Five Reasons We Love Taylor S

he’s the Southern gal who captured the heart of the world, transforming from a promising country singer into one of the world’s most popular and powerful women. Her style and self-composure seems to set her apart from her peers; seeming simultaneously silly and serious; fierce and a little frail. Here are a few of our favourite things about Taylor.

THE MUSIC

She’s a little country, and a whole lotta pop, but there is no denying that the girl can write a catchy tune. From her early songs such as Love Story and You Belong with Me to her latest tunes like Shake it Off, Bad Blood and Blank Space, Taylor continues to give us a bunch of songs we can sing and dance along to without getting too serious. Despite all the success and accolades, Taylor says her approach to songwriting remains unchanged. “Throughout all of the changes that have happened in my life, one of the priorities I’ve had is to never change the way I write songs and the reasons I write songs,” she has said. “I write songs to help me understand life a little more. I write songs to get past things that cause me pain. And I write songs because sometimes life makes more sense to me when it’s being sung in a chorus, and when I can write it in a verse.”

2. THE FASHION

With a style that mixes Southern charm with all American glamour, Taylor loves to dress up, and has an impeccable sense of occasion. Not a fan of grunge, Taylor’s looks favour short, short skirts and shorts; the girliest of girly dresses; and sleek androgynous looks. Mixing vintage with designer is a favourite trick of Taylor’s. Taylor likes to get crafty when it comes to fashion. “I love sparkly headbands, so I go to the craft store and buy ribbon to make my own,” she said. “You don’t have to spend a lot of money. I go in there and just have so much fun in the ribbon section. It’s a really fun activity and way to get an entire collection.” Whatever look she is sporting, Taylor always looks a million dollars - it doesn’t hurt that she is 178cm tall with a fit and lean figure most girls her age would kill for.

3. THE HUMOUR

One look at her music videos will tell you that Tay Tay has a great sense of humour. Not one to shy away from goofing off, Taylor is always ready to don the most ridiculous of costumes to get a laugh. Her ability to laugh at herself is a quality not commonly found in young startled pop princesses, and it is one of the qualities her legions of fans admire the most. Her Twitter and Instagram followers are often treated to less than glamorous shots of the star, goofing off with her friends or beloved cats. High profile funny friends such as Ellen DeGeneres and Jimmy Fallon have showcased Taylor’s knack for making people laugh, with Ellen notoriously playing pranks on the songstress and Jimmy Fallon and Taylor creating a hilarious ongoing skit for The Tonight Show. 4. THE ROMANTIC HEART We love that Taylor wears her heart on her sleeve, and turns the experiences into her lyrics. She’s copped some flak from critics who have said she only writes about romance, but she hit back this year while promoting her album 1989 saying “Frankly, I think that’s a very sexist angle to take. No one says that about Ed Sheeran. No one says that about Bruno Mars. They’re all writing songs about their exes, their current girlfriends, their love life, and no one raises a red flag there.” Clever words from a clever girl, but she does admit that romance diminishes her capacity to make good decisions. “When I was a little girl I used to read fairy tales. In fairy tales you meet Prince Charming and he’s everything you ever wanted. In fairy tales the bad guy is very easy to spot. The bad guy is always wearing a black cape so you always know who he is. Then you grow up and you realise that Prince Charming is not as easy to find as you thought. You realise the bad guy is not wearing a black cape and he’s not easy to spot; he’s really funny, and he makes you laugh, and he has perfect hair.”

And the winner is …. Taylor Swift has won seven Grammys, 16 American Music Awards, 22 Billboard Music Awards, 11 Country Music Association Awards, eight Academy of Country Music Awards, eight People’s Choice Awards and 25 Teen Choice Awards. She has also won the Nashville Songwriters Association International Award for songwriter/ artist of the year six times. In addition to her swag of awards she has also set several world records including: fastest selling digital single, most simultaneous US top 100 hits by a female artist and most entries in the US Top 20 in a year by a solo artist. She is the only artist in history to release three albums that have all sold over 1 million copies within one week.

“No matter what happens in life, be good to people,” the singer has said. “Being good to people is a wonderful legacy to leave behind.” Wise words for someone so young, but she certainly puts her money where her mouth is. Whether it is an emotional video made for a fan who is being bullied; surprising fans with visits, gifts and concert tickets, or the substantial charitable donations she makes, Taylor makes charity work a priority. In 2007, she launched a campaign to protect children from online predators, teaming up with Tennessee Governor Phil Bredesen to work toward combatting internet sex crimes. She has donated her time, money and even her belongings to various causes (her prom dress sold for $1200USD at DonateMyDress.org). While many of her peers are focused on which angle to take their next selfie, Taylor has a bigger picture in mind, spreading her message of kindness and compassion. “Words can break someone into a million pieces, but they can also put them back together. I hope you use yours for good, because the only words you’ll regret more than the ones left unsaid are the ones you use to intentionally hurt someone.”

