Easter dishes in Guadeloupe

In addition to the Easter Sunday lamb, on Easter Monday, all families eat crab in all their sauces.

Traps ( hand made) are laid on beaches or in the mangrove to catch the crabs.

Many dishes can be made with crabmeat: matete, calalou with madeira leaves, stuffed crab, dumplings and crab sauce, rice and crab‌

It is the great release after a period of Lent, so everyone goes to the beach to camp, sometimes a whole week.
