I was born and raised right here in Noblesville. I grew up in a home without domestic violence or assault – it wasn’t something I saw, or even heard about. But when I was introduced to Prevail of Central Indiana, I was shocked by the number of individuals who are affected by domestic violence. In 2018 alone, Prevail helped more than 4,000 clients in Hamilton County. (Nearly 80 percent of clients are women and children.) Domestic violence and abuse are hard topics to discuss, so you don’t often hear about them. This holiday season, make a keepsake ornament using your little one’s handprints. Stop by uPaint Pottery Studio to capture a clay impression of your child’s handprint. Measure the length of the area where you want to hang the garland and multiply that measurement by 1.5 to find the length of garland you will need to create the appropriate scallops on banisters, mantles or fences. EXAMPLE: If a staircase banister measures 10 feet, then take 10 feet X 1.5 = 15 feet of garland needed.

LIGHTING A FRESH OR UNLIT TREE The density of branches and circumference will affect the amount of lights needed. Wrap lights around branches from trunk to tip of branch. We suggest a minimum of 100 small lights per foot.

EXAMPLE: An 8-foot tree will need 800-1,000 lights.

SAFETY FIRST Always check for frayed or damaged wires before you begin, and follow the manufacturer’s guidelines on the box. Run an extension cord up the center trunk to allow several outlets to plug in light strands. For small lights, connect no more than 300 lights.

EXAMPLE: If a strand has 50 lights, no more than 6 stands should be connected together; 100-light strands, no more than 3 strands connected.

Varicose veins are large, swollen blood vessels found predominantly in the legs, but can show up almost anywhere in the lower half of your body – even your rectum or vulva. When they swell above the surface of the skin, they create lumps that tend to be purple in color and may look alarming but are typically not a medical problem.

When Do Varicose Veins Start to Appear During Pregnancy?

Varicose veins can develop anytime during your pregnancy, but they tend to get larger and more pronounced as you gain weight through your pregnancy. After birth, those leg bulges will recede, and you will look like your pre-pregnant self again in most cases.

What Causes Varicose Veins During Pregnancy?

The extra volume of blood you produce during pregnancy is essential to support two growing bodies. It does, however, put extra pressure on your blood vessels – especially the veins in your legs, which have to work against gravity to push all that extra blood back up to your heart. Add to that, weight gain and the pressure your ever-growing bump puts on your pelvic blood vessels, and the vessel-relaxing effects of the extra progesterone your body is producing, and you have a perfect situation for varicose veins.

What Can I Do About Varicose Veins When I’m Pregnant?

There are some tricks you can try that may help minimize varicose veins that show up during pregnancy, or at least keep them under control. If they do pop up, here are some possible remedies and tips: » Keep your blood flowing. Get off your feet whenever you can, and keep your legs elevated when sitting. Flex your ankles every so often, and break the habit of sitting with your legs crossed (this strategy also helps keep spider veins at bay).

» Get moving. Exercise is key in preventing varicose veins – so take a walk (or even better still, several walks) each day. » Rely on comfortable clothing. Make sure you wear clothes - including underwear - that fit well and don’t bind, especially around the tops of your legs. » Extra support. Support hose can counteract the downward pressure of your belly and give the veins in your legs a little extra upward push. » Watch your weight. Keep your weight gain during pregnancy down to what your practitioner recommends – usually 25 to 35 pounds. » Sleep on your left side. This helps avoid pressure on your main blood vessels and mantains good circulation. » Don’t strain. Heavy lifting or straining on the toilet can add to vein pop ups. » Remember to take your vitamins. A balanced pregnancy diet keeps veins healthy. Make sure to eat lots of foods with vitamin C, which your body uses to produce collagen and elastin (connective tissues that repair and maintain blood vessels).

When Should I Call the Doctor About Varicose Veins During Pregnancy?

As soon as you notice them, because there is a general association between varicose veins and the risk of deep vein thrombosis (DVT), or blood clots. Be sure your health care provider is aware of your condition. LAST THOUGHT: If your varicose veins don’t go away after the baby has arrived, you can think about having them medically treated or surgically removed then, just not during pregnancy.

