The View exploring the science and sensory structures of coffee. Understanding coffee from the plant, to the green bean, through the exporter to the roaster, through the retailer to the consumer is my goal as the editor of this magazine. This month I took a big step toward fulfilling that mission.

It’s the hap-happiest time of the year Coffee Fest Seattle is by far our favorite tradeshow of the year. Not only is it the biggest coffee retailer focused single tradeshow in the world, but it is also the most fun. We are able to spend time with retailers, finding out more about their interests and challenges plus, we reconnect with our terrific advertisers to explore their needs and expectations for the coming year. CoffeeTalk holds its annual dinner bash here on Vashon Island (and I do all the cooking, just about my favorite thing), and of course there is all that Dom Perignon Champagne that we give to all current and new advertisers who sign their annual contract at the show.

But do not let me mislead you, Coffee Fest is also serious business. It is the last chance this year for exhibitors and attendees to tighten up their plans. Decisions made at this show will pretty much have to hold up until next February at the Chicago Coffee Fest. That is why this show is so important, and so well attended.

Over the years, the educational programs offered by Coffee Fest get better and better, and the Latte Art competition continues to grow in prestige and in the size of the purse.

Congratulations to David and Marne Heilbrun, the major domos of Coffee Fest for their continuing success in putting on an educational, entertaining, and rewarding show.

Three legged stool I am surprised at how many of us newsy pundits in the coffee industry have our three legged stools – our own interpretations of what the magic formula is to ensure sustainablility, or fair trade, or environmental excellence, or whatever else ails our world.

Well, I am not immune to having my own three legged stool. I firmly believe that a sustainable future for growers requires…ready…quality produce, dependable pre-crop financing, and independent wireless communication. If you have followed CoffeeTalk’s editorial arc over the last couple of years, you will notice that much of our focus and social responsibility efforts revolve around these principles.

In this issue our staff writer, Sam Kornell reports on the extraordinary growth of wireless communication in the coffeelands and the implications this growth has on the ability of growers to effectively combat those forces hoping to cheat them out of his fair reward for their labors. I believe that communication has reached a tipping point with the advent of wireless communication, where we will now rapidly see the end of predatory ‘coyote’ practices and will enter into a rational marketplace for gourmet coffee. A place where all business partners in the sale of coffee are making fully informed decisions based on current comparative pricing information.

Once a rational and verifiable market for Gourmet Coffees is established, it is really just a matter of time before realistic farm producer credits become available systemwide. The availability of producer credit instruments gives growers greater flexibility as to when they release product and to whom they sell. They reward the pursuit of quality and ensure a sustainable business model for growers.

Roastin’ This month I had the extraordinary privilege of spending a week in Vermont taking Mané Alves’ Roaster Training course at Coffee Labs International. One of the key elements missing from my skill set was knowledge of roasting and roasters.

Well, no worries now! I have been dipped in roasting; immersed in roasting, up to here in roasting – and I had the greatest time. I certainly do not think that I am close to being a capable professional roaster and that really wasn’t my point.

Understanding roasting was what it was all about. I think I now know a little more about the complexities of operating a professional roasting operation.

I certainly do not intend to start roasting coffee for a living, I will leave that to the professionals. I do intend to start fiddling around, testing my limits, and

Stopping the coyotes

One clear day eight years ago, during the Brazilian harvest season, Kenneth Davids found himself at a large dry mill in Minas Gerais. Davids, who since 1997 has run CoffeeReview.com, a comprehensive online coffee-buying guide, was touring the state, on the hunt for fine green coffee. The mill, a cooperative where growers could buy fertilizer and farming equipment, and in which coffees were consolidated and shipped, was a high-grade industrial operation, replete with expensive mechanical technology. But there was one detail that caught Davids’ eye, a feature striking enough that he can vividly remember it today. In an obscure corner, near some processing equipment, a man wearing a Brazilian sombrero was tending a coffee bar. Davids walked over for a cup. “It was just a little coffee bar, the kind where you stand,” he recalled, “and above the bar was a screen streaming the price quotes from the C market.”

