But this year, rather than looking outwards, we have turned our attention towards inward innovation, and are proud to launch our new logo, along with a refresh of our magazine. In this issue, we bring a more modern approach to the age old theme, “Winter Wellness”. We are thrilled to welcome back Dr Libby Weaver, who has once again contributed an amazing and insightful feature article focusing on the ways in which one can attain winter wellness through food, rest, and herbal remedies. industry news An apple a day keeps the doctor away 8500 lives could be saved from vascular deaths such as heart attacks and strokes each year in the UK simply by prescribing an apple a day to adults over the age of 50, new research shows. Published in December, the study conducted by the University of Oxford found that ingesting an apple daily would match the effects of commonly prescribed medicine and have fewer side effects. The researchers also calculated that 9,400 lives would be saved yearly if adults over the age of 50 took daily cholesterol-lowering drugs (statins). However, if every adult over the age of 50 were prescribed statins, the side effects of such drugs would lead to over a thousand extra cases of muscle disease and over ten thousand cases of diabetes. According to Dr Adam Briggs of the BHF Health Promotion Research Group at Oxford University, this study is proof of the adverse effects small dietary changes can have on one’s longevity. “The Victorians had it about right when they came up with their brilliantly clear and simple public health advice: ‘An apple a day keeps the doctor away’,” said Dr Briggs. “It just shows how effective small changes in diet can be, and that both drugs and healthier living can make a real difference in preventing heart disease and stroke. “While no one currently prescribed statins should replace them for apples, we could all benefit from simply eating more fruit,” Dr Briggs said.

Health claims for bread on the rise Over 75 per cent of new bread launched in Australia in 2013 contained health claims, according to findings by market research group Innova Market Insights. To analyse the results, Innova divided health claims into two categories: passive such as organic, gluten free, light etc, and active, which involves added calcium, fibre, or the active health benefits (digestive health etc). Innova found passive claims dominated the bread market, with over 40 per cent of global launches using them in comparison to 5 per cent using active claims globally. The disparity between active and passive claims can be attributed to the ease with which brands can legally make passive claims, whereas active claims require solid scientific evidence and measures against average daily intakes. The most popular claims in the global bread market were those referring to ‘naturalness’, with one-fifth of new breads using claims including natural, preservative free or additive free. Of the 75 per cent of new breads launched in Australia in 2013, the majority of the passive health claims made were not certified or quantified in a regulated way. In May, NatureFirst launches its new traditional bread range, which includes Pumpernickel Bread, MultiGrain Bread, Rye Bread, Rye Bread with Flaxseed & Rye Bread with Sunflower Seed. These five lines are all entirely certified organic, an excellent source of dietary fibre and are low in saturated fats, fat and sugar.

new products Australian food failing to become healthier The Australian Government’s Food and Health Dialogue initiative has failed to see any improvements in the nutritional profile of Australian foods, with none of the 11 targets having been reached since the program’s launch in 2009. The Food and Health Dialogue was launched in an attempt to improve the nutritional profile of foods and help educate consumers improve their diets, in addition to implementing educational programs nation wide. The Dialogue ultimately had 124 action points drawn, of which targets were set for 11 of them. According to Professor Bruce Neal from the George Institute and University of Sydney, the results from the dialogue thus far are poor. “Poor diet is now an even bigger cause of ill health for Australia than smoking,” Professor Neal said. “Unfortunately, while the government has been doing a stellar job on tobacco control, it’s not doing quite so well in the food space. “If we are to get on top of health problems like obesity, diabetes and heart disease we have to fully implement the Dialogue objectives. The huge quantities of salt, sugar and fat added to the food supply by industry are now the main cause of ill health in the country, and the Dialogue is the only serious attempt to get on top of this. “Clearly this is a complex and ongoing process. Some companies have been making a real effort, but if you look at the big picture, progress has been depressingly slow,” Professor Neal said. According to Professor Neal, there are three key recommendations to assist the Dialogue make a better impact and reach its targets: • Rationalising of stakeholder roles – Government and public health groups must set the policies. The food industry must deliver them. Government needs to take a stronger leadership role, according to the researchers. • Clear targets and timelines, with consequences for non-achievement – i.e. enforcement if voluntary measures fail to deliver. Currently, the researchers said, business incentives all push for the addition of more salt, fat and sugar in order to maximise profit. • Better transparency and reporting – the successes and failures of individual industry players need to be highlighted, with easy community access to information that will empower consumer choices.

