A kitchen hood, also known as a range hood or exhaust hood, is an essential component of commercial kitchen ventilation systems. Water mist system in the hood controls fire sparks and ashes from bbq/solid fuel cooking/coals. These sparks and ashes get mixed with water and are drained out. The sparks from the bbq flame are prevented from entering inside the duct system with the help of water mist system.
Aqua Mist Box is the latest technology used for reducing the temperature and grease content in the fume extracted out from kitchen. The contaminated high temperature air passes through the primary mesh filters where the grease and ash will get trapped. In the second stage, the water is sprayed through high pressure nozzles, so that the air is mixed with water spray and get in to the collection tray and finally to drain. The temperature of the air will come down after this stage and finally the air is passed through the mist eliminator before leaving the air through the duct.
Baffle filters are usually made from stainless steel 304 or 316 Grade. They are about two inches thick and contain two roll formed baffles, which are spaced equally apart. The spacing built into the baffle filter makes for optimized air flow, which helps to capture grease inside of the filter. Then the captured grease drains down the baffles and into a collecting trough. Baffle filters are also designed to prevent flames from moving through the filter baffles.

Electrostatic precipitators (ESPs) or electrostatic air cleaners are particulate collection devices which use electrostatic forces to separate particulate matter (PM) from exhaust air. Electrostatic precipitators (ESP) are highly efficient and can remove dust and smoke from the airstream by minimally interfering with the airflow. ESP is specifically designed for kitchen extract system. These units are particularly used to reduce (FOG) fat, oil & grease, and cooking smells from the extract of commercial kitchens and restaurants. The ductinstalled ESP systems trap the smaller grease particles and other contaminant that pass the grease filters in the kitchen hood. These units are suitable for indoor and outdoor application.