Today, the idea that an industrial mill in the world’s biggest coffee producing country should be outfitted with an online linkup to the NYBOT would be entirely unremarkable, but the experience of seeing it eight years ago, Davids said, was “extraordinary.” In the not too distant past, he pointed out, information about the market in origin countries was spotty, and frequently nonexistent. To walk into a cooperative mill – even a big professional operation – and encounter streaming price quotes displayed for the negotiating benefit of members hit him with the force of a revelation, a harbinger of transformation in the coffee industry.

Smallholder coffee growers, and particularly those who farm in remote areas, have historically not been privy to the same information about the coffee market as the exporters and importers who buy their beans. This imbalance regularly led to growers getting shortchanged – an unfortunate situation exacerbated by the fact that a very high proportion of coffee growers live on the brink of poverty. Dan Cox, a past president of the Specialty Coffee Association of America who now directs Coffee Analysts, a coffee testing service, offered a blunt characterization of the phenomenon. “Farmers have never known how to negotiate,” he said. “They basically sell their coffee to the exporters, or the coyotes, and take what they can. Very few of them have the cash reserves to store coffee, and the coyotes know this. They come along and they dangle [a little] money in front of the farmer. And the farmer doesn’t know what the market is, and doesn’t know how good his coffee is, but knows he has to put food on the table – it’s just too good a temptation.”

Today, the imbalance is beginning to level off because of what Kenneth Davids early on found in that mill in Minas Gerais. The advent of wireless technology has been a boon to budding entrepreneurs throughout the third-world (not to mention the first), and nowhere more so than in the coffee industry. Armed with Internet connections and cell phones, an ever expanding population of growers who were once prey to unscrupulous coffee exporters can now look a buyer in the eye and quote them, with up to the hour exactitude, the current status of the commodities and exchange markets.

“In the last several years there’s been a profound change in the way coffee is bought and sold at origin,” Davids said. He believes, along with many other industry players, that this change, which is especially prominent in Latin America, is taking two forms. The first is simple – growers are increasingly likely to have up to date information on the state of the market, and are consequently less likely to undersell their product. The second is more involved, and it has to do with the myriad ways that wireless communication is fueling the growth of the market for specialty coffee. Both, however, are tied together by a common element – that cell phones and the Web are leveling the playing field between coffee farmers and their first world buyers.

II. The New York Board of Trade was instituted in the late 19th century. Its purpose was to make it possible for importers, exporters, roasters, retailers, and speculators to trade green Arabica in a coherent, transparent way. But the transparency did not necessarily extend to the growers at origin, and in most cases the reason was relatively simple. Lacking effective means of communication, there was little way that most smallholder growers could stay abreast of the market – unless, that is, the importers and exporters buying their coffee kept them in the loop.

Economists call this ‘information asymmetry’, and it does not set the stage for equitable financial transactions.

In this context, the spread of wireless communication in coffee producing countries is a major – and for growers a majorly excellent – development. The spread is rapid. According to a recent study by a Maryland-based marketing firm, by early 2008 cell phone penetration in all of Latin America was at 66 percent – well above the world average of around 46 percent. That figure accounts for 375 million people, and it is a fair bet that among smallholder coffee farms the chances that a grower either owns or can get access to a cell phone is high. Cell phone penetration is not as high in Africa as it is in Latin America – averaged out, a third of Africans own cell phones—but Kenya and Ethiopia are both near the upper end of the spectrum, and both have rapid rates of growth.

