What’s in your cupboard? This week, Tidbits takes a look at the culinary and medicinal uses of the herbs and spices found in nearly everyone’s home. • The Egyptians were studying the use of herbs as far back as 3500 B.C., using them for medicine and in their religious rituals. Today, about 7,000 compounds used in medicine originate from plants. About 200 million pounds (90,718,474 kg) of herbs and spices are consumed in the U.S. annually. The most common are black pepper, cinnamon, nutmeg, garlic, paprika, chili powder, oregano, celery seed, and parsley. • There’s a difference between herbs and spices. Generally, herbs are the leaves of a plant, while spices are taken from the roots, bark, or seeds. This means rosemary, thyme, and mint are herbs, and cinnamon, paprika, coriander, and nutmeg are spices. • Botanically, peppermint is known as Mentha piperita. It not only freshens your breath, it’s been shown that inhaling peppermint oil can relieve motion sickness and an upset stomach. Some clinical trials indicate its effectiveness in relief of irritable bowel syndrome and tension headaches. Peppermint oil can even repel annoying bugs! turn the page for more!

HERBS AND SPICES (continued) • Saffron is the world’s most expensive spice and has been used in trade for more than 4,000 years. It comes from the dried threads of the saffron crocus plant, which grows to a height of 8 to 12 inches (2030 cm) and bears only four flowers. One pound (450 g) of dry saffron requires 50,000 to 75,000 flowers, with 40 hours of labor needed to pick 150,000 flowers. Retail prices for saffron can spike as high as $5,000 per pound. Some medical studies suggest that this spice has antioxidant and cancer-suppressing properties and might also be helpful in treating depression. In the kitchen, it’s used in Indian and Pakistani sweet dishes and Italian risotto. It’s also used in religious rituals in India. • Vanilla is second most expensive spice after saffron. It’s no wonder vanilla is an expensive commodity when you consider the labor required to process it. It comes from the pod of the only fruit-bearing orchid plant, with a waiting period of three years after being planted before the first flowers appear. The flower opens only one day a year, and each one is hand-pollinated in order to produce a pod. Those pods remain on the vine for another nine months and when harvested, have no flavor or fragrance. Those qualities develop during the extensive curing process, when the pods are treated with hot water before being placed in the sun for months. During this time, they shrink to about one-fifth of their original size. It’s another month or two of “resting” before the pods develop their distinctive aroma and taste. • Vanilla takes its name from the Spanish word Vaina, which translates “little pod.” Vanilla extract is made by finely chopping the beans and dripping alcohol on the pieces. I’m personally against keeping any animal in captivity, particularly endangered elephants, and certainly against training them to perform. When I told my son “no way,” he got upset and ran to his room. How can I make him understand that elephant trainer is a horrible career choice? -- Jayne L., via email DEAR JAYNE: OK, first, remind yourself that your son is 6 years old. Kids at that age cycle through a lot of exciting career choices: fireman, policeman, trapeze artist, cowboy -- a lot of things capture their fancy. While I respect your stance on performing animals, I think saying a flat “no” to your son isn’t the best way to go about it. At 6, he’s old enough for you to have a conversation with him about your opposition to trained elephants. You also can encourage him to explore other ways to work with animals while he’s still fascinated with