5 THINGS YOUR MOTHER MAY HAVE FORGOTTEN TO MENTION By Lindahl Chase

Your mother likely referred to it as “The Change” – a daunting term for a period of transition that brings more than just physical transformation. Menopause is defined as having no periods for one year. Most women experience this shift in their 40s or 50s, although this can vary. Menopause occurs as a result of a decreased production of estrogen and progesterone in the ovaries, and means a woman will no longer release eggs or be able to get pregnant. Menopause is a normal part of aging that - bonus! - comes with an extenstive set of symptoms. Preparing for these adjustments and focusing on your mind-body wellness during this time will put you in the best position to navigate the path ahead. Remember, you are not alone. Seek advice and spend time with others who are going through the same experience. And as always, it’s important to discuss changes in your body, symptoms and treatment options with your physician to ensure you're achieving your optimal health.

BEFORE MENOPAUSE COMES, DRUMROLL, PLEASE ... PERIMENOPAUSE! Perimenopause is the transition into menopause. While you might experience many of the same symptoms and your cycles are irregular, you have not entered menopause until you stop having a menstrual cycle for 12 consecutive months.

HELLO, 3 A.M. For many different reasons - the aforementioned night sweats being one of them - most women experience bouts of insomnia throughout menopause. There is nothing more frustrating than tossing and turning all night only to feel exhausted the next day.

YOU WILL BE HOTTER THAN EVER. Literally. Hot flashes and night sweats are an unfortunate, and quite common, symptom of menopause. Your heart might start beating faster and suddenly a hot feeling in your face spreads to your chest, arms or all over your body. While you can’t stop hot flashes, you can try to prevent and alleviate them. Try a cold shower and keep the temperature in your house cooler. Keep an extra set of pajamas by the bed, as you may sweat through your clothes at night. To find relief, exercise and cut out alcohol, caffeine, spicy food and smoking.

Combat this by creating a room suited for sleep. Keep the temperature in your bedroom cool (we're talking 65 degrees). Shut off all lights and screens, even from alarm clocks and cell phones. Try to eat dinner earlier and avoid alcohol before bed. Find a relaxation technique that works for you, whether it’s reading, yoga or stretching before you try to get some shut-eye.

LET’S TALK ABOUT SEX

BRITTLE BETTY By the age of 35, your bones begin to break down faster than they can rebuild. Due to the decline of estrogen production during menopause, bone density decreases even more and can lead to osteoporosis. Keep your bones healthy by increasing your calcium intake (think dairy and dark leafy greens), take vitamin D and incorporate regular exercise and weight training into your daily routine.

OK, so your mother might have mentioned 1 through 4, but we're guessing she skipped over vaginal dryness. This is, unfortunately, a very common symptom of menopause. Add that to the physical and emotional changes you're experiencing, in addition to lack of sleep and lowered energy, and "getting frisky" might not rank high on your list. Talk with your partner about your feelings and what you are experiencing, and don’t put any pressure on yourself. This, too, shall pass.

The good news of menopause is this: No more periods. The bad news is this: In place of the periods, here come the hot flashes, night sweats, mood swings, brain fog, forgetfulness, sleeplessness, and weight gain. The medical definition of menopause is the cessation of menstrual bleeding for one full year. That said, many use the word to refer to the period of time before and after menopause. Why? Because the symptoms experienced in this “Change of Life” often precede menstrual cessation by many months or even years, and, for some, those symptoms persist for years afterward as well.

WHAT CAUSES MENOPAUSE?

The answer is simple: hormone decline. When ovarian production of estrogen and progesterone (the primary female sex hormones) drops below a certain threshold, that’s when women begin to experience the symptoms of perimenopause, and, eventually, no more periods. That threshold varies considerably, but for most women it takes place around the age of fifty or fifty-one.

WHAT CAUSES THE HOT FLASHES AND SWEATS? DO ALL WOMEN GET THEM?