Though most consumers in developing nations cannot afford a $50 dollar monthly service plan, mobile phone companies have found they can generate substantial profit margins in these markets by selling cheap cell phones, which consumers can then activate using pre-paid calling plans. Some of the phones have Internet capability; some do not. However, their spread has also been accompanied by a smaller but still significant increase in the number of personal computers with web connections. It is still rare for a smallholder coffee grower – even in relatively wealthy countries like Costa Rica – to have a PC, but it’s increasingly less rare for them to have access to one. (There are some exceptions; New Guinea, for example, is seriously lacking not only in cell phones and webconnected computers, but telephones.)

This explosive growth in the availability of wireless communication has meant that smallholder growers are no longer left out of the NYBOT loop. Often with the help of cooperatives, government organizations, or trade groups, they can get online, or call someone who can get online, and figure out the going rate of the C-contract at any given moment. Donald Schoenholt, proprietor of New York-based Gillies Coffee, and one of the founding heads of the SCAA, described a representative scenario under this new paradigm. “So the buyer walks in – ‘Hey, Jose, how are ya? I’ve got a bag of tobacco for your uncle Joe, and I’m offering you $.78 cents (a pound for Jose’ coffee).’ Jose goes, ‘Just a sec,’ walks into another room, checks his cell phone, comes back, and says ‘I think you meant $.98, didn’t you?’ And everybody laughs, they have a beer together, uncle gets his tobacco, and the deal is made.”

But the ability of individual growers to make sure they’re getting market prices for their product is only the first half of the wireless story – and not necessarily the more important one. The hard truth is that even if Internet access helps ensure that growers don’t get undersold, keeping up with the commodities market does not assure solvency. Ninety cents, a dollar, even a dollar thirty – to a farming community as heavily characterized by monoculture as coffee is, these are not prices that will in all cases keep food on growers’ tables.

The astonishing rise of specialty coffee in the last decade and a half makes for great copy, which its why we so often hear about it. CNN, the New York Times, Gourmet magazine – generally, the story is told in a way that emphasizes a couple of revolving points: the ascendance of Starbucks, a culture trend toward high quality, conscience-friendly foods, and so on. What is usually left out of

...continued the picture, however, is the role wireless technologies have played in making the whole enterprise – or at least the scope and speed of its growth – possible.

Many industry players believe it is this second phenomenon – the enabling role of wireless communication in the development of specialty markets – that will ultimately prove to be the biggest boon to growers.

“If you just had the old-fashioned commodities market, what’s the point?” asked Kenneth Davids. “In other words, it’s fundamentally true that the sellers have the information and they can decide whether to put off selling, whether to hold back their crop, whether they’re getting screwed…that’s really important.” He continued. “But on another level, what’s happened is that if you get into the upper segments of the market, you can make significantly more money” – a prospect that has been made possible, he said, in large part by wireless technology.

There is a consensus in the coffee world that the trend toward specialty is not, in fact, a trend, but a permanent fixture of the industry; that the “upper segments” Davids referred to are going to continue to expand for the foreseeable future.

This is a good sign for the legions of growers who can produce the quality beans gourmet grades constitute. “The more farmers can break away from the tie of the international commodities and exchange agreements, the better off they are in the long run,” said Dan Cox. “And I’m absolutely convinced that in the next ten years, those with the best coffee are going to be in the position of power.”

To Cox, wireless technology is important for a number of reasons. For one thing, it allows farmers to get online and find ways to improve the quality, and maximize the size, of their yields. For another, many growers now have access to agricultural extension services, via their cell phones, and they can use the phones’ cameras to snap a shot of a disease or pest infestation and send it on to get immediate help with managing the problem. But most basically, Cox said, wireless connectivity gives growers baseline knowledge of the commodities market – a helpful tool even if they’re shooting for higher prices than the one designated by the C-contract. “If you have really good quality coffee, you’re going to want to know what the benchmarks are for coffee, as a starting point for your negotiations with your clients,” he said. “For them to be able to call up at any given moment and know where the market is – that’s positive.”

But perhaps the most interesting benefit wireless technology is bringing growers, Cox believes, is the way it’s hooking them up with the small but growing number of specialty micro-roasters who buy direct. “Put it this way,” he said.