the subject. Take him to visit a local nature preserve or conservation center, and join a tour group or talk with one of the staff about the work they do with local animals. Look for age-appropriate kids’ programming -- DVDs, cable TV or on services like Netflix -- that discusses efforts to protect endangered elephants and other wild animals. In short, your son is beginning to explore the world and his place in it. You can figuratively slam the door on career options that you abhor, or you can be his guide and help him think through certain issues and learn more about ways to help animals. Remember to do your backups. If you make a habit of backing up at the end of each day, in a crisis situation you’ll only lose what you’ve done that day. June 16 - June 22, 2014 HERBS AND SPICES (continued) • Nutmeg is harvested from the seeds of the fruit of the large evergreen nutmeg tree, native to the West Indies. This tree grows to a height of about 60 feet (18.3 m), and yields both nutmeg and mace. The seeds are grated to produce nutmeg, while mace comes from the lacy threads that surround the seed. Nutmeg may spice up your desserts, but its medicinal uses are many. Ancient Chinese medicine called for using its oil for digestive ailments, relieving inflammation, and reducing joint pain. Nutmeg is a good source of Vitamin C, many B-complex vitamins, copper, potassium, calcium, iron, and zinc. Some claim it promotes a restful night’s sleep when steamed and inhaled. Nutmeg contains the same essential oil as cloves, eugenol, that can be used for toothache relief. • Sweet aromatic cloves are used in baking and flavoring meats such as ham and lamb, as well as serving as an anesthetic for a toothache. Eugenol oil can also reduce blood sugar in diabetics and help relieve indigestion. Naturopaths claim that rubbing a mixture of oil of cloves and mustard into aching joints and muscles will reduce pain. Some people say that drinking water in which a few cloves have been boiled will help relieve a cough. • Cinnamon, one of the oldest known spices, comes from the bark of a cinnamon tree, bark that must be processed immediately after harvesting, while it is still wet. Cinnamon was a gift fit for a king in ancient times, and in Rome, a pound of the spice was worth ten months’ wages. It’s been shown to help with indigestion and upset stomach. Diabetics will be happy to know that cinnamon seems to contribute to reduced blood glucose levels and increased insulin production. Some studies indicate that it promotes lower cholesterol and relief of arthritis pain. (continued on page 5)

• On June 27, 1939, one of the most famous scenes in movie history is filmed -- Rhett Butler and Scarlett O’Hara parting in “Gone With the Wind.” The scene also was shot using an alternate line, “Frankly, my dear, I just don’t care,” in case the film censors objected to the word “damn.” The film was approved, but producer David O. Selznick was fined $5,000 for including the curse. • On June 25, 1942, Gen. Dwight Eisenhower becomes commander of all U.S. troops in the European theater of World War II. He would be appointed Supreme Allied Commander of all forces in Europe in 1943. “Ike” later would become America’s 34th president. • On June 26, 1959, the St. Lawrence Seaway is officially opened, creating a navigational channel from the Atlantic Ocean to all the Great Lakes. They are more likely to suffer from anxiety, neurological problems and sleep disorders. Additionally, women veterans are more likely to suffer from multiple symptoms. If PTSD is part of the package, women likely take longer to heal. Odette Harris, associate professor of neurosurgery at the Palo Alto Veterans Affairs Health Care System) studied the effects of TBI on women veterans. She began with the fact that women veterans are more likely to be single parents and more likely to suffer from harassment and assault related to gender, both of which add to stress of TBI. By Samantha Mazzotta One-Sided Windows Won’t Come Clean Q: I clean my apartment windows every week, but I can’t clean the outside. If I lift the window and reach around outside, I can just get the bottom part of the window. We’re in an upstairs unit, so I can’t reach them from outside. Any solutions? -- Frustrated in Wisconsin A: It sounds like you have single-hung windows, which have a bottom sash that can be lifted up, while the top window is sealed into the frame. Double-hung windows can be opened at either the top or bottom. Single-hung windows are designed so that the bottom sash can be removed for cleaning or replacement. How they’re removed varies slightly from manufacturer to manufacturer, but there are a couple of methods that are pretty much the same. The simplest type to remove, in my opinion, is a sash that has slide-backs along the top so you can easily pull in its top retainer clips and lever the top of the sash out of the frame toward you. In keeping with our theme of spices, Tidbits now zeroes in on the culinary and medicinal benefits of garlic. • Garlic, or Allium sativum, is a member of the onion genus, along with shallots, leeks, and chives. A fullgrown garlic plant is about 24 inches (60 cm) tall and yields between 8 and 20 bulbs. It’s one of the oldest cultivated food plants, and its use dates back over 7,000 years. Pictures of garlic have been found on ancient Egyptian tombs and the Greek physician Hippocrates promoted its therapeutic benefits for respiratory and digestion problems, low energy, and eliminating parasites. Olympic athletes in ancient Greece were fed garlic, probably to enhance their performance. • The list of the health benefits of garlic goes on and on. Research has shown the cardiovascular benefits of garlic, as well as a reduction in cholesterol levels. It seems to help regulate blood sugar levels and prevent complications of diabetes. It has antifungal, antibacterial, and antiviral properties, and was used as an antiseptic to prevent gangrene during World Wars I and II. In a study conducted by China’s Center for Disease Control, people who ate raw garlic twice a week had a 44% lower risk of developing lung cancer. Some naturopaths advocate its use for the prevention (continued on page 10)

