She is the definitive poster girl for busy, working mothers everywhere – beautiful, talented, a mother of four and she now has her own line of lingerie.

S

et your teeth to grind because what woman isn’t jealous of a 41 year old mother of four who is still so jawdroppingly gorgeous that she is the face AND body of her own line of lingerie. It gets better (or worse) because the same woman also paints, sings, has numerous fashion labels, tirelessly supports charities and is the epitome of a working mother. Meet Heidi Klum, a real life wonder woman, supermodel and Emmy-winning TV Host who has just been announced as the Creative Director and face of Bendon’s globally renowned Intimates collection. Enter Heidi Klum Intimates, a collection that is the frilly, feminine manifestation of the partnership between Heidi and Bendon, a world leader in intimate apparel. “I've always loved lingerie and can't describe how incredibly exciting it is to globally launch my Intimates collection with Bendon, a true leader of the industry. In addition to spending a majority of my career modelling lingerie, I am also a woman whose body has changed over the years. I am a mother of four children so I genuinely understand the importance of finding the right lingerie. I want women everywhere to feel sexy, empowered and confident in my collection every time they wear it.” The inaugural campaign, shot in Los Angeles by famed photographer and longtime collaborator Rankin, is a significant one in the model’s career as it marks her return to lingerie after a 5 year hiatus. In it she models the Heidi Klum Intimates collection as well as Heidi by Heidi Klum, a more accessible everyday brand and also features Heidi alongside a male model for her menswear label, HKMAN. The collection was released worldwide in January this year in over 1800 retail collections. “It was so exciting to shoot the first ever Heidi Klum Intimates campaign with Rankin,” said Klum. “I’ve always loved modelling lingerie and it was fun to get back in front of the camera wearing beautiful pieces. I was so excited for the collection to arrive in stores in January.” For the woman who seemingly has it all these days her early modelling life was anything but easy. In 1992 at age 18 she won a modelling contest from 25,000 entrants landing a contract with an agency. In that time moody, ultra-thin girl/women,

waifs like Kate Moss were all the rage and she endured rejection for being the wrong ‘type’. As she explained, “I wasn't tall enough; my face wasn't weird enough for what they wanted; I was too happy for everybody. At 19 years old, I was working and responsible for my own bills, laundry, and what I would eat for dinner when my friends still had their mothers taking care of those things.” Living in terrible apartments, away from home and with little English it is an experience that would have sent a less resilient type running back home defeated but she persevered, drawing on the lessons learned from her parents Erna and Günther Klum. “Sometimes it's good to walk the extra mile because maybe that has something to do with why things happen.” Her persistence finally paid off, and high profile, top paying work for magazine covers such as Vogue, Elle and Marie Claire began to flow. Then followed multiple appearances and global fame on the cover of Sports Illustrated and then the honour of becoming the first German model to star as a Victoria's Secret “Angel”. Inside she knew that while modelling was fine, everyone has a use by date and she set about transforming her fame and high profile into something tangible for her post modelling career. “My parents laid rules out for me, and I followed them.” Her mother gave her one rule she has never forgotten: Don't rely on anybody! Klum says. “I saw that you have to work to get what you want.” It is a rule she took to heart as she slowly began to transition herself into a successful businesswoman. In December 2004, Klum became the host, judge and executive producer of the reality show Project Runway. Her role earned her an Emmy nomination in 2008 and a win in 2013 which she shared with co-host Tim Gunn. Her list of credits in this time is exhausting to read. She worked as spokesperson for Dannon and H & M and was featured in commercials for McDonalds, Volkswagen and took on the challenging role of being the official ambassador for Barbie’s 50th anniversary. Then she had supporting roles in movies and television. Blow Dry, Ella Enchanted, The Devil Wears Prada, Perfect Stranger, Sex and the City, Parks and Recreation and How I Met Your Mother all starred the stunning blonde. “Family comes first. You're the only thing they have.”

