OHA President’s Report A year ago, we had two main topics of conversation, Covid-19 & the drought of 2020, most likely talked about in that order.

Fast forward to 2021 and the topics haven’t changed all that much, Covid-19 and the moisture of 2021, still a weather related topic. No one has been unaffected by the extremes of this year’s rainfall. From devastating drought conditions in North-Western Ontario, to being diluted with too much rain in South-Western Ontario. It would be wonderful if Mother Nature would balance this out and share the moisture equally. The weather started out very dry in East Central Ontario but now, I don’t think anyone is complaining about seeing green pastures in July.

I hope that everyone has had a successful calving season and now all of the cows and calves are out on pastures enjoying the green grass, that seems to be in abundance. Breeding decisions have been made and now we wait to see the results of these decisions.

Taking a first cut of hay has been a challenge for many, with the weather not cooperating. Congratulations if you were able to get your first cut of hay, cut, dried & baled before the rains arrived. Patience may be required if you are still waiting for that dry weather window to get your first cut of hay done.

Businesses and life are slowly starting to re-open here in Ontario.

Luckily, agriculture was considered an essential service, and for the most part, our day-to-day routines did not have to change all that much. Yes, many missed the socializing and friendly competition showing at the fairs in 2020, but new ways to offer this experience were found. Congratulations to everyone who has or is planning a beef show. It is no easy feat, considering all of the extra expectations that must be met in order to be able to proceed. In 2021, there are signs that things are returning to normal and that gives us hope for 2022.

The Ontario Hereford Sale weekend will be held September 17 – 19, 2021. Sale weekend is always an excellent opportunity to catch up with other Hereford breeders, friends and to check out the newest genetics being offered in the Hereford industry.

Equally as important are the other fall sales held throughout Ontario, offering Hereford genetics. Look for the sale dates throughout the OHA News, mark your calendars, and plan to make a roadtrip to attend any or all of these sales. Take advantage of a day off the farm to renew acquaintances and be treated to the hospitality that can only be found at these sales.

There is no better scenery than the fall foliage found throughout Ontario.

It will soon be time to wean your calves and make the decision of how best to market your 2021 calf crop. One of your

considerations should be to sell these calves through the Hereford and Hereford Influence stocker calf sales being held at Brussels and Cookstown sales barns.

Still have your calendar handy? Circle October 7, 2021 for the Ontario Stockyards (Cookstown) Hereford & Hereford-influence sale and October 22, 2021 when Brussels will be hosting a stocker sale with Hereford influence stocker calves. Calf prices are strong right now and should continue to improve as we approach the traditional stocker calf sale season. There are buyers who wait for the Hereford & Hereford influence sales because they know the advantages of buying Hereford calves.

It was disappointing to hear this week’s announcement that the RAWF has been cancelled for the 2nd year. This resulted in the OHA Board of Directors making the very difficult decision to once again cancel the 2021 OHA Futurity. We are all looking forward to a more normal year in 2022. The National Show Committee has been meeting regularly, planning the National Hereford Show which is being held in conjunction with the 100th anniversary of the Royal Agricultural Winter Fair. It will be 3 years since our last show at the Royal, and the committee is planning this National show to be the best and most memorable.

As plans are finalized watch our Ontario Hereford Association Facebook page for updates.

At the most recent OHA Board of Directors meeting, the decision was made to plan for an in-person AGM for 2022.

Mark your calendar for April 8 & 9, 2022, and plan to attend the OHA AGM to be held in the Ontario West Zone. More details will be available in the Winter edition of the OHA News.

I know last year we thought we would be back to normal by this time. Slowly life is returning to a more normal routine and we are planning for lots of excitement in 2022 in Ontario showcasing our Hereford cattle. Keep your calendars handy to mark down all of the upcoming events. We are hoping that we will once again be able to meet in person very soon.

Report | Secretary Manager As this Pandemic continues to loom and throw us curve balls, we continue to react, adjust and reschedule.

There are some things that the pandemic has no effect on.

As Secretary-Managers of the OHA we continue to get in touch with New Members and share that information to the zones that they are from. We have continued to visit our members at their farms (when restrictions allow), we have been to bull test stations and continue to plan for the big year coming in 2022.

Our intention for the future is to certainly continue to reach out to our members with visits. We can’t stress enough how we have enjoyed our visits with the OHA members. It was terrific to see all of your operations.

In 2022 the National Show is in Toronto (for all the beef breeds). Needless to say this will be no small feat to organize and execute.

This show will be hot on the heels of the 2022 National Junior Hereford Show (Bonanza) which will be held in Lindsay. If you are aware of anyone or any business that would like to help or sponsor either of these two events please let us know. We are always available to take calls in the office or contact the OJHA through their sponsorship team.

Some small (and some not so small) beef shows and fairs have had and will have competitions this year. Kudos to the organizers. We can all appreciate that this is no small job.

We also look forward to the fall sales with great anticipation.

As I write this report zone picnics are still planning to proceed. These are great venues where we can reconnect and hopefully have a little bit of “Normalcy”.

All and all we would like to thank all of the Ontario Hereford Members for their support, understanding and patience during these uncertain times. As my partner in crime and room-mate continues to repeat: “Things will get better. They may never be the same as the good old days but they will get better”.

And remember: If you have to put up with a couple of little pricks, it should be to get vaccinated.

Report | Ottawa Valley Hereford Club As I sit here and write this report, I cannot help but feel hopeful that normalcy is upon us. Seeing cattle shows, fairs and other agriculture events being planned is such a welcomed sight.

The OVHC is excited to be moving forward and planning events for 2021. We are in the works of organizing our annual picnic for late summer, location to be determined.

We are pleased to be able to say we are planning a show at Renfrew Fair the weekend of September 11th, 2021. The fair board is as determined as we are to bring cattle back to the fairgrounds.

Our juniors always seem to be busy, working hard to promote the Hereford breed. The Juniors along with the zone adult advisor have poured their hearts out into Beef-A-Rama over the last two years and unfortunately COVID has had other plans. Although they were not able to host a live Beef-A-Rama they have persevered and worked alongside the rest of the OJHA to pull off a successful Virtual BeefA-Rama. Several of our juniors are headed out to Bonanza 2021 in Camrose, AB and we wish them all the best of luck.

All of us at the OVHC want to wish everyone a safe and happy summer. We look forward to reconnecting with all of you soon.