She has spent her life trotting every corner of the globe, but it is Italy that stole Marilyn Moore’s heart. Marilyn Moore, luxury travel specialist and owner of MDM Travel and Events, has a passport that most of us would envy. Her life has seemingly been one fabulous trip after another. So much so that she made a career out of it. “A lifetime in travel has never stemmed my enthusiasm and passion for selling travel or travelling,” Marilyn told Label Magazine. “My many years’ experience in the industry developed into organising conferences and incentive trips for some of Australia’s leading corporate companies, which has taken me from one end of the planet to the other. And the extremes have added to the interest - just this year I organised a group staying at the Ritz in London and the Old Course in Scotland, then jumped a plane to take over the running of a geologists’ conference in Montserrat in the Caribbean. “I still love chatting over a coffee or champagne with anyone who wants to talk travel.” With so many exceptional destinations to choose from, it’s understandable that Marilyn struggles to choose just one. “When asked my favourite parts of the world - I just go blank - as I have had so many wonderful experiences in so many places,” Marilyn says. “But I would have to say Italy stands out. “Italians seem to share the same passion for life and fun that I have. Several attempts at learning the language and many strained conversations with Italians (with them ending in fits of laughter) have been all part of the fun.”

FASHION found myself at the cutting table hours before running into labour to have my second daughter Kristina, the pace and time required by owning your own business and looking after a young new family was quite overwhelming. At that point in time I decided I needed a break to spend a year off with my two girls. It was a great luxury to have that time, but creatively and professionally I was yearning to get back to work and offer my experience in a different way, collaborating and working with a bigger team. How has the label’s aesthetic resonated with you over its lifespan? Seduce has always had an edge and as our name might suggest, the label is known for being unapologetically sexy. I feel it’s important to keep these elements, although interpreting them in ways which are on trend. Seduce has always been a boutique destination that offers party and occasion pieces, as well as lux day pieces that can be integrated in our customer’s wardrobe and take them from day to night. Who is the Seduce woman and how has it changed under your eye? We are definitely starting to have fun with the pieces we offer to our Seduce Girl. We have loyal customers that have been shopping with Seduce for 25 years now. They have needs other than those of our new younger audience, so it’s about finding the right balance between the two. With the collections we are working towards a language that embraces and enriches the existing Seduce signature.

BEHIND the BRAND If you take a look at your wardrobe over the last 25 years, a piece of Seduce clothing will have featured in the mix from casual daywear to minx party attire. Known for its sensual edge, the beloved Australian label has recruited celebrated designer Magdalena Velevska as Head of Design, to make the journey from day to eveningwear a fresh, on-trend experience. Magdalena divulges her plans for the brand in their 22 stores and 130 stockists on Australian shores and far beyond. What was your fashion background before beginning your work at Seduce? I worked on Magdalena Velevska, my own brand, for five years; I also worked with several established Australian designer brands, across design, wholesale and PR. I have been able to have a great career in fashion that spans over 17 years. How did the role of Head of Design come about with Seduce? Judy and Peter, the owners of Seduce were looking to collaborate with an established designer and I was looking to work with an established business in terms of production, distribution and retail space. Seduce in my mind has always been a boutique destination, one that has a unique offering of basic separates while simultaneously taking our customer through to an event or special occasion. I felt that worked well with my extensive experience in high-end designer wear. I also feel collaborations of this nature are highly important in keeping with the fast pace of fashion; working with the right team is key to a successful future in the industry, both here and overseas. Seduce has a growing retail footprint both in Australia and overseas, with flagship stores in Dubai and China so it’s very exciting working for a brand in this position. Why was the role such a good fit at that point in your career? Having 26