So how does she handle the ongoing pressure of so much work while being a mother to four children and having to compartmentalise almost every second of the day? Firstly she doesn’t do sick days preferring to just grit her teeth and get through on sheer determination. Secondly she marks her days using colour coding to denote if a certain time is for work, family or a day of rest. Doing nothing must be difficult for Heidi but she has insisted that she is happy to just hang out with her children and do whatever they feel like doing. In an interview she declared that she was most proud of the job she has done of raising considerate kids, ones who say “please” and “thank you” without prodding. “I'm very happy when I see them just doing it by themselves, because it takes a few years,” she says. “For the longest time, you just sound like a broken record, but you have to be consistent when teaching kids.” Consistency is also her personal success secret. “Keeping it all together as a modern woman means multi-tasking, especially when you work," she says. “I think you always need to try your best, but at the same time you can only do what you can do, and you don't need to beat yourself up about it. I'm not white-picket-fence perfect.” Her priorities in life couldn't be clearer. “Family comes first,” Klum insists. “You're the only thing they have.” Of course no story about Heidi would be complete with mentioning her ex, British singer Seal. They met by chance in the lobby of a New York hotel, she recognised him at once and they began chatting. Her quote of that meeting was, “I felt something ‘magnetic’ and I was drawn toward him and just wanted to know more.” In December of that year he proposed to Klum in the Canadian Rockies. They married in Mexico in 2005 and famously used to renew their vows in a themed ceremony every year. They also decided to have a large family very quickly with three children in quick succession. “Every time I left the hospital with a big smile on my face and a baby in my arms, I said to the nurse that I would be back.” Sadly the publicly idyllic love match didn’t pan out and in 2012 they announced a split but remain deeply committed to their family and are regularly photographed together cheering from the sidelines at the children’s soccer games. Looking forward Heidi now has set her sights on her children and her career. A worldwide publicity tour to promote Heidi Klum Intimates and then back to her home in America to continue doing what she does best – focus on the job at hand and give it everything that she has. She is a living example of the harder you work, the luckier you get and her great beauty is matched by an equally great focus and determination. In short she has worked hard for everything that has come her way.

Nicole Daley Things that glitter and shine have held a lifelong fascination for this daughter of a diamond selling family.

B

orn into the business is a much overused expression but for Nicole Daley it is an exact description of how she came to be in jewellery. The daughter of Bill and Pamela Hannaford, who founded 5th Avenue Jewellery, she has vivid memories of her early years working in the business. “Mum and Dad had the shop, along with many other interests, and at the age of five I was answering the phone in the Adelaide store. In fact I made my first sale when I was just past seven years of age and from that early age I was fascinated by gem stones.” When Nicole was eight, Bill and Pamela decided to retire and moved to the Gold Coast but always an entrepreneur Bill saw too many opportunities and very quickly moved into a store in Surfers Paradise. “I attended St. Hildas but I was always involved in the business. It was perfect training because I got to see all sides of the operation and in my parents I had the best teachers possible. I was always been very lucky to travel to Europe and England and have always attended international jewellery fairs seeking rare gems and enabling me to keep on top of world trends in terms of design.” After leaving school, Nicole went straight from school in 1994 to the family’s new store in Pacific Fair. She embarked on a rigorous round of study and became a highly qualified gemmologist. “It is difficult because you constantly have to update your skills and knowledge. The major thing is learning about the synthetic stones and how to recognise them. I always worry when people tell me that they have purchased something on-line but you need the kind of specialised testing equipment we have here to ascertain if it is real or not. What they think is a great diamond turns out to be fracture filled or synthetic.” Her parents taught the value of treating customers with respect. “It was the first thing – ascertain what they want, how they would be wearing it and what sort of budget. For example emeralds are beautiful but too brittle and really unsuitable for every day use as an engagement ring.” It was also through jewellery that Nicole met her

