hen Chicago filmmaker John Davies began doing research for his 2016 television documentary Heroes on Deck, the littleknown story of a World War II aircraft pilot training program that took place on Lake Michigan, he stumbled on an intriguing statistic that sparked a big idea for his next film.

“Possibly as much as 30% of all U.S. material used to support the war effort was manufactured in and around the City of Chicago,” said Davies. “That included a range of items like food, parachutes and tanks.”

Inspired by the notion that Chicago played a unique role in WWII, Davies set to work producing the one-hour documentary A City at War: Chicago narrated by A&E crime show host and Lake County resident Bill Kurtis. After premiering on November 9 at 8 p.m. on WTTW, Chicago’s public television station, the film will air to a national audience next May on Memorial Day. “We’re hoping this will be the first in an eight-part series featuring all the U.S. industrialized cities,” said Davies.

Woo continues to pursue a variety of paths at Glenbrook South

G

lenbrook South High School senior Katheryn Woo could not contain her enthusiasm for art last year — while doing honors biology homework.

Woo and her classmates in Marianne Gudmundsson’s class were assigned to record what they had observed under a microscope. Woo chose to use more than words to complete the assignment.

“I drew cell structures, and then I colored them,” Woo recalls. “It was my way of combining my interests in science and art.”

Woo’s work impressed Gudmundsson.

How much?

This much: Gudmundsson, on the last day of class, asked Woo if she could keep it and some of Woo’s other vivid homework/artwork.

“I gave her my file of homework,” says Woo, a Glenview

resident and one of only 15 Glenbrook South students enrolled in the Glenbrook Academy of International Studies.

Woo’s illustration of Planet Earth graced one of the covers of Calliope, the school’s literary art magazine, for which she has also submitted poetry and photography and served as a coeditor-in-chief (in the 2016-17 school year and again this year).

“My first meeting of the first organization [Calliope] I joined my freshman year was a small one, about five of us,” says Woo, adding her first poem for the publication was about a little girl collecting leaves with her mom.

It would take quite a while to add up the number of meetings she has either attended or convened since that autumn day in 2014. Woo somehow also thrives as an executive leader of the school’s Key (Service) Club and president of Glenbrook South’s Chinese Club, Art Club, Society

of Women Engineers, Medical Chapter and Angel’s Aid. Woo founded Angel’s Aid — now a part of Key Club — at the beginning of her sophomore year. With several of her family members either in a hospital or in a nursing home at the time, Woo formed a group of musi-

cians that performs and brightens the day of folks in local care facilities, including Presence Maryhaven Nursing Home and Rehabilitation Center in Glenview. Woo sings and plays the violin. Others in Angel’s Aid play guitar, flute or piano.

“When we did a recital [for an audience of 50-60] at Pres-

ence Maryhaven, we saw smiles all around the room,” Woo says.

“That was great to see. They enjoyed being in that room with other residents, and we enjoyed entertaining them.”

A state champion in taekwondo (creative form division) in 2014, Woo is going for a third-degree black belt in the martial art this year. She qualified for a national speech competition in Chinese, held at the University of Massachusetts in 2016, and earned runner-up honors among 24 other contestants in the non-heritage category.

Her day of rest must be Sunday, right? Not really. Woo is a Sunday School teacher (preschool through fourth grade) at Gloria Dei Lutheran Church in Northbrook.

Ace student, poet, photographer, super-busy leader, artist, musician, decorated athlete, extraordinary communicator, teacher — Woo, all Woo. If students were required to own

“My parents [ Jane and Ken] raised me to always try my hardest, no matter what I’m doing,” says Woo, who is interested in the fields of medicine and hospital administration and might double major in biology and business in college. “They’ve also reminded me to do what’s right, to be a good person and to be there for others. My mother and father like to stress the importance of studying hard and playing hard … having balance in life. They also like to say, ‘Trust that everything will turn out well in life.’

“I will always be thankful for the way they raised me.”

‘These pilots would typically receive one day of classroom training followed by one day of flight exercises,” said Davies.