“The farmers now have three buyers. They have the coyotes, who they can laugh at. Then they have the market, which could be the exporters they’re selling to.

And then they have the direct contractors – the direct relationships they have with buyers in other countries that are unrelated to the market.” It is this last market, Cox said, that growers should be shooting for.

The number of roasters who buy direct is still quite small. The ones that do – Intelligentsia in Chicago, George Howell’s Terroir Coffees, and about ten or so

others – tend to be highly disposed toward treating growers well (most take part in fair trade agreements). But they also have an economic interest quite unlike the middlemen who, in decades and centuries past, supplied first-world roasters with green coffee. Coffee is a perennial crop, but it produces an annual harvest. If you’re a high-grade specialty roaster, you have to find excellent beans, cultivate the growers who produce them, and ideally seal a multi-year contract to get the harvest to your shop. You have, in other words, a vested interest in your growers’ ability to keep producing the beans you want – a vested interest, in other words, in their prosperity.

In recent years Durham, North Carolina roaster Counter Culture has acquired a reputation as one of the finest specialty roasters in the country. All of their coffee is bought direct by master roaster Peter Giuliano. In a recent email conversation, Giuliano said that he thinks cell phones and the Internet are playing an important role in ensuring growers don’t get undersold on the C market. But, echoing Dan Cox, he said that he thinks the biggest benefit of wireless technology for growers is in allowing them to make better coffee in a more sustainable way – and by doing so attract buyers like Counter Culture, who will pay much more than the market rate.

“This week, I had conversations with farmers in Honduras and Nicaragua, and both included conversations about economic issues they were facing, and were ultimately related to the price of their coffee,” Giuliano said. “In these conversations, we talk about issues the farmers are facing, costs, etc. and we can brainstorm on possible solutions. I can share with them the things that make their coffee more valuable in the marketplace, and we work together to maximize the value they get from their produce. That's even more powerful than knowing what the macro-market is doing.”

He continued, “We are able to keep in touch with a large percentage of our farmers on a weekly basis, using email or skype/cell phones. That sort of communication, along with a willingness to share economic information, is really making a dramatic difference for those farmers who are involved in relationships with roasters or importers who are interested in developing and maintaining long, sustainable relationships with coffee farmers.”

The growth of specialty coffee is, of course, not restricted to roasters who buy direct, and as Giuliano pointed out, the basic principles he adheres to are just as easily utilized by importers and exporters who serve the countless smaller specialty operations that want to buy the best beans, but can’t afford to put in the time and money involved in buying direct. These principles can really be boiled down to one core point – more information means growers can make better coffee and sell it for more money, and for roasters looking to serve the still burgeoning specialty market – whether they buy direct or not – paying a little more for finer beans makes a world of sense. Soy Milk

I have never really liked milk. The only way that I ingest milk is with a large amount of coffee added to it. So when I was asked to write an article on soy milk, I knew that I needed to do some research, and headed out to a couple of local coffee hangouts.

Soy milk is produced by soaking dry soybeans and then grinding them with water. The liquid that is strained from this slurry is soy milk. Of course, this is the most basic explanation. Many soy milks on the market today are thickened, and some are flavored. "From specialty coffee drinks to chai masala, smoothies, bubble teas and more, coffee shops across the country are experimenting with milk alternatives, especially with regular, vanilla-flavored and unsweetened soymilk” says Debbie Carpenter, marketing manager for foodservice and industrial of Kikkoman Sales USA, Inc., San Francisco.

Tina Nelson, Director of Sales & Marketing, Consumer Products- SunOpta Grains & Foods Group points out: “Soymilk hit a milestone in 2007 with over $1 billion in sales in the U.S. marketplace. This serves as a testament that it is no longer a “specialty” food item, but can now be considered mainstream. Over the past few years, these same soymilk drinkers have also grown to expect soymilk as an option for their beverage of choice when heading into their favorite coffee shop. And to support this new segment of consumer interest, manufacturers such as SunOpta have developed soymilk designed specifically for use in hot coffee and tea beverages”.

