Nanny’s Strawberry Yum Cake Instructions Stir together 2 cups of self-rising flour with 2 cups sugar. Pour into mixing bowl and set aside. Mash up 2 cups of strawberries with a potato masher (should be a little chunky). Melt 1 stick of butter in a saucepan and add 1 cup of water and 1 cup of vegetable oil – bring to boil for 1 minute. Pour dry ingredients into mixer. Blend on medium speed for 1 minute. Beat 2 eggs and 1/2 cup buttermilk together. Pour this into the dry ingredients. Mix batter on medium speed for 1 more minute. Drain the strawberries with a cheesecloth then fold them into the mixture. Mix one more minute on low speed. The batter will be just the prettiest shade of pink! Pour into a greased and floured pan (13x9 is my preference) and bake at 350 degrees for 40 minutes. Let the cake cool and pour the icing. Garnish with fresh cut strawberries on top. Icing – Place cream cheese in mixing blow and beat until fluffy. Slide your stick of butter into 6 sections and add to the cream cheese a chunk at a time until it beats smooth. Add in your powdered sugar and vanilla and mix for 30 seconds then fold in your strawberries. Beat until its pink – usually another minute or so. Pour over your cooled cake and spread evenly. Now you enjoy!