‘They’d fly out onto Lake Michigan to practice landing on aircraft carriers.”

Wilmette’s iconic Bahá’í Temple, code named “Point Obo,” became a critical landmark for trainee pilots.

“They would rendezvous there and await further instructions,” said Davies.

Chicago’s elite universities also played a critical role in the national war effort. Northwestern University trained thousands of naval officers at midshipman school while quietly producing reels of war propaganda films for national distribution. or the estimated 1 in 6 American families living with food insecurity, a bag full of free groceries at a local food pantry can be the crucial stopgap between jobs or paychecks.

But what happens when a life-threatening allergy requires specialized groceries that quadruple a family’s weekly food bill, and there are no pantries that stock allergen-free options?

Without access to these safe foods, cash strapped parents are often left to make a difficult choice: health or hunger.

The Niles-based Mend Hunger Food Pantry, founded in 2016, knows there’s a growing intersection between individuals with medically restricted diets and families in financial need. The busy non-profit distributes no-cost gluten-free and allergy-safe food to local pantries, which then put the food directly into the hands of the most needy.

“This type of specialized food is really beyond the purview of most food pantries,” said Myra Dutko, Mend Hunger’s director of partnerships & program evaluation. “They are struggling just to feed people.”

Now supplying food pantries in 29 communities around the

Chicago area, Mend Hunger is currently the only source of no-cost gluten-free and allergyfriendly free food in the Illinois tri-state area. The nonprofit’s founders say they are expanding rapidly to meet the urgent need for nut-free, egg-free, soy-free and gluten-free foods that are 100% safe from all cross contamination.

“Most people think the only allergy that causes anaphylaxis is peanuts,” said Dutko. “That’s not true.”

According to Food Allergy Research & Education (FARE), an estimated 15 million Americans have food allergies, including 5.9 million children under the age of 18.

Eight major food allergens – milk, egg, peanut, tree nuts, wheat, soy, fish and crustacean shellfish – are linked to most of the serious food allergy reactions in the United States.

An estimated 3 million Americans are living with celiac disease and must adhere to a strict gluten-free diet, which Dutko says is very different from a gluten insensitivity or Paleo weight loss diet.

“For a person with celiac, eating gluten makes it so that their body cannot absorb nutrients,” said Dutko. “It’s a lifethreatening condition that can cause organ failure.”

Those attending the symposium did learn that a large amount of freight comes into ports on the country’s coasts and eventually gets to Chicago before heading off in another direction.

Joseph P. Schwieterman, a panelist and professor at DePaul University, said there are four freight lines now operating in the United States. Two come from the West Coast to Chicago and the other two move cargo from the eastern half of the country to the Chicago area.

The Canadian Pacific and Canadian National Railroads also move freight through the area. The Canadian Pacific is the railroad that would utilize the holding tracks in Lake Forest, Northbrook and Glenview.

Upstanding: Holocaust museum’s new holography exhibit brings survivor stories to life

ritzie Fritzhall was 13 when she entered Auschwitz, the World War II concentration camp in Nazi-occupied Poland that the German government constructed to hold and execute Jews and others whom they considered “enemies of the state.”

Her grandfather died in the dank, cramped cattle car en route to the camp, and her younger brothers were sent to the gas chamber soon after arriving there.

Pastry shop provides a taste of Europe

A

French-born customer once told Mary Greub that her pastry shop’s croissants were the best this side of Paris.

“For someone from France to say that, you know it’s a big deal,” said Greub, owner of Gerhard’s Elegant European Desserts in Lake Forest.

Having European in the name of the business is a big deal to Greub. She makes a point of using ingredients from the Continent, and follows that style in many of the shop’s recipes.

Just don’t call the business a bakery.

“We’re more of a European pastry shop,” said Greub, who lives in Lake Forest. “We take pride in our European ingredients. We use natural ingredients and no preservatives.

There is less sugar. Americans put so much sugar in the stuff.

We use natural sweeteners from berries and confectioners’ sugar.”

Gerhard’s has offered customers from the North Shore single portion desserts and other treats along with cakes, pies and special-order items with a European bent for 23 years.