Unlike cow’s milk, unopened aseptic containers of soy have a stable shelf life of at least a year. Once opened, these containers need to be refrigerated. The huge benefit of this packaging for the café and espresso stand owners is the ease of storing and more space in the refrigerator. As far as nutritional comparisons to cow’s milk, they both have about the same proportion of protein- around 3.5%.

Soy lacks casein which is the protein in cow’s milk that many people are allergic to, one cup of soy milk contains 6-7 grams of protein and it is low fat. Patrick Gabrish, Director of Foodservice Sales for Pacific Natural Foods in Oregon says “Soy is important for the coffee community to offer patrons who may be lactose intolerant, vegan, or just prefer the variety and differences that occur in drinks

While reading several posts on various coffee related blogs, it doesn’t seem as if Barisatas have many problems steaming soy milk. They do notice that different brands have an effect on how the foam pours. Patrick Gabrish: ”It is important that the soymilk allow the barista the same range of freedom and creativity to craft the ideal beverage whether soy or dairy is used. Roasting with Mané Alves

roasting During the second week of August, I travelled to the sun washed mountains of beautiful Vermont to spend five days indoors with Mané Alves, the creator of Coffee Lab International. Along with several fellow students from around the world, I went there to learn the art of roasting coffee.

I have to admit that I do not know the first thing about roasting coffee – or at least I didn’t. It has gnawed at the back of my mind that this lack of knowledge left me with no frame of reference to understand and appreciate the intricacies of the roaster’s art. How could I intelligently report on it? Ultimately, I shied away from this essential element of coffee to keep from embarrassing myself. However, no more, I am up to my eyebrows in roasting. There is no experience quite like roasting continuously for 5 days straight while Mané Alves, a consummate teacher instructs, leads, critiques, and throws curveballs your way.

All this roasting is taking place at the same time as racing into the cupping labs to analysis the coffee’s moisture content, density, Agtron number, and of course taste. All this is intermixed with participation in classroom activities to broaden our knowledge of the physics and chemistry taking place during green storage, during the roast, and through packaging. This was all exhausting and lasted well past the published 5:00 class ending time.

Coming from Seattle, I thought that I would win the ‘came the farthest’ award but I was wrong. Included in the students were two blokes from Australia, including Richard Austin from Five Senses Coffee who sent me these great pictures, a coffee biochemistry scientist from Taiwan, and a café/roaster from Korea with his interpreter. There were experienced roasters and rookies, hard-core baristas starting into roasting, and a couple of students I never did figure out. In addition, of course, there was me, a complete newbee roaster-wannabe without a clue as to how to get started.

From the first day at the school, it is clear that Alves’ European roots extend deeply into the work environment he requires. The roasting room is neat, organized, and expansive; more like a showroom for Ferrari automobiles than a place where the smoky, gritty work of coffee roasting takes place. The harlequin tile floor draws the eye to the centerpiece, a 60kg Renegade drum roaster. The Renegade is fitted with an Agtron Controller. Also on the floor are a Probat 12# and a Deidrich 6# roaster, as well as numerous brands of sample roasters.

A most impressive feature of Coffee Labs are the labs themselves. Alves maintains two SCAA Certified cupping labs that are as dedicated to European simplicity and efficiency as the rest of his operation. Coffee Labs International is an independent coffee and beverage laboratory and consulting firm supporting the coffee industry through product development, quality control, and sensory analysis. Within this context, Coffee Labs receives green and roasted samples from around the world for testing and analysis. Coffee Labs International is an integral part of the supply chain ensuring scientific verification of trade transparency and product quality consistency.

