Restaurateur in prime position with new spot ■ by katie rose mceneely Lake Forester Steve Platcow is the chief executive officer of RPM Advertising in Chicago. This week, he and Chef Dominic Zumpano open Highwood’s new steakhouse, P.M. Prime, in the former Gabriel’s location on Green Bay Road. Reading: I just read “I’m Proud of You,” a book about a Texas reporter who is given an assignment to interview Mr. Rogers in the 1990s. As a result of the interview, the reporter and Mr. Rogers become close friends. The book is a narrative about that friendship and the correspondence between those two men for an eight-year period. It’s a beautiful book. Listening: The truth is, I’ve been listening to a lot of Frank Sinatra and quite a bit of Pearl Jam. Watching: I’m also a commercial pilot and I took a lovely flight up the lakeshore from Kenosha. I’ve been too busy to watch much TV lately. From a viewing standpoint, I generally gravitate towards nonfiction. Following: For the last dozen years on the RPM Advertising front, I’ve had the responsibility for the fine dining amenities within world-class casinos. P.M. Prime is not the first restaurant opening I’ve had responsibility for, but this is the first one I’ve had responsibility for and ownership of. I’m professionally confident that we’re taking the best professional procedures on this and bringing it home to our community. Activity: Dominic and I got real serious about doing P.M. Prime and doing it right just after the new year. We’ve been on the fast track, doing our due diligence to make it absolutely the best, all year. I became a big fan of Dominic’s, having gone to the Fish House in Lake Forest. I felt that his preparations were substantially beyond the quality of a
mid-price bistro concept. As I got to learn and know Dominic, I found he’d come from a five-star restaurant — we started talking about the opportunities that existed. I was such a big fan of Gabriel’s in Highwood and knowing that space was open, we began a dialogue about purchasing Gabriel’s and putting in a fine dining steakhouse. Eating: We’ve been sampling the menu, so the various dishes associated with the sides and the sauces being created. The appetizers, the vegetables and I daresay a bit too many desserts that are all fabulous and prepared from scratch in-house. Nothing is outsourced, right down to the maraschino cherries! They’re not coming out of a jar. I don’t have a favorite, but I will tell you this: what I’ve been focusing on is it’s very easy to go into the restaurant and order the most expensive entrée and have a wonderful time. I’ve been focusing on our least expensive entrees, and Dominic and I think our least expensive entrees are absolutely top-tier delicious. My father is 87-yearsold. He’s still alive and grew up in the Great Depression. The final test on the menu was to put it in front of him and get his stamp of approval that it was reasonable. For me personally, that’s an important benchmark. What is your favorite mistake? I’ll tell you what, I’ve made them! I really do believe we learn more from our mistakes than we do from our successes. In the final years of my mother’s life, I was so busy pursing success associated with RPM Advertising that I’m very sorry I didn’t spend more time with her. If I had the opportunity to correct any of the mistakes I made in my life, it would have been as a young adult to spend more time with my mother. I sure would give anything to be able to spend just one more day with her. ■