husband Darren Daley around 12 years ago. “We used to see each other at conventions around Australia and gradually a friendship ensued. He is also a gemmologist and makes all of our custom pieces in his workshop. It is very handy having someone who is so gifted especially with my own range of designs, Ti Amo. With the 3D CAD (Computer Aided Design) system he uses, my designs and anyone else who wants a custom made piece can see what they will be getting. He can take the dimensions of any stone and very quickly produce a 3D image.” The name Ti Amo was chosen by Nicole because it has such special significance. “My father is very romantic and was always leaving gifts and a card that read ‘Ti Amo’ which means ‘I love you’ in Italian. Every piece is a one-off, designed and manufactured in house so it can never be repeated. I often wake up in the middle of the night with an idea which is why I always have some paper nearby.” To have a designer and someone capable of making any piece in house is a very rare combination for a jewellery store. Most are essentially retailers but it is that bespoke element that enthrals and captivates Nicole and Darren. “People don’t realise the intense amount of concentration and work Darren puts in to make something. Sometimes I would talk to him at the wrong moment and spoil his train of thought but I know now when he is thinking.” After 19 years at Pacific Fair, Bill and Pamela retired, Nicole and Darren took over the business and moved the shop to Capri on Via Roma. “It is an easy place for our customers and has undercover parking. We are able to give one on one attention to our clients and pride ourselves on always having one of us in the store. The store is open seven days a week and is a one stop jewellery shop offering everything from design and remodelling to valuations and even watch batteries.” For someone born surrounded by diamonds, precious stones and expensive metals, it is the perfect marriage of personal service with exquisite jewellery.

fashion Jacket: Joie is one of my favourite US labels of all time and I adore this jewel toned leather jacket. It is buttery soft and extremely comfortable to wear. Throwing on a jacket can really sharpen your outfit and this is my current go to piece.

Boots & Bag: These are my favourite investment pieces. I bought the Isabel Marant boots on sale from Net- a-Porter, they add a real edge to any outfit. The Chanel Boy bag I picked up on a business trip to New York. It’s a collector’s piece that I will keep and pass on to my daughter when she is old enough to appreciate and look after it.

Fiona wears an Equipment silk python tank, Ulla Johnson Jacket, Frame Denim jeans and Paul Andrew ostrich feathered satin sandals, all from the US. Scarves: Every season I pick up a couple of American Vintage cotton/silk blend scarves to add to my wardrobe. They add a touch of colour to my mostly monochromatic style and are perfect for our winter climate as they are not too heavy and can be worn with a light jacket or knit.

Jeans: These babies are my favourite pair of baby blue distressed jeans. Denim is a staple in my wardrobe and is incorporated into my outfits at least three or four times a week. ‘Frame’ is a brand we import from the US - they are a great premium brand and a fabulous fit.

My Style

If anyone knows fashion and personal style it is Fiona Edwards-Bassingthwaighte. Her slightly tongue in cheek self- description is “fashion retailer, importer and blogger” for Edwards Imports, fifideluxe and Janine Edwards boutique.

Sunglasses: I just adore my Celine Shadow sunglasses in two tone dark blue and Havana brown. They are super-sized, rock star material and add a real edge to any outfit. 22

The David Jones Autumn Winter 2015 Fashion Launch is one of the most highly anticipated events in the Australian fashion calendar. This year VIP guests entered through a subway tunnel into an urban jungle where they watched a live graffiti artist paint the set and listened to a band of drummers ring in the latest trends. Ambassadors Jessica Gomes, Montana Cox and Jason Dundas rocked the catwalk against a street style backdrop, going with the theme of marching to your own beat. In total 212 looks from 35 collections adorned the runway, from Akira to Zimmermann, glazed with MAC Cosmetics and coiffured by Aveda. Bianca Spender and Michael Lo Sordo kicked off the event with some serious crimson colour, proving that radiant fabrics work with every cut. Camilla and Willow went with whimsy and decadent prints, while Dion Lee and Ginger & Smart graced Gomes with acidic brights and brilliant gem tones. Bec & Bridge brought us sensuality in peach, with a dash of pure white cream pouring in from Jac + Jack’s blown out basics and Josh Goot’s dreamy designs. The Upside proved that there is no room for slack style in our downtime, featuring their hot range of activewear. If we did not understand the overwhelming seventies swing, Romance Was Born worked the flair like no other. The evening finished with a tribute to Carla Zampatti’s 50th year in business, gifting her the coveted closing position.

Eight is Enough Here are eight Australian Designers Label thinks you should be following. Todorov Victoria Todorov is certainly unique. She isn’t a great fan of online promotion – no Instagram, she only recently got an email address and her web site is as minimal as it gets. However she has a flair for the dramatic with her clothes a reminder that the number of followers you have is not necessarily a sign of your talent.

