Way back in 1999 when I wrote the first Rough Guide to London Restaurants, the Docklands section was pretty threadbare. There was the MPW Brasserie in Cabot Place and a floating Chinese restaurant in Limeharbour, but that was about it. Fast forward a Jamie’s Italian

dozen years and Canary Wharf has become a great place to eat. As the Wharf has matured so has the restaurant choice on offer – honest British food at Canteen; modern Japanese food at ROKA; peri peri chicken at Nando’s; classic dim sum at Royal China; pasta from Jamie’s Italian and Carluccio’s; burgers from GBK and Byron;

noodles from Wagamama; sushi from Itsu. And now we have the new and enormous Boisdale of Canary Wharf. If you had told me in 1999 that a huge jazz bar and restaurant with a Scottish theme and serving haggis would be opening in E14, I would have questioned your sanity. people out of Canary Wharf and off to lunch in the West End are long gone, and today there is good food to be had at all price levels and within strolling distance. What is more, the Wharf’s restaurants and bars are busy and buzzy in the evenings and at the weekend. Times change, and in this instance they have changed for the better.

The wine list is impressive and the bar a popular place in which to meet friends. Innovative and simplistic, First Edition is one of the longest established restaurants in the Wharf.

Jamie, do you do anything differently to meet the needs of the often time-pressed locals? The only thing we’ve done is made it easier to book for smaller groups. We figured that the busy people of Canary Wharf didn’t want to be waiting around in a queue for 20 minutes, so we relaxed our usual booking policy and that’s made the customers happier.

Where do you source your products – how ethical are you? As ethical as we can be. We import a lot from Italy but that’s because we’re an authentic Italian restaurant and so we can’t get certain ingredients from anywhere else. But all the chicken is higher welfare, and our fish comes from suppliers that we’ve checked and double-checked. What might we find in the oliver fridge? Fresh vegetables, cheeses, butter, white wine – much the same as yours, I suspect. and finally, who would be your dream dinner party guests? 30g toasted sesame seeds 135g sesame paste 15g caster sugar 10ml ginger juice 90ml dashi 24ml rice vinegar 24ml sesame oil 6ml light soy sauce 25g sweet white miso 15ml lemon juice 5ml mirin 1. Dissolve caster sugar in vinegar, ginger juice and dashi. 2. Combine all wet ingredients, including miso paste. 3. Place this wet mix in blender. 4. Slowly add all dry ingredients into blender and combine until smooth.

METHOD 1. Grill lamb cutlets over open grill for about 3 minutes on either side. 2. Allow to rest for a further 3 minutes. 3. Serve with cucumber dressed with sesame. 4. Serve with Mas La Mola 2006 Priorat.

1. Sweat the onions and fennel with the butter. 2. Delglaze with the white wine and noilly pratt, add the thyme and peppercorns – reduce to a syrup. 3. Add the fish stock and reduce by half. Add the double cream and reduce until you are left with 1 litre – remove from the heat. 4. Squeeze out the gelatine and add to the sauce – stir until it’s dissolved. 5. Pass through a fine sieve and leave to cool. 6. Place the terrine mould into the freezer.

7. Trim the side of wild salmon to the width and length of the terrine mould. Remove skin and slice lengthwise so you are left with 2 pieces – poach these for 4 minutes, until pink, remove and stand until cool. 8. Pour the cooled sauce into the frozen terrine mould, wait 45 seconds and pour out – this will leave a thin layer around the mould. 9. Dip the garlic leaves in the sauce and line the terrine mould over the set outer-layer. 10. Season the salmon fillets, place one inside the mould, pour over a ladle of sauce, just covering the fish. Place another layer of wild garlic leaves, then place the other side of salmon on top sandwiching the two pieces of fish together. Place another ladle of sauce over the top. Place a layer of clingfilm over the top and press down using another terrine as the weight – place in the fridge. 11. Once cold – remove the terrine and dip the remainder of the garlic leaves and place across the top - leave to cool. 12. Finally ladle one final layer of sauce over the top. Leave for 2 hours in the fridge until set.