Rainy River Hereford Association Update - June 27, 2021 I hope by the time you read this report from the Rainy River District we will have received some decent precipitation. We are experiencing some of the driest conditions in many, many years. I have a chart that I keep up to date from 2000 and we have never experienced this in all those years. We often end up near the end of July or August in some drier conditions but not May or June. Most people are seeing very little regrowth on any of their pastures and hay yields are less than half. Producers are concerned and worried and there is a lot of talk about how many cows are going to have to go. It is certainly not a pleasant time or discussion. It is bad enough that hay yields are down but the thought of running out of pasture any time isn’t helping. Water is tight, lots of dugouts are dry or near dry. We all know what it is like to haul water to thirsty animals. The bugs are out in record force. My bulls will be pulled any time now but the bull from one group will rarely stay with them. He would rather stay close to the barn and the fly spray so I certainly hope those groups of cows are all bred. The one thing about dry grass is the cattle and calves look good but for how long before it starts going the other way?

Our 4-H Beef Clubs have been meeting virtually once again this year. For some reason we don’t seem to be prepared for this year and I think it is because we thought we would only be dealing with the Covid issues last year and here we are. We have 30+ 4-H Steers and around a dozen heifers. We are hoping we can do a group show at our regular Emo Fall Fair weekend (August 17th). Time will tell!

The Stratton Sales Barn Project is underway, and we hope to have things completed by our first fall cattle sale – August 24, 2021. Of course, like many big projects, we had some setbacks, but things are back on track. We have had a good group of volunteers show up and help get many tasks completed but we are now at the stage where the contractors will be doing much of the work. As you all know Covid has challenged us not only with building costs but just accessing some of the materials needed. No matter what, once it is all said and done we will have a beautiful new facility, ready to sell the good “Rainy River Raised Cattle.”

East Central Ontario Report | Hereford Zone Summer greetings from the ECOHZ. I’m sure by now everyone is into doing hay and checking those crops wondering what the fall is going to look like. This summer has brought many ups and downs and questions from praying for rain to torrential down pours. We just don’t seem to ever be able to settle into a happy medium. The one thing that is on everyone’s minds this time of year is show season and it’s exciting to see some shows up and running and it’s also nice to have something social to look forward to. Our zone is excited to announce that we will be going ahead with not only our zone show that was planned to be in Stirling this year but also our Futurity show, both will be held at Picton Fairgrounds on Augsut 28th. There will also be a junior show, stay tuned for entry information. I’m sure I can speak for everyone when I say….finally! Mark your calendars for a great day and seeing some cattle out in the show ring. I know there are some other shows going to take place so stay tuned to the zone Facebook Page with updates as they come along.

Another exciting event to happen this year is the picnic. It’s always a great afternoon of socializing and eating……two things we are great at. It’s also a time to maybe try out some samples from the Cookbook we did back in the winter. If you haven’t gotten a copy please join us that day and you can purchase yours! The picnic will be held August 15th at Red-Rock Polled Herefords, Brian and Megan Jones in Cameron. Bring a lawn chair, your favourite dish, sunglasses and something for the auction and enjoy an afternoon of friendly conversation.

The zone was excited to be able to host our Spring Sale this year. After the disappointment last year of cancelling, we were determined to go ahead with it this year, what a success!! Thanks to everyone that came out and supported the sale, from the consignors to the bidders and buyers. It was amazing to see such an awesome turn out and have such a great group of cattle. We stepped it up this year and did a color catalogue as well as put it up online. We are looking forward to making even more changes to next year’s sale and listen to your feedback. There will be an email coming out over the summer with a short survey, looking for feedback so please feel free to fill it out and let us know your thoughts. Please mark your calendars for next year’s sale date: April 30th, 2022 at Hoards Station in Campbellford.

I would also like to draw some attention to Lindsay fair on September 25, 2021. This will be our MOE show for the year. As always I want to remind everyone showing that red shirts or show jackets are mandatory for the show and it will be enforced this year. Anyone not wearing a red shirt or show jacket will be asked to not enter the ring. We are also asking that stall cards be up and in place by 11 a.m. and the show committee will be coming by to check tags and tattoos.

I hope you all have a wonderful summer and I look forward to catching up with all of you in person at one event or another this summer.

Your board as a whole has been thoroughly engaged in the continued development of the Plan including deciding on the specific action plans that correspond to each Must Win Battle. As well, we have been developing measurables to ensure we have accountability in achieving success.

I am also pleased to announce, the CHA has chosen the firm of C&B Advertising to lead our marketing communications that will complement our specific strategies. They come with a wealth of talent and experience that will ultimately deliver the CHA with modern, dynamic and unique marketing and advertising choices. We will implement these communication tools to the entire beef industry throughout Canada.

In closing, please take time to familiarize yourselves with our new CHA Must Win Battles. The primary goal of this plan is to equip every Canadian Hereford breeder with the necessary information and proof to effectively allow you to grow our market share of Hereford influenced cattle in every province in Canada.

It’s Sale Day!!

By Mary Elmhirst Rain or shine, ‘It’s Sale Day!’ September 18, 2021, marks the 20th year of Elmlodge’s Source for Success Sale and whether it’s precovid, or hopefully soon post-covid, three generations of Elmhirsts will be ready to welcome you to the farm to ‘talk cows’.

Of course, we all know that sale day isn’t just one day, but a day made possible by hundreds of hours of hard work, sweat and tears.

Farming isn’t always easy, but it’s a lifestyle and there is no life like it … so that’s why we do what we do.

Talking about sales, it may be the 20th sale year here at the Elmlodge, but we’ve been going at it for the last 45 years, buying and selling cattle. It started with consignments to the annual Zone sales, which were a family affair and offered opportunities for us to showcase Elmlodge breeding, while also trucking a few new ones back home to mix in with our Elmlodge pedigrees. And, while it has been many years since the last Louada sale, it was an event not to be missed, bringing cattle people together from out west, the U.S., and as far as England.

The year 1979 marked our debut into Elzevir’s Thanksgiving Banner Sale, when Neal Reavie invited Elmlodge to be a consignor. For the next 19 years (until 1997), we shared in a weekend of great cattle, great cow people and travelling a ‘road’ like no other.

Speaking of roads, ‘where one road ends, another begins.” If you own cattle, you need to sell cattle, and after the Banner Sale ended, we consigned to the Goldbar/Wilgor Sale at Dave Hasson’s in Guelph in 1998. It was a memorable first sale with Elm-Lodge 24 Karat selling for $10,000 to the Brumleys in California. The Brumleys went on to win Grand Champion female with one of Elm-Lodge Karat’s daughters in Denver.

In 2001, when the sale was over, Dave shared with Billy that he would not be holding another sale at his place.

“Where will the next sale be then?” was Billy’s next question to which Dave replied, “At your place.”

SOLD! While Dave may have sold Billy on the idea, it took a bit of convincing for the older generation to buy into the idea, but 20 years later and Elmlodge’s Source for Success sale is still going strong.