Nuts for peanuts Between 84-91 per cent of children with a peanut allergy were able to successfully ingest five peanuts a day through a new form of immunotherapy conducted by researchers at Addenbrooke’s Hospital in Cambridge, UK. One in fifty children in the UK suffer from a life threatening peanut allergy, with over ten million people affected worldwide. Peanut allergies, unlike other common food allergies, rarely dissipate with age. The researchers, led by Dr Andrew Clark and Dr Pamela Ewan, said the trial was “the first in the world to have had such a good outcome”. “Before treatment, children and their parents would check every food label and avoid eating out in restaurants,” Dr Clark said. “Now most of the patients in the trial can safely eat at least five whole peanuts. “The families involved in this study say that it has changed their lives dramatically,” he said. After the success of this five-year trial, researchers say the next step is to make peanut immunotherapy widely available through opening a peanut allergy clinic and offering an array of services. “The fantastic results of this study exceed expectation,” said Maureen Jenkins, Director of Clinical Services at Allergy UK. “Peanut allergy is a particularly frightening food allergy, causing constant anxiety of a reaction from peanut traces. “This is a major step forward in the global quest to manage it,” she said.

Newest to join the team is Gabrielle Haines, Brisbane born and bubbling with energy and knowledge on all things health and fitness related. Currently studying a Bachelor of Science and Nutritional Medicine, Gabrielle is also a coeliac, and can give advice from both a nutritional and a personal point of view. Moreover, Gabrielle is a cross fit enthusiast, and is disciplined in all things fitness related. Carissa Barrett joins the customer service team having come from our logistics department, and therefore brings to the team an indepth knowledge of all things delivery, packing and production related. Carissa began her personal health journey when starting at Kadac two years ago, and by coming acquainted with the kadac product range, has improved her sleep, her stress, and shed an amazing 19kg. editorial feature Restorative Breaks: You’ve probably heard me say the quality of your life depends on the quality of your rituals… so we need great rituals! During the warmer months it is easy to rise with the sun and take a walk before the heat of the day, but if it’s pelting with rain or blowing a gale, the inspiration to do some early morning movement can be compromised. During the winter months, rituals can fall away. If your rituals aren’t possible because of the weather you need to replace them. Nothing can lift your spirits quite like taking some time off in the sun so if you can, plan a trip away to your favourite warm-weather destination. Or utilise what winter provides you and plan a winter-themed getaway, even if you’re just getting away for the weekend. Go skiing, bike riding or ice-skating. If you can’t fit in a winter get away start planning a trip for later in the year. Or do something just for you such as a facial, massage or just take the time to spend a day in the garden or in the kitchen trying new recipes, if that is restorative for you. Tip: Part of enjoying the winter months is embracing what they have to offer. New Zealand has many beautiful natural hot pools. If you’re privileged enough to visit, take the opportunity to soak your winter worries away. Or settle in for a warming winter night by having a warm bath filled with relaxing oils and light a candle. Utilize the extra time indoors to read more or watch that film you’ve been meaning to.

Maintaining good health over the winter season can be challenging. Winter seems to bring many concerns - everything from colds, chapped skin, to the winter blues. Too often people see the season change with a cough, a sniffle and a shiver. So how can you avoid being one of the many who spend the cooler months feeling less than average? I want to share with you things you can eat, take and do to stay healthy this winter.

Supercharge Your Food: As Hippocrates said, “let food be thy medicine and medicine thy food”. Keeping your nutritional status preserved is an essential component in mounting your best defense to winter ailments. In today’s time poor world incorporating easy ways of increasing the nutrient density of your diet is a must. I find liquids are easy to prepare and easy to take to work. Opt for a supercharged smoothie, soup or juice. It is amazing the amount of nutrition you can pack into a drink. Blueberries, raspberries and blackcurrants are all good sources of vitamin C, an essential immune booster.

