As Viktor & Rolf would have it, LESS IS MORE, and we can’t wait for what designers have in store for us. l 29° Salón Internacional de la Alta Relojería (SIHH) fue un gran éxito para el sector de la relojería de lujo, con un récord de asistencia de 23,000 visitantes, además de contar con presencia y una respuesta sin precedentes en las redes sociales. En un mundo digital donde el networking en línea se ha convertido en la principal forma de hacer negocios, de comunicarse y consumir, la relojería tradicional, en lugar de quedarse atrás en la oscuridad y la incertidumbre de los mecanismos anticuados, está prosperando en un mercado creciente de nuevos clientes y jóvenes en esta era digital. In a digital world where online networking has become the prime form of business, communication and consumption, traditional watchmaking, instead of staying behind in the darkness and uncertainty of oldfashioned mechanics, is thriving with a growing market of new and young customers in the digital era. To reach a larger audience beyond the walls of Palexpo Genève, the venue that hosted the event, the SIHH live-streamed all 30 presentations and used strategies like the hashtag #SIHH2019 with over 380,000 posts in websites, blogs and webzines, reaching almost 260 million people.

Notably, a number of celebrities and influencers, as guests and as ambassadors for the brands, were in attendance to support the incredible event. Names like Hugh Jackman, Michael B.Jordan, Daniel Brühl, Bradley Cooper, Amanda Seyfried, Nicholas Hoult, Adriana Lima, Dev Patel, and many more, posed on red carpets and stopped by some of the stands to try on the best new models and releases. Also, this year’s use of technology proved a significant advantage to enhance the way audiences experienced the exhibitions, with artificial intelligence and virtual reality as highlighted features. Such technology is an allegory of the innovations the brands are presenting to the world.

The Salon International de la Haute Horlogerie is exclusive and only a few brands get to exhibit their new models—brands that have built a history of innovation and prestige. Some of the best timepieces came at the hands of ateliers like Audemars Piguet with the groundbreaking Code 11.59 Perpetual Calendar and the Royal Oak “Jumbo” Ultra-Thin, while Girard-Perregaux presented the Laureato Perpetual Calendar, which will become an instant classic. Cartier unveiled the Privé Tonneau collection and Piaget showcased the Altiplano High Jewellery, a stunning piece that sports a beautiful ocean blue dial and diamonds on the bezel, and the Altiplano Tourbillon that features a meteorite dial. The Parmigiani Fleurier Tonda Métropolitaine Sélène is another outstanding timepiece with a white mother-of-pearl dial and rose gold details. For its part, Swiss luxury brand Girard-Perregaux introduced its new collection for women: the Cats Eye Aventurine, the “Majestic,” “Celestial” and “Tourbillon”, each with an oval dial and a set of brilliant-cut diamonds. These are some of the highlights and only a fraction of the grandeur the SIHH prepared for us this year. With constant new releases by the top maisons, the watchmaking industry is more alive than ever. We can’t wait to see what next year’s edition will bring.

The Okinawan islands are a geographical beauty in the southernmost region of Japan. The capital city of Naha is approximately 630 km from Taipei, Taiwan. Okinawa Hontõ is the main island with an area of 1,206.98 sq km.

The turquoise waters and the warm temperatures have turned this destination into a coral wonderland—over 350 species of coral dwell in the Okinawan region, and they have become one of the main attractions that make these islands perfect for scuba diving and snorkeling. The coral reefs are thought to have formed around 400,000 years ago, and then reformed 100,000 years ago, after the Ice Age.

We find Japan’s largest coral reef in Sekisei Lagoon, off the coasts of the Yaeyama Islands, which have become popular for tourists who want to look at these marine treasures up close. The most recommended spots for these water activities are the coasts off the Kerama Islands National Park, the waters of Ishigakijima, Yonagunijima, Miyakojima and Okinawa Hontõ. However, visitors must be careful of the ecosystem, since it has become increasingly vulnerable due to climate change and human intervention. In the last few decades, corals have been subjected to phenomena like bleaching, caused by increased oceanic temperatures and now 99% of the coral is deemed unhealthy.