Held on the third Saturday in September, the birth of Elmlodge’s Source for Success Sale was a success with an average of $3203 on 78 head.

The first Source for Success Sale was a collaborative effort with Dale Stith from Kentucky auctioneering, T Bar C managing and the support of all our consignors, including: Wilgor (Gordon McGibbon), Putney Heath (Norman Jewison, owner and Jim Pipher, manager), Grosvenor Farm (Morphys, owner and Lasbys, managers), Kiwanda Farm (George Couch) and Sandy Ridge Livestock (Adrian Ocolisan).

The Source for Success Sale has brought success to many of its buyers. Elm-Lodge Mojo sold to three buyers in the States (Wooden Shoe, Split Butte and Cache Cattle Company) and was Grand Champion at the Royal two months later. Elm-Lodge Next Big Thing sold to Graham Green and has made his mark siring Herefords around North America. Elm-Lodge Upper Cut was purchased by Semex for South Africa in 2008 and was still siring Herefords in Canada until 2018. Larry Crane purchased a heifer in 2012 whose son now is an AI sire Perfecto for Hoffmans. River Valley purchased a Cornish heifer, WLL Picture Perfect, that was Grand Champion at the 2009 Royal.

Many Breeders have purchased cattle that have gone on to do well for them including Bill Down, joint owner of Elm-Lodge Boom Boom, who was Champion at the Royal and Agribition; Lasbys and Kemps with Elmlodge Cherokee, who was Champion at the Royal.

There are many tedious sale week tasks and Grant heads up the paddock setup crew. It’s worth mentioning here that the average age of his crew is 80 so while they aren’t quick by any means, they do get the job done. Everyone pitches in and the support of family, friend and neighbours over the years has been second to none. My job is to make sure no one goes hungry.

Sale day starts early with cattle all washed and put in paddocks along the road just as the sun is rising.

It’s sale time! Nothing beats the excitement of a large buzzing crowd and the auctioneer’s gavel as it hammers down for the first lot into the sale ring and the bidding begins. This is the moment we have worked hard for all year and for the last 20 years, come this September.

Success can be measured in many different ways - a large crowd, bidding aplenty and a fantastic sale average, but so too are the friendships we have made along the way. After the sale, we call it a day over a cob of corn from Abby Hill and a cold beverage with new and old friends that all have one thing in common – cattle.

Here is a quote from an early sale welcome that has been a consistent theme over the years …

“Our goals to produce problem free productive cattle have never changed and we’ve been fortunate to raise a number of extremely competitive bulls and females in our quest for excellence.”

Over the years, the Source for Success Sales have averaged from $2374 to $5250. There have been some changes over the last 19 years running, but what doesn’t change is the great cattle and great cattle people that are part of our sale – including both consignors and buyers! Auctioneer, Ryan Doran, keeps things moving in the ring and management is a family affair with support from our current consignors: Adrian Ocolisan (one of the originals), Lasbys (long-term supporters of our sale), Shady Birch, O’Shea Farms, Hiddenview, Devlins, Premier, Martins, Truluck, Marben, Stonewood, Corp Creek, Circle L, Stone Hedge and Whiskey Lane.

No sale goes off without a hitch and there’s always a little behind the scenes action taking place, whether it’s happening before the sale, during the sale or maybe even after the sale. One of the most memorable episodes was watching a heifer escape her feature pen and then proceed directly to the nearby pond and dive in.

Washing, clipping and making the sale cattle look show ready for the sale ads and catalogue are straight up easy compared to picture taking days. Tears were mentioned much earlier and when Owen was about 8, he and I were helping Juanita and Billy take sale pictures. We both quit and were crying on the verandah because it was not a fun experience. He said, “Grannie, you’ll be okay.” Since then, Owen has learned to escape picture taking by

CJHA Bonanza 2021 Bonanza 2021 was scheduled to be held in Brandon, Manitoba, but due to travel restrictions to Manitoba, it was moved to Camrose, Alberta.

Three juniors from Ontario attended the event from July 28-31. As always it was a time for making friends and memories, while learning, and participating in the various competitions.

Congratulations to Rebecca Hess, from North Gower, ON, an Intermediate, who placed first in Showmanship, and second in Individual Judging, as well as several placings, including two firsts in Art & Literature. Caelen and Claire Pugh, from Mono, ON, also represented Ontario. Claire placed first in Peewee Individual Judging while Caelen was 7th in the Junior Division. I am sure it was an exciting week to remember for all three of our Ontario Juniors.

For those unable to attend Bonanza in person, there was a Virtual component as well. Congratulations to Cooper McNaughton, from Gravenhurst, ON, on exhibiting the Champion yearling heifer and Reserve Grand Champion Female in Virtual Bonanza with 6MC T/R 561C Shelby 013 ET Abby McMullin, from Renfrew, ON, had the Reserve Champion Steer, as well as a 3rd place in the photo competition.

Thank you to all the Ontario Juniors who participated in Bonanza 2021 with its unusual format this year. We are looking forward to a great Bonanza reunion in Lindsay next July!

CJHA Bonanza 2022 Calling all Juniors! 4H members! Pre 4H! Come join us for a great time!

BONANZA ? WHAT IS BONANZA? Bonanza is the premier junior National Show in Canada. It is a week long event showcasing Herefords and the members of the Canadian Junior Hereford Association who organize and present it. The CJHA Is the longest running junior breed association in Canada. From its beginnings more than 40 years ago, the CJHA has grown to be the most respected junior association in Canada. The opportunities it offers Hereford youth help develop enthusiastic, knowledgeable, and visionary leaders with the skills to succeed in their careers, not only within the breed and agriculture, but in any field they might choose.

Each year Bonanza is held in a different province or region of Canada. In 2022 , Lindsay, Ontario will be the venue for this prestigious event.

After two Bonanzas held under altered and restricted conditions due to the pandemic, this Bonanza promises to be a much anticipated reunion.

Because of our very generous sponsors and our fundraising efforts, Bonanza offers several days of competition and networking, in a setting that also results in lifelong friendships for all ages.

The CJHA encourages Hereford juniors to build their own breeding programs and so offers opportunities for members to receive semen donated by breeders, or to win vouchers to be used towards the purchase of their own heifers from breeders and sales who support the Heifer Lottery project. Classes are offered at Bonanza for these specific projects. The Heifer Lottery show will be in its 3rd year in 2022 and the CJHA would like to grow and promote it to breeders as well as juniors with a high profile show.

A second goal of the CJHA is to reach out to juniors and 4-H members with commercial Hereford or Hereford influence cattle. There will be classes for Commercial cattle and steers at Bonanza and we invite anyone who is interested to contact us. We welcome you to participate and make new friends within the best breed in Canada!

