2 lb (900 g) cream cheese, room temp
1½ cups (300 g) sugar
6 large eggs room temp
1¾ cups (420 ml) heavy cream
1 tsp vanilla extract ½ tsp salt
¼ cup (30 g) all-purpose flour, sifted
½ cup (120 g) pistachio paste (unsweetened or lightly sweetened)
Optional Garnish: crushed pistachios drizzle of honey
Prepare the pan:
Preheat oven to 400°F (205°C)
Line a 9- or 10-inch springform pan with two large sheets of parchment, leaving at least 2 inches overhang all around
1Beat cream cheese and pistachio: In a large bowl, beat the cream cheese and sugar until smooth and creamy Add the pistachio paste and mix thoroughly until evenly green and combined
2 Add eggs: Beat in the eggs one at a time, mixing on medium speed and scraping the sides of the bowl as you go
3 Add cream and flavoring: pour in the heavy cream, vanilla and salt Mix until smooth
4 Fold in flour: Sift the flour over the batter and fold it in gently, just until no dry streaks remain
5 Bake: Pour batter into the pan Bake for 50–60 minutes, until the top is caramelized and browned, and the center jiggles slightlywhen shaken
6 Cool and serve: Let cool completely at room temperature in the pan (it will deflate a bit) Remove from pan, peel off parchment, and serve at room temperature or chilled