One of the obvious winter favourites is soup. They make a delicious lunch or a convenient and nourishing snack. Green soups, fragrant Asian-style broths, classic vegetable soup and of course chicken soup are all great options, but one way to supercharge them is to use a bone broth as the base. Almost every traditional culture has used bone broths throughout history. Traditional Chinese Medicine Practitioners often use bone broths to promote healthy kidneys, the digestive system and to help strengthen blood. Making bone broths is a particularly nourishing option for people with food sensitivities or gastrointestinal disorders because they are usually very well tolerated and a very easy way of supplying essential nutrients. The more stress we feel the more burdened our nervous and immune systems become and the more likely we are to be susceptible to winter infections. When we consider the way our nervous system operates - at times we feel stressed or threatened - our immune system and all non-vital processes can be compromised. In times of chronic stress our adrenal glands produce stress hormones which overtime can become depleted. It can be of huge benefit to use herbs or vitamins to support your body systems, particularly during times of extra demand. Vitamin A, Vitamin C, zinc and selenium are a just a few of the vitamins and minerals that are utilized by our immune system. There are also many herbs that are of benefit. Liquid herbs such as Licorice, Astragalus and Echinacea can be used in both the prevention and treatment of winter ailments such as sore throats, runny noses or blocked sinuses. Licorice has been indicated to be of benefit particularly to those with respiratory infections, sore throats and persistent coughing as well as supporting the adrenal glands.

Place your Lotus Instant Oats in a bowl and add boiling water until the desired consistency is reached. Top your oats with the apple sauce and sprinkle with cinnamon, a drizzle of maple syrup and stir though a knob of butter. Top your oats with fresh apple.

Tip: Echinacea is a wonderful herb that is safe to use for the whole family and is ideally taken at the beginning of winter, as it is most effective used in the prevention of infection. You may find it beneficial to discuss its use with a medical herbalist, so you can find an herbal liquid formula that is suitable for you to support your immune system during the winter months.

editorial feature What were the advantages to both the community and the supplier by taking part in a fair trade partnership, whether certified or not? Caley: It gave them a livelihood and allowed them to have the benefits of everyday people. In Cajamarca there never used to be roads and they used to walk 4 to 10hrs a day to get to the closest communities. It allowed their communities to be self sufficient and buy crops and livestock to feed themselves. For the supplier, better supporting growers ensures they get premium quality organic ingredients and are making a difference to the lives of entire communities. Roger: Most importantly, Fair Trade certification and individual fair trade agreements give the grower freedom of choice and a higher standard of living. What Pacari does with its cacao growers is provide ongoing support to growers to make not only more money for the community, but produce better quality cacao. Pacari is also installing the infrastructure to enable the community to perform the first two processes after harvest, namely, fermentation and open-air drying. By doing this within the community the income derived by the community has almost doubled. By visiting these communities and seeing how much dedication and care growers put into their crop, you can see just why Pacari is winning international chocolate awards year after year.

free versus fair With Fair Trade fortnight nearly upon us, its time to tell the story of those organisations that not only support Fair Trade certifiers, but also seek out communities to support the communities on their own terms. To tell this story, and to help further Kadac along its own Fair Trade journey, we sent Director & global trekker Roger Pitt and Brand Manager Caley Adamson into the depths of the Amazon Jungle in search for the people behind the products we love. From braving a tropical deluge in the Amazon whilst visiting cacao farmers to experiencing the local delicacy BBQ guinea pig in Peru, Roger and Caley returned from their trip with one resounding statement: to truly understand Fair Trade, you have to see it and experience it for yourself. Where exactly did you travel? Caley: We went to the Amazon jungle region north east of Ecuador to Pacari’s cacao growers and to Quito, Ecuador to see some potato farmers. Roger: We also visited yacon and golden berry farmers who were located about 26km from Cajamarca, Peru on the roughest road imaginable. This road was only built about ten years ago but many still have to travel kilometres to reach their home through exhausting conditions.