Juniors may compete in Bred & Owned, Semen Donation, Commercial, and Open cattle classes as well as the new Heifer Lottery Class.

They may also enter Showmanship and Grooming classes.

But this is much more than a Cattle Show. Bonanza offers a variety of competitions outside the show ring, including Individual Public Speaking, Judging, Art & Literature, Photography, and Team Judging, Grooming, and Marketing. Eligible participants are active CJHA members to age 21 with five age divisions: 1) Mini-Herfs Under 5 years of age as of January 1st. These members may participate in all non-livestock events 2) Peewee 5-8 years 3) Junior 9-12 years 4) Intermediate 13-16 years 5) Senior 17-21 years As well as friendly competition, Bonanza offers social and educational activities for the whole family. In fact, Bonanza is a family holiday destination for many. What an opportunity to experience the beautiful and diverse country we live in while sharing our Hereford passion with other families!

The Bonanza 2022 Committee and the CJHA extends a warm invitation to join us in Lindsay July 26 - 31, 2022. It will be a week to remember!

In person Bonanza was held July 27th - 30th with the results from the Virtual Bonanza released during the same time on the CJHA Facebook.

Jr. Director | PROFILE Hi my name is Sydney Galt. I’m 16 years old and live in Grafton Ontario. This is now my third year on the OJHA board and I’m glad to be returning to the board as a director once again. Ever since we moved from Whitby around 6 years ago, I’ve fallen in love with the cows. I show purebred Herefords for one of my good friends and neighbour Leon Silk.

Currently I’m going into grade 11 at St Mary’s Catholic Secondary School in Cobourg and planning on pursuing my love for animals while studying Veterinary Medicine. In my spare time I enjoy playing many sports and spending time with my family and friends.

PROFILE | Jr. Director Kent Ribey

Hello Everyone, my name is Kent Ribey. I live outside of Paisley where our family owns Iris Creek Farms. We are a cow-calf and cash crop farm with purebred Hereford and Angus cows as well as Commercial cows. This year we are excited to be consigning purebred Herefords to the Gilchrist Farms In it To Win It production sale. This year I am the social media/ communications director for the OJHA. This is my first year involved with the board and although we don’t get to meet in person it still has been an exciting and learning year. I am also looking forward to Bonanza 2022 in Lindsay next year. I am going into my third year this fall at the University of Guelph in Food Agriculture and Resource Economics. In addition to farming and school, my siblings and I sell sweet corn and operate a corn maze. In my spare time I enjoy going to cattle shows and playing for my local Junior hockey team. Hope to see everyone out at events this year!

EastGen is pleased to announce their summer 2021 intern, Maggie-Jo Hickson, who joined us on May 3rd.

Maggie-Jo has grown up on her family’s dairy farm in Oakwood, ON, where they also keep a herd of Hereford cattle. This fall she will be entering her third year at the University of Guelph studying Agricultural Science, majoring in Honours Agriculture.

Her ongoing involvement in a wide variety of 4-H clubs and events since 2011 has provided her with many additional learning opportunities to expand on her experiences in the agricultural sector. Aside from 4-H, Maggie-Jo is the VicePresident of the Ontario Junior Hereford Association, as well as Vice-President of the Ontario Agriculture College Beef- Science Club. She has been able to gain experience in marketing and communications during her time with the Lindsay Exhibition and International Plowing Match & Rural Expo, as well as through involvement in the Student Federation of the Ontario Agriculture College as their Public Relations Representative.

By the time the Hereford News is published my Internship will be nearing it’s end unfortunately but I’ve really enjoyed my experience so far! I work with very skilled, knowledgable people who are very encouraging and have provided me with great opportunities to expand my skillset and continue to learn in the industry. I recommend this position to all!

Management of CALVES AT

Weaning for Optimum Results

By Lois Batty DVM The process of weaning represents the single biggest stress in a calf’s life. After nursing a cow for 6 months and being protected in the security of the herd environment, production practices dictate that the calf must be separated and started on a different feeding regimen, and quite likely sold during this time. The more producers can minimize the stress associated with weaning and altering the lifestyle of the calves, the better the results will be for the calves, the new owners and the producer.

Vaccines should not be given within two weeks of sales or co-mingling of calves. “Co-mingling” refers to the mixing of calves with others from different farms or even groups on the same farm. This exposes them to viruses they may not be immune to and represents the biggest risk factor to these calves.

For all calves, improving their immunity will help them withstand the health challenges encountered at weaning, transport and mixing with other calves at sale barns, as well as adjusting to a new environment. Good nutrition and minerals, as well as herd vaccination programs, help prepare the calf for weaning. The cow herd should be vaccinated for respiratory diseases, as well as Clostridial diseases, to give the calves adequate antibodies through the colostrum to protect them in the first few weeks to months of life. Calves should then be vaccinated with respiratory and Clostridial vaccines at 3-4 months of age or up to 3-4 weeks prior to weaning. A booster should then be given post-weaning or 2 weeks prior to weaning.

Calves should also be treated for parasites after weaning and prior to selling them. This improves their overall health and immunity, as well as increasing their feed efficiency.

If calves have not had access to stored feeds on pasture, starting them on hay with some added grain prior to weaning makes the feed adjustment less stressful. A low stress system is to set up a “creep area” for the calves to feed in. To wean, the gate is simply closed one day and the calves cannot return to the cows. They already know where the feed and water is and will go there, making hunger less of a stress. Similarly, there are methods such as “Quiet Weaners” that are used to prevent the calf from nursing the cow even though they may still run together.

“Preconditioning” is a term that refers to the management practices that may be done in the period prior to, and around weaning, and leading up to stocker sales that optimize the results of weaning and sale. Many producers do some preconditioning, though few actually follow the ideal preconditioning programmes. Calves should be castrated and dehorned, if necessary, at as early an age as possible and with the use of pain medications as recommended in the Code of Practice for Beef Cattle.

Calves wean easier if they are at least 6-7 months of age, as they are eating all feeds, and the dam’s milk production is beginning to drop off as well.

The concept of preconditioning prior to sale of calves has been recommended for more than 40 years, yet only about 10% of producers in Canada practice it. Preconditioned calves will require fewer treatments for respiratory disease in the feedlot and will adjust to feed faster. Calves who get pulled for treatment will not likely gain as well or marble as well as those who have never been sick. The cost of treatment and the risk of death is reduced with preconditioned calves. Yet feedlot operators do not always pay a premium for these calves because they do not trust that the cow-calf producer has actually done the procedures or they find it difficult to keep track of the preconditioned calves within their purchased groups.

The cow-calf producers want their calves to look good and demand a top price at the sales. They also want to believe that there will be minimal health problems arising in the feedlots. Yet most of them do not wean before selling, a major part of preconditioning.