The croissants are an example of the care and patience that goes into putting a taste of Europe in Lake Forest.

All the baked goods and other treats are prepared daily in the kitchen under the direction of Chef José Silva.

“It’s very buttery,” said Chef Silva. They come in butter, chocolate and almond. “We put butter between each layer and fold it over. We roll it and roll it. The more butter the better.”

Everything in the shop is fresh and nothing sold is less than 12 hours old. Silva arrives at 4 a.m. Tuesday through Saturday—Gerhard’s is closed Sunday and Monday—to start preparing the day’s treats.

There will be no happy hour toward the end of the day or a discounted price on day-old goods. The Church of St. Mary sends someone around to pick up the unsold items to feed those in need.

“They’ve picked up our leftovers for 23 years,” Greub said.

Some of her favorite desserts are dark chocolate mousse, passion f ruit, tiramisu and cheese cake. They come in individual portions and in larger sizes for customers to take home. Though she admits cheesecake is particularly American, she touts the European qualities of the other pastries. It comes out when she recites the recipe.

“It has two layers of genoise, that’s the French translation of cake,” said Greub of the mousse. “Then there are two layers of Swiss chocolate mousse and a thin layer of raspberry jam added for a little sweetness.”

The passion f ruit dessert features vanilla genoise with passion f ruit mousse and a crunchy fouilletine bottom. The tiramisu has Galbani

mascarpone cheese along with the other ingredients.

“Galbani is the brand name,” said Greub. “It ’s an Italian cheese.”

Greub got her European schooling f rom her former husband, Gerhard Greub. They started the shop together 23 years ago and were business partners for 15 years. He was born in Switzerland and trained there.

“He worked in some of the finest restaurants and hotels in the world,” she said.

Along with their dessert or treat, customers often have coffee, tea or a cold drink and sit at one of the tables in the shop or, in warm weather, at one of the outdoor tables. The shop services everything from a basic American cup of coffee to cappuccino and espresso.

One of Greub’s favorite larger desserts is the plum franchipan. Depending on the season, it can come in cherry or apricot. It has moist layers of almond cake with the fruit baked on the top.

Among the more unusual items are sliced cake donuts with a layer of seedless, Swiss

raspberry jam between the slices. Greub said she has not seen it anywhere else and Silva agrees.

“In my 40 years experience I’ve never seen it except here,” said Silva.

Along with catering to daily customers, Gerhard’s sells special-occasion cakes for

weddings, birthdays and other celebrations. Once customers select a flavor, they decide what it will look like.

“We show them pictures or they bring us pictures,” said Greub. “Sometimes they decide quickly and other times they want to check with their florist or consultant.”

New Trier’s comeback attempt falls short in state playoff loss to Loyola Academy

L

oyola Academy senior lineman Charlie Gross picked up teammate Trevor Cabanban in an end zone and hoisted him abruptly and joyfully last weekend.

Cabanban, a 5-foot-6, 140pound sophomore running back from the Chicago neighborhood of Edgebrook, had just rushed for a 39-yard touchdown — in his varsity debut, no less. The tally gave LA a 27-10 lead in its Class 8A playoff opener against visiting New Trier on Oct. 28 and h i g h l i g h t e d C a b a n b a n’s 84-yard day (on 10 carries).

It’s a good thing the 6-5, 280-pound Gross did not let go of Cabanban during the celebration.

Had he done so, Cabanban might still be airborne.

Three Ramblers rushed for at least 82 yards on a day in which the home team averaged 5.6 yards per carry. Senior running back Hamid Bullie (14 carries, 89 yards) and Boyle (14-82) joined Cabanban in the 82-plus-yardage category.

Junior running back Michael Gravic (9-21) opened the scoring with a four-yard TD run in the first quarter.

LA’s defense, meanwhile, limited New Trier to 37 rushing yards on 21 carries (1.8 yards per tote).

