The holidays are a time of reflection. I’m grateful for my own family as well as my co-op family. A sense of mission and purpose drives us, and our team feels a strong connection to our community and our members because we live here, too. This season also allows us to reflect and give thanks for the blessings bestowed upon us.

KEC Crew Helps with Restoration Efforts in Georgia

Kiamichi Electric Cooperative (KEC) sent ten crew members to Georgia to help restore power lines to thousands of members left in the dark after Hurricane Helene’s devastating aftermath. The crew left on Friday, Oct. 4, and joined the Jefferson Energy Cooperative crew members the following day. After Hurricane Helene wreaked havoc, only six of their 26 substations were operational.

Jack Godowns, Jefferson Energy Cooperative Line Supervisor, said, “The KEC crew is a fantastic bunch of guys. They worked well together and hit the ground running upon their arrival. They jumped in and worked hard, just like they were at home. It was a pleasure to work with them, and I wouldn’t hesitate to call on this crew again.”
Of course, when crews are sent out during storm recovery, the coop is left short-handed, but the crew back home stepped up and kept things running smoothly while the crews were gone.

Muffin Tin Potatoes Gratin
INGREDIENTS
• 2 tablespoons butter
• 3 cloves garlic, minced
• 2 tablespoons all-purpose flour
• ¾ cup milk
• ½ cup freshly grated Parmesan cheese
• salt and ground black pepper to taste
• 2 large potatoes, peeled and thinly sliced
DIRECTIONS
Preheat the oven to 400 degrees F. Grease 12 muffin cups with cooking spray. Heat butter in a saucepan over medium heat. Cook and stir garlic in melted butter until fragrant, about 1 minute. Add flour; cook and stir until mixture is smooth and thickened, about 2 minutes. Pour milk in slowly, whisking continuously, until sauce is smooth and thickened, about 5 minutes. Remove the saucepan from heat and stir in Parmesan cheese until melted. Season with salt and pepper. Set cheese sauce aside. Layer potatoes evenly into the prepared muffin cups. Spoon cheese sauce over potatoes. Bake in the preheated oven until potatoes are tender and a paring knife is easily inserted into the center, about 25 minutes.