Alice McCall Alice McCall is an eclectic brand with a playful sensibility, using unique detailing and charming folk-like craftsmanship to create charismatic, modern keepsake collections. The label was born following Alice’s vast and global career as a stylist with the likes of Beyoncé, Deborah Harry and Marianne Faithful.

M ink Pink Designer Rachel Evans wanted to fill what she saw as a gaping hole in the Australian fashion market for well-designed, gorgeous but affordable clothing. She designs original and inspirational pieces filled with colour and life that her customers love to wear.

Yousef Akbar Originally from Saudi Arabia, Yousef came to Australia to study Logistics but decided fashion was his calling and embarked on a Diploma of Fashion at The Fashion Design Studio in Sydney. That decision has certainly paid with Yousef winning a string of industry awards since his graduation in 2013.

Shakuhachi Self-taught fashion designer, Jessie White, launched her womenswear label with a small collection of handmade t-shirts made on a budget of just $400. In today’s health-crazy world, if you have never tried Pana Chocolate then you probably caught onto the paleo trend early and have retreated to cave-dwelling life. Chocolate is an undeniably important part of my daily ritual. What inspired you to create your own brand? The reality is that I’ve been self-employed for most of my life and I just like working with ideas to see where they can go. I started dabbling in raw chocolate and I started thinking about how I could apply some commerciality to it. From there I focused on perfecting a recipe that retained all the goodness and values I hold as well as testing the market. I have tried many times to make healthy chocolate at home and, so far, only one attempt has been edible. How many attempts did it take to perfect the Pana recipe? I spent six months working full time to perfect the recipe and worked many late nights with various groups to test the products. Pana Chocolate is so much more than a recipe. It’s the right ingredients and the right structures that perfect the flavour. A cacao butter from Ecuador is very different to one from Bolivia, so I tried and tested many ingredients until it was right. How did the importance of raw foods reveal itself to you during your 20 years in hospitality? It was a natural evolvement for me. I started my life eating great food and growing produce at home, then surrounded by food in the hospitality industry. My love and appreciation just naturally evolved to organic, raw and vegan foods. What can we expect to see mixed into Pana Chocolate this year? Late in 2014 we introduced the first of our new gift pack range. We’re also testing new flavours for our bars range and our chefs have developed a sensational new range of handmade chocolates and cakes for the Pana Chocolate shops. Kadayıf Dolma: Apricot and Walnut Dolmas This traditional dish is from Erzurum, in eastern Anatolia, where they stuff it with walnuts. I’ve reduced the amount of syrup and boosted the stuffing with apricots. It uses the crunchy ‘string’ pastry called Kadayıf, which means there are interesting texture contrasts between the inside and the outside. Sugar Syrup 500g sugar ¼ lemon Filling 250g chopped walnuts 50g dried apricot, finely chopped Pastry 50g butter 300ml milk 2 egg yolks 500g chilled fresh kadayıf pastry 1 litre (4 cups) vegetable oil Decoration 2 tablespoons chopped walnuts To make the syrup, put the sugar and 750ml (3 cups) of water in a saucepan over medium heat and bring to the boil. Reduce the heat, squeeze the quarter lemon into the water, and throw in the lemon skin. Simmer for 15 minutes and then remove the lemon skin and discard. Remove from the heat and set aside to cool. (Do not refrigerate.) Put the chopped walnuts and apricots in a bowl and mix together. Gently melt the butter in a frying pan over low heat (or microwave for 30 seconds). Transfer to a deep mixing bowl, add the milk and egg yolks and whisk to combine. Loosen the pastry using your fingers and then roughly chop the strands. Using clean hands, take a handful of pastry and press together between your palms to make a round. Still holding the round in your palm, place 2 teaspoons of the walnut and apricot mixture in the middle and use your other hand to fold over the sides of the pastry and roll up the ends, and then squeeze into a tight tube. Dip your fist into the milk mixture, letting the pastry absorb some of the liquid through your fingers, pushing the pastry back inside your fist as it slightly expands. Shake off the excess liquid and then set aside on a paper towel. Repeat with the remaining pastry to make about twenty rounds. Heat the vegetable oil in a deep frying pan over high heat. Add a drop of water to the oil. If it sizzles the oil is ready. Carefully add the dolmas, 10 at a time, and then fry for 3 minutes until golden and crunchy. Remove with a slotted spoon and transfer into the bowl with the syrup. Leave to soak for 2 minutes, then remove and serve, decorated with the chopped walnuts. Makes 20.