NT received productive days from Nicholas (3 catches, 75 yards), senior wideout Daniel Passeri (4 catches, 58 yards) and junior running back Brian Sitzer (5 catches, 45 yards, TD). Junior Graham Dable cut LA’s lead to 7-3 with a 30-yard field goal midway through the second quarter.

New Trier linebacker Wilson MacRitchie and LA defensive back Charlie Largay each came down with an interception in the rout-turned-thriller.

a large champion.

“It was surprising, being called up from the sophomore team [on Oct. 19],” he added.

New Trier, seeded 27th, stunned sixth-seeded Loyola with a run of 22 unanswered points in the fourth quarter before exiting the field in Wilmette on the “32” side of a 35-32 decision.

LA (9-1) faces visiting Hinsdale Central (8-2) in a second-round game on Nov. 4, beginning at 1 p.m.

The anatomy of NT’s comeback bid began with junior Carson Ochsenhirt’s arm. The junior, who shared QB duties with senior Reed Bianucci, connected with senior wideout Matt Mosher for a 75-yard TD at 10:12 of the fourth quarter.

Bianucci (15-for-31 for 246 yards) tossed TD strikes to Anthony Nicholas and Northwestern University-bound tight end Brian Kaiser in the

final five-plus minutes of the frame.

Nicholas’ score covered 29 yards, and Kaiser’s was a 42yarder.

Nicholas then caught a twopoint conversion pass f rom Ochsenhirt, making it 35-32 Loyola with 1:10 left.

The Ramblers’ sure-handed junior wideout, Rory Boos (with team highs of 7 TDs and 604 receiving yards this fall), secured the ensuing onside kick.

Game, LA. LA, which led 14-3 at the half, survived.

LA — a state runner-up last year and a state champion in 2015 — advanced.

“We can’t go three-and-out for the entire fourth quarter,” Ramblers coach John Holecek said. “Maybe we didn’t do that, but it seemed like we did. We played on our heels too much, and we’ve got to make plays on defense.”

LA’s offense battled without starting quarterback Quinn Boyle (6-of-12, 88 yards, TD) for most of the second half.

The QB sat for precautionary reasons, Holecek noted afterward.

Junior backup Jack Fallon needed only four pass attempts to toss a pair of TD passes, with both landing in the hands of Jones (4 catches, 104 yards).

Notable: Loyola Academy has never played Hinsdale Central in a football playoff game. The 11th-seeded Red Devils beat Stevenson’s 22ndseeded Patriots 33-24 last weekend to earn a Class 8A second-round matchup with host and sixth-seeded Loyola Academy on Nov. 4 (1 p.m.). … LA, through 10 games, has accumulated 186 first downs to its opponents’ 96. … Ramblers senior quarterback Quinn Boyle paces the team in passing (1,485 yards) and rushing (609). … Junior Noah Jones, who missed a big chunk of the season with a hamstring injury, finished the game with four catches for 104 yards. … LA’s 12th-year football coach, John Holecek, improved to 132-26 (.835) with the defeat of New Trier last weekend. Holecek needs one more victory to tie John Hoerster for most career wins at the school.

A BRONCO TALE

Sirakides, Titans unable to slow down mighty Barrington in state playoff opener

aybe Andy Sirakides just wanted to warm up a little on the coldest night of the fall.

The Glenbrook South senior safety brought up the topic of beach volleyball following his team’s 48-3 loss to host Barrington High School in a Class 8A football playoff opener on Oct. 27.

“That’s what I love to do with f riends, at Flick Park,” Sirakides, sporting a wispy beard, said. “It’s fun, a chance to get away.”

Barrington’s Broncos (10-0), seeded second and the reigning Mid-Suburban League West champions, ran away from the 31st-seeded Titans (5-5) with an exceptional ground attack.

Their first carry of the night resulted in a 59-yard touchdown, and the Broncos — who defeated Glenbrook South’s Titans 45-24 in Week Four — would win the rushingyardage battle 325-168.

“That first play, it woke us up,” Titans coach David Schoenwetter said.

It certainly did. South marched 60 yards on its first possession before junior Julian Aragon came through with a 33-yard field goal. The trip lasted 14 plays and consumed nearly eight minutes of firstquarter action.