Were all the communities you visited a part of a Fair Trade agreement? Caley: Some suppliers are beginning to buy the organic golden berries from the community in Peru for a fair price however they are only in the early phases of the process of recruitment, training and buying their products. You could tell the difference – there were no proper roads, with holes in the ground for toilets. Our driver also noted that these communities are plagued by fleas and often suffer by Jaimi Starr Editor from smoke inhalation by lighting fires inside their small one room home. Roger: In Ecuador, again there were no established Fair Trade organisations involved, rather the brands sought out small communities to establish their own agreements that exceeded any Fair Trade contract. In the Amazon, Pacari partners with smallscale cacao growers to preserve their traditional way of farming, thereby safeguard the biodiversity of cacao in Ecuador. There is no fair trade certification therefore all the benefits go to the grower community. In return for producing high quality biodynamic cacao, Pacari have undertaken to pay a premium of at least 50% more than the conventional cacao market price. It’s like wine. If you want a good wine you need good land, good grape and you need to process it well. Chocolate is the same - if you want to do chocolate you have to really care for it, pick it at the optimum time and process it the right way so you get a fine, authentic flavour. Conventional chocolate is mainly sugar plus cows milk, so it doesn’t matter what cacao you put in there. Pacari are winning awards by paying a premium price for cacao and deploying field officers for free to assist and teach growers and support the community in any way. What was a particularly special moment for you whilst on your travels? Caley: There were so many amazing moments, but one was taking a picture of a group of kids playing at the Amazon community and then showing them my iPhone and the picture I had taken of them. They hadn’t seen an iPhone before or one with their picture on it. Their reaction was priceless. Roger: Eating a cooked local fish wrapped in bamboo with a family in Ecuador.

What key learning have you taken back to Australia? Caley: I have learnt a massive appreciation of what the communities do and how they live. They are all such happy people and live such simple lives. It just shows that the more you have doesn’t always mean the happier you are. I have also gained such a large amount of knowledge about brands and the benefits of fair trade partnerships. Roger: I have learnt the power economic independence has on both small communities and within family dynamics, and that more needs to be done to ensure the growers of our favourite products are given the respect they deserve. I have come back to Australia with a desire to find more products that we can buy from communities where it will make a difference, where we can tell their story and our consumers can be the judge. ‘Tis the season to be flemmy. Or is it? As warm weather wanes into a chilly winter, protect yourself against those coughs, colds and chills by incorporating these flu fighting foods into your everyday diet.

Mushrooms

Mushrooms have been overlooked as a flu fighting food, but they possess two big weapons you need this flu season: selenium; which helps white blood cells produce cytokines that fight infection, and beta-glucan that possesses antimicrobial properties. Mushrooms are antiviral, antifungal & antibacterial, and are delicious when thrown into your morning omelette, layered in your salad or used to make a hearty mushroom burger.

Garlic

The strong smelling garlic has incredible properties thanks to the phytochemical allicin, which can fight foreign invaders in our bodies. A recent study reported consuming garlic for 45 days showed a significant increase in the production of immune cells, compared to placebo and also resulted in reduced severity, duration of symptoms. outdoor exercise in winter: the multitude of benefits by Jaimi Starr Editor When winter rolls around, ‘alternative’ exercise seems to become the choice word of the season. Gym memberships see a revival as people forgo their weekly boot camp session to hit a spin class. Dance class, zumba, pole dancing & yogalaties all become a part of one’s regular exercise regime – for a week. Dogs sit grumpily at their owners’ feet after the third week in a row without a walk. Winter blues takes hold and with it comes some good ol’ fashioned carb overloading. And yet year after year, we wonder why we feel so down and why our waistlines grow bigger each winter. I hate to play the blame game, but many of us were probably fear mongered into being terrified of being outside in the cold. Your mothers voice screaming, “put on a jacket” probably still rings through your head. But if you do put on a jacket, and if you do force yourself to brave the outdoors, the benefits of exercising outside in the winter are numerous, and can certainly not only ward off the winter blues, but also make you feel more invigorated than ever. Let’s get down to the science of it. As any woman who has seen Legally Blonde would know, exercise gives you endorphins and endorphins make you happy. However, when you exercise in the cold, you body has to work harder, thus your endorphin production is boosted even more. This means you feel even better after exercise than you would in summer. According to fitness consultant Sean Burch, who also holds the world record for marathon running in the North Pole, “the heat and humidity in the summer can drag you down and tire you faster, but cold weather is invigorating,” Sean told Women’s Fitness Magazine. “Cold air stimulates your senses, tunes you in to your surroundings – it makes you feel alive.” A recent study published in Environmental Science & Technology also backs up Sean’s claims, stating that outdoor exercise can significantly increase your overall energy while decreasing tension, frustration, and depression. Part of this can be attributed to the healing properties of natural light. Whether full sunlight, overcast, or even moonlight, light is an age-old depression fighter especially for seasonal affective disorder, in which sufferers feel depressed due to shorter, darker days. 14 kadac in health