Kaygana: Cretan Eggs with Wild Weeds There’s a joke about a salad farmer who is having a tea in the village café. A neighbour comes in and says: ‘There’s a goat in your field.’ The farmer says: ‘Don’t worry, he won’t eat much’. Shortly afterward, the neighbour returns and says: ‘There’s a cow in your field.’ The farmer keeps sipping his tea and says: ‘Don’t worry about it.’ Then the neighbour returns and says: ‘There’s a man from Crete in your field.’ The farmer leaps up and rushes back to save his field before everything green has been stripped. People of Cretan background are famous for eating the dark-green weeds that grow wild along the Aegean coast and that were ignored for centuries by Turkish cooks. This egg dish uses the kind of wild (and tame) greens the Cretans have taught the Turks to love. 1 cup of any or all of these, mixed: nettles, chicory, curly endives, dandelion greens, round radicchio, beetroot (beet) leaves, wild rocket (but not witlof) 3 spring onions (scallions) 1 onion 80ml (1/3 cup) olive oil 1 teaspoon salt 1 teaspoon freshly ground black pepper 1 teaspoon hot paprika 4 eggs pide bread, to serve If you are using nettles, use gloves to handle them. To remove the sting, put in a heatproof bowl and cover with boiling water for 30 seconds. Transfer to cold water for 30 seconds. Pick the green leaves and discard the stems. Clean and finely chop the endives and the chicory, discarding the woody stems. Wash the spring onions, then remove the roots and green outer layer. Finely chop the onion. Heat the olive oil in a non-stick frying pan over medium heat, then add the onion and brown for 5 minutes. Add the spring onions and cook for another 3 minutes, then add the wild leaves in this order (from toughest to softest): endives, chicory, radicchio, nettle, dandelion, beetroot leaves, wild rocket. Lightly fry for about 5 minutes to let any excess water evaporate. Add the spices and stir. Make four wells in the mixture and break an egg into each well. Continue to cook until the whites are set but the yolks are still runny. Serve the kaygana in the pan for people to help themselves. If the yolks spread into the mixture, so much the better. Lahmacun: Thin-Crust Pide with Spicy Lamb Topping When I say thin-crust pizza is Italy’s answer to lahmacun (pronounced ‘lah-mahjun‘), I’m not trying to start a fight. The idea of putting spiced mince on a disc of dough would have occurred to human beings long before there were nations called Italy or Turkey—or for that matter Armenia, Greece or Syria—all of whom have claimed to be the originators of this addictive pastry. What we do know is that nowadays lahmacun is a speciality of the town of Şanlıurfa, in southeastern Turkey, where they pride themselves on the crispness of their bases. Lahmacun should not be confused with the heavier kıymalı pide, well known in and out of Turkey for the thickness of its dough and the coarseness of its meat topping. For lahmacun you need a light touch. Base 200g plain (all-purpose) flour, plus extra for dusting 1 teaspoon salt 70g (½ cup) wholemeal flour (if using a baking tray) Topping 2 tomatoes 1 red capsicum (pepper) 75g capsicum (pepper) paste 5 garlic cloves ½ bunch flat-leaf (Italian) parsley 2 teaspoons chilli flakes 1 teaspoon freshly ground black pepper 1 teaspoon salt 200g minced (ground) lamb (about 25 per cent fat) Red Onion and Sumac Salad (Optional) ½ red onion, finely sliced 1 teaspoon salt 1 tablespoon sumac 1 tablespoon extra virgin olive oil juice of ½ lemon, plus extra to serve Preheat the oven to its maximum temperature (as close to 300°C as possible). If you have a pizza stone or tile, place it in the oven. Or leave your baking tray in the oven so it will preheat. Sift the flour into a mixing bowl and add the salt. Make a well in the middle and slowly pour in 125ml (½ cup) of lukewarm water. Knead the dough for 5 minutes. Sprinkle some flour on your work surface and then divide the dough into four balls. Cover the bowl with a damp cloth and leave to rest. Score a shallow cross in the base of the tomatoes, then transfer to a heatproof bowl and cover with boiling water. Leave for 30 seconds, then plunge in cold water and peel the skin away from the cross. Cut the tomato in half and scoop out the stalks and seeds with a teaspoon. Roughly chop. Remove the seeds from the capsicum and roughly chop. Coarsely blend the tomatoes and capsicum with the capsicum paste, garlic, parsley, chilli flakes, pepper and salt. Combine the mixture with the lamb mince and stir thoroughly. Place a ball of dough on the floured work surface and, with floured hands or a rolling pin, flatten into a round about 25cm wide and less than 5mm thick. Repeat with remaining dough balls. Using a tablespoon, thinly spread the lamb mixture onto the rounds. Then press in with your hands. If you are using a baking tray, take it out of the oven and put a piece of baking paper over it. Dust the baking paper with a little wholemeal flour. Place the rounds of dough on the baking paper and bake for about 5 minutes, or until the edges are crisp. Meanwhile, if you are making the salad, finely slice the onion and place in a bowl. Sprinkle with salt and sumac, add the lemon juice and olive oil, then mix together. Sprinkle the salad over the lahmacuns, squeeze on some lemon juice, and serve. Serves 4.