What are your plans for the label? Seduce has been around for 25 years, so with the way they are positioned at the moment the sky is the limit. Great resources as well as great quality production, teamed back with amazing design I believe is a formula that will ensure Seduce stays at the forefront of retail in the Australian fashion scene for the next 25 years. We are developing programs that will take our customer on a journey, from everyday separates to work and eveningwear, Seduce offers its customers the complete experience. I hope to build an incredible new chapter for Seduce and fast tracking its presence on the Australian and international fashion scene, as an innovative, exciting and unique brand. As part of the design team at Seduce I will work towards defining its tone of voice, direction, content and structure of the collections, engaging both new and existing customers. Creating beautiful collections and collaborating as part of a dynamic team to establish Seduce as a brand everybody wants. What styles will we love from Seduce this season? Lots of lace in soft neutral colours , wide leg jumpsuits, laced up styles, a floatier and sexier silhouette, chambray pieces, lux day, 70s but now pieces. Where do you seek design inspiration? As a designer I love change and the new feeling it brings with it. I feel I have as much to imprint on Seduce as it will imprint on me in return. Inspiration starts with a fabric, texture, graphic or embellishment, careful consideration, watching, listening, drawing and working towards a garment that women want to wear and fall in love with. These are to become pieces they cherish and find comfort in, pieces that make up the story of their life. When designing it’s important to tell a story that explores current culture and lifestyle trends and one that our customers can relate to, however it’s also important to dramatise and blur reality adding a sense of fun and unpredictable energy that feeds the appetite of our audience.

175 g (6 oz) sugar 50 g (1 3/4 oz) dextrose 50 g (1 3/4 oz) maltodextrin 5 g ( ¼ oz) sorbet stabiliser 400 g (14 oz) water 350 g (12 . oz) raspberry puree

Place all the dry ingredients in a bowl and mix until combined. In a double boiler, place the water over medium heat or cook in a Thermomix (4–5 min/40C/speed 1.5). When the water reaches 40C (104F) whisk in the dry ingredients and bring up to 65C (149F), whisking constantly. Thermomix: 20 sec/speed 7, then 4–5 min/70C/speed 3. Transfer the mixture to a stainless steel bowl placed over an ice bath. Cover with plastic wrap and place the bowl in the freezer, stirring every 10 minutes, until the temperature of the mixture drops to 4C (39F). Add the raspberry puree and blend well using a hand-held blender. Place the bowl of sorbet mixture in the refrigerator for 4 hours. Cool another stainless steel bowl in the freezer. Turn on the gelato maker to begin the freezing process. Remove the sorbet mixture from the refrigerator and blend it with a hand-held blender for 1 minute then pour it into the gelato maker. Once the mixture reaches –4C (25F), scoop out the sorbet and transfer it to the cooled stainless steel bowl. Cover tightly with plastic wrap and place it in the freezer. The sorbet should be served 2–3 hours after placing it in the freezer, or when it reaches –12C (10F). If it goes below –15C (5F), or is left in the freezer overnight, the texture will be compromised.

DARK CHOCOLATE GELATO Makes 1 kg (2 lb 3 oz)

Ingredients

140 g (5 oz) sugar 40 g (1 1/2 oz) skim milk powder 55 g (2 oz) dextrose 5 g ( 1/4oz) gelato stabiliser 70 g (2 1/2 oz) dark, unsweetened (Dutch) cocoa powder 630 g (1 lb 6 oz) milk 35 g (1 1/4 oz) cocoa mass, chopped

Method

Whisk in the cocoa mass then stir occasionally until the mixture reaches 40C (104F). Cover the bowl with plastic wrap and place it in the freezer, stirring every 10 minutes until the temperature of the mixture drops to 4C (39F). Place the bowl of gelato mixture in the refrigerator for 4 hours. Cool another stainless steel bowl in the freezer. Turn on the gelato maker to begin the freezing process. Remove the gelato mixture from the refrigerator, blend it with a hand-held blender for 1 minute then pour it into the gelato maker. Once the mixture reaches –4C (25F), scoop out the gelato and transfer it to the cooled stainless steel bowl. Cover tightly with plastic wrap and place it in the freezer. Place the sugar, glucose and enough water to cover in a heavy-based saucepan over medium–low heat. Create a slurry in the pan and cook until the mixture reaches 121C (250F). While the sugar mixture is cooking, whip the egg whites using an electric mixer on medium–high speed until they reach soft peaks. When the sugar syrup reaches 121C (250F), with the mixer running on medium speed, slowly pour the syrup into the egg whites. Continue beating the meringue until it comes to room temperature (23–25C/73–77F), about 10–15 minutes. If not using immediately, store in the refrigerator, covered with plastic wrap for up to 2 days.