While estrogen and progesterone are not directly involved in temperature regulation, they affect other hormones that are. When levels drop and/or get out of balance, that can trigger a cascade of metabolic (i.e., chemical) activity that results in hot flashes or sweats. For some women, the hot flashes are debilitating. Others never experience them at all. Some may start ten or more years before their final cycle. Others only start when they stop menstruating, and these can persist for months or even years into the future.

IS WEIGHT GAIN INEVITABLE?

No, weight gain is not an inevitable part of menopause, but it’s typically harder to maintain and lose weight following menopause than it is earlier in life. At the very least, even among those that don’t gain weight, most women will notice a shift in body fat, typically from the hips and buttocks to the waist and lower abdomen.

WHAT CAUSES THE WEIGHT GAIN?

That’s a complex question with a complex answer, but we’ll start with these thoughts. Hormones play an important role in weight management. Some, like growth hormone, testosterone, and DHEA, are called anabolic hormones that help build muscle and burn fat. Interestingly, estrogen falls into that group, too. So, in menopause, when estrogen production declines, it’s harder to burn fat, build lean muscle, and lose weight. That’s not the whole story, though. When estrogen levels are high relative to progesterone (which can happen, say, if progesterone production drops more rapidly than estrogen), that creates a situation called “estrogen dominance,” and women with estrogen dominance typically have a very, very hard time losing weight. So there’s a dilemma: Too little estrogen? Weight gain. Too much? Also weight gain. It’s a delicate balance. Clearly, there have to be other factors involved, right? And there are. Like the impact that progesterone has on thyroid metabolism. In estrogen dominance, progesterone, which is necessary for healthy thyroid function, is relatively low. And women with low thyroid will almost always have weight struggles. Testosterone, too, plays a role. While typically considered a “male” hormone, women need testosterone and its precursor, DHEA, in just the right amounts, too. Too much? Weight gain. Too little? Also weight gain.

WHY THE MOOD SWINGS AND BRAIN FOG?

Here, too, the answer is hormone decline. As a rule, progesterone helps alleviate symptoms of anxiety. Similarly, as a rule, estrogen tends to help allay feelings of depression. Both play important roles with regard to memory, concentration, focus, and cognitive clarity, too. As hormone production declines and/or becomes unbalanced, many women experience more mood swings, tearfulness, irritability, distractibility, and memory struggles than normal.

ARE THERE OTHER THINGS I SHOULD KNOW ABOUT MENOPAUSE? Yes, absolutely, there’s a lot more. Perhaps first and foremost is this: There is strong and growing evidence that healthy, more youthful levels of progesterone and estrogen play a crucial, proactive role against cardiovascular disease, Alzheimer’s dementia, and osteoporosis, among other things.

It’s also important to know that, when it comes to breast cancer, some forms of estrogen play a protective role while others are dangerous and actually increase the risk of breast cancer. That’s right: There are a great many forms of estrogen, and not all of them are created equally. With the right testing and monitoring, it’s possible to steer estrogen metabolism in the direction of breast protection.

WHAT ABOUT HORMONE REPLACEMENT THERAPY, OR HRT? IS IT SAFE?

First, know this: There’s a vast difference between conventional HRT employing synthetic hormone-like derivatives (like Premarin and Prempro) and Bioidentical Hormone Replacement Therapy, or BHRT, which uses hormones identical in every measure possible to the very hormones women produce in greater, healthier abundance in their younger years. While the safety of conventional HRT was called into question many years ago, Bioidential Hormone Replacement Therapy is different. As long as it’s monitored appropriately, as should be true for any medication, BHRT is very safe.

WHAT DOES THAT TESTING AND MONITORING INVOLVE?

The best way to measure and monitor sex hormones like estrogen and progesterone is through urine. Since hormone production fluctuates over the course of a day, even well after menopause, the results of a single blood test can be misleading. By collecting

a little urine at various times of the day, we can get a much more accurate picture of what’s going on. What’s more, it’s only from urine that we can glean the more detailed information regarding intraestrogen metabolism needed to devise a strategy that’s maximally breast protective.

