km combined over city and open road and goes from 0-100km/h in 5.1 seconds which is more than quick enough for my needs.

s with everything, car manufacturers are always looking for ways to improve and better their previous models. In the case of the all new BMW 4 Series the changes are substantial. Built as a step up from the BMW 3 Series, this is not just a change of badge but more importantly a broader, beefier but slightly lighter version. As with all things to do with me, I love the sheer elegance of the exterior. The car has the look of a big cat about to leap into action which appeals to my sense of driving style. Motor mad men tend to rave about horsepower and 0-60 time splits but from a female point of view, I spend my time driving from point A to point B and want something that is spacious and comfortable with easy to understand controls at my fingertips. Does the BMW 435i supply this? Yes and then some. The interior is nothing short of sumptuous. The space in the front and back seats is great and can accommodate four people with ease. The same can be said for the boot which I am reliably informed can accommodate two golf bags. More importantly the boot, which has a contactless opening feature, easily held my weekly shop of groceries for my family of four which earned it a big tick of approval. The BMW Connected Drive Internet is an option that ensures that you can go online whatever and whenever you need to log in. Unbelievably, to enable you to surf to your heart’s content, the iDrive Controller in the centre console doubles as a computer mouse. The same for the optional Bluetooth BMW Office which allows functions such as appointments, emails, tasks, contacts and text messages to be shown on the Control Display or read aloud over the audio speakers using the read-aloud function. This is a car that is quite simply fun to drive. Its responsive, light handling made getting around town a breeze while getting into those tight spaces was as easy as point and park. If you would like to test drive one of these little beauties, please call Bruce Lynton BMW on 07 5557 7999.

Body Corporate

feuds

Body corporate disputes are nothing new but Juliette Nairn from OMB has the ability to steer you through what can be a minefield of litigation.

A

re you frustrated by your Body Corporate neighbour’s failing to pay their contributions, leaving you to pick up the difference? The good news is you can take steps to recover your money. The Court of Appeal of Queensland recently made a landmark decision in the area of Body Corporate Law regarding the ability of bodies corporate to recover contributions, penalty interest and all reasonable recovery costs from a lot owner who fails to pay their contributions on time. The decision was made with respect to a Body Corporate feud which began in 2011 relating to a prestigious unit in Surfers Paradise worth over $1m. The unpaid amount in question was around $5,500 and the owners of the lot claimed they had no capacity to pay their debts, despite owning several other units in Surfers Paradise of similar value. This resulted in the remaining lot owners having to cover the shortfall in contributions to cover the daily expenditure of the body corporate. When this matter was brought before the Queensland Court of Appeal, OMB Solicitors as legal representatives for the body corporate, successfully argued that if a single lot owner fails to pay their body corporate levies, this places an unfair burden on the other lot owners who have always abided by their responsibilities. As the saying goes, it only takes one bad apple to spoil the barrel. In the lead up to this matter being brought before the Court of Appeal, over $400,000 in recovery costs were incurred due to the unreasonable pursuit of litigation through five different Courts over a

number of years. The Body Corporate for The Wave has been forced to expend these costs as part of the lengthy proceedings, which resulted in each lot owner being forced to make further contributions to the body corporate administration fund. These costs were incurred as a result of the non-contributing lot owners continually pursuing the matter to a higher Court, despite them being unsuccessful at all five levels of the Court proceedings. This ever-ballooning debt owed to the Body Corporate, and essentially the remaining contributing owners, resulted in the bank repossessing the property in mid-2013. It should be noted that the bank, Westpac, failed to take steps to protect its interest throughout the court proceedings. The Court agreed that ultimately it is the contributing lot owners who are meeting their share of the expenditures and who are disadvantaged by the non-payment of one lot owner. This cannot be, and was not, the intention of the legislation protecting everyday owners within a body corporate. The body corporate’s success in this matter ultimately resulted in a Court order that Westpac pay the body corporate debt including all contributions, interest and recovery costs. The Court of Appeal is sending a very clear message to lot owners and mortgagees through this judgment to ensure they look carefully at non-payment of body corporate contributions. OMB Solicitors has handled over 2,000 body corporate levy recovery proceedings in the past five years, and the average costs incurred in recovering contributions from defaulting lot owners is less than $5,000. These types of matters also usually resolve with full payment being made to the body corporate within a period of about 3 months. However, this case highlights a rare example of just how expensive and time consuming body corporate matters can become if expert legal advice is not sought in the early stages of such matters to resolve them quickly. If your body corporate requires expert legal advice on this type of matter, or any other Body Corporate matters, consider contacting the Body Corporate team at OMB Solicitors on 07 5555 0000.