But Barrington sustained its caffeinated — and highly productive — ways f rom that point until its 45-3 lead triggered a running clock at 7:11 of the third quarter.

It was against none other than Barrington that Sirakides made his varsity debut as a sophomore in the 2015 season opener, a 50-23 Barrington victory.

“I thought I’d be nervous, but I was fine after making a tackle, felt comfortable out there” recalled the 6-foot-3, 185-pound Sirakides, who finished with a team-high seven tackles, including one for a four-yard loss, in the final game of his prep career last weekend. “What I learned, as a sophomore on varsity and during the seasons since then, is that you can’t get too pumped up about yourself, not

regular-season victories.

“We took a step forward as a program this year,” Schoenwetter said. “The message to our players was, ‘Trust the process.’ ” Trustworthy Andy Sirakides hopes to attend a Big Ten School and major in computer science. Dream jobs include owner of a video game company or a lofty position with either Google or Amazon.com.

His goal next summer, somewhere on a beach?

An opportunity to play volleyball alongside legend Karch Kiraly.

with great players like [seniors] Conor Nash [a linebacker] and Anthony Savino [a defensive back] in your class and playing as hard and as well as they did.

“I tried as hard as I could do to be a leader this year, to get my teammates to do their jobs and give their best each day.”

Sirakides, also the full-time punter and a par t-time wideout this fall, ended up second

among teammates in total tackles with 56 (39 solos), behind Nash’s 65. The sandy spiker’s other significant stats on turf: one sack, one interception, one fumble recovery and four pass breakups.

“A very good leader for us, one of our core guys,” Schoenwetter said. “Andy was really committed to this football team.”

Sirakides was one of quarterback Jeffery Chrones’ wide-

outs when the two played for the school’s freshman team in 2014.

“On the quiet side, a leaderby-example player,” Chrones said of Sirakides, who lived in Arlington Heights before moving to Glenview with his family in 2010. “Also one of my best friends. I had first met him in middle school, but our relationship really got going in our freshman year.

“Andy’s years of varsity ex-

perience helped us a lot this year.”

Glenbrook South went 1-8 last year, in Schoenwetter’s first season at the helm.

The T itans won their second game in Week Two this fall and owned a 5-1 mark after a 40-0 defeat of Niles West on Sept. 28. South’s final four opponents — Maine South, Evanston, New Trier and Barrington — all made the playoffs and averaged 7.5

Notable: Glenbrook South averaged 5.1 yards per carry in its 48-3 loss to host Barrington in a Class 8A playoff opener on Oct. 27. Titans junior running back Jack Jerfita led the way with 54 yards on 11 carries, followed by senior Ben Hides (6 carries, 36 yards), senior Savontae Garner (8-35) and sophomore Andrew Gall (9-32). … The Titans’ top three tacklers were senior safety Andy Sirakides (7), senior linebacker Conor Nash (5) and senior defensive back Adam Budorick (also 5). … Titans senior linebacker Jalen Covington sac ked Broncos senior quarterback Ray Niro four yards behind the line of scrimmage at 6:55 of the second quarter. Niro ended up with 155 yards rushing and 70 yards passing.

He used his legs to score two (12- and 54-yarders) of his three TDs. The 5-foot-10, 180-pounder connected with senior wideout Alec Andrea for a 51-yard TD. … The father of Titans football coach David Schoenwetter, Bob Schoenwetter, also coached Glenbrook South football teams. He won his first playoff game, a 35-14 defeat of New Trier East in 1978. South then lost 21-14 to Forest View in the second round of the 5A playoffs. Bob Schoenwetter finished his 18-year career at GBS with a record of 112-63 (.640) and nine postseason appearances.

Heartfelt memories of Max fortify foundation

Original Pancake House in Lincolnshire, Mary Beth Schewitz’s good day begins to get better.

Significantly better.

Her eyes widen above a sweet smile.

Her posture in the booth improves.

Why? It’s time to talk about Max Schewitz.