CLOSING THOUGHT:

As should be clear by now, menopause is a time of great change in a woman’s life. If you or someone you know struggles with some of the more aggravating and troublesome symptoms of menopause, or if you simply want to do what you can to protect yourself and optimize your health moving forward, then talk to your doctor about it. But please, if nothing else, know this: Menopause doesn’t have to be a time of suffering and misery. There’s hope!

Kit is a longtime fan of Chelsea, author of the blog Two Twenty One. When we first laid [heart] eyes on her Gingerbread Decorating Party blog, we were overwhelmed with whimsy. We're passing her tips along to you, dear reader, with the hope you will make memories recreating and putting your own spin on this party plan.

The beginning

It all started with Chelsea’s beautiful gingerbread table décor. She personally monogrammed red childsized aprons for all the kids to adorn each chair. She then bought prebuilt gingerbread houses from Target® for only $5 each and decorated them. These served as centerpieces on top of red cake stands.

Building houses

Since Chelsea's son and his friends are little tikes, she went with the mini gingerbread houses. She assembled them with a hot glue gun then piped white icing over the seams where glue might be showing. She glued the houses to 8” cake boards that came in a cookie plate set so that the kids had plenty of room to decorate the front yard.

The sweet spot

Each mom brought a candy or cereal for the kids to use for decorations. They had Dots, Fruit Loops, mints, Crunch Berries, snowflake candy decorations, marshmallows, jelly beans, M&MsÂŽ, gum drops, Smarties, Nilla wafers and Peep Christmas trees. Sprinkes were banned (for obvious reasons). Moms were handed bags of icing to decorate the gingerbread houses. Then, the kids accented the structure with the candies of their choice. Once all the decorating was done, the houses were easily bagged up to go home with the kids.

WOMEN MAKING A DIFFERENCE Story by Brooke Reynolds

Exceptional people recognize that it's not enough to accomplish personal success. Impacting positive change for the betterment of our community is the true measure of achievement. Kit established the Women Making A Difference Award to honor those giving back in remarkable ways. Our readers nominated women they felt deserved special recognition, and while all of the nominees’ stories demonstrated a shared selflessness, these were the entries that stood out among the crowd.

ALEKS PESALJ WINNER NOMINATED BY JENNIFER DEAN

When Fishers resident Aleksandra (Aleks) Mrdak ex Pesalj began volunteering with foster children as a court-appointed special advocate (CASA) with Child Advocates in March 2009, she was searching for her purpose in life. She never dreamed the decision would completely alter her path and result in her starting a related nonprofit. Child Advocates CASA volunteers are matched with kids who have been abused or neglected. The volunteer’s role is to get to know the child, learn about their situation and gather information from the various adults in their lives – case workers, caregivers, teachers, doctors, etc. A CASA volunteer provides the court with an independent, childfocused common sense perspective regarding the child’s best interests. The judge then weighs a CASA volunteer’s insights and recommendations right alongside the perspective of DCS, the parents and the attorneys. Since joining the agency, Aleks has represented 20 children. As she was working with minors in the foster care system, Aleks saw an opportunity beyond her critical role as a volunteer advocate. She noticed that many of the children didn’t receive gifts on their birthdays or holidays. Even getting basic needs met was a struggle for some kids. Heartbroken by the situation, but inspired by the children themselves, she made it her mission to brighten their most difficult days. In 2012, Aleks founded Foster Fairies to help make the kids’ wishes come true. Whether it be fulfilling a special birthday wish, making sure prom is an unforgettable experience or providing items as essential as toiletry products, Aleks matches the needs and wishes of the children in foster care with eager donors — the Foster Fairies — typically via Facebook. In just seven years, Foster Fairies has grown exponentially, but remains steadfast to its original mission: Showing kindness and hope to children who might otherwise be forgotten. More than 4,000 “Fairies” follow the Foster Fairies Facebook page, oftentimes granting wishes within minutes of a request being posted.

Julie Foltz has worked in HIV care coordination services with Aspire Indiana Health for 19 years. Aspire provides both primary and behavioral health care, while also addressing social determinants of health (such as employment and housing). As Director of Infectious Disease, she started her program with $55,000 in grants and one staff member in one county. She has grown the Infectious Disease program to $2,423,387 in grants with 28 staff members in 32 counties.