Chef Somer Sivrioglu talks to Label about growing up Anatolian, his Istanbul food itinerary and the evolution of Turkish cuisine. What was it like to grow up in Istanbul? I grew up in Istanbul in the early 70s, in a little multi-cultural suburb called Kadıköy. In the suburb where I grew up, there were a lot of different ethnicities – Armenians, Greeks, Jewish families and obviously Turkish families as well. I was quite lucky to take the different foods of those people, so that really broadened my sense of taste and understanding of how Turkish food is more than two dimensions. What are your most iconic food memories of growing up in Istanbul? It’s just more about that communal feeling of eating together, and not only about the food in the sense that we have here. In Australia, it’s like ranking the chefs and the celebrities and designing cool, but there, it’s about great quality produce used with the proper techniques, but more importantly, it’s the atmosphere and the service of the place. That communal feeling is my most exciting memories from childhood. When you came to Australia, how did you find the food transition? Very similar in terms of the variety because when I am talking about the 70s, when I started to grow up, Turkey also became a very open, liberal economy. We had a lot of American influence, so in my childhood I had an abundance of different culture’s food. When I was growing up, having McDonald’s was more important than eating anything else. If you look at the Turkish food in that time, it was quite stagnant. That was not the food people would eat outside. If you were going out to more of a fine dining restaurant it will be Italian or French. What direction is modern Turkish food taking in Istanbul? I don’t like the term of Modern Turkish; I mean, it’s quite funny because when I opened the restaurant, my tagline was Modern Turkish. But I like that new Anatolian movement. It’s just using our own resources in Turkey but presenting more in a restaurant environment but still using the produce from the four different regions of Turkey. It’s a good movement and there are a number of restaurants that are opening up in Istanbul and it’s advocated by one of my close friends, Mehmet Gürs and his restaurant Mikla. More people are evolving it and working on it and putting there own personal touches. Maksut Askar and his restaurant Neolokal, and another one is Yeni Lokanta by Civan Er. When you go back to Istanbul, what is your ideal eating day from breakfast to lunch? One thing I would almost eat every morning eat is Kaymak – that’s the clotted buffalo cream – with honey and freshly baked bread. I definitely have that every morning because that’s one thing that is very hard to make in Australia because you need to use unpasteurised buffalo milk. And then for lunch, if I’m local, I got to my favourite restaurant of the chef that I admire most, called Çiya. He is the guy who made regional Turkish food popular way before it was popular to do so. He will always have incredibly different dishes not even I’m used to in Turkey. At night time, with my friends we generally go to Meyhane, they are like Turkish mezze bars. Then you choose an array of mezzes, they come to the table, with the poison of our choice, Rakı, a typical Turkish alcoholic drink. What treasures do you bring back to Australia? I always try to sneak in Salep, that’s the wild orchid plant that I use in cooking. I try to bring wild pistachio coffee and some organic sumac from a local supplier. It always makes for very interesting discussion at customs. What direction is your restaurant in Sydney’s Balmain, Efendy, taking this year? We are very seasonally focused. I see myself as regional Turkish chef of Sydney, so whatever is fresh and seasonal in Sydney, that’s what I use. Currently, what you’ll see in my menu all around is pomegranate, both the black figs and the green figs, I adore parsley. Obviously lamb is something we can never give up, we live and die by lamb. Apart from three months of the year, always on the menu is eggplant.

