Your real estate agent should be aware of the current market conditions and what that may mean for you as a seller

According to The Fannie Mae National Housing Survey published on September 7, 2021, 77% of respondents on the sell-side said it’s a good time to sell, while only 64% said it is a good time to buy. However, the answer may not be so black and white. Now is the time to contact your broker to determine what is happening in your market.

s I write this article in late September, I believe October will prove to be a good time to sell. Kids are back in school, and there is still time before the holiday season; it would come as no surprise to me if we start to see more sellers emerge as we head further into the Fall season.

First up, we introduce Kristine Steiner, a fashion illustrator with a list of clients including Bulgari and Soho House. For this month’s fashion spread, photographer David Leslie Anthony, creates a storied tale of fall fashion set against a stunning estate. With luxe layering and tailored pieces, the new fall fashion is eye catching. As hockey season gets underway this month, we share with you an unbelievable story of not one, but two youth hockey players raised in Barrington whom have both made TEAM USA hockey. Lane Hutson and Sean Behrens’ journey on the ice starts in Barrington and continues on. Also this fall, the Barrington Junior Women’s Club (BJWC) is once again

planning its much-anticipated fall fashion fundraiser. We met with the co-chairs at Barrington’s White House to discuss the event’s southern charm theme and the BJWC’s 85th anniversary this year. Last year’s virtual fashion show raised Sunset over the Ritz-Carlton, Bacara Santa more than $85,000 to support Barbara on California’s Gaviota Coast Barrington initiatives that focus on women, children, and seniors. This year’s spectacular event will be held November 6 at the Avanti in Fox River Grove. Be sure to buy your tickets now. DENTAL TECHNOLOGY UPDATE

ew technologies help shape our future. Dentistry’s future is no exception. With advances in electronics, software and 3D printing, dentistry is on track to bring these technologies to patients and make a visit to the dentist more comprehensive than ever. 3D printing does not need any introduction. Its incorporation into healthcare has been newsworthy with the technology’s potential to print medicines, prosthetics, and even organ replicas. Its importance was further highlighted during the COVID-19 crisis to bypass supply chains to meet hospitals’ demands. As the technology is set to become an integral part of healthcare practice, it will also become incorporated in dental labs. Computer-assisted design (CAD) and computer-assisted manufacture (CAM), including 3D printing, are already changing the way dental lab technicians do their work. Traditionally, when a patient needs

a crown, a dentist must make an impression of the tooth, ship it to the dental laboratory and then wait for them to make a permanent crown. With CAD/CAM technology, the tooth is drilled to prepare it for the crown and a three-dimensional scan is taken of all the patient’s teeth. This image is then emailed to a laboratory that CAD designs the new tooth and begins the process of creating an oven fired glass-like crown. With a 3D printer doing the hard work, dental labs eliminate the bottleneck of manual modeling and can get the final product back to dental offices faster than ever before. 3D printers are also able to produce orthodontic models, surgical guides, aligners, retainers and more dental equipment faster and precisely; tasks that would take longer with traditional methods. This helps in improving workflows and reducing errors. While there is currently CAM, that allows a dentist to have a crown milled right in the office, the materials in the final product do not have the same glass-like finish as the materials that are created in a dental lab. But as 3D printing materials improve, the dental office may be able to completely bypass the dental laboratory all together. The dental profession is always looking for ways to improve the care of its patients. Technology is paving the way for making a visit to the dentist more comprehensive than ever. Teens Sean Behrens and Lane Hutson grew up as the sons of Canadian fathers in North Barrington—and beat the odds to both become teammates on Team USA Hockey. WORDS BY BILL MCLEAN PHOTOGRAPHY BY JAMES GUSTIN, FIG MEDIA

ob Hutson’s ears perked up 14 years ago. Way up. A native of Canada, he was in a golf clubhouse just outside of Barrington when he heard a familiar accent emanating from a group of men engaged in conversation. Somebody was speaking with a