Westfield resident Lynn Trott was diagnosed with breast cancer in March 2016. She has since dedicated her life to helping others cope with cancer, both emotionally and financially. She does that through The Cancer Care Cup, a nonprofit founded in 2017 that raises money for oncology patients who have been financially devastated from a cancer diagnosis and treatment protocol. Lynn currently serves as secretary on the board of directors.

Terry Mohr volunteers at the Trinity Free Clinic, a nonprofit that provides care to Hamilton County’s uninsured, underinsured and low-income workers. Without the clinic, and volunteers like Terry, many would go untreated.

Through her team’s Harm Reduction Program, they've helped many participants access simple primary medical care. These are people who are homeless and haven't seen a doctor in years. When the team helps connect them to a medical provider, they often share that they don't feel worthy of receiving care. Through Julie's program, they are able to apply for, and receive, health coverage and medical care, as well as mental health and substance use treatment. The teams have identified 52 individuals with Hepatitis C and provided them with education about the disease, how to practice harm reduction to prevent transmitting the disease, as well as guidance on how to access treatment.

Every August, Cancer Care Cup hosts an annual golf outing and gala. To date, they have donated more than $120,000 to a patient assistance fund at IU Health North Hospital. All proceeds directly benefit patients in need and are used to pay for things such as meals, long-distance travel to and from the hospital, groceries, rent, prescriptions and medical devices. Terry, a retired OrthoIndy employee, is known as the volunteer nurse who always gives a little extra. Her demeanor calms patients and encourages them to share what’s going on in their lives, which allows the clinic to address more than their immediate medical need. Terry also spends time educating patients on how to best manage their well-being day-to-day. In addition to caring for patients, Terry also has new volunteers shadow her at the clinic. I volunteer my time, and have for decades in multiple endeavors, because I feel blessed and fortunate to have skills, abilities, education and wisdom of life experiences, and wish to use them to benefit those in most need for as long as I am able to do so.


I personally believe it is a duty to give back. Each of us lives in a community and to take from that community and not give back seems rather selfish. We are all capable of doing something to make this a better place to live by helping someone in need.

Ester Lakes works tirelessly at many volunteer organizations and in many leadership roles, but her greatest dedication is to Prevail Inc. in Noblesville. Prevail is a Hamilton County organization that advocates for victims of crime. Last year, Prevail served approximately 4,000 victims, more than 75% of whom were women and children who suffered sexual assault or domestic violence. Esther is passionate about Prevail and the work they do to help heal and offer hope. Ester sits on the board of directors for Prevail and has served as the chair of the fashion show for a number of years, developing it into a major fundraiser for the nonprofit. A common thread in my service is helping people to become their best selves. Clients have also expressed concern that there won’t be enough money for their children to inherit if a charity is included in the client’s legacy plan. However, there are many avenues that could provide for retirement needs, leave an inheritance to family members, and leave gifts to a charity.

Amanda Bouslog is well-known for her outstanding skill with a needle, and this mom, farm wife and yogi has more energy than many women half her age. You're a 'master injector', so you've seen lots of trends come and go with injectables. What's your approch to getting the right 'look' for your patients? 'My philosophy is to build a relationship of trust with each patient. I find out what bothers the patient the most, and then build the treatment with the goal of a natural, refreshed and never 'overdone' look in mind. 'Enhance the beauty with artistry' is my mantra; not 'take ten years off the face'.'

But how do you decide where to focus? Most people focus on something specific that has changed in their face, and how they would like to 'fix' it. I consider the entire face, and divide it into thirds; forehead, midface and lower face. Where has the actual

aging taken place? Where are the fat pads? How much fat has been lost over time? What is the skin quality? Where is skin laxity an issue? Then, I consider which product would be best in the area of most concern. There are a ton of fillers on the market, and most work best in specific areas, so this is where years of experience are critical. The viscosity – or thickness – of each filler and how it supports the tissue is key when creating the final result. Fortunately, I have quite a few in my arsenal - so I can use multiple brands and types for the complete result. Treatment today is far different from simply filling the lips, as we did many years ago.