tom and maneuvered out of the frame. Or, if you’re just going to clean the outside, you can lever it out until it lies flat, clean it and put it back into place. The other common type is a sash held in place by removable hardware, like sash stops at the top of the track. After removing or shifting retaining clips, the sash is lifted past its normal opening point and away from its bottom balancers or guides, and then levered out from one side and then the other. Confused? Do an Internet search for videos of single-hung window sash removal until you come across one similar to yours. With the bottom sash out of the way, you can much more easily reach the outside top of the window to clean it. Doing this weekly may not be fun -- lifting the sash out of some windows can be somewhat frustrating, and there’s always a risk of damaging the hardware, like the balancers or sash stops. So clean the outside windows only a couple of times a year, or when they are noticeably dirty. What’s the best way to quickly clean windows, especially the grimier outside? Add a little bit of dishwashing liquid to a lot of warm water, and use a big sponge to apply the suds. This loosens dirt much better than ammonia cleaner and paper towels. Swipe away the suds with a window squeegee (available at home-improvement stores or in many home-goods stores), cleaning the blade after each swipe, and wipe the corners of the window with a lint-free rag. HOLLYWOOD -- We’re always reading how the television networks are courting the 18- to 34-year-old demographic, while the rest of us “older folk” don’t count. The CW, known for shows like “The Vampire Diaries,” “Hart of Dixie,” “Beauty and the Beast” and “The 100” (all renewed), has opted to go after a more diverse demographic. It’s canceled “Star Crossed,” “The Tomorrow People” and “The Carrie Diaries” to make room for a grab at an older audience. The CW, a joint venture between CBS and Warner Bros., was rudely awakened by the 15 percent slide in total viewership and 18 percent drop in its younger demographic last season. Research pointed to younger audiences streaming shows online instead of where they can be measured by Nielson Ratings. A spokesman for the CW said, “The network, whose medium viewer age is nearly 42, has changed its slate of shows to attract new viewers and evolve with its core audience. What’s happen-

ing now is we’re moving away from an exclusive focus on teens and slowly moving into a more 20-something focus/supernatural market.” They don’t have it right yet, but they’re headed in the right direction. *** NBC may have canceled “Community,” but now Hulu is vying to ante up for a sixth season of new shows. “Community’s” first five seasons were in a rough neighborhood because NBC shifted it, canceled it, brought it back (because of fan demands) and delayed one of its seasons so long that all its holiday shows were aired months after the actual holidays. Hulu aired episodes the day after NBC and found the show became one of its best performing series. “Community” has more staying power than a New York cockroach! *** Knew it wouldn’t be long before one of the “Super Hero” franchises picked up Channing Tatum. You might not realize, though, that these snakes are protective parents. This is cause by Allyl Methyl Sulfide, a sulfur-containing gas that is released when you eat garlic. • Helsinki, Finland is home to Kynsilaukka, a restaurant that caters to garlic lovers. Even its name translates to “clove leek.” They serve all things garlic, including beer, ice cream, and cheesecake. In the U.S., San Francisco boasts “The Stinking Rose,” a restaurant where every menu item features garlic. No wonder their marketing slogan is “Follow your nose to the Stinking Rose.” • Garlic isn’t just for seasoning and medicinal benefits. Even the sticky juice found within the bulb cloves is useful as an adhesive in mending glass and porcelain. • If you don’t have fresh garlic for your recipes, garlic powder can be used, although it does have a different taste. If you do substitute the powder for the fresh, 1/8 teaspoon of garlic powder is the equivalent of one clove of fresh garlic. • Much of the U.S.’s garlic supply is produced in and around Gilroy, California, which has been dubbed “Garlic Capital of the world.” A single farm in the area produces nearly 25 million pounds (11,340,000 kg) annually. Every July, this community of 50,000 hosts the Gilroy Garlic Festival, a celebration that has raised almost $9 million for assorted local charities since its founding in 1979. • Although Gilroy calls itself the garlic capital, it’s nowhere near the world’s top producer. Over 77% of the world’s garlic is grown in China, about 23 billion pounds (10.4 billion kg) worth. India is a distant second with 4.1%, followed by South Korea at 2%. The U.S. produces just 1.6% of the world’s garlic, with some grown in every state except Alaska.