Autumn is all about the orchard, bearing apples, figs, pears, persimmons and quince in their only true season. Plums, peaches, melons and nectarines are at their peak, alongside lemon and kiwifruit. The vegetable bounty holds baking favourites such as sweetcorn, zucchini, tomatoes, potatoes, eggplant, pumpkin, carrots and beetroot, along with fresh favourites beans, cabbage, cucumber, snow peas, turnips and spring onion. This issue, we are favouring figs for their versatility and ease of preparation. Enjoyable alone or alongside any course throughout the day, the humble fig is a statement flavour on its own.

Fig and Goat Cheese Tart It is as if the culinary gods combined the last two courses of your dinner party into one supple and deeply satisfying dish. Feed your sweet and savoury fetishes with the pungent vivacity of goat cheese,

Pastry Method For the pastry, preheat the oven to 170°C. Grease and line a 25cm round tart tin with baking paper, ensuring the base is removable. Remove pastry from packet and unravel it onto a floured work surface. Ensure the pastry is the right size for your tin by placing the tin over the pastry sheet and observing a minimum of 2.5 cm border around the edge. Line your tin with the pastry, pricking the entire base with a fork. Cover the tin with glad wrap and place in the fridge for a minimum of 30 minutes. Remove from the fridge and line the pastry case with baking paper, fill to the top with pastry weights or dried beans to support the sides of your structure. Reality Stars The moral for any potential entrant into the reality television genre is be careful what you wish for because the dream may become a nightmare. Ben Williams, was from Epping Victoria and entered the Big Brother house at the beginning of Season One which he ended up winning. Regina Bird known to one and all as Reggie, was the Tasmanian fish and chip shop owner with the highly distinctive voice who endeared herself to Australians everywhere. She won Big Brother season three, left Tasmania and her husband and worked for a time for Virgin as a flight attendant. She shocked everyone with the news that she is slowly going blind. Her son Lucas has also been diagnosed with genetic disorder cystic fibrosis. Trevor Butler was the winner of Big Brother season four made memorable by the fact that he was the only one to win $1 million. After a brief spat with the tax department – they wanted to take some of his winnings – he eventually won the right to keep all the loot. These days he can be seen working for Hot Tomato on the Gold Coast. He proposed to girlfriend Breea Forrest, they married and now have two children. Karise Eden, the winner of The Voice season one, has had a tough time dealing with living her life in the public eye. The one time ward of the state, who had to deal with many issues regarding her upbringing, has confessed that she prefers to live away from the 70