Canadian lilt. “Rob headed over to the group and asked, ‘OK, which one of you is Canadian?’ ” Hutson’s wife, Julie, recounts. Kyle Behrens, of North Barrington, was the one. They talked. The subject of hockey—no surprise—surfaced. Behrens found out that Hutson, who had just moved from the St. Louis area to North Barrington with his family and had a mad-about-hockey son named Lane, was the Director of the Barrington Redwings Hockey Organization and spent the bulk of his days at the Barrington Ice Arena. Hutson discovered that Behrens’s son Sean had signed up for a youth hockey program in Crystal Lake. “Rob,” Julie Hutson continues, “then said to Kyle, ‘Bring Sean to Barrington!’” Mr. Behrens followed Mr. Hutson’s order. Both dads ended up coaching both sons. Zip forward to April 2021, in Frisco, Texas, site of the International Ice Hockey Federation Under-18 Men’s World Championship. Defenseman Sean Behrens, 18, is on Team USA’s roster. So is defenseman Lane Hutson, 17. What are the odds? Two teens, from tiny North Barrington (pop. 3,000), skating against the world’s best hockey players? Too difficult to calculate. Team USA played in five games, including a quarterfinal loss to Sweden. “I don’t think any of our teammates knew we’re from the same hometown,” says the 5-foot-8, 155-pound Hutson, a second-year member of the National Team Development Program and a senior at the Michigan International Prep School in Clinton County. “What an unbelievable experience. I learned so much down there, from how to handle momentum changes to dealing with pressure at a tournament that big.” “We all took it seriously,” adds Hutson, who saw about 13 minutes of ice time per game at the outset of the tournament but gained the trust of the coaches and logged between 19-20 minutes per game by the end of the event at Comerica Center. “The coaches were detailed. We were dialed in every day.”

The 5-foot-10, 177-pound Behrens, who attended Barrington High School for only Behrens and Hutson one year (age 14), shoulder to shoulder was a University of Denver recruit when he hit the ice for Team USA. Some three months later the Colorado Avalanche selected Behrens with the 61st overall pick in the NHL Draft. Behrens was ranked the No. 24 skater in North America before the draft. Behrens intends to play college hockey, and likely study business, for an indefinite period of time while Colorado retains his rights. “I need to get a little stronger, a little faster, before attempting to play at the professional level,” admits Behrens, a two-way defenJWC | COUNTRY 49

seman who moves the puck like a seasoned forward (his former position) and admires everything about Chicago Blackhawks captain Jonathan Toews’s game and leadership style. “But that was pretty cool, getting drafted by a team that’s in the back yard of the college I’ll be attending.” Cooler than that? The Chicago Blackhawks open the 2021-2022 NHL season against the … Colorado Avalanche. A student at Northville High School in Michigan in 2020-2021, Behrens joined Kyle and his mother, Caryn, along with his sister, Lindsay, 21, at a buddy’s house in Michigan on the day of the NHL Draft. Sean had practiced that morning ahead of the World Junior Summer Showcase. The gathering heard Sean Behrens’s name announced at around noon. Hutson, a huge fan of Chicago Blackhawks right wing Patrick Kane, was selected to suit up for Team USA in early 2020, when it silvered to gold-medal-winner Russia at the Youth Olympics in Lausanne, Switzerland. Hutson also happens to be a big Sean Behrens fan. “I’m excited for him. I know he’ll do really well at Denver,” says Hutson, who will be eligible for the NHL Draft in 2022 and plans to enter—with his hockey-playing older brother, Quinn, 19—Boston University next fall. “Sean’s game is all about control—he controls the pace of games with his ability to move the puck. And he’s always willing to block a shot. Sean can do it all, honestly.” Behrens sees nothing but more success for his former Redwing mate.

“Lane,” Behrens says, “is a really special player. He stood out for Team USA in Texas and helped the team a lot. He was one of the younger guys on our roster, but he came through after several guys went down with injuries and Covid issues.” In a United States Hockey League game in the lead-up to the U-18 Men’s World Championship last spring, D-men Behrens and Hutson skated shifts together. At one point, with their team up by a wide margin, Hutson, sitting next to Behrens on the bench, said, “Just like Redwings, huh?’ ” Fond memories of their fathers/coaches must have returned, too, their distinct voices accompanying the sounds of hockey: blades scraping ice, bodies and pucks banging into boards, horns blaring after goals. “My dad,” Lane Hutson says, “helped me tremendously when he coached me. So did Sean’s dad. Both set it up for us to move on to the next levels of hockey. “Our dads love hockey as much as we do. All they’ve ever wanted is what’s best for us.”