Good news! Iberica, the leading Spanish tapas restaurant and delicatessen is opening a second venue in Cabot Square this autumn, complete with an outdoor dining space; perfect for al fresco meals and events. A firm favourite with discerning tapas aficionados, Iberica opened in the West End in 2008 under the auspices of two Michelin-starred Executive Chef, Nacho Manzano, from Casa Marcial in Asturias, and Madrid born Head Chef Santiago Guerrero. The restaurant showcases the best in Iberian food and drink and is a mecca for hispanophiles. Heston Blumenthal reportedly loved the Iberico hams and the handpicked clams, drizzled with olive oil and lemon, when he dined recently.

pan-fried scallops, Iberica caters for all tastes and occasions. “We are all about tradition, evolution and authenticity,” highlights Guerrero, “We offer traditional dishes which we have made our own.” Sunday’s menu is designed with families in mind and offers paellas, croquettes and roast beef. “In Spain there are always children at restaurants,” continues Guerrero, “We like kids at Iberica.” Traditionally, tapas was designed as little tasters to accompany drinks. “Now Cocina en Miniatura (miniaturised cooking) is a big food movement and tapas has become more complex,” reports Guerrero, previously Head Chef at L’Albufera, who will oversee the Canary Wharf kitchen.

“Canary Wharf has created a destination for better restaurants such as ROKA and Boisdale, It’s a good moment for Iberica to come here.” “In Spain there is a dialogue between traditional and modern molecular gastronomists,” explains executive director, Marcos Fernandez Pardo. “We are presenting that dialogue on a plate and showing how Spanish gastronomy has moved forward.” Boasting a wealth of Spanish produce that is often exclusive to the menu and deli, plus traditional and specialist wines chosen by consultant sommelier Bruno Murciano (Best Spanish Sommelier 2008), Iberica was the only Spanish restaurant in the UK to receive both a Michelin Bib Gourmand and two rosettes in the AA guide this January. With 48 references currently on the menu, including the popular fried squid with aioli and classic Spanish omelettes, plus Manzano’s signature

“We will recreate around 30% of the current menu to include more elaborate dishes,” reveals Guerrero, “I have a core team who have been with me since the start and we will adapt the menu for our new customers.” The Cabot Square restaurant will embody the DNA of Iberica, while lending itself to the dynamics of its location. Spanish architect Lazaro Rosa-Violan, has designed the light and airy interior: featuring two mezzanines and an open kitchen, plus a charcuterie and cava bar, the feel will be clean, slick and modern. “Canary Wharf has created a destination for better restaurants such as ROKA and Boisdale,” concludes Marcos Fernandez Pardo, “It’s a good moment for Iberica to come here.”

Fried Squid with Aioli and Lemon When cooked correctly, squid has a lovely meaty texture with a hint of sweetness. The aioli and lemon cut through the oil and balance the flavours. Serves 6

1kg of squid, cleaned salt to season 120g of aioli 2 lemons, cut into wedges Pinch of maldon sea salt vegetable oil for frying For the flour and breadcrumb mixture: 200g plain flour 200g breadcrumbs - blitz in a food processor 1. Cut open the body of the squid so that it is laying flat. On the inside, score with a sharp knife perpendicular cuts going from one tip to the other in a criss-cross pattern. Ensure that the cuts do not go through the squid. Then cut into eight squares. 2. Make sure that the mouth has been taken off and that the tentacles are clean. TO FRy 1. Season the pieces with a pinch of salt. 2. Mix the flour and breadcrumbs together. 3. Evenly coat the squid with the mixture. Do not put all the squid in at once, as this will make the mixture lumpy. 4. Fry in a pan with hot oil. Fry in small batches to ensure that the oil temperature remains hot. 5. When golden brown, remove the squid and rest on a paper towel. TO SERVE Sprinkle some sea salt on top. Serve with aioli on the side and lemon wedges.

Why did you decide to come to Canary Wharf? We had been looking for a suitable second site in London for a long time. We decided on Canary Wharf as it has a unique urban environment with its own energy. It feels like a big village, like one big community. Also, it allowed us to bring ROKA to the doorstep of our city customers and at the same time gave us a new creative direction.
