The View The International Coffee Organization and Anacafé wrapped the 2010 World Coffee Conference in Guatemala on February 28th.

This extraordinary conference of member governments, participating coffee associations, and coffee stakeholders from all segments of the coffee world gathered in Guatemala City. The theme of this year’s conference was ‘Coffee for the future: Towards a sustainable coffee sector.’

The International Coffee Organization is the main intergovernmental organization for coffee. It brings together exporting and importing governments to tackle the challenges facing the world coffee sector through international cooperation. The ICO’s member governments represent 97% of the world’s coffee production and over 80% of the world’s consumption.

Even though coffee prices are recovered from the ‘coffee crisis’ from 2000 to 2004, the ability to establish sustainable pricing for growers is under intense pressure. External factors are erasing much of the gains achieved from a robust marketplace.

The most negative impact to pricing and sustainability comes from factors that are complete outside the abilities of smallholder growers to change. These negative external factors include:

The decline in the US dollar, reducing a grower’s real purchasing power when dollars are converted to local currencies.

Increased production costs due to rising prices for agricultural inputs such as fertilizers, farm diesel, and others.

Reduction of the availability of labor for seasonal farm activities such as picking.

The reduced labor pool forces higher wage rates that may be prohibitive, especially to smallholders. Without adequate availability of seasonal labor, quality and volumes may be compromised.

Available agricultural lands are diminishing in some countries due to urbanization and use in the production of biofuels.

Additionally, external factors such as persistent climate change, increasing costs for certification compliance, dwindling resources such as water, reduced availability of risk capital and agricultural financing, the rise of ‘energy beverages’ that directly compete with coffee in consuming countries, and much more are reducing smallholder sustainable success.

Faced with these significant and difficult factors that are restricting improvement of the quality of life for growers, the fulfillment of the hope of the Millennium Development Goals is a challenging task. Coffee is a major agent for change. Success of the MGD’s is directly impacted by the success of coffee in many countries.

The ICO is tasked by the United Nations with assisting the successful accomplishment of the Millennium Goals.

Especially in Africa, the need for immediate and concentrated effort is vital toward prevention of abiding and crippling poverty. A major part of the ICO Conference focused on immediate and permanent improvement of the coffee industry in East Africa. Education, infrastructure, medical care, and improved agricultural practices all must be combined in order to manifest significant improvement in the lives of smallholders in Africa.

Elemental to this focus on Africa is the recent expansion of the International Women in Coffee Alliance into Africa. Nestor Osorio, Executive Director of the ICO specifically recognized the IWCA as vital to the success of Goal 1 and 3 of the MGD’s. The IWCA is rapidly expanding across the globe as producing countries and consuming countries recognize the important and essential role women play in all aspects of coffee. As Sunalini Menon noted in her inspired presentation before the conference, “The tiny bean, which stimulated the senses with its fragrance, aroma and flavour, is the result of so many tender loving hands of women.” And, “Educate a man, and you educate an individual.

From the quality of coffee to careful service, a customer’s experience is what keeps them coming back. As customers become more eco-savvy, so has their expectation for cafes to go green. Presentation has come to play a larger role as to how your customers perceive your business, even if they are taking their beverage to-go. This means a great branding opportunity for you.

Innovation Goes Eco

Customer obsession for convenient coffee on the run is even more reason to provide green disposable products that eliminate spilling, keep hands cool and retain heat longer, and…are earth-friendly. Take-away cups and lids can be found in more variety and in smaller sizes this year.

Smaller cup sizes and lid size sales have increased. Customers who don’t drink as much coffee or blended drinks will be less likely to waste their beverage.

Asean Corporation’s Planet+ eight ounce lids are coming out in April. However, their Planet+ four ounce cups are now available and in stock, which are perfect for customer sampling and tradeshows.

Buzz Chandler, President, says to keep an eye out for “a new Planet+ product line arriving in April that fits all BPI compostable standards.” They will also be expanding Jaya 100% compostable clear cup sizes to five ounces and seven ounces.