Chicken Catalina Isn’t it amazing what a little “diet” Catalina dressing can do to plain old chicken! 1/2 cup fat-free Catalina or French dressing 1 (8-ounce) can tomatoes, finely chopped and undrained 1 teaspoon dried parsley flakes 1/8 teaspoon black pepper 1/2 cup chopped onion 1 cup finely chopped celery 16 ounces skinned and boned chicken breast, cut into bite-size pieces 1. I am finished with physical therapy. My blood work and scan show everything is back to normal. But I have scarring in my lungs. I am a 47-year-old woman. What should I expect for my future? Are my kidneys at risk? Do I have a greater risk of contracting pneumonia in the future? What about my lungs? Is there permanent damage? What about allergy medicines and ibuprofen? I am afraid to have a glass of wine! -- C.K. ANSWER: Legionella is a bacteria that can cause pneumonia. It is classically found in fresh water, such as air-conditioning cooling towers and condensers. It was thought to be the cause of the original outbreak among American Legionnaires back in 1976 in Philadelphia, hence the popular name of Legionnaires’ disease. Once considered rare, increased awareness and better diagnostic tests have led to a greater understanding of this important cause of pneumonia. PHOTO: Forrest Whitaker in “Repentance” PICKS OF THE WEEK “Rob the Mob” (R) -- Two stupidly in love kids from Queens stumble on a brilliantly doomed plan: find Mafia hangouts where the wiseguys have a no-guns policy, then bring a gun and rob them. Tommy (Michael Pitt) and Rosie (Nina Arianda) sit in on the trials of mob boss Don Gotti -- taking detailed notes of names and addresses. Their story gets the attention of a crime journalist (Ray Romano) who digs into their tale while trying to protect them from the inevitable. It’s all based on a true story from the early ‘90s. Since everything is simultaneously true and ridiculous, the film strikes the necessary balance between comedy and drama. Pitt and Arianda light up the screen with delirious love, getting the audience to sympathize with the star-crossed crooks. “Enemy” (R) -- Jake Gyllenhaal pulls double duty in this psychological thriller. Gyllenhaal plays Adam, a prickly, half-awake history professor. By coincidence, Adam sees a face exactly like his in a rented movie. Adam goes a little mad with paranoia before meeting Anthony (also Gyllenhaal) -- a cocky aspiring actor who is totally and inexplicably identical to Adam. They are quite different in personality and lifestyle, but Adam and Anthony have the same face, and even similar tastes in relationships. This twisty-turny brain-wrinkler has plenty of revelations, but very few answers. Gyllenhaal handles his

Intubation -- having a breathing tube inserted into your windpipe -- and paralysis are reserved for only the very most severe pneumonias, and it is really great news that you are recovering so quickly and completely. Being young (47) and female are good signs for recovery. Since your blood tests are normal, your kidneys apparently recovered completely. There is no reason not to use the same OTC medications you used before the pneumonia, and an occasional glass of wine is fine (but not too much). Some scarring after pneumonia is common, and this indeed puts you at somewhat increased risk for future pneumonias. A vaccination for pneumonia will reduce the risk of the most common bacteria. ***

DEAR DR. ROACH: Why do heart attacks occur mostly in the morning and on Mondays? -- J.V. ANSWER: Your statements are quite true. Heart attacks are three times more likely in the morning than in the evening, and 15 percent to 20 percent more likely on Mondays than on other days. Nobody knows exactly why. Mornings are thought to be more likely due to several factors: increased blood pressure, an increase in cortisone and having “stickier” platelets in the morning. There are two main theories for the Monday phenomenon -- the first is back-to-work stress, but recently there has been some evidence that it may be excess alcohol intake over the weekend. These are good arguments for stress reduction and avoiding excess alcohol in the first place. ***