f there’s one good thing that can be said about the year following a pandemic, it’s that people are incredibly open to fresh starts and new beginnings. Such is the case for the committees behind this year’s Barrington Junior Women’s Club (BJWC) Fashion Show who are pulling out all of the stops for a spectacular in-person event on Saturday, November 6 at the Avanti in Fox River Grove. “I’m so proud to be part of this group that pulled off the impossible last year—a virtual fashion show that raised more than $85,000 to support Barrington initiatives that focus on women, children, and seniors,” says Medbh Huschitt, BJWC President. “But you can never replace that experience of being in person and being able to inspire one another. That connection among women is so powerful. While we’re monitoring the news very closely, we’re hopeful we can all be together again this November.” Amber Wirkus, Melissa Khamkhounnavong, Jessica Spentzos, and Amber Nelson-Wolfe are co-chairing this year’s event titled “Barrington Charm: Fixin’ to Be Fierce.” “We really want to tie into the idea of southern hospitality, a sensibility that really speaks to the women who live in Barrington,” Wirkus explains. “When people walk into the Avanti for the fashion show, we want them to feel like they’re walking the streets of Charleston by the fashion and décor on display and the food and drink that we’re serving. There’s also a ‘fierceness’ that many local women approach their community service projects with, and this is an ode to them for how much we appreciate all that they do.” While the fashion show will deliver all of the things women have come to love about this annual event, the shopping experience will showcase the vendors women have enjoyed the most in previous years. “We’ve really focused on the best of what we can offer,” adds Khamkhounnavong. “There will be that high fashion, high glam component that everyone expects alongside styles that are more accessible. There will be something for everyone.” Additionally, there will be an impact raffle, reverse auction, live auction, Juniors Favorite Things, and a surprise Mr. BJWC element. “The Mr. BJWC is a new section of the show that will showcase men’s clothing and accessories on the runway,” Wirkus says. “We’re very excited to partner with the local

police departments as our models.” The BJWC was founded in 1936 with a mission of philanthropy and community service in Barrington and the surrounding communities. Today, the 501(c)3 organization boasts of more than 150 members and continues to grow. For decades, they have helped support grant and scholarship programs for the greater Barrington area. Despite the pandemic last year, BJWC gave out almost $10,000 in scholarships and more than $55,000 in grants. As in past years, this event is expected to sell out. Tickets will go on sale October 1. RESH OUT OF THE cheesemaking vats, cheese curds squeak when you bite them and have a milky, mild flavor. Coated in crumbs or batters and deep fried, they transform to crisp-shelled, melty morsels that are hard to resist. But I couldn’t help but wonder: Why are most curds on offer so much the same? “Most curds on the market are cheddar,” explains Master Cheesemaker Chris Renard of Renard’s Cheese and Rosewood Dairy in Door County. “Some makers add flavorings after the curds are made, and a few sell other varieties of curds, but I think cheddar is better-eating. The shape and texture work well for deep frying, and the cheddar taste is very popular.” Renard’s sells a million pounds of fresh cheddar cheese curds every year—a huge difference from when Chris was growing up in the ‘70s and Renard’s sold only 20 pounds a week. Another reason Renard says cheesemakers usually only market cheddar curds is that others, such as those for Muenster cheese, are more granular, with smaller shapes that wouldn’t work as well battered and fried. Curds can have subtle differences in taste, depending on everything from the quality of the milk, to what the cows were eating, to the microflora that exists in every cheesemaking facility. But bigger flavor differences come from the style and make of the cheese—especially if another animal’s milk is used. This got me thinking about fried cheese curd origins. As much as Wisconsin might wish to claim provenance for the snack, that distinction goes to the ancient Romans. The oldest surviving work of Latin Prose, De Agri Cultura (On Farming), written by Cato the Elder in 160BC, included a recipe for globuli, little globs of cheese curds rolled in flour, fried in hot fat, drizzled with honey and a sprinkle of poppy seeds. And since the Romans preferred milk from goats and sheep over cows, it’s likely globuli were made using curds from those milks. So it was that armed with a few pounds of goat’s milk curds from LaClare Family Creamery in Malone, WI, I set out to create this dish: goat’s milk curds with a tempura shell, finished with a drizzle of honey, finely snipped herbs, and lavender blossoms. I was skeptical about goat’s milk curds at first, thinking they’d be soft as chevre and too goat-y in flavor. But as it turns out, they have a surprisingly firm texture and mildly tangy flavor. And with fresh herbs, lavender, and honey they are delicious! You’ll use seltzer water (Lemon LaCroix works great!) in the batter with cake flour—don’t worry that it’s thin, this makes for a lovely fine crust that fries up quickly. Be sure to use very fresh curds, and for meltiest interiors, eat as soon as they come out of the fryer basket.