Japan, the mighty land of the rising sun, has an ancient and intricate past, and though an inherent part of it, Okinawa has a history of its own. Little is known of the origins of the people that inhabited the islands as early as 22,000 years ago, and while some theories suggest Okinawa finds its roots in Indonesia and China, some others say they might have originated in Australia. The most significant period of the prehistory of Okinawa is the Jõmon period, which lasted from 14,000 to 300 BC. It consisted of a hunting and partly sedentary population, and a culture known for its pottery, tools, and jewelry made from bone and stone.

Around the 13th century, the way of life in Okinawa shifted with the rise of chiefdoms and agriculture with a wider variety of crops like rice, barley, wheat, taro and more. As the chiefs, called Aji, grew in power—some more prominently than others—the idea of kings as rulers emerged and castles were being built as a testament to that power. Records show that the first Ryukyuan king surged around 750 CE, and the islands maintained a high level of sovereignty that ended in the 17th century with the Edo Period and the colonization by the Satsuma Domain. The islands’ privileged location were fundamental for trade with the neighboring nations, so Satsuma took advantage of this fact to trade with China to boost Japan’s overall economy through the Ryukyu kingdom by granting them a state of semi-independence, allowing Ryukyuan leaders to remain in positions of power.
The Typhoon of Steel: The Battle The first intervention from the West came with Commodore Matthew C. Perry. This represents the first time the United States came in contact with Japan, and particularly Okinawa—a relationship that has persisted to the present day. At the same time, Japan was being influenced by western imperialism and expansionism, which resulted in the 1868 Meiji Restoration (the end of the Tokugawa Shogunate, the traditional Japanese form of government), and with it, the end of the Ryukyu Kingdom and the islands’ subsequent integration to Japan as a prefecture in 1879.

The Meiji Era modernized Japan with a rapid increase in industrialization and military prowess, and promoted a strong sense of national identity as a unified country. It lasted until shortly before the beginning of the First War. But it was in the Second Great War that Okinawa became the center stage for one of the deadliest battles of the conflict: the final stand in the Pacific War between Japan and the United States of America. It was critical to overcome the Okinawan forces in order to defeat the whole of Japan because they represented a considerable part of the army. Two months later, the US dropped two nuclear weapons in Nagasaki and Hiroshima—an act of violence that would ultimately lead to Japan’s surrender and the end of WWII.

After the Second World War, the Okinawa Prefecture became a military strategic location for the United States against North Korea and China during the Korean War. It wasn’t until 1972 that Japan regained control of Okinawa, but the US military has remained stationed on the islands to this day, with over twenty military bases. The presence of the American military in Okinawa has sparked a growing amount of global controversy and discomfort among locals, particularly because of the history of violence their presence entails and that still lives in the memory of the elders who experienced the hardships of the war and occupation. Not to mention the construction of the bases has caused considerable damage to marine ecosystems.

La distinguida herencia ryukyuana Despite the events that have shaped Okinawa to the picturesque prefecture it is today, the islands have stayed true to their Ryukyuan roots and at the same time they have assumed a Japanese identity. However, even though locals still retain some of their traditional customs, the five Ryukyuan languages, which comprise 750 dialects, are fading with new generations speaking mostly Japanese—introduced in Okinawa between 1872 and 1879—and the UNESCO has listed them in the Atlas of the World’s Languages in Danger of Disappearing. Experts in the subject agree that it’s important to preserve these languages to honor and acknowledge the minorities’ place within the global society.

Ryukyuan arts and crafts are equally significant for the preservation of this ancient culture. The Shiisaa are small statues of an Okinawan mythological creature that looks like a mixture of a lion and a dog—it is a derivative of the Chinese lion. The statues can be found in pairs (of what appears to be a male and a female) all over Okinawa: in rooftops, doorways, monuments, etc., and serve as protectors to guard off evil spirits. Also, traditional pottery, called Yachimun, is an 800 year-old craft inspired in other Asian nation’s ceramics, like China and Korea. Each piece symbolizes an element of nature, and you can find several shops at the Yomitan Pottery Village in the main island of Okinawa, where you can learn how artisans work with traditional techniques.

Another craft you will find in these streets is the Ryukyuan glasswork. Glasswork dates back to a century ago, but it became a widely practiced craft after WWII, when artisans would use discarded glass bottles, particularly by the US military, and turn them into sophisticated pieces of glassware. It also gained momentum after Okinawa started garnering attention as a top destination in the 70s, and glass souvenirs became popular amongst tourists.