Understandably, they do not want to take the risk of illness, and even death, or the added cost of feed, by weaning them and keeping them for 4-6 weeks. However, their calves are less likely to get sick if they are vaccinated, weaned and kept on feed at home, than if they were trucked and mixed with others at the auction barn. One of the factors deterring pre-weaning is that the calves lose the “milk bloom” and look less attractive when they are weaned. However, by keeping them 4-6 weeks past weaning they will regain the weight lost at weaning. By two months post-weaning good calves will be gaining well enough to offset the cost of their feed. Of course, other factors, such as feed and yard space, may prevent producers from being able to precondition.

However, feedlot operators also need to recognize the advantages of preconditioning, and pay premium prices for these calves.

Optimally we need to advertise the advantages of preconditioning calves and win the confidence of feedlot operators. At a time when death losses in the feedlot add a bigger cost than ever, we should all strive to keep these as low as possible. With a mandate to reduce the use of antimicrobials, we need to produce more stockers that can go into feedlots without each one receiving a preventative injection of a long-acting antibiotic. Veterinarians, farmers, and sale barns need to work together to produce and promote these calves. When it comes to sale time, producers should try to pre-book their calves to a sale and auctions should recommend calves have feed while there. A day of separating and handling, trucking and an overnight stay with gaunt, bawling calves is not optimum for healthy entrants to a feedlot.

Some sale barns and calf clubs will offer “Pre-Sort” sales. The concept of these is that large groups of calves can be assembled which have been managed in the same manner and so would approximate the scenario that they are from one farm. These calves generally require the same vaccine protocols and other management procedures be performed for the cow herds as well as the calves

themselves. The calves are then sorted at the auction by sex, breed or type, and weight. Feedlot purchasers prefer to buy their animals in larger uniform groups so they can all be handled similarly at entry and on through the feeding process in the lot, ,and so these groups of calves may demand premium prices.

Cow-calf producers can take advantage of these preferences by offering uniform calves as well. A short breeding season and good genetics will result in calves that are of uniform size, conformation, and with the ability to perform.Perhaps direct sales could help build buyer confidence as well as communication between sale barns and buyers to promote preconditioned calves.

All producers want their animals to be the best they can be, and as profitable as possible. This means working with your veterinarian, nutritionist, and marketing staff to ensure minimal cost and losses at each step in the production process, while at the same time adding value to the calves.

As Beef Comes Under Fire for Climate Impacts, the Industry Fights Back

In at least two states this year, beef and dairy industries have successfully beat back government food initiatives linking livestock to global warming.

In California, a state legislator introduced a bill called the California Climate-Friendly Food Program, with the goal of promoting plant-based foods in schools and reducing greenhouse gas emissions linked to livestock.

Within a few months, references to climate change were stripped out of the text and title. The bill instead became the California School Plant-Based Food and Beverage Program.

On the other coast, in Maryland, the state’s Green Purchasing Committee launched the Carbon-Intensive Foods Subcommittee to study which foods have the largest carbon footprints and to steer the state away from buying those foods. The administration of Gov. Larry Hogan disbanded the committee months later.

In both cases, the states’ farm and beef lobbies got their way.

Over the past year, as landmark reports advised consumers to eat less meat and dairy because of their climate impacts — and as plant-based alternatives gained traction — the American beef and dairy industries have been pushed further into defensive mode.

“It is astounding, the level of fear and pushback from the meat industry on our efforts to address the very real, substantial climate impacts of meat production,” said Kari Hamerschlag, deputy director of the food and agriculture program at Friends of the Earth, which helped develop the California legislation and is behind other legislation intended to expand state-level spending on plant-based foods.

“They don’t want to cede an inch on climate change,” Hamerschlag added.

Early this year, the EAT-Lancet Commission, in a major scientific report, urged a “comprehensive shift” in the world’s diet. In July, the World Resources Institute, the United Nations and other groups released a massive

report finding that the world needs to produce 50 percent more food without expanding the food system’s carbon footprint. And in August, the United Nations Intergovernmental Panel on Climate Change released a report calling for a major overhaul in the global food system.

All of them recommend lowering consumption of meat, dairy and carbon-intensive foods, especially in developed countries.

Stripping Mention of ‘Climate,’ Disbanding a Committee California Assemblymember Adrin Nazarian introduced a bill in February that would allocate $3 million to give schools a rebate for increasing the number of plant-based meals they serve. The original bill contained language that said beef and dairy production released more greenhouse gases and had the word “climate” in the title.

But the state’s powerful beef and dairy industries opposed the bill, largely because of the explicit connections it made between livestock production and climate change. Lawmakers removed the language, the lobby withdrew its opposition — and the bill moved forward. It now awaits further movement in a state committee.

“We were opposed early in the process but removed our opposition in the Assembly Education Committee after substantial amendments were taken to the bill removing the involvement of the Air Resources Board [California’s climate regulator] in the school lunch program, among a handful of other issues with the bill,” said Justin Oldfied, vice president for government affairs with the California Cattlemen’s Association, in an email to InsideClimate News “The changes they wanted weren’t about the substance,” said Kyle Ash, director of government affairs with the

Physicians Committee for Responsible Medicine, which advocates for vegetarian diets. “It’s about whether they look bad or not because the bill adds legitimacy to the fact that animal-based diets are higher in carbon emissions.”

“We find that no single measure is enough to keep these effects within all planetary boundaries simultaneously, and that a synergistic combination of measures will be needed to sufficiently mitigate the projected increase in environmental pressures,” the authors wrote.

In Maryland, the state’s Green Purchasing Committee, an interagency government group charged with “promoting environmentally preferable purchasing” by state agencies, launched the Carbon-Intensive Foods Subcommittee to study which foods released higher amounts of greenhouse gases.

But the message to the world’s eaters was simple: Eat less meat and dairy.

After the group produced a list of carbon-intensive foods, which included beef and dairy, the executive vice president of the Maryland Cattlemen’s Beef Association called it a “hit list of foods,” according to a trade media publication. The association and the National Cattlemen’s Beef Association sent a joint letter to Gov. Hogan, a Republican, asking him to disband the committee because, they said, it was operating with a political agenda.

The following month, in August, state officials said they were disbanding the committee, writing that “it has become very clear that these are complicated issues that require solutions beyond the scope of the subcommittee.”

“After much review, we have jointly determined that the goals of this subcommittee are similar to those of other state programs, and have decided that our resources would be better focused on bolstering those efforts,” they added.

Message From Scientists Is Clear Emissions from livestock account for about 14.5 percent of total greenhouse gas emissions, globally, and roughly two thirds of those emissions come from cattle — mostly from methane burped by cows, growing feed and clearing land for grazing and feed crops.