An additional new sustainable cup alternative will be introduced this year by Georgia-Pacific Professional Food Services. Michelle Wagner, Manager of Business Communications explains, “While updating stock design options for the ever popular PerfecTouch® Cup, these new offerings are designed to heighten customer experience and help operators differentiate their establishment.”

Clovernook Center for the Blind and Visually Impaired is redesigning their existing 12 oz. compostable paper hot cup to accommodate a common lid. This modification is a direct result of listening to customer and prospect feedback. It will be available in May 2010. “It is important that we understand our customer’s business process,” states Doug Jacques, Vice President of Operations. “The more they streamline their operations, the more cups and common lids we can provide to benefit them, their customers, and the earth.” Cup sales support Clovernook Center’s 107 year-old not-for-profit agency serving people who are blind and visually impaired.

Newly engineered cups continue eliminating the need for a sleeve. International Paper’s most recent launch of The Hold & Go line features their patent pending ThermaShield™ technology.

Beth McKeithen, Marketing Manager explains, “Creating insulating air pockets in the cup’s structure, Thermashield™ lowers external surface temperatures, which results in longer consumer hold times.” One unique Hold & Go lid fits all three cup sizes-12, 16, and 20 ounces, and is available in black or white.

These cups can be customized with high quality, six color print capacity to enhance branding. Not buying separate sleeves or more lids will reduce costs on supplies, shipping and give your café’ more storage space.

Novelty On The Move

For customers who need coffee catering or prefer a reusable cup or water bottle, a variety of items are available to increase repeat business for your coffee shop.

To ensure customers stay hydrated, innovative water bottles now sit alongside of mugs and tumblers. Erez Toker, President of Vessel Drinkware, informs about

their new lineup. “New products include a 24ounce size to compliment our double wall acrylic, cold-style travel mugs. Our equally desirable double walled ceramic tumblers, featuring silicone lids, are now available in three color choices in our 11 ounce size. An entirely new 16 ounce double wall ceramic piece is scheduled to arrive mid-year.” In addition to new different innovative water bottles, an all new liner is being introduced in some body styles to accommodate the most popular 16 ounces drinks. Keep your furry friend hydrated on-the-go with a water bottle without the need of a bowl and environmentally friendly. “We offer a co-branding program,” explains Toker, “which affords our retailers to incorporate their logo with our designs. We create custom art for their unique programs.” All Vessel products are BPA-free and are printed domestically with inks free of lead or other heavy metals.

One of the newest trends is a French press for travel. LiquidPlanet of PlanetaryDesign continues to improve their award-winning Double-Shot Travel Press. Scott Billadeau, President explains it now has, “a more robust handle, a threaded screw-on bottom for the storage canister, a lid with a second mesh filter and rotating tab to cover the drink hole.” For customers who enjoy camping and other outdoor activities, the travel French press has been upgraded to twenty ounce, thirty two ounce and forty eight ounces. A travel French press mug is currently in design, but look for a new ultimate water bottle with a storage canister underneath it, this summer.

With increased storage space from not ordering extra lids or sleeves, you now have room to expand catering offerings to increase revenue. IBP Manufacturing’s beverage boxes utilize their patented Pop, Fill & Gotm technology.

Mauro Fisher, Director of Sales and Marketing, explains the patented design, “uses proprietary fugitive glue on the inside of the boxes which allows the inner bag to automatically inflate when assembling for quick and continuous filling.”

These 96 ounce boxes keep beverages hot for up to two hours and ideal for cold, non-carbonated drinks, for added variety.

They lay flat and don’t take up much space.

This year they will expand their House Brand Programs to offer different levels of merchandising options from small to medium sized operators for complete branding and merchandising look at their locations.

Implementing the latest equipment and packaging advances keeps coffee fresher longer, while standing tall and proud on your shelves, expanding coffee shop options.

Apparatus Innovation

With so many variables that can decrease the quality of coffee during the packaging process, this area

should not be where you take risks in packaging. Cablevey Conveyers has developed new products over the past year. These are being tested in coffee roasting facilities facing clean-in-place (CIP) and sanitary issues.