Another bonus of working out outside this winter is that you burn more calories. New research in Environmental Science & Technology found that race times are faster in cold weather than in warmer weather, and quicker runs result in shedding more calories. The knowledge that your winter workout is better for you than ever should be enough to get you out from under your quilt and hitting the pavement! There are a few important things to note when braving the cold on your morning run. First, do yourself a favour and download the Map My Route App (iPhone, android). This way you can plan your run to avoid any unlit areas, or paths that may be water damaged or flooded. In addition to this, look for tree lined roads or tall buildings to help protect you from biting winds. Keeping to a small circuit close to your house and repeating the circuit for your run is a great way to ensure you can quickly escape the elements if it all becomes too horrible. One thing that is of the utmost importance when exercising outside in winter is ensuring you warm up and cool down properly. Before any workout, walk or jog indoors for a couple of minutes before heading outside. Give your body time to adjust to the cold by taking breaks every few minutes. Before you head back inside, slow down your pace for five minutes and gradually take off your layers whilst stretching down inside. By ensuring that you wait for at least ten minutes before having a shower, you reduce the chances of catching a chill and falling ill. In addition to this, in weather nearing the 0 degrees mark, wrap a scarf around your nose and mouth to warm the air before you breathe it in. If you are scared about catching a cold by exercising outside, have a think about the amount of germs, bugs, coughs and colds that occupy the equipment and fellow exercisers at the gym! By dressing appropriately, warming up and cooling down correctly, there is no better way to ward of a winter flu than with restorative, clean fresh air.

Food retailing continues to see yearly growth with sales at its strongest since early 2010, according to the Australian Food & Grocery Council (AFGC). Retail saw an increase in 4.2 per cent in December 2013 compared to December 2012; with the AFGC reporting the Christmas trading period in 2013 was vastly better than analysts had anticipated. The combined effect of low interest rates and improved consumer confidence after the Federal election has seen retailers experience a stronger-than-expected rise in retail sales over the past few months,” said Gary Dawson, AFGC CEO. “Retailers will be hoping that the labour market also strengthens to support a return to a genuinely strong retail environment,” he said. Food manufacturing is also seeing growth despite the overall market experiencing massive losses, with the food manufacturing industry as a whole seeing growth in the start of 2014.

Better than Butter? A growing amount of consumers are making the switch from margarine to butter, according to findings from Roy Morgan Research. 2013 saw 47 per cent of shoppers buy butter in a four-week period up from 44 per cent in 2009, with margarine sales falling five per cent in the same period. According to Roy Morgan Research, lower income households were driving growth in butter sales, with households earning between $35000-69,000 seeing a 5 per cent increase in monthly butter purchases since 2009. Whether households are turning away from margarine due to health reasons is yet to be determined. Margarine was invented in 1869 in an effort to provide poor subjects an inexpensive equivalent to butter. Heavily processed and dyed yellow, margarine is high in transfat that is linked to an increased risk of heart disease, decreased fertility and increased blood insulin levels.

Sniffing out the fat

The human nose can smell out dietary fat in food, according to new findings from The Monell Chemical Senses Centre in Philadelphia, USA. According to researchers, the findings mean that methods using odour to make low fat foods more palatable could someday aid public health efforts to reduce dietary fat intake. “The human sense of smell is far better at guiding us through our everyday lives than we give it credit for,” said Johan Lundstrom, Cognitive Neuroscientist and senior author of the study. “That we have the ability to detect and discriminate minute differences in the fat content of our food suggests that this ability must have had considerable evolutionary importance,” he said. Monell researchers said that as fat is nutritionally dense, it has been a coveted energy source since our primal beginnings. The fact that fat can be smelled rather than using our other senses would have been historically advantageous to identify it from a distance. Researchers are now starting work on identifying the exact molecule responsible for allowing us to detect and differentiate levels of fat.