In October of last year, the journal Nature published a study, saying that, in order to feed the expected 9.7 billion people on the planet in 2050 — and meet the Paris climate accord goals — the world will need to shift toward plant-based diets, in addition to reducing food waste and adopting new farming technologies.

The following month, the EAT-Lancet Commission published its study coming to the same conclusion.

That was followed by the sweeping report by the Intergovernmental Panel on Climate Change, saying that a shift toward less carbon-intensive food presented “major opportunities for reducing GHG emissions.”

“Examples of healthy and sustainable diets are high in coarse grains, pulses, fruits and vegetables, and nuts and seeds; low in energy-intensive animal-sourced and discretionary foods (such as sugary beverages),” the report said.

“Staying within a 2-degree trajectory — it won’t happen if you don’t bring down animal sources of food globally, and in most regions and places where beef is produced, and that includes the U.S.,” said Marco Springmann of Oxford University, the lead author of the Nature study and and one of the authors of the EAT-Lancet Commission report.

The U.S. is the world’s largest producer of beef. In 1960 it produced 16 billion pounds of beef and in 2018, 27 billion pounds. This year, the U.S. could produce more than 27.4 billion pounds — a record. The average American consumes nearly three times the global average, at 57 pounds per capita.

Industry Wants Supply-Side Solutions The American beef industry says that the headlines over the past year that blare recommendations to cut beef consumption oversimplify the issue.

In a recent study published in Agricultural Systems, researchers did a full life-cycle analysis — the gold standard for determining a product’s greenhouse gas emissions — and found that beef cattle produce about 3.7 percent of the United State’s total greenhouse gas emissions, nearly half of total agricultural emissions,

which are about 9 percent. That analysis includes emissions from birth to slaughter. Most of that comes from methane from cow belches.

“Methane is our biggest challenge,” said Sara Place, a cowriter of the study and senior director of sustainability for the National Cattlemen’s Beef Association, which funded the research. “This industry is interested in solutions.”

Place says there should be more emphasis on the industry’s potential to cut emissions, rather than just recommending people cut back on their beef consumption for climate-related reasons. “There’s this argument that we can’t improve the supply side — that we have to cut demand,” Place said. “That’s our challenge: How can we as scientists cut emissions and bend that curve back down.”

The American beef industry points to Place’s research, which was done with scientists from the U.S. Department of Agriculture, as evidence of how the U.S. cattle industry has become more efficient, producing more meat with fewer cattle. In other countries, emissions from cattle are higher, according to the United Nations Food and Agriculture Organization.

Some researchers also note that the number of cattle in the U.S. has fallen from 97.8 million in 1960 to 88.5 in 2014, while the number of pounds produced has risen over the same time — a figure that shows how relatively efficient the industry has become.

Beef ’s carbon footprint is well established. For every gram of beef produced, 221 grams of carbon dioxide is emitted, compared to 36 for pork. And for every calorie from beef, 22 grams of carbon dioxide is emitted, compared to 3.5 from pork.

Global meat production has skyrocketed — by more than 370 percent — since 1960, straining resources and consuming land. With demand for beef and dairy expected to soar, feeding the world — and staying within a safe carbon budget — will be impossible without major shifts in consumption patterns.

Tim Searchinger, author of another report this year advocating for lower animal protein consumption, agrees that the emissions intensity of U.S. beef is lower than in other countries. But, he says, the demand for livestock-based foods from consumers in the U.S. and other high-income countries has major climate impacts nonetheless. (Among developed countries, the U.S. consumes more beef, per capita, than any other country, after Argentina.)

Searchinger has pointed out that most life cycle assessments (LCA) of beef production don’t account for land-use change and deforestation — to make way for grazing and growing grains — in other places.

“Maybe — just maybe — American farmers and ranchers deserve some credit for efficiencies that for decades have decreased greenhouse gases,” wrote Frank Mitloehner, a professor of animal science at the University of California at Davis, a staunch industry defender, in a recent blog post.

“If your LCA doesn’t take into account land use, then your LCA is leaving something pretty important out,” he said. “The amount of carbon we lose from vegetation and soils to produce a kilo of beef is much higher than the emissions from even methane and nitrous oxide from producing beef.”

Meat Production Has Skyrocketed

He says that any land devoted to food could store more carbon if left as forest or restored to its native vegetation.

So every acre of land is critical for carbon storage, given growing global food demands.

Still, critics say, 3.7 percent of emissions is a relatively high number because overall U.S. emissions are so much higher than most countries. And, they note, that total methane emissions from U.S. livestock have risen by nearly 20 percent from 1990 to 2016.

“People say: Oh, it’s not a big number. But if you divide it by total greenhouse gases in the U.S., which you can

Pressure Coming From Consumers, Too These latest attempts by the industry to beat back initiatives linking livestock to climate impacts are only the most recent. During the development of the influential 2015 U.S. Dietary Guidelines for Americans, which are reviewed and revamped every five years, the meat industry, along with its allies in Congress and the U.S. Department of Agriculture, successfully tamped

down nutritionists’ recommendations to eat less red meat for environmental reasons.

Much of the pressure on the industry is also coming from consumers as dietary choices are starting to shift.

The number of vegans and vegetarians, especially among millenials, is small but rising, and many American consumers say they’re choosing to eat less meat.

I told her I was headed to Walkerton for a parts run and she said I’ll order some sausage at Walkerton Meat Market (world famous) and you can pick that up too, sure....more good husband.

So I’m lined up with the other carnivores on the Main Street of Walkerton with my cash in hand making small talk with a couple of soccer Mom’s as we all waited to get to the front of the line. It’s a little bit like a drug buy.....you don’t actually get to go in the store, they hand you your bag or box and tell you how many $20’s you need to hand over.....I get the bag and the guy says $165 bucks....soccer Mom 1 says “ wow that’s a lot”.....yep I say, I just love their sausage!!!....at the same time as I’m reaching for my wallet I feel something fall out of my coat pocket but I’m too busy handing over the bills to notice what it is, as fate would have it soccer Mom 2 bent over and graciously picked it up for me.....yep....it was my King size tube of lube....she almost dropped it when she saw what it was... I mumbled something about can’t beat the sausage which came out really awkward and sprinted to my truck.....unfortunately this is my second most embarrassing experience from putting something in my pocket for Heather, never again!!!!

Allan and his wife Kathy lived just down the road from the home farm and have raised cattle of their own. They have a Hereford base commercial herd and are always happy supporters of the local fairs.

Although Al passed away in 2017 his wife Kathy still keeps the herd with help from family and grandkids.