The film has an infectious style thanks to director Denis Villeneuve, who did great things with Gyllenhaal in their last project, “Prisoners.” “Repentance” (R) -- Tommy Carter (Anthony Mackie) is a magnetic life coach and motivational speaker guy. He spouts his ultra-positive philosophy pieced together from all-sorts of spiritual beliefs, saying that others can be saved like he was saved after a life-changing car wreck. On the eve of his big book release, he takes on Angel (Forrest Whitaker) as a client for expensive one-on-one life coaching. Things quickly go south when Tommy tries to end the therapy. The plainly disturbed man holds Tommy in his New Orleans basement for a different kind of one-on-one session. “Afternoon of a Faun” (PG) -- This documentary examines the life and career of one of the greatest ballerinas in modern times. Tanaquil Le Clercq started learning under George Balanchine in her teen years, and later married him when she was 23. Her shape and her motion set a new ideal for what a ballerina should have. Le Clercq came down with polio when she was 27, leaving her unable to dance for the rest of her life. Interviews with friends and colleagues are interspersed with glimpses of her on stage and in the studio. Keep Your Cool

Everyone needs to take steps to stay safe in hot weather, but seniors especially need to be careful. Our internal “temperature gauge” doesn’t work the way it used to, and becoming overheated can sneak up on us, with dehydration right on its heels. Here are a few ways to stay cool in summer: • If you have air conditioning, use it. Keep an eye on the heat index (temperature plus humidity) on the weather news. The higher the humidity, the less we’re able to sweat and let air evaporation cool us. • Go somewhere cool in the middle of the day, such as the library or a nearby coffee shop that has air conditioning. Find out from your senior center if there are cooling centers in your area where you can go for a few hours. • Drink plenty of water. Some of our drugs can be dehydrating; ask your doctor if your prescriptions mean you should drink more water. Ask him how much liquid you should drink during hot weather, especially if your intake is limited because of water retention. Remember that drinks with caffeine (such as tea or coffee) can be dehydrating, as well as alcoholic beverages or sugary drinks like sodas. • Dress in lightweight clothing. Wear a hat if you go outside. • Put a cool, damp washcloth on pulse points, like wrist and neck. Take a cool shower. • Sign up with a seniors phone service that will check on you, or arrange with friends and family to stay in close contact during hot weather. • Keep an eye on the symptoms of heat exhaustion: clammy skin, fainting, nausea, muscle cramps and weakness. Call for help if you experience any of these, because they can lead to heat stroke if not taken care of. My uncle was a professional house painter and saved cans from some of his jobs, especially if the paint brand was rare or unusual. I am helping his family downsize, and we now face the decision of what to do with about three dozen cans. Are they worth keeping? — Lonnie, Grand Rapids, Mich. I discovered several years ago that even older empty paint cans are collectible. For example, a Dinah Black Enamel from the Boston Varnish Company can sell for several hundred dollars. Imagine that! One of the best venues for selling is, of course, eBay. *** I have a Lazy Susan made by Frankoma in the Wagon Wheel pattern. Can you tell me more about this company? How much do you think my piece is worth? — Betty, West Palm Beach, Fla. John Frank founded his company in Oklahoma in 1933. The Frank Pottery Company made vases and other decorative products, marking them with its Frankoma trademark beginning in 1936. A fire destroyed the plant in 1938, and collectors are especially interested in the pre-fire pieces, since many of the original molds perished. Eventually, the plant was rebuilt and production resumed.

Most pieces from the later period are made from red brick clay, called Sapulpa, found near Ada, Okla. This distinctive color makes most pieces easy to identify, even from a distance. Southwestern designs always have been favored by the company. Values vary. I have seen Frankoma Lazy Susans priced for as little as $15 and as much as $75 in shops and antiques malls. *** I have a silk scarf that I acquired when I was in college during the 1970s. It features a Peter Max design and was rarely worn. Is it worth keeping? — Susan, Rio Rancho, N.M. Peter Max is the quintessential pop artist who has been creating collectibles since the 1960s. He symbolizes the hippie era and sponsored the first psychedelic show in New York in 1995. Most collectors are especially interested in Max items produced before 1975.
