Burger Wars?

Upper West Side burger joints undergo the JOK taste test A mere three and a half blocks apart on the Upper West Side are two glatt kosher burger joints, Amsterdam Burger Company and Gotham Burger. The Upper West Side of NYC has thousands of Jews, more than enough to support two local burger establishments. Both Gotham and Amsterdam Burger Companies stated on record that they wish for both to succeed and passionately feel this is possible. We spent an afternoon sampling what both restaurants had to offer.

At Amsterdam Burger Company we ordered

the classic burger, breakfast burger, buffalo chicken wings, cauliflower bisque, sweet potato fritters, orange jalapeno lemonade and peanut butter mousse for dessert. The food was fresh, of high quality and most importantly tasted great. The burger was uniquely impressive; it had a perfectly charred crust and was juicy and full of flavor. The basic ABC sauce complemented the burger well and we were extremely impressed with the quality and taste of the burger. The meat and sausages are unique in that they come from pasture-raised meat provided by Grow & Behold. This reflects a passion for providing the best for their customers. The atmosphere is family friendly and we loved sitting by the open windows facing the street. Amsterdam Burger is a cozy establishment with room to seat about 30.

2

At Gotham Burger

we ordered the wings, the basic burger combo meal (consisting of a basic burger, fries and fountain soda), the veggie burger, homemade onion rings, fried chicken, a small side of chili, a small side of beef fry, peanut butter mousse pie and deep-fried chocolate sandwich cookies for dessert. The food was fresh and had good flavor. Gotham has a varied menu with specialties such as fried chicken, braised short ribs and a variety of 12 sauces ranging from mango habanera, garlic mayo, to honey barbecue. Gotham burger makes their own beef fry which reflects their passion for providing modern kosher offerings. Gotham Burger offers a full bar experience with cocktails, beer and fine wines. They also have TV screens playing the latest sports games. The atmosphere here is family friendly by day and fun and party by night.

THE VERDICT: Both offer delicious fast food and gourmet takes on American classics. The burger at Amsterdam was a real standout. At Gotham, specialties like the fried chicken, beef fry and short ribs were phenomenal. We appreciated the combo meals that Gotham has to offer and loved the fun atmosphere as well. We recommend trying them both and telling us what you think. Email magazine@joyofkosher. com for your thoughts and feedback.

there is no other pizza available. It is not because it is THE place to be. It is simply because the pizza is that good. Fialkoff’s pizza on Route 42 in Monticello, NY is a family-run business that has been operating since 1970. The pizza is made fresh with no frills. There are no toppings offered and their rule of thumb (and we think the secret to their success) is that they make the pizza to

order. There are no pies ready to reheat when you walk through the doors. The pizza you get has been freshly made for you. The crust is perfectly crunchy and hearty. The sauce is out-of-thisworld good. It is sweet, spicy and savory all at once; they should bottle and sell it. The cheese is a perfect blend and the aroma that permeates the parking lot when you enter is phenomenal.

How to Survive Your Vacation

Keeping Kosher in the Caribbean

Y

ou’re packing to go on vacation, and you’re headed for the Caribbean. In your mind’s eye you see yourself relaxing under the soul-warming sun, taking in all that beautiful blue sky with the crystalclear water, and dining—hey! Where do we factor kosher food into the perfect Caribbean experience?

Chabad to the vacation rescue: where to get your food and what to do after you are full.

So you’ve got two choices: you can pack your own, enough to last you for the duration of your stay, or you can see what’s available on the particular island you’ll be visiting. Hmm, what is available, you ask? We had the same question, and furthermore, we wondered: what about people who live on the Caribbean islands all year long? What do they do about kosher food for themselves? And what is available for tourists?

JoyofKosher.com | SUMMER 2013

We turned to some Chabad families who live on the various islands of the Caribbean. Rabbi Levi Stein of Puerto Rico and Mrs. Simcha Nemni of Martinique were kind enough to give us a glimpse. “In Puerto Rico there is no meat, chicken, or Cholov Yisroel dairy products to be found in any stores. We ship it all in from Miami, and offer it to the community to purchase through the Chabad shipment,” Rabbi Stein

tells us. National products bearing a kosher symbol such as ketchup and mayonnaise are available in all the large supermarkets. Rabbi Stein works in conjunction with Rabbi Mendel Zarchi who is the founder and spiritual leader to Chabad of Puerto Rico and the Caribbean islands since 1999, and together they provide for all the kosher needs for tourists. They have a kosher takeout system where visitors can place

making the perfect

burger BY LAURA FRANKEL

There is nothing like a juicy burger, all sizzling and crackling right off the grill to get the appetite going. I love grilling season and will arm wrestle my husband to see who gets to do the honors.

GROUND BEEF MIX YIELDS 4 9-OUNCE BURGERS This mix is my favorite. The beef chuck provides the rich, fatty beefy avor and the brisket adds a heartiness and dense texture. You can try other beef mixes but be sure to look for well-marbled meat and fat.

pounds beef chuck, cut into cubes and chilled pound untrimmed brisket, cut into cubes and chilled

1 Grind the meat*. The meat will have a better texture if it is cold. This will keep the meat light and the fat from smearing. 2 Very gently mix the meat together. With light hands form the patties. Do not compress the meat; this will yield a tough burger. 3 Chill the burgers before cooking. 4 Preheat the grill or grill pan to medium-high. 5 Season the beef with kosher or sea salt and freshly cracked pepper. 6 Place the burgers on to the preheated grill and DO NOT TOUCH them for at least 4-5 minutes. Moving the meat around will result in the meat falling apart. 7 Flip the burgers over and grill for another 3-5 minutes for medium. Transfer the burgers to a sheet pan and loosely tent with foil for about 3 minutes. 8 Now, toast the bun. 9 Build your burger and eat! *You

can purchase several types of meat grinders including one that can be attached to your KitchenAid mixer. In a pinch, I have used my food processor and just pulsed the meat. If you choose this method, be sure to freeze your work bowl and slicing blade. Do not overload the work bowl (rather do this in batches) RUWKHPHDWDQGIDWZLOOEHVPHDUHGDQGZLOOQRWEHĂ XII\ Note: Instead of grinding your own meat, ask your local butcher to do it for you the day you are grilling, to ensure quality and freshness.