What qualifies you as a Master Injector? Years of exerperience, training and practice. I trained under a wellknown facial plastic surgeon and the exposure to all aspects of patient care got me started. Great results have built my own practice over the years; my patients are the best form of advertising.

What's the story behind all the Instagram photos of you in very serious yoga poses? I practice and teach yoga; it's my balancer. I really believe in the mindbody-spirit connection. Through my work, I can enhance the exterior of a human being, but it's up to each of us to enhance our interiors.

Kit's decorating expert Rachel Rae Hadley loves adding holiday accents to the Noblesville home she shares with her husband and three college-age kids.

Interior decorator Rachel Rae Hadley couldn't wait to deck the halls of her newly renovated 1970s tri-level home in South Harbor, Noblesville. It will be her last in the space. This spring, Rachel and her husband are planning to sell this house and move to a 13-acre property in the country to start a Christmas tree farm. How fitting for Kit's resident yuletide decorator extraordinaire! Here, Rachel shares suggestions on how to give your home a dusting of holiday whimsy, without overdoing it. 57


CLEAN & SIMPLE

Rachel recently renovated her kitchen and loves how it turned out, so she wanted the decorations to merely accent the clean beauty of the space. She used natural accents like candles, holiday soap, nuts with a nutcracker and live greenery, like cedar and pine. "Use a metallic or natural color scheme to build on the look your kitchen has already," she said.

PRESTINE PALETTE

Use clear or white dishes to keep the focus on the color of the food and the presentation of the holiday decorations on the table.

AW, NUTS

Everybody gets enough to satisfy their sweet tooth during the holidays, so instead of gifting fudge or Christmas cookies, Rachel gives away something savory to her friends and family. Inspired by her grandma's recipe, she baked these nuts with infused rosemary butter and fresh rosemary and put them in cute jars. "These are great with cocktails, for shareables and to regift."

COCKTAIL HOUR

The wet bar decor is classy, with plenty of gold accents alongside the stock of spirits. The record player sits next to the bar, and Rachel says her husband gives her a little spin while records play.

SMOOTH SOUNDS

There's always a record playing in the Hadley house; Rachel loves to play a jazz record while she cooks. "I don’t have to worry about WiFi streaming when I'm using the record player, so it’s a great way to unplug and disconnect."


Don't forget to add special seasonal touches where you sleep. Joy is best served first thing in the morning.

WARM & COZY

Holiday decor is temporary, so it shouldn't be expensive. Trade out your throw pillows, slipcovers and blankets for a seasonal look that suits your taste.

WREATHS, ON REPEAT

Rachel hung three wreaths above the bed and attached another to the white accent pillow. The repetition in two different places simplifies, adds layers and makes it flow.

SHADES OF NEUTRAL

Rachel incorporated hues of gold, white and green throughout the house. Here, they're found in the live greenery, gold beads and bulbs on the tree, green blanket and pillow, and the white tree skirt.

SEEING DOUBLE

Don't hesitate to replicate the same decoration to keep a clean, simple look, like these Christmas tree signs on the shelves. Too many different decorations can look cluttered.

This season of gatherings and traditions brings both a majesty and a particular degree of frenzy. One of the ways I offset the tension of elevated expectations, is by keeping a selection of pleasing side dishes in my back pocket. Consider the main course a crown and these dishes its jewels. Every offering adds value and delight to the meal, and each recipe comes together without much fuss. Miso-Glazed

ROASTED VEGETABLES Roasted vegetables provide a deep, earthy flavor and suggest the sustaining gifts of the harvest. I prefer to leave them whole because they look so dramatic on the platter. The miso glaze in this preparation enhances the flavor and gives the perfect saltiness to complement the sweet caramelization from roasting. My favorite root vegetables are vivid-colored carrots, watermelon radishes, parsnips and kabocha squash, with its dark green skin and beautiful orange flesh, but any will do. I also like to throw in some leeks because they are gorgeous and tasty.