“Max,” she begins, “was a grab-you-by-the-lapels personality, full of life, adventurous. My son loved reptiles.

Loved them. When he was 10, on a trip to Costa Rica, Max spotted a caiman and inspected it. But in order to inspect it, he had to first take it away from its mother.

“Around people, ” the 64-year-old adds, “he was a … magnet, the sweetest and the nicest and the happiest kid.

Great conversationalist, goodlooking, kind, brave.”

Max Schewitz died on September 29, 2005, after collapsing while working at the Discovery Wildlife Center at Elawa Farm in Lake Forest.

He enjoyed working at the living natural history museum as much as he enjoyed visiting it.

The Lake Forest High School graduate was 20.

Cause of death: a hidden heart condition.

Mary Beth Schewitz, at the urging of her husband, David, launched the Max S c h e w i t z Fo u n d a t i on (MSF) less than a year later and continues to serve as its executive director — even though the former Lake Bluff resident now resides in the city of Marco Island, Florida. Its primar y mission is to conduct EKG tests on students at area high schools and colleges. A painless, noninvasive EKG test, I learn, can detect upwards of 60 percent of the markers of conditions that lead to sudden cardiac

death.

“But an EKG,” Schewitz says, “is not a part of the routine physical for young adults.”

Since the start of the MSF, Schewitz — the mother of Sarah, 35, and Adam, 31 — estimates 1,400 teens or young adults have been recommended for follow-up testing with a cardiologist or a primary care physician based on E KG testing. (For ye a r s t h e on-site tests were f ree; now they cost $15, but s o m e schools absorb t h e cost for

students who cannot afford it). “ There ’s a growing group of m o m s [that is] especially grateful to have their children

alive,” Schewitz writes in a piece entitled, “Passing the Baton” (at heartsmartekg.org).

“Their children had a hidden heart condition uncovered by our EKG screening. Their children’s heart condition was treated so they can celebrate Mother’s Day. Although I doubt they know it, I celebrate their children with them, too!

These kids are incredible.”

MSF typically held EKG testing at eight schools each year; that number swelled to 18 for the 2017-18 academic year. Ninth-graders at New Trier underwent voluntary tests on Oct. 18; Highland Park High School students will have the opportunity to get tested on April 13, 2018.

“We’ve received a range of reactions f rom parents who find out their children should make an appointment for a follow-up exam,” says Schewitz, who ordered decaf coffee and thin pancakes (49er flapjacks). “Some express shock, others indifference.

Then we hear very actionoriented parents who immediately ask, ‘What do we need to do next?’ ” Currently a Chicago Bears fan, Schewitz grew up in Green Bay, Wisconsin, as the oldest of Bob a n d M a r ge ’s seven children.

The graduate of East De Pe r e H i g h School loved to sew, and she paid for her t u i t i o n ($2,800) every year at nearby S t. Nor ber t College with wages she had earned f rom babysitting and waitressing.

After double major ing in psychology and sociolog y, she landed a job with the National Opinion Resource Center in Green Bay. She

earned her Master’s in Social Work degree at Loyola University in Chicago.

— Mary Beth Schewitz horseback riding. The name of her horse, stabled in unincorporated East Naples, Florida, is Calusa Breeze, or “Cal” for short.

“Calm and forgiving,” Schewitz says of Cal’s endearing qualities.

Max Schewitz, at the age 19, started an animal education business in Coralville, Iowa, a suburb of Iowa City. He named his venture “Max and the Wild Things”. Wild things climbed into Max’s vehicle. Max drove the animals around and showed them off to rapt kids of all ages.

“Max,” his mom says, “was in charge of a traveling mini zoo.”

The Discovery Wildlife Center at Elawa Farm, to the surprise of nobody or no reptile, served as the site of Max Schewitz’s funeral. Nearly 700 folks attended it.

“Throngs and throngs of people,” Mary Beth Schewitz, still marveling, recalls. “I still think of him every day, still converse with him.

“Sometimes, when I’m thinking of Max, I look at my phone, and the time on it is 5:21. It makes me smile.”