Bingata is the Okinawan dyeing technique to create colorful fabrics and garments like the traditional kimono. This craft is unique to the Ryukyu Islands, influenced by China and the Edo period in Japan. The use of the Bingata was reserved for the upper classes, and it was often presented as gifts to kings and warriors. Many visitors enjoy taking Bingata classes, so don’t miss the chance to experience this and many other Ryukyuan activities. You can attend presentations of Kumiodori, a performing art created by Choukun Tamagusuku in 1718 with the purpose of entertaining foreign guests, particularly Chinese envoys. Okinawa Hontō The largest island of the prefecture has a lot to offer for tourists looking for unforgettable experiences. Naha, a hub of international trade, became the capital of the prefecture in 1872. If you want to learn about the history of the city, you can visit one of the most representative landmarks of the Ryukyuan Kingdom: Shurijõ Castle. The structure boasts both Chinese and Japanese architectonic styles; however, the castle was destroyed during the Second War and has undergone considerable restoration since 1992 and is now open as a national park. On December 2000, it was designated as Japan’s 11th World Heritage Site. There are vestiges of other Ryukyuan castles that you can visit. The Katsuren Castle is located in Uruma near the coast, offering fantastic views of the landscape from the hill it stands. The castles are in ruins, but they have a lot of historical value. You can also visit Nakagusuku Castle, overlooking the bay and located in the Kitanakagusuku village. Both the Katsuren and Nakagusuku castles are listed as UNESCO World Heritage Sites.

Another site where you can appreciate beautiful ruins, also listed by UNESCO, is the Tamaudun Mausoleum, built around the 16th century as a funerary tradition for the royal family. Entry is free of charge and you can also visit the museum at the reception building. But aside from ruins and historical sites, Okinawa is also home to many natural wonders, and if you’re a lover of natural formations, stop by the Okinawa World theme park; aside from the taste of true Ryukyuan culture you will find here, you can visit the Gyokusendo Cave located under the park; with a stunning universe of colorful stalactites and stalagmites.

On the other hand, the Okinawa Churaumi Aquarium, inside the Ocean Expo Park facilities, offers a wide variety of activities that visitors can enjoy, like learning about the whale shark, the manta ray, coral, and other local marine species.

Aside from diving and snorkeling, clear waters, lush nature and spectacular views, there is plenty to do in the rest of the islands of Okinawa. Ishigaki is the main island of the Yaeyama archipelago, located in the southwestern region of the prefecture, and you can experience Ryukyuan culture, go on a spa retreat, visit the local museum or the Ishigaki Limetone Cave, swim with manta rays, go on a hike to the top of Mount Nosoko, also perfect for bird-watching, and much more. From March to January, you can go on a boat trip off the coasts of the Zamami and Kerama Islands to watch the humpback whales found in the area for the season. Miyako Island, for its part, has some of the best beaches with lots of fish and coral species you can encounter by swimming or snorkeling. It is also home to Irabu Ohashi, the longest and arguably most spectacular toll bridge in Japan, connecting Miyakojima and Irabujima.

¿Cómo se adapta la cocina tradicional japonesa a las técnicas modernas? La técnica con la que uso o cuido el producto es japonesa, pero para preparar algo como una salsa, incorporo una técnica que no es necesariamente de la cocina japonesa. He cambiado la forma en que entiendo las combinaciones de sabores de otros lugares. How does traditional Japanese cuisine adapt to the modern techniques? The technique in which I use or take care of the product is Japanese, but to prepare something like a sauce, I incorporate a technique that isn’t necessarily from Japanese cuisine. I’ve changed the way in which I understand flavor combinations elsewhere, because Japanese flavor is very simple since it only uses a handful of ingredients. Japanese food doesn’t have enough flavor to create the same impact for someone who enjoys a hamburger or tacos full of flavor from the first bite, so I, as a chef, incorporate technique from other cuisines into Japanese cuisine.