With added “brush boxes” to clean the moving cable and discs moving through their system, cleaning ports for water and other cleaners that take the nuts and bolts out of drives and turnaround units, and a variety of other refinements that deliver easy cleaning and maintenance. As well, a wheeled portable unit has been added to their product line. Vacuum and pneumatic conveyers can be notoriously noisy. Cable Conveyers systems are mechanical so noise and energy costs decrease dramatically. If coffee is contained and controlled, it is less likely to lose its aroma or be damaged after being roasted.

Packaging Upgrades

Single-serve and pods have become increasingly popular for a quick, convenient alternative to brewing a

pot of coffee. Pods make the creation of premium café drinks at home possible for the less espresso machine savvy consumer.

IMA North America, Inc. machines provide flexible and integrated packaging solutions for manufacturing

of coffee and espresso pods. IMA Safe is bringing new “end of market” equipment specialized case packers designed to handle a variety of coffee bags. “We are also offering compact and efficient IMA CartoPallet; small footprint integrated case packers and palletizer, explains Marius Olszewski, Director of Sales & Marketing,” perfect for tight spaced coffee factories as well as IMA stand alone Flexpalletizers.” The cases can be closed in their case packers with PVC tape or glue. Labeling systems and printers are integrated into the case packers.

If you are in need of economically and environmentally sensitive films for single-pot fractional packaging,

Curwood introduces a new packaging film that addresses both cost and eco-efficiency. Using a micro-perforation on the exterior layer of the film provides a controlled, directional tear across the face of the package.” The structure’s inner layer of the film remains intact to protect freshness and flavor allowing for a fully protected hermetic seal.”

Earth-friendly packaging

Sometimes customers want to brew your coffee in the comfort of their home. Be sure to provide them

an eco-friendly bag. Paper tin-tie bags are ideal for short term packaging and dispensing. Pacific Bag, Inc. introduces the Compostable Natural Kraft Paper Tin-Tie bags. The bags are available in both half pound and one pound sizes, *EarthFirst® PLA film made with Ingeo™. In compost testing at PBI, the bags biodegraded within 12 days, reducing the packaging footprint on the planet.

Another company going the biodegradable route for tin-tie bags is North Atlantic Specialty Bag. They

have glassine lined coffee bags to make them 100% biodegradable and 100% recyclable, after the tin ties are removed.

Innovative seals

How a coffee package is sealed can determine how eye appealing it is on the shelf. Packaging machines

that produce shaped package formats, like Fres-co System USA, Inc. Corner Seal® technology reduces bulge caused by the packaging process and product settling, and creates a crisp appearance. It eliminates a back seal, helping assure that the package is airtight. Rigid corners frame graphics and copy, creating a crisp shape on the store shelf in a gusseted bag and allows for full graphic use of the front and back panels of the package.

Think Before You Blast With marketing budgets slashed and customers holding onto their cash, we’re still looking for inexpensive ways to communicate with current customers and bring in new revenue.

Many marketers and business owners are turning to email marketing as a cost effective way to reach customers. Email marketing is very seductive with its low cost and fast turnaround. It’s very tempting to throw some email copy together, pull a list, and push send. So, if you don’t care about building a brand to sell your products and services, then blast away. If you do care about your brand, then you need to pay as close attention to email marketing as you do any other form of communication.

According to the latest spam wiki, today’s spam emails comprise 80 to 85% of all the email in the world. What I’m noticing lately is an extra dose of emails that are not being thought through by even some of the largest companies and experienced marketers who are making hasty mistakes in search of a new mouse trap to drum up new business.

For instance, a year ago, I authorized a high profile, national bank to use my email to communicate with me regarding a new rewards credit card. I played the check and uncheck the box game indicating I did not want “additional promotions” and only wanted emails directly related to my new account. Almost immediately I started getting emails from them promoting additional products such as mortgages. Next came a wave of emails from “partners” the bank endorses. I finally got them to stop all the emails and then a few months later I signed up for online statements. Almost a year later, I’m still receiving emails for contests they run to encourage me to sign up for online statements (haven’t these folks ever heard of file merge/purging?). Someone at this financial institution is not paying attention.

So what makes an email “spam?” Any one of the following decisions can cause your message to be seen as spam: • Unsolicited.

• Has commercial value.

• Sent to large quantities of recipients.

• Sent indiscriminately.