FLOURLESS CHOCOLATE SPONGE

ASSEMBLY

Ingredients

100 g (31/2 oz) dark chocolate callets or chopped dark chocolate 90 g (3 oz) egg yolks 75 g (23/4. oz) sugar 100 g (3 1/2 oz) egg whites

Method

Preheat the oven to 180C (350F) and line a baking tray (minimum size 35 x 25 cm/14 x 10 in) with baking paper. Place the dark chocolate in a double boiler over medium heat. Stir constantly until the chocolate has melted to a smooth consistency. Do not let the temperature rise above 50C (122F). Thermomix: 4–5 minutes/50C/speed 3. Remove from the heat, cover and keep warm (at liquid consistency). Using an electric mixer, beat the egg yolks and sugar on medium– high speed for 1–2 minutes or until pale and fluffy. Slowly pour the melted chocolate into the egg yolk mixture and mix on medium speed until well combined. In another mixing bowl, whip the egg whites on medium–high speed until they reach soft peaks. Add the egg whites to the chocolate mixture and mix on medium speed until combined – do not overbeat. Pour the mixture onto the prepared baking tray and, using a spatula, spread it out to a large rectangle at least 25 x 8 cm (10 x 3. in) in size and a thickness of about 5 mm (1/4 in). Cook for 15–20 minutes or until just firm to the touch. Remove from the oven and leave to cool on a wire rack. Turn the sponge over and gently peel away the baking paper. Set aside.

ITALIAN MERINGUE Ingredients

240 g (8 1/2 oz) sugar 160 g (5 1/2oz) liquid glucose 140 g (5 oz) egg whites

Raspberry sorbet, Flourless chocolate sponge, Dark chocolate gelato, Italian meringue → Using a spatula, fill the smaller dome mould with the raspberry sorbet, leaving a 1.5 cm ( 1/2 in) gap at the top for the chocolate sponge. Work the sorbet into the mould firmly, ensuring there are no air pockets. Cut a 13 cm (5 in) diameter disc out of the chocolate sponge and insert it on top of the raspberry sorbet in the mould. Place in the blast freezer for 20 minutes, or freezer until frozen solid. Fill the larger dome mould three-quarters full with the dark chocolate gelato. Work the gelato into the mould firmly, ensuring there are no air pockets. Take the dome of raspberry sorbet out of the freezer and unmould it. Insert it into the middle of the chocolate gelato mould, pushing it in firmly. Using a spatula, smooth the top and scrape off any excess gelato. Return it to the blast freezer for 20 minutes, or freezer until frozen solid. Remove the raspberry and gelato dome from the freezer and unmould it. Place it on the cake board and, using a spatula, apply the Italian meringue thickly and evenly all over (about 1.5–2 cm/ 1/2.– 3/4 in thick). Using your fingertips, pinch the meringue to create small peaks. Using a blowtorch, evenly singe the meringue to lightly brown the outside and give it a nice colour and texture. Place it in the freezer for 1 hour or until set. Serve immediately or store in the freezer for up to 2 weeks. If stored in the freezer, take it out of the freezer and place it in the refrigerator for 20 minutes before serving.

Not Your Aunty’s Prawn Cocktail

It’s one of summer’s ultimate guilty pleasures, but we have to face the facts – it’s a little worn out. Enjoy a modern take on the throwback dish with a kick of wasabi and the tang of my quick fennel pickle.

This dish is a little garden of flavours to be explored. Pick up your chopsticks and compile your perfect mouthful of cured trout.

INGREDIENTS 1 fennel bulb, sliced finely 2 tbsp apple cider vinegar 1 tbsp extra virgin olive oil, extra for drizzling 1 pinch sea salt flakes 10 cooked and peeled prawns 1 avocado 1 lime, cut in half 1 tsp wasabi paste ½ dill tips

INGREDIENTS Seeds of ½ pomegranate 350g of ocean trout fillets, pin boned and skin removed juice of two limes ½ cup Maggie Beer Verjuice 1 large green chilli, sliced finely on the diagonal 4 golden shallots, finely sliced 1 tbsp olive oil, extra for drizzling pinch of sea salt flakes 1 teaspoon finely sliced ginger 1 cup coriander leaves

1. In a small bowl, toss the fennel with the apple cider vinegar, olive oil and sea salt. Leave for 10 minutes to marinate while you move on to the next step. 2. Remove the avocado seed and skin, place the flesh in a small bowl and smash with a fork to a guacamole consistency. Work the wasabi through, along with the juice of one lime half. Place the mixture in a disposable piping bag for the best presentation, or set aside with a spoon handy if you are feeling lazy. 3. Arrange the fennel on your serving dish, top with the prawns and pipe the avocado mixture on top of any empty looking patches. Cut your remaining lime half into nine pieces and arrange around the dish and finish with the dill tips. Drizzle with a little more extra virgin olive oil and serve before the avocado oxidises.