Instructions 1. Marinate the lamb overnight with maple syrup and Orange & Ginger Spread. 2. When ready to cook, let the lamb come to room temperature. Preheat oven to 200 degrees. 3. Brush the lamb with olive oil and season with salt and pepper. 4. Heat a large non-stick pan over high heat and cook the lamb for 4 minutes on each side, just until browned and remove from heat. 5. Place the fresh herbs in a bowl with bread crumbs and olive oil. Toss to combine. 6. Press the lamb into the breadcrumbs and place on a baking tray. Place the tomato stems of the same baking tray and drizzle with olive oil and season with salt. 7. Roast for 15 minutes for rare or 20 minutes for medium. Let the rack of lamb rest for 5 minutes before serving.

To celebrate, we thought we’d bring you our tried and tested favourite Allergy Aware recipes straight from the Kadac kitchen. But beware: these recipes may have you begging for an intolerance!

Gluten free Marshmallow Rice Puff Bars

Serves 4-6

Egg, Nut & Dairy Free Chocolate Cake

Ingredients 1 box NatureFirst Rice Puffs (175g)
 4 tablespoons powdered gelatin
 1 cup water (two half cups)
 1 cup NatureFirst Honey
 1 teaspoon vanilla extract 1/2 cup NatureFirst Tapioca starch or Corn Flour, to dust

Ingredients 1/2 cups all-purpose flour 1/2 teaspoon salt 1 cup white sugar 1/4 cup unsweetened cocoa powder 1 teaspoon baking soda 5 tablespoons vegetable oil 1 tablespoon white vinegar 1 teaspoon vanilla extract 1 cup cold water 1/2 cup semi-sweet chocolate chips

Ingredients 4 x 45g bars Well Naturally Sugar Free Dark Chocolate – Rich Dark 2 cans full fat coconut cream (chilled for several hours or overnight) 1 tsp vanilla essence 1 drop of liquid stevia (optional) Fresh berries, coconut flakes/chopped nuts 1 x 45g bar Well Naturally Sugar Free Dark Chocolate, grated (extra) to decorate Method 1. Open the cans of coconut milk and scoop out the cream from the top (this should have separated and solidified slightly in the fridge), leaving the liquid aside. 2. Wisk the coconut cream until it thickens to the same consistency of regular whipped cream. 3. Melt the Well Naturally Sugar Free Dark Chocolate over a hot water bath or in the microwave, making sure not to burn, by checking and stirring in 30 second intervals. 4. Pour the melted chocolate, vanilla (and optional stevia) into the whipped coconut cream and fold through until evenly combined, making sure not to over beat as mixture will become too thick. 5. Spoon into glasses or small ramekins, top with a dollop of coconut cream and place in the fridge for several hours to chill and set. 6. Sprinkle with flaked coconut, berries and grated chocolate to serve.

Method 1. Mix the gelatine with half a cup of water in a large heat proof bowl in which you can later whisk with a hand held beater. Leave to soften. 2. Meanwhile mix the other half a cup of water and the honey in a small saucepan. Bring to a boil and simmer while stirring and time for 8 minutes or until it reaches 116 degrees on a candy thermometer. 3. With the mixer on medium speed, slowly and carefully pour in the hot honey mix over the gelatine. It is very hot, take care not to burn yourself and do not do with children nearby. 4. When all the honey is in turn the mixer to high and beat for another 10-15 minutes or until gentle peaks form and bowl has cooled almost to room temperature. Add the vanilla a few seconds before you stop beating then quickly fold the rice puffs through. 5. Pour into a greased dish of about 50cm square with tall sides. Or into patty pans or greased muffin tins, then you don’t have to cut and dust. Cover and leave to set for 4 hours or overnight. Turn out and cut with an oiled knife. Dust with tapioca starch or corn flour so your bars don’t stick to each other. 6. Store sealed at room temperature for up to three weeks.

Method 1. Preheat oven to 175 degrees C. Grease an 8x8 inch baking pan. 2. In a large bowl, combine flour, salt, sugar, cocoa powder, and baking soda. Mix well with a fork, then stir in oil, vinegar, and vanilla extract. When dry ingredients are thoroughly moistened, pour in cold water and stir until batter is smooth.