If you can’t complete the above questions, consider what you are doing is hurting your company.

How spamming will hurt your company: • When you spam, you are actually “buying” negative advertising.

• Spamming’s negative connation spills all over the recipient’s perception of you and your products.

• Spamming implies that you are not paying attention; don’t care about your customers, and being lazy about your business.

• Spammers are seen as disrespectful and intrusive so how do they think spammers will treat their customers?

• Any company resources and energy you put toward spamming is wasted.

What spam is NOT: • Cheap – to society that is. The costs of lost productivity and fraud are borne by the public and by Internet service providers, which have been forced to add extra capacity and hire software experts to cope with the deluge.

• Effective way to spread your brand message.

Emails as a communication tool – the right way.

• Have a plan: goals & objectives, message and timing strategy.

• Be sure that your email list is very clearly targeted for your product and message.

• Only send to recipients that have a previous relationship with you.

• Email only those who have indicated they are open to communicating with you via email.

• Always provide opt-out, and follow up in a timely manner.

• Send cross selling emails only to customers who opt in.

• Draw the recipient in with valuable and related information before the sales pitch.

• Always test your email before you broadcast it so you know exactly how it will be seen.

• Always proof-read!

Lastly, a reminder: Your customer’s perception is the only perception you are concerned about. Email marketing can be effective and brand building, just pay attention and plan email marketing as you would any other forms of communication.

The Rise of Single Origins Single origin coffees – a coffee from a single farm, co-op or specific geographic location – are on the rise with consumers, and the coffee industry is watching.

According to Christy Thorns, director of coffee for Allegro Coffee Company in Thornton, Colo., there’s a bit of a chain reaction happening when it comes to single origins, where coffee buyers, cuppers, roasters, retailers and consumers are all making an impact. And the experts at the Specialty Coffee Association of America (SCAA) agree.

“Right now, buyers are traveling more often to coffee farms, asking for special preparations and selections for their single origin offerings,” says Thorns. “Around the world, more and better cuppers are being cultivated through programs like the Cup of Excellence and the Coffee Quality Institute’s Q-grader courses, which improve single origin selection. Roasters are tweaking their roasting parameters to highlight the intrinsic qualities of these beans and less so the degree of roast. Coffeehouses are promoting various brew methods to showcase the unique flavors of single origins and educating their customers on how to identify these nuances. And baristas are now more knowledgeable about the source of their beans, and they’re increasingly experimenting with single origin espresso.”

For Thorns, a member of SCAA, the term single origin no longer represents simply country of origin or even just a regional name like Antigua. “Thanks to inquisitive coffee buyers and engaged consumers, this idea of single origin is evolving to encompass even more detail, like coffee varietals, processing methods and a list of possible geographically-bestowed descriptors,” she explains.

But what factors are contributing to the rise of single origins? “Recently, I think the press around Hacienda La Esmeralda’s Geisha – an SCAA Coffees of the Year repeat winner – has helped contribute to single origin popularity,” says Thorns. “When consumers hear about a coffee that fetches $130 a pound based on its quality merits, they take notice.”

Thorns also points to customers who are downgrading coffee purchases, to save a few dollars, as a possible factor of the rise of single origins. “With customers buying more beans for at-home preparation and fewer drive-thru lattes, it’s the perfect

opportunity for coffee businesses to entice them with single origin selections,” she points out. “However, you must rely on your staff being enthusiastic salespersons, so product knowledge and training about single origins is essential.” She also suggests single-serve brewing options as a way to get consumers to try single origin coffees, which they might not otherwise try.

What can you do?

As a coffee expert and Executive Council member of SCAA’s Roasters Guild, Thorns is seeing coffee retailers react more and more to consumers’ newfound interest in single origins. “Retailers are increasing their communication around single varietals and special micro selections,” she says. “What’s happening overall is that consumers are really being nudged out of their comfort zones when it comes to talking about things like flavor and terroir in many aspects of their culinary lives, and that certainly includes coffee.”

“As consumers become more aware of single origin coffees, retailers and coffee businesses should host community cupping and tasting events,” advises Thorns.