FOR THE GOATS-MILK CURDS: • High-heat oil (rice-bran, peanut, or grapeseed) for deep fat fryer • 2 pounds fresh goat’s milk curds (available from LaClare Family Creamery) • 1 cup cornstarch (for coating curds before dipping in batter) • 1 1/4 cups cake flour sifted with 1 tablespoon cornstarch • Pinch of salt • 1 1/2 cups Lemon LaCroix sparkling water (or plain seltzer water) • 1/2 cup honey • 1 teaspoon each finely snipped fresh rosemary and thyme leaves • 1/2 teaspoon fresh lavender blossoms (or substitute finely chopped dried culinary lavender, available from Fragrant Isle Lavender Farm)

METHOD: Follow manufacturer instructions to fill deep-fat fryer with oil. Preheat to 360 degrees. Place 1 cup cornstarch in wide shallow bowl. Set aside. In a second bowl, whisk 1 tablespoon cornstarch with 1 ¼ cups cake flour and a pinch of salt. Whisk in sparkling water. Individually roll cheese curds in cornstarch, shaking off excess starch. Dip coated curds in batter (the batter will be thin) and add to fryer basket. Fry four or five curds at a time, being careful not to crowd the basket. Fry about two to three minutes per batch, until bubbling has subsided a bit and fried curds are golden. Remove fried curds to paper toweling to blot oil. Place in serving dish. Drizzle with honey and sprinkle with snipped herb leaves and lavender blossoms. Serve immediately.

isembarking from a direct flight—newly offered— from O’Hare to Santa Barbara’s Airport, my husband and I took a quick drive six miles up the coast to enter a luxurious oasis. Overlooking the Pacific Ocean on California’s Gaviota coast lies the lush resort of The Ritz-Carlton Bacara, Santa Barbara. Stepping into the impressive open-air lobby of The Ritz-Carlton Bacara, Santa Barbara, we immediately felt like we were a world away. The gorgeous floor to ceiling windows outlined by abundant local flora lent to the atmosphere of a private enclave on the California coast. Each window, and open-air archway, frames an astonishing view that simultaneously delights and relaxes you at once. Palm trees blow in the wind, the salty ocean air lingers in the corners, and the brilliant sun beams down on the property. Spanning two miles of coastline, the resort presides over the coastal cliffs with unmatched ocean views from every spot. Designed in the traditional Spanish architecture style that abounds throughout California, the resort boasts white stucco villas, red terracotta roofs, and gardens of fragrant herbs and wildflowers. erty is so expansive that we always felt like we were two of a handful of guests—with the resort maintaining its boutique feel throughout our entire visit. Our hacienda inspired suite’s private patios were the perfect spot to enjoy morning coffee while looking for dolphins in the ocean right outside our patio. The suite’s Frette linens, marble bathroom and stylish, yet rustic living space were the perfect complement to California’s relaxed vibe. On property there is an array of activities to choose from, including guided eco-hikes, tennis, and the fitness center’s myriad of exercises classes. We opted to start our morning by joining an outdoor yoga class on the bluff—an expanse of verdant lawn overlooking the Pacific Ocean. Truly a memorable experience as our instructor shared with us to keep an eye out for whales as they were migrating through the Santa Barbara Channel and could be seen from our vantage point. We didn’t spot a whale during yoga, but as the morning fog burned off, we were left with a beautiful blue sky day that never disappoints on the California coast. The miles of beach coastline beckoned to us after yoga, and we spent the better part of the late morning strolling the beach with sand between our toes. After our morning excursions, we made our way to the adult pool–one of three zero-edged saline pools to enjoy during your stay. Two of the pools, towards the lower level of the property, overlook the ocean and are lined by private cabanas available to reserve to relax in by the pool. Conveniently located across from the adult pool and spa is The Ritz-Carlton Club Lounge. Designed with a modern, sleek, and welcoming feel, Club Lounge access allows guests to experience complimentary concierge service and continuous food and beverage service throughout the day. The added bonus of the Club Lounge made our stay incredibly relaxed as we would stop in when necessary to refresh and recharge (no reservations needed). After a few hours of lounging by the pool, including partaking in the poolside chairs where our feet dangled in the water as we read, I made my way over to the spa. The Ritz-Carlton Spa Bacara, Santa Barbara is 42,000 square feet of indulgence. Guests can treat themselves to acupuncture, massages, or do as I did and try the Oxygen Facial. The Oxygen Facial’s innovative breakthrough beauty treatment combats signs of aging using hyperbaric oxygen to infuse a combination of antioxidant and hyaluronic acids into the skin. The outcome is to make skin look healthier (and younger—sign me up) than ever before. Stepping into the sanctuary of the spa one is immediately entranced by the sky-high heights of the entryway and soothed by the zen atmosphere. The Oxygen Facial, performed with Natura Bissé products and including extensive face massage, was pure relaxation and resulted in glowing skin for days. Gorgeous views of the Channel Islands off the coast paired wonderfully with our entire dining experience. From A5 Japanese Wagyu and local abalone paired with vintage wines by the glass at Angel Oak, to Latin fare at ‘O’ Bar + Kitchen, to wine flights at the Wine Tasting Room, The Ritz-Carlton Bacara, Santa Barbara’s dining showcases the best of the area. Our evening was