Eli and Elsie Jones started their herd back in the 1950’s with buying 2 horned heifers and the expansion started from there. The heifers were bred to a polled bull which was unusual for those times because the polled genetics were not popular in those times. Eli and Elsie were attracted to the Herefords because of their quiet disposition.

Their ability to withstand the harsh winters and the fact that overall they were easy keepers. Over the years and into the 1960’s the herd increased in size with the purchases of different bulls from the bull sale that was held in Oakville and the Jones Polled Hereford name was established. The EJ prefix and genetics can be found all over the world with exports taking place to Spain, Russia and Kazakhstan to name a few. Eli and Elsie happily raised their 5 kids on the farmAllan, Glen, Debbie, Philip and Brant all had a hand in the daily farming activities and the tasks associated with the cattle. Eli and Elsie have been recognized at the Royal as well as many other agricultural events as class sponsors or banner sponsors. Family always came first with Eli and Elsie who were passionate about promoting agriculture where ever they could. All 5 kids completed the 4-H program and showed Herefords as junior members. Eli and Elsie were proud supporters of the Fenelon Fair and the beef show and as the time went by and they got older you could always count on them pulling up in their car just before show time and happily watching the show and visiting with breeders as they came to the car window to visit. As the kids grew up and moved off the family farm they all started herds of their own but were never far away from the home farm.

Glen owns and operates Echo-Jet Polled Herefords in Cameron.

Glen was an active 4-H member winning many judging competitions which has lead him to judge all over the province and can be seen out west at cattle sales in the fall. He has a herd based on solid genetics and foundations and in the earlier days showed competitively at local fairs around the area. He has always strived to maintain current and new genetics in his herd. He is happiest when he is working with youth and promoting agriculture. Glen has always played a big role in his son Brian’s future in Herefords and that’s partially why Brian and his wife Megan own and operate Red-Rock Polled Herefords with their 2 sons Andrew and Ryan. Brian and Megan strive on a herd of consistency and longevity with their herd and spend a lot of time analyzing their cattle and pushing to do better. Brian and Megan plan a busy summer of packing the trailer and being out at fairs and various events with cattle. Brian and Megan are very active within the breed association and enjoy being out talking cattle at every chance they get. They have even judged together. They both were active members in 4-H and the Ontario Hereford Juniors, and are hoping that their boys follow in those footsteps. Andrew and Ryan have started a herd of their own, Little Red-Rock and seem to have an eye for the “good ones”. Andrew and Ryan enjoy their time in the barn and working on cattle and even being out in the show ring a little bit. Both boys are looking forward to being able to show in their first Bonanza ever in Ontario in 2022.

Deb and her husband George alongside their son Richard and his wife Cristy operate Welwood Farms. They run a commercial herd but is solely based off of Hereford genetics. Richard and Cristy handle a lot of custom meat orders. Their farm is located just outside of Fenelon Falls but close enough to help out family members with whatever the chores may be.

Philip and Laurie Jones established Redwing Farms 38 years ago and continue to raise purebred Herefords, Angus and black baldie females.

They have 3 sons, Dustin & Cassie, Dylan & Lacey, Steven & Courtney along with grandchildren Gracie, Wesley, Gavin, Kylie and Rylea. All of which take an active role in the family farm. Dylan and Lacey operate their own purebred herd as well. Herefords have played a big role in raising family as many lifelong friendships have been formed. They enjoy attending fall fairs and were very active in junior events, Beef-aRamas and Bonanzas and 4-H supporters as members and leaders. We look forward to seeing the Hereford community again soon!

Brant and his wife Carolyn alongside their kids operate on the home farm of Eli and Elsie’s as well as on their own farm just on the outer edge of Fenelon. They were once seen out at the local fairs as the kids completed the 4-H program but have since focused more on the crops and daily operations and are now running a commercial herd with Jones Hereford genetics as the base.

The Jones family is a busy family but the one thing that Eli and Elsie always pushed for with the entire family of 5 kids, 11 grandchildren and 15 great grandchildren was to have fun and do your best. The legacy of Eli and Elsie will live on for years to come within the Hereford industry.

DOES SHOW RING REFLECT ‘REAL’ CATTLE INDUSTRY? Do show ring cattle work in the “real” world?

It’s a question asked over decades of competitions in hushed tones behind the scenes of tiny 4-H events and large national championships alike.

Wilson believes just like the competition of the show ring, the commercial industry has its own version of competitive measurement. When producers can’t or won’t deliver what the markets demand, they’ll be passed by in favour of their neighbour who scores higher in the “competition”.

At times, it’s proclaimed argumentatively in small-town diners or between ranching neighbours sitting ringside of the action.

Many responses to the query fall on the negative.

“I hear the negativity all the time and it honestly makes me giggle,” says Dawn Wilson, long-time judge and seedstock rancher.

“It’s absolutely not true. Certainly, some don’t work, but many already in the commercial industry aren’t working in the real world either. Not every single one is going to make the cut. The majority of cattle in the show ring do very well in the commercial industry.”

Wilson knows of what she speaks. Together with husband, Lee, also a frequent judge, they run Miller Wilson Angus near Bashaw, Alta., home to 150 purebred Angus.

The seedstock farm has provided embryo and semen work in 27 countries. As well, the husband-and-wife team have separately and together judged almost every breed of purebred and commercial cattle on every continent. They’ve worked national, international and world congress events along with tiny local shows.

For perspective, Wilson says judging is never a stagnant process because demands by the seedstock and commercial industries constantly change and evolve.

“Judges have to change with the times. If you keep getting asked to events, and want to be successful, you must be willing to adjust.”

“To stay successful, if you’re a purebred or commercial operation, a judge or a byproduct of the industry, you must be cognizant of what the industry wants,” she said.

“And to make that reality, it’s always good to measure your product against somebody else’s. Get to know others in the industry and find what’s desirable. It’s a great place to start, but certainly not the only spot to be. Any place gathering people and ideas is good for the industry.”

Being in a position to network and market is an offshoot of showing and provides a learning experience plus an opportunity to interact with consumers walking through the competition venues.

According to Wilson, a crossover of what works in both worlds definitely exists with the meat and potatoes for most being the herd bull market.

“The purebred people have a critical job to supply new genetics to the industry. If we’re not delivering something to enhance, we’re not doing our job. In general, we do well with providing what the commercial market desires, and that branch of the industry puts a solid product on the consumer’s plates.”

An optimal avenue to meet this strict criterion is to measure against others for market demands.

She points out both industries have slowly moved the needle on what is desirable and what isn’t.

Wilson said that in her extensive tours of purebred and commercial ranches, the factors remaining true of high quality are structure, muscling and do-ability, with a focus on foot quality and longevity.