“A good portion of your customer base craves information and knowledge about coffee, and this is a fantastic way to not only highlight the unique flavors of your single origins, but also a great way to build loyalty for your shop,” she says. “But most importantly, teach your customers how to brew coffee properly at home to bring out the subtleties and nuances of your single origin selections. And, although we’ve all been guilty of it at one time or another, try not to knock your customers over the head with lofty and sometimes downright misleading flavor descriptions of your single origins. They feel betrayed when they take home a coffee and it doesn’t taste like dill pickles and pumpernickel.”

In light of the economy, Thorns believes that consumers need to be aware of the great values with single origins. “They often have sticker shock when they see a price point on a single origin coffee at $10 plus, but if you break that down into price per serving and compare it to other beverages, a glass of wine for example, it tends to intimidate the pocketbook less.”

Thorns advises: “Lead your customers down the path to quality. If your staff can enthusiastically describe what makes a single origin coffee unique or special, or make a customer feel some kind of connection to the country of origin, they often go on to be loyal buyers.”

Cup Sleeve Marketing 101

In the retail business, if it’s not making you money – it’s costing you money.

This was once the case with a café’s paper cups and sleeves, but not anymore. Coffee sleeves have the potential to become a valuable marketing and promotional tool. Sleeves can enhance brand image and help grow in-store sales. Cup sleeves can be mobile advertisements, carried from the store into the community. Independent research has shown that, on average, they are with the customer for over 50 minutes and seen by 6 people. That’s a great way to get a message out to the masses!

So, what are some things a café can do to brand and promote on cup sleeves? They can print on it, splashing their logo around in eye catching vibrancy. That cup sleeve might be seen in an office, at the grocery store or anywhere the customer goes, introducing the brand to people who had never previously seen it. Sleeves can be used to promote not only coffee but food. Baked goods and lunch items may be showcased on sleeves inviting new product trial and up-sell. Promotional sleeves may motivate customers to purchase new items on their next visit. They can offer incentives for customers to visit during off peak hours, (“Come back in the afternoon and receive a free cookie with an iced coffee”). Sleeves can promote loyalty card programs or even be used as coupons for future purchases. Should a café want to promote different items or have multiple designs, sleeves can be

mixed in their packaging. In each example the coffee sleeve invites action and attention. It’s working to build the café’s business.

Café owners sure like the sound of that, but what about expense? Doesn’t adding color or bold graphics to your sleeve design cost too much? Less than you may think. Printing presses and modern embossing machines enable the small café to purchase affordable custom printed sleeves with orders as small as a dozen cases (the amount a boutique café uses in a year). For those who might struggle with creating the look of their cup sleeve, sleeve companies have graphic designers ready to help with the process. Orders can be produced and delivered in less than a month – a real opportunity for targeted promotional programs or grand openings.

Today’s economy presents substantial challenges. Every expense has to work for the café, delivering more customers and generating more purchases. How do you compete in these difficult times? As reflected in the price, there is a more ample supply of Robusta coffee available and Brazil has maintained a steady flow of shipments, despite the noted quality issues with the 2009-10 harvest. This has created more of a challenge for roasters needing better grades of coffee, but didn’t present a shortfall in the number of bags of coffee. Stocks at origin are exceedingly limited with no excess coffee available to fill gaps in the pipeline. Therefore, the real issue is whether current inventories in consumer hands are sufficient to carry the market through this period of uncertainty? Similar to an elastic band, it can be only stretched so far until something snaps and this is what is being reflected in cash differentials. The only alleviation in this tightness will be the onset of the next Brazilian crop, but then that will probably prove to be only temporary. Brazil will finish the current season

A new study on the “Economic Effects of Blending Kona Coffee” concludes that current Hawaii law transfers profit from independent Kona coffee growers to the large corporations that produce Kona coffee blend. HRS 486-120.6 – a statute which authorizes use of the “Kona” name on packages of 90% foreign-grown coffee, is the legal loophole that blenders use to label their mostly foreign coffee with the Kona name, and the result is income flowing out of Hawaii into deep out-of-state corporate accounts. The study was undertaken by Marvin Feldman, Ph.D. of the San Francisco-based firm of Resource Decisions.