1. In a medium sized bowl, combine the lime juice, shallots, chilli, olive oil, salt, ginger and verjuice and set aside for 15 minutes to take the sting out of the shallots. 2. Place your ocean trout on a cutting board and, using a sharp knife, trim any excess fat from the fillets. Slice into 5mm thick pieces to resemble sashimi. 3. Gently toss the ocean trout through your lime mixture and allow to sit for three minutes. 4. Remove the trout piece by piece and arrange on your serving dish. Top with the chilli pieces and sprinkle a few shallot pieces on top. 5. Arrange your coriander leaves around the outside of the dish and scatter the pomegranate seeds down the centre. Finish with a drizzle of olive oil and serve immediately.

PORSCHE BOXSTER Andrew Meadowcroft says life in better in a Boxster The Boxster from Porsche has been described as a celebration of real life. DE FACTO RELATIONSHIPS Vanessa Hernandez of OMB Solicitors discusses de facto rights and obligations

De facto couples now have more rights than ever before, since legislation was passed in 2009, which recognises that property matters between de facto couples are able to be dealt with under the Family Law Act, in much the same way as property matters between married couples. This applies no matter what the nature of your de facto relationship, whether you are in a heterosexual relationship, or a same sex relationship. A de facto relationship may even be found to exist if one of the persons is legally married to someone else or in another de facto relationship. The major difference this legislation has established is that parties in de facto relationships are now able to seek an interest in their partner’s superannuation. They are also eligible to make application for spousal maintenance in situations where a party is unable to financially support themselves and the other party has the means to provide financial assistance. Previously, these types of options were only available to legally married couples, and it led to some hardship, heartache and regret for many people who invested a lot of time, energy and finances in a de facto relationship, only to discover they had limited rights. While the Family Law Act legislation changes of 2009 are significant, it is important to remember that a de facto relationship must be established for this legislation to be meaningful. The requirements to establish a de facto relationship are quite complex and you should check with your legal advisor to ensure that your relationship falls under the definition in the Act.

In short, you must have a relationship as a couple living together on a genuine domestic basis. When determining the question of “what is a couple”, the Act contemplates a number of things including but certainly not limited to the length of your relationship, whether a sexual relationship exists, if there was financial dependence or interdependence and whether there is a child of the relationship. Importantly, the Act enforces a two-year time limitation for de facto couples to resolve their property matters. If you do not resolve your matter within this time, you may be required to initiate Court proceedings, which will be at a further cost to you. Like married couples, de facto property settlements can be documented by way of Consent Order or Binding Financial Agreement. Parenting matters are conducted in the same way irrespective of whether the parties are married or in a de facto relationship and agreements can be documented by way of Consent Order or Parenting Plan. When it comes to de facto legal matters, the same common sense approach should be taken as with any other legal matter: 1. Ensure you have strong legal representation. This does not necessarily mean you are looking for the toughest lawyer who will ‘get you the most’, but rather look for someone who will listen to you and provide the best possible advice and representation for your circumstances. 2. Use common sense and a reasonable approach. Especially in matters as personal and sensitive as relationship and family matters, it is easy to get caught up in emotion and bitterness. MICHAEL & DIANDRA DOUGLAS Estimated settlement: $45 million It seemed like a love story for the ages when Douglas met 19-yearold Georgetown co-ed Diandra Luker in 1977 and married six weeks later. Douglas went on to become a hugely successful star, but not such a successful husband. After a string of scandals they divorced in 1998 and Diandra was awarded an estimated $45 million, plus homes in Beverly Hills and Majorca.

KEVIN COSTNER & CINDY SILVA Estimated settlement: $80 million They were once the golden couple of Hollywood. They met at university and married in 1978. During their 16-year marriage, Costner went on to become one of Hollywood’s highest-paid actors, and when they divorced, she was awarded $80 million.

#9. LIONEL & DIANE RICHIE Estimated settlement: $20 million In 1984, Lionel Richie, then 36, married his 18-year-old backup dancer at the 1984 Olympics in Los Angeles. They hit the headlines when Diane filed for divorce in 2014, airing a lot of dirty laundry publicly. Among her claims were a monthly clothing allowance of $15,000; $50,000 a month for manicures, massages and other personal services; and a plastic surgery budget of $20,000 a year. Sounds fair to us. #10. MICK JAGGER & JERRY HALL Estimated settlement: $15 to $25 million When it comes to dog acts, Mick Jagger takes the cake in his divorce from Jerry Hall. They met in 1977 and had two children together before marrying in Bali years later. Hall filed for divorce in 1999 after learning that Jagger had fathered another woman’s child so Jagger, worth an estimated $325 million at the time, successfully challenged the legality of the Balinese wedding and received an annulment so Hall walked away with between $15 and $25 million.