Alves also performs the Q-graders certification testing for CQI (The Coffee Quality Institute). He has had some of the most illustrious members of the coffee community pass through his doors to endure the three-day gauntlet of 22 tests for green grading, roast identification, coffee cupping, sensory skills, and sensory triangulation.

First and foremost, Alves is a teacher. He is modest about his accomplishments and generous with divulging his little secrets. In his class, the student knows that there are no bits of information that are hidden or intentionally obscure. Alves openly shares his blend formulas, roasting profiles, and mistakes. The student quickly learns that there really are no stupid questions and that Alves will answer the same question three or four times if need be. (As I so clearly proved) The most important result of the class however is that it is inspiring. Even with my small talents, I firmly believe that I can go out and roast with confidence and maybe, in a few years actually be good at it.

There is No Wrong Way to Do Chocolate

It was tempting to simply write…chocolate, offer it, a lot of it, and you can do no wrong.

It really does seem to be almost that easy.

Chocolate is universally adored, pairs perfectly with coffee beverages, and has earned a new healthful position in consumers’ minds.

People want their chocolate and by focusing on quality, providing a good selection, and adding in a few surprises every now and then, you can be sure to give them exactly what they want.

But if that seems too broad, then here are some things your customers will definitely respond to:

(1) Bite Sized Options Heather Sears, Director of Marketing & Sales for Galaxy Desserts, sums it up well, “There’s little reason to say no when they [chocolates} are small portion and low cost.” Bite-sized chocolates are the perfect impulse, add-on, can’t resist item. A number of companies are introducing bite-sized options as well as provide merchandising support so retailers can offer a good selection near the register.

(2) Free Samples Who doesn’t love a free sample? It seems retailers don’t because it is one of the most effective strategies for building sales, yet not employed frequently enough. In the case of chocolate, I think some retailers are hesitant for fear of giving away the milk, or (get ready for the bad pun now) milk chocolate, for free. But giving it away, or some away anyway, is actually the best way to entice consumers to buy the cow. Brian McElrath, Chocolatier for B.T. McElrath Chocolatier, Inc., stresses the importance of sampling and education, “customer satisfaction and a sense of value = loyalty and return business.”

(3) Rich, High Quality Chocolates Jeff Alexander, Vice President of Koppers Chocolate, reminds us, that “consumers are becoming increasingly sophisticated about chocolate, about the quality of the chocolate, developing a taste for rich dark chocolate, knowing about various types of chocolate beans, percentages, and the like.” Quality products are always important in a business and chocolate is most certainly not the place to skimp.

(4) Layer it On The mocha has long been a coffeehouse staple, but that doesn’t mean there isn’t room to continue to experiment. Paul Maxwell from Beyond The Bean Ltd reviewed their line of drinking chocolates and syrups and it is clear that there are plenty of options to create some exciting new variations of this long-time favorite.

It’s also important to remember that for many, when they choose to indulge, they really want to indulge so don’t be afraid to layer different chocolate sauces in a drink, drizzle sauce over the top and offer a bite sized piece of chocolate on the side.

(5) Understand Your Options While dark chocolate has earned some amazing press of late, no amount of health news can offset that fact that a large percentage of the population are watching their diets more closely. Tracey Downey of My Chocolate offers Gluten Free and Casein Free, Vegan, and Low Glycemic lines, to speak to the special dietary needs of a growing number of individuals. As she points out, a retailer can use these specialty/functional chocolates to give these customers options in which they might not otherwise be able to partake…because there could be nothing worse than abstaining from chocolate.

(6) Explore the World Irene Szyliowicz, President of Mont Blanc Gourmet, commented on their strategy which is to constantly innovate and “explore the market for new ideas which might appeal to our customers.” Among those ideas include single origin chocolates and ethnic varieties, such as Mexican-spiced chocolates. Build Your Own Brand through Private Labeling

Years ago, specialty retailers and other coffee purveyors were somewhat limited in the products they used to make and serve their drinks. They had to utilize whatever products were available to them through local distribution. However, private label products have grown in recent years and coffee retailers now have a wide variety of products that can offer their own label, thereby building their own brand.