spotlight. The 22 year old has acknowledged that the pressure of her win caused her to have a nervous breakdown but she is still writing new material and performing at selected gigs. She gave birth to a son named Blayden in December 2014. Harrison Craig, won The Voice season two as a baby faced 18 year old. He formed a great bond with Seal, his coach on the show, and now says that he considers they are great friends. He has had three songs in the top 10 singles chart with his cover of ‘Unchained Melody’ reaching No. 2 while his original song, ‘More Than a Dream, made it to No. 3. Harrison has landed the job of social media and backstage correspondent for the 2015 version of The Voice. Leigh Sexton/Jennifer Evans were great friends who took out the title of My Kitchen Rules series 3 in 2012. Sadly the widely touted ‘Curse of MKR’ appears to have struck with reports that they were no longer speaking to each other a year after the win. Dan and Steph Mulheron, the 2013 winners of My Kitchen rules, are a good news story from their experience on reality TV. For many years they had been trying to start a family and the $250,000 they won was used to start a cycle of IVF treatments. The baby is due in April which has been the cause of great delight from their many fans. resumably the BMW boffins had our part of the world in mind when they came up with the design for the first ever BMW 2 Series Convertible. Add great motoring weather, a mixture of highway, city and rural driving plus the ability to put the top down and enjoy the sensational outdoors in the comfort of a superbly designed German car and you have heaven behind the wheel. A replacement for the outgoing BMW 1 Series Convertible, this is a car that can literally be all things to all people. First things first – the look. The exterior design with its flat clean lines makes the car look longer and leaner. It has the focus of a runner looking down the track before a race and coupled with the low centre of gravity is a car on the move even when stationary. Especially pleasing is the safety of having invisible roll bars which will appear in a fraction of a second in the event of an emergency. Inside it is as you would imagine – luxury plus – with the feel and look of being wrapped in a cocoon of leather and chrome. Add the optional sports seats and you are soon transported into your own private world of motoring with all features and controls within easy distance of the driver. One impressive innovation is the ability to open the doors AND start the engine without using the car key. The key is recognised by the car, the doors will unlock and then by pressing the start/stop button you are ready to roll. Too easy. Changing from open air to soft top is also incredibly simple. The electrically powered fabric top features extra insulation, optimised acoustic comfort and can open and close in 20 seconds at speeds up to 50km/h. In a word: seamless. As a working mother I always need to ensure that the boot is adequate for my shopping needs. The luggage compartment volume has increased by 30 litres to 335 litres with the top closed or by 20 litres to 280 litres with the top open which is more than adequate for shopping or school bags. It also comes with standard features such as rain sensor, handsfree telephone facility, USB audio interface, BMW Professional radio including iDrive operating system with Control Display in flatscreen design, and automatic climate control with convertible mode. A few technical details for those who like this information. There are four engine variants available – three petrol and one diesel – with either a six-speed manual transmission or an eight-speed automatic transmission. All are rear wheel drive. BMW have declared that everything has been improved. Fuel efficiency, handling, functions and driving dynamics as well as larger exterior and interior dimensions. Finally, how easy is it to drive? Effortless is the best description. The first ever BMW 2 Series Convertible has extraordinary 360º visibility and, pardon the pun, it is a breeze to get around town in especially with the top down. Not too big, not too long, it handles like a dream, accelerates effortlessly and personally I think I looked pretty darn good in it especially when people could see me driving. It is a wonderful car and a perfect fit on every level for anyone wanting to enjoy the best of all motoring worlds. It has changed my mind about convertibles – I loved it. All’s fair in love and...

text wars? Vanessa Hernandez explains how a text is forever because it is treated as evidence in a court of law.

A

colleague of mine recently told me that parties separating should be provided with a Court monitored phone, that way, they would think twice before “sending that text” or “posting that status update”. I laughed but could not entirely disagree with the concept. In this day and age, everything can become evidence. Clients constantly hand me their phones and ask me to “look at this text message!” If you are in this situation, you will know and recognise some (hopefully not all!) of these types of messages: 1. The “baiting message”. The writer sends you something that they know and hope will entice a reaction from you. 2. The “abusive message”. The message that calls you names and puts you down as a husband/wife and/or parent. 3. The “manipulative message”. The message intended to back you into agreeing to something by making you feel you have no other choice. 4. The “threatening message.” The message that makes you fearful of the other party and how they may proceed. 5. The “paranoid message.” The message that accuses you of things you have not done and would not do. The list could go on and on... Most often than not, the client is right to be upset... the content of the message is abusive, mean or hurtful and sometimes, just plain bizarre. And then comes the question, “What do I write back?” The danger here is that each party will enter into a text war, say things they really shouldn’t, and that the string of text messages exchanged will then be provided to a Judge at some later stage. And

if you thought text messages were bad; don’t get me started on status updates and comments on social media. It is never ending. So how do I answer my client’s question as to what they should write back? I normally reply with, “Nothing. Write nothing back unless you absolutely have to.” In fact, my standard advice is simple and goes along the lines of, “If you would not be comfortable to have this email/text message/electronic post/conversation (etc) read out by someone to a Judge making decisions in your matter, then don’t write it/send it/say it/do it!” Often, what people don’t realise is that in that moment they hit the “send” button during a heated exchange, they are creating evidence. If the other party wants to do that, let them! But be mindful of your conduct particularly where children are involved and respond to only the necessary matters.