no exception and we enjoyed oysters, which in lieu of a traditional red wine mignonette, Chef Efe Onoglu pairs the delicacy with an apple and jalapeno mignonette which brings out the flavors of the sea, enhancing the oyster flavor. Next up was the crispy buttermilk quail which may be one of our favorite dishes of all time. Covered in burnt sumac, celery shavings and paired with a lime sauce the quail was perfectly crispy on the outside and tender on the inside. The dish’s pixie tangerines and pickled mushrooms combined together in an explosive flavor combination. The salmon was served on a bed of saffron risotto beside stuffed zucchini blossoms and confit vine tomatoes. The salmon, along with the halibut drizzled in a yuzu beurre blanc sauce, were cooked to perfection and a highlight of our time at the resort. Most adults of this generation were vaccinated as a child with Varicella. If not, an initial 2-does series of the vaccine can be given at any adult age. It is contraindicated in pregnancy and severe immunocompromising conditions.

ith COVID-19 and its vaccine protocol at the forefront of healthcare currently, I felt it is equally important to discuss the other recommended vaccinations for adults. In our senior population treated in my practice, prevention is imperative for improved outcomes. The other vaccinations include Influenza, Tetanus, Varicella, Zoster or Shingles, and Pneumococcal. INFLUENZA OR LAIV4

The flu shot is familiar to most of the population. Given yearly, it is recommended for all adults. Certain allergies and medical conditions do prohibit specific adults from getting this vaccine. Immunocompromised adults, pregnant women, and those without a spleen are some of the people who are counseled against getting the flu shot. TETANUS OR TDAP

Most adults of this generation were vaccinated as a child with Tdap. An initial vaccine can be given at any adult age. Booster shots are recommended every 10 years, or when a perceived infection risk occurs and the booster history cannot be confirmed. Lower extremity wounds are common in the elderly, especially with other conditions like diabetes and peripheral neuropathy, reducing their ability to feel. Those with wounds are often given

ZOSTER OR SHINGLES

It is recommended for adults over the age of 50 and is a 2-dose series of RZV (Shingrix) 2 to 6 months apart regardless of prior herpes zoster or history of zoster vaccine live (ZVL, Zostavax). Many patients have complained of getting a small shingles infection, but most have a blunted version when having the vaccine. PNEUMOCOCCAL OR PPSV23

This vaccine is recommended to adults over the age of 65. Adults should be immunocompetent. One dose of PPSV23 every 5 years is recommended. Pneumonia and respiratory illness is the most common cause of death in the senior population thus making this vaccine highly important. rowing up next to Chicago O’Hare International Airport, Frank Kerous’s aviation curiosity grew higher as each airplane flew over his home. He spent time with his father listening to air traffic control on the radio, guessing where planes had been and predicting final destinations. “Whenever we took a family trip, the highlight for me was always the plane ride,” remembers Kerous. Frank began taking flying lessons at Waukegan Airport when he was 15 years old and after graduating from the University of Illinois he chose a career in aviation; now he is a pilot for Southwest Airlines. Most recently, Kerous teamed up with Barrington High School to create an aviation club offered to all students. “This was immediately exciting because we’re always looking to provide students with new and unique opportunities that generate curiosity and help expand their individual interests,” says Dr. Heath McFaul, who is entering his seventh year as Associate Principal. It is important to note that there are multiple facets of aviation beyond becoming a pilot. Other interests can include air traffic control, aircraft maintenance, and in-flight service, more commonly known as flight attendants. To showcase the many different avenues available in aviation careers, Kerous plans to include activities in the club such as flying an introductory flight around Chicago, touring nearby air traffic control centers, and crawling around planes being worked on in hangars. There will also be class type sessions where members will learn about pilot centric material, navigation, and weather. The club also has plans to collaborate with either a physics or math teacher in the future. A special component of this extracurricular program is that students are exposed early on to activities that could potentially lead to careers that they might not traditionally get in a classroom setting. “My point is to say that this is something you can do, you do not have to be a straight A student to do this work. It can be a grind during training, but it is definitely accessible,” says Kerous. There are aspirations to transform the club into a more regulated class curriculum with the opportunity to earn a private pilot’s license at the end of a few semesters. However, for now the club plans to be flying high in the fall while meeting once or twice a month. “I love my job and I love coming home,” says Kerous. “I think that is part of why I am so passionate about this. I would like to share my experience with other people because I have had a lot of fun doing this and it is an awesome career.” JWC | COUNTRY 74