A brand is your distinction in the marketplace. It is not a logo nor is it an ad.

Your brand is the feeling you create for your customers. Private label solutions are increasing and help you create that brand distinction for your business. As Klif Borja of Visions Espresso Service says, “Private labeling helps retailers build consumer awareness. The more a consumer is exposed to a company’s label, considering they had a good experience, the more likely they’ll relate to it and feel comfortable doing more business with that company.” In this case, the company is the retailer’s own brand.

Robert Kraeuter of Kaffe Magnum Opus points to the advantages of retailers adapting to more private label offerings. “Retailers benefit from private label in some instances by providing uniqueness in their marketplace. Case in point would be a Biloxi coffee retailer taking their traditional breakfast blend and renaming that coffee to something more significant in their geographic area like ‘Mississippi Morning Blend.’ ” Numerous manufacturers are assisting small and large coffee operators with private label programs. Michael Szyliowicz, Chocolatier at Mont Blanc Gourmet in Denver, describes two approaches his company offers for private label programs, depending on volume and scope. “We have the capability to re-label our own line of quality syrups to allow smaller businesses the ability to build their own brands.

Moreover, for larger customers with something specific in mind, we offer custom formulation. That allows their businesses to create their own unique products, as well as showcase their brand. Mont Blanc provides everything from R&D to production and packaging.”

The evidence is strong that a comprehensive private label strategy can play a role in helping retailers build their businesses and their brands. According to private label industry sources, private label growth has outpaced that of branded competitors the past four out of five years, accounting for more than $50 billion in sales since 2002. Continued growth is expected to be focused on premium high-quality products positioned against nationally known category leaders. In a nationwide Ipsos-MORI study, seven out of ten shoppers believe private label products are as good — if not better — than their national brand counterparts. Retailers in all areas of focus are using private label brands to win the loyalty of their customers, enhance their customer relationships, and strengthen their overall brand.

One of the best benefits of a comprehensive private label program is the consistency that is provided to the end user, your customer. “Private labeling diminishes a number of concerns such as quality control, performance, and overall product integrity. The client can focus on marketing their new product and brand name,” said Rodney Carmer of Cirqua Customized Water. This builds the overall quality of experience provided to your customers. Bonnie Itzig, owner of Globex America, confirms the theory. “Oftentimes, customers taste your products and want to have that same experience at home. Private label products for sale to consumers are a profitable way for already established brands to extend their reach.”

It all adds up to brand differentiation for your business. Small and mediumsize coffee retailers can now partner with private label programs to set themselves apart from the other competitors in their market and contribute to sales success.

Chocolate Loves Coffee!

foods of the gods! And the minister of this perfect union is a talented, charming woman who understands the challenge and passion inherent in getting this pair together. Not just another pretty face however, Ginger Elizabeth Hahn has a rock solid, professionally trained background in the dessert field of cuisine. She studied pastry for two and a half years at The Culinary Institute of America in Hyde Park, went on to intern with master chocolatier, Jaques Torres, and even served her pastries at The James Beard House. All this, before she became pastry chef for a number of prestigious restaurants in Chicago and finally back home in California.

Yet Ginger always had a guiding directive that kept her moving forward, working and saving to open Ginger Elizabeth’s Chocolates. And here she resides, in a trendy downtown neighborhood of Sacramento, near the State Capitol Building, as an artisanal chocolatier extraordinaire in her own chocolaterie!

CAFÉ ENVIRONMENT: Cool, clean and sleek, befitting the environment that fine quality chocolate demands, Ginger Elizabeth’s doors open into a mouth watering world of filled chocolates and truffles, pastries and cakes, chocolate bars and barks, pate de fruits and cookies called Parisian Macarons (not a macaroon). With the help of her husband Tom Hahn, she has designed a shop that allows her customers a window into her kitchen—a brave move that exposes herself and her staff to scrutiny that not many chocolatiers welcome! The upside however, is the feeling that you are truly getting a whole chocolate experience when ordering; you not only see the gleaming glass shelves lined with temptations, you see the labor going on behind those tasteful bites.