2 bunches colorful carrots, peeled 6 large watermelon radishes, halved 5 parsnips, peeled 1 large kabocha squash, seeded and cut into eighths 2 leeks, washed and sliced down the middle 2 tablespoons olive oil Salt, to taste

MISO GLAZE

4 tablespoons white miso 1 tablespoon locally sourced honey 2 tablespoons rice vinegar or sake 1| Preheat the oven to 450 degrees. Prepare your vegetables. I like to leave the peel on the kabocha squash and score it a bit with a fork. You want all of the vegetables to be close to the same size. Toss with olive oil and salt. Place the vegetables on a parchment-lined cookie sheet, leaving space in between the veggies. (You might need to use two cookie sheets to allow enough room.) 2| Place in the 450-degree oven. After 25 minutes or so, carefully check and turn the vegetables every so often so that all sides caramelize. (This time can vary, so it’s best to keep an eye on the pan.) 3| While the vegetables are roasting, whisk the Miso Glaze ingredients together in a small bowl. After 35 minutes of roasting, brush half of the glaze on the veggies for the final 10 minutes of roasting. Turn the vegetables after 5 minutes and repeat to make sure both sides are coated. The total roasting time should be about 45 minutes. Check the tenderness of larger pieces with a fork. Arrange on a large platter just before serving.

Cheese and Kale CASSEROLE

This dish is so deliciously gooey and comforting that people don’t believe it’s brimming with kale. This is a great way to sneak some greens into the meal. While any sturdy green will work, I think kale holds up beautifully and keeps its texture amidst the creamy mixture.

6 cups stemmed kale 1 cup sautéed mild onion, such as shallots or leeks 6 whole farm-fresh eggs 2 cups heavy cream 1 /4 teaspoon fresh nutmeg 1 teaspoon black or white pepper 8 ounces shredded parmesan (reserve about 2 ounces for the top) 1| Preheat oven to 350 degrees. Mix the kale and sautéed onions together in a large bowl, then place in your casserole pan*. 2| Blend the eggs together in a large bowl, then add the cream, nutmeg pepper and cheese. 3| Pour the cream mixture over the top of the kale mixture. Press the kale down with your hand to make sure it is totally submerged in the cream mixture. Bake at 350 degrees for 45 minutes. Remove from the oven and sprinkle the remaining cheese on the top. Serve warm. *I used a 3-quart casserole pan, but you

can use a more shallow pan. You just have to lessen the cooking time a bit.

Circa-1980s

JALAPEÑO CORNBREAD For a time, I thought cornbread didn’t necessarily fit in with a grand holiday meal. Then I made the decision to leave this dish out one year, and boy, did I hear about it! It is the first thing everyone goes back to for seconds. It might not look fancy, but this simple side packs a savory, satisfying punch.

2 boxes cornbread mix 2 eggs, blended with a fork 5 ounces cream cheese, cut into small pieces (room temperature) 1 16-ounce can creamed corn 1 cup roasted or regular corn 8 ounces shredded Mexican cheese (reserve 1-2 ounces for the top) 5 ounces shredded sharp cheddar 4 large jalapeños sliced and seeded (you may substitute a milder green chili) 1 /4 cup cream or whole milk 5 ounces melted butter (reserve 1 ounce for brushing on the top) 2 teaspoons ground black pepper Pinch cumin 1 teaspoon finishing salt, such as Maldon 1| Preheat the oven to 400 degrees. Next, line a 12-by-12-inch baking pan with parchment paper. 2| Combine the cornbread ingredients together in a large bowl by hand, with the exception of the reserved ingredients and finishing salt. Pour into the prepared baking pan and bake for about 30 minutes, or until the top is golden brown. Check the center of the bread to make sure it is cooked, then gently brush with the remaining butter. Sprinkle with salt and cheese and cook for about 5 minutes longer. Remove from oven and place on a cooling rack. This cornbread is best served warm. I prefer to remove it from the pan, cut into pieces and arrange on a platter or cake stand. For the holidays, decorate the top with thinly sliced red and green jalapeños.