“What we think is the ideal and will never change, will change. It will always change and as judges, we need to

feedlot, the better. And finally, longevity, because it pays money at the end of the day. If we’re not constantly replacing bulls or females, there’s more money in our pockets.”

In both worlds, cattle must be able to travel or they’re not usable, and all judges worth their salt are critical of those that can’t, says Wilson. Cattle need to walk, move freely, track and travel properly with soundness.

The confines of the ring help the judge get close enough to inspect feet, legs, shoulders, backs and hocks while animals walk, move, stop and pose.

“Structural soundness is huge and always has been,” Wilson said. “It doesn’t mean it has continually been a driver in the show ring, but good cattlemen have looked for this since the beginning of time. If we start with the foundation of structure, we won’t go too wrong.”

She says bulls should look like bulls and females should look like females.

“If we have structure, muscling, do-ability and longevity, we won’t go wrong. Then add in masculinity in a male and femininity in a female.”

As well, poor behaviour and temperament should never be tolerated in the ring or on the farm and ranch site.

“It’s pretty hard to judge for, but there’s too many good cattle in the world to put up with poor temperament.”

Both front and rear angles must be correct in the ring and pasture. Animals will travel better, maintain themselves easier and be less prone to lameness if they possess correct structure. Poor angles will cause inefficiency of movement leading to detrimental health concerns.

Wilson said the perception of how show cattle don’t work in the real world is false. She sees the commercial industry as not that different from the show ring, although how they measure may be different.

Commercial cows raising calves are measured by most pounds on the ground, how calves perform in the feedlots and yield and grade on the rail.

From there, she notes muscling must be present for the backgrounding and finishing processes. Beef animals should be blessed with visual carcass qualities including muscling because they are an absolute requirement in the commercial industry, and while this aspect is difficult to predict, Wilson believes they’re closing the

to fill that traveling void Beef and Guinness Stew Guinness is almost a national institution in Ireland: wholesome, healthy and rich. This stew is an Irish take on a traditional beef stew. Perfect for large numbers, it is best partnered with some creamy mashed potatoes.

3lb brisket cut into 2” cubes 1 pint Guinness 1 garlic clove, peeled and crushed 4 tbs vegetable oil 3 carrots, peeled and sliced 1 tsp red current jelly 2 onions, peeled and chopped 1 sprig of thyme 300 ml beef stock 1 heaped tsp flour 1 bay leaf 1 tsp tomato puree In a large flameproof casserole, brown the meat in the oil in batches, transferring it to a plate as it is done. Add the onions to the casserole and saute for 10 minutes, until they are just coloured. Lower the heat and return the meat to the casserole.

Add the flour and cook, stirring, for 2 minutes, then stir in the Guinness along with the carrots, thyme, bay leaf, garlic, red currant jelly, stock and tomato puree. Season with salt and pepper and bring to simmering point. Cover the casserole and transfer to an oven preheated to 140C/275F. Cook for 1.5 hrs, until the meat is very tender.

Beef Braciole (Braciola) Beef Braciole (Braciola) is a company-worthy, classic, Hearty, home style southern Italian dish that\s perfect for a winter night or Sunday dinner. Thin slices of beef with a savory filling slowly braise in a wine-infused sauce for a dish you’ll fall in love with.

6 thin slices boneless top round (about 2 lbs) 12 cloves garlic ½ cup finely chopped Italian (flat leaf) parsley, plus more for garnish 1 cup shredded Parmesan or Romano cheese, plus more for serving if desired 2 tbs seasoned dry bread crumbs salt and pepper to taste

12 thin slices prosciutto 2 tbs olive oil 2 cups dry red wine 2 cups beef broth 1 can (28 oz) crushed tomatoes 2 tsp dried Italian seasoning 2 heaping tbs flour

Cut top-round slices in half width-wise so that you have 12 equal pieces. Place beef between two pieces of plastic wrap.

Gently pound to ¼ to 1/8 thickness. Mince 4 cloves of garlic; slice the remaining 8 cloves Combine minced garlic, parsley, cheese, breadcrumbs, salt and pepper in a small bowl. Place prosciutto slice over the beef then sprinkle filling evenly over all beef slices. Roll the beef into a cylinder, tucking in the sides to hold in the filling as you roll. Secure with toothpicks.

Heat olive oil in a dutch oven or large pot over medium-high heat. Place the beef rolls, seam side down in the pot and brown seam side first to seal it. Cook, turning the meat occasionally until each roll is nicely browned on all sides. Transfer to a plate. Add the wine and the sliced garlic. Bring to a boil, scraping up any browned bits. Add beef broth, tomatoes and Italian seasoning. Place beef rolls back in the pot and bring back to a simmer. Cover and cook on low heat, turning occasionally until beef is tender and easily pierced with a fork, about 1.5 hrs. Alternately, cook covered in a 325F oven for 1.5-2 hrs or in a slow cooker for 3-4 hrs on high, 5-6 hrs on med or 7-8 hrs on low. To thicken, place pot back on the stove if cooked in the oven. Remove some of the hot cooking liquid to a bowl. Add the flour and sir until smooth to create a slurry. Slowly add it to the hot cooking liquid, bring to a slow simmer and cook until thickened. Season with salt and pepper to taste. Remove toothpicks and serve over pasta with additional grated cheese if desired.

Engagements Jessica Lasby of Mulmur, Ontario and Travis Fulford of Markdale, Ontario are pleased to announce their engagement.

Jessica Lasby is a co-owner in JDL Cattle Co with her two brothers, focusing on producing functional purebred hereford cattle. While Travis owns and operates TWF Livestock, where he has started to build a small Simmental herd. They are excited to celebrate each other and grow together in the agriculture world.

Congratulations Sadie-Jane and Jack Hickson, children of John and Jennifer Hickson of Oakwood, are both celebrating graduations this past June.

Sadie-Jane graduated from the University of Guelph with a Bachelor of Science, majoring in Biomedical Science with distinction. She will be continuing her education at the university of Guelph in the Master of Public Health program while continuing to be a captain of the varsity cross-country and track and field teams.

Jack graduated Grade 12 with Honours. His outstanding performances in the automotive courses earned him several graduate awards. Jack has plans to take a year off to gain work experience before attending Ridgetown College.

Weddings June 19th 2021 at Homestead Herefords in Ennismore, Kevin Timmermans and Danielle Cavanagh had a beautiful wedding.

Dr. Cassandra Gorrill graduated from the Ontario Veterinary College with Distinction in June 2021.

Cassandra was also awarded the Ogilvie Leadership in Food Animals and the Ontario Veterinary Medical Association/ Erie Herd Health and Population Medicine Prize. Cassandra is pursuing a mixed animal career at Cambray Veterinary Services alongside her mother, Dr. Lois Batty.