FLAVOR PROFILES: The welcome surprise amongst all of this delicious enticement is the strong and grounding presence of coffee. Besides serving Espressos to compliment her confections, the flavors of coffee within her individual chocolates and pastries shine through. Coffee on its own, chocolate on its own—wonderful stuff. However, it is rare indeed, to find a balanced combination of two of the world’s most popular flavors. Four of Ginger’s offerings fill that bill. First, there is a most intriguing confection: a Yirgacheffe White Chocolate. This is made by infusing whole Yirgacheffe coffee beans in cream, mixing the strained infusion (she calls white coffee), into white chocolate that has been boosted with a little finely ground and brewed coffee, Kahlua and butter. After and letting the resulting ganache rest until solid, it is cut into squares that are enrobed with a fine dark chocolate coating and marked with a signature swirling white chocolate top. WOW! The taste is a creamy, subtle, precious

blending of those two lovely flavors of chocolate and coffee. Can it get any better?

Wait, there’s the premiere pastry offering: Café Crèmeux. This chilled dessert is a whipped chocolate Crème Anglaise—denser than a mousse but lighter than a pudding—molded around an espresso dark chocolate flourless cake center that sits atop an orange scented shortbread cookie. Then the whole decadent thing is enrobed with a milk-chocolate-coffee-flavored shell.

How about this satisfying indulgence on a hot day: a Parisian Chocolate Macaron Sandwich with Espresso Ice Cream. (The ice cream is homemade too, of course.) Or maybe try something light: a Coffee Caramel Macaron. This petite treat is an ethereal, fragile, and delectable almond “cookie” filled with a soft coffee and caramel flavored center.

(She is currently working out a chocolate bar made with the addition of roasted espresso beans, experimenting with different single origins.) As I contemplate the teethscrape-marks left through the silky centers of Ginger Elizabeth’s chocolate and coffee confections (a sign of a perfect ganache), I sigh with the sad knowledge that I do not live in Sacramento. National Initiative to Establish Sustainable Agriculture Standard (SCS-001) American National Standards Institute (ANSI) process to develop a national standard for sustainable agriculture will take another important step forward as the newly formed Standards Committee meets to establish its work plan and form the Subcommittees that will negotiate the contents of the final standard. Caravan Coffee of Newberg, Oregon proudly announces the Q Grader Certification bestowed on Roastmaster Paul Allen by the Coffee Quality Institute, a non-profit organization working internationally to improve coffee quality and the lives of those producing it. Unless a farmer knows the quality of his/her coffee, they may receive far less that its value. With the coffee grading system, producers of quality crops are rewarded for their efforts. Paul passed a series of 22 exams in 3 days last week to become one of less than 50 in the United States and 400 in the world with the Q Grader Certification.

Brewed Behavior’s Tracy Allen receives recognition award Tracy Allen, President of Brewed Behavior, has become one of only six recipients of the Specialty Coffee Association of America’s (SCAA) Mose Drachman Sales and Service Award.

Allen, who is based in Kansas City, Missouri, received the award at the SCAA’s annual membership reception in New York City. The Mose Drachman Award is given out infrequently because recipients must be nominated by a customer along with an essay. The Mose Drachman Award, which is named after a legendary coffee salesman who worked for the Arbuckle Brothers Coffee Company 100 years ago, was created by SCAA in 2001 to recognize the sales people upon whom the specialty coffee industry depends.

Why are Kona Coffee farm ladies going naked?

Kona Coffee farmers care passionately about 100% Kona coffee and are tired of the failure of the Hawaii Legislature to protect their gourmet product.