What influenced your decision of opening Makoto in Mexico City, and specifically in Polanco? I have a local partner, who gave me this advice. They believe in this place and they believe in my concept. For me Mexico has a great diversity and I have many friends from Mexico. I love Mexican cuisine. In the US, they’re familiarized with the commercial burrito or taco, but when I came here it was totally different. There’s so much complexity to the flavor.
¿Qué influyó en tu decisión de abrir Makoto en la Ciudad de México y específicamente en Polanco? Tengo un socio local que me dio este consejo. Cree en este lugar y cree en mi concepto. Crear tu propia marca de sake fue una progresión natural para presentarle la cultura japonesa al mundo. ¿Ha sido difícil persuadir a los clientes en México para que acepten el sake y olviden las ideas erróneas que lo rodean? Esas ideas erróneas se reducen a los gastos de envío. Nadie quiere comprar una botella de sake de US $100, por lo que deben traer el sake más barato posible. El sake más barato no se debe servir frío; es por eso que el sake caliente se ha vuelto más popular. El sake frío es de un grano de arroz de mayor calidad; es más puro y contiene más koji para hacerlo más frutal, y el sake Makoto es así. Hasta el día de hoy, estamos trabajando para reducir el costo. Creating your own sake label was a natural progression to introduce Japanese culture to the world. Has it been difficult to persuade customers in Mexico to embrace sake and forget the misconceptions around it? Misconceptions come down to shipping costs. No one wants to buy a $100 US bottle of sake, so you have to bring the cheapest sake possible. Cheaper sake isn’t meant to be served cold; that’s why hot sake has become more popular—cold sake is of a higher quality rice grain. It’s purer and adds more koji to make it fruitier, and Makoto sake is like that. To this day, we’re working to bring the cost down. The whole point of making my sake was to introduce it to the people who have never drunk sake before.
What do you look for in a restaurant as a customer? Somewhere comfortable, nothing fancy, somewhere you can go every day. What are your plans for the future? A project that I have is Makoto in Sao Paulo. I have a partner who reached out to me with a vision, seeking potential. I also want to continue creating better food and providing excellent service here in Polanco. So when you come to or if you live in Mexico City please come join us.

Tell us about one of the most rewarding moments of your career. As a chef, when I was still living in NY, around 10 years ago, being successful as a restaurant owner and partner, looking at the success of my restaurant in Miami, it was very rewarding for me. Opening a restaurant is an amazing thing, but it’s not as good a reward as having a successful restaurant. If you have the money you can open a restaurant, but making it successful is the reward, and I try to accomplish that everywhere I go.

With a production of only 80 vehicles, manufactured at Koenigsegg’s production facility in Ängelholm, Sweden, the exclusive Regera is fast, efficient, innovative and luxurious. Regera means “to Reign” in Swedish, and it’s the perfect moniker for the power and responsiveness that the 5.0 liter twin-turbo V8 combustion engine, plus three electric motors with a 800 volt, 4.5kWh battery pack are capable of, accelerating from 0 to 400 km/h in 20 seconds. Koenigsegg labels the Regera as a new breed of hybrid because its efficiency isn’t compromised by its electrification; on the contrary, it’s enhanced. On the other hand, SAP Extreme Sailing Team from Denmark, last year’s champions, didn’to btain the expected results, finishing fourth place overall, despite their talented crew of some of the world’s best sailors. Kiwi match racing champion Adam Minoprio, member of the Danish team, expressed his disappointment and praised Alinghi’s consistency, stating: “We didn’t give ourselves many chances this regatta, and we didn’t sail our best as a team.” However, the team won the Zhik Speed Machine Trophy for the fastest speed achieved in the final Act of the season. Consequently, they are frequently found in bays and mangrove channels. Due to their long lifespan and slow rate of reproduction they are extremely vulnerable to extinction.

The implication of this extension would be fatal for the Okinawa Dugong if it’s in fact developed throughout the next few years. Thankfully, in this very dark future for the Dugong and other rare species, there is hope. A large number of Okinawa inhabitants, including their governor, are against this threatening project. 80% of the residents are opposed to the development of the expansion of the military base.

Aside from the numerous species that are likely to disappear if this project reaches conclusion, the environmental damage wouldn’t stop there. Increasing human activity and consumption of freshwater are eventually going to create an imbalance in the ecosystem. As a result, the remaining coral reefs that support the already decreasing endangered species can disappear forever. It’s essential that human beings see the extent of the damage they can produce with their actions, and realize that in the long run, they are also affecting all of the earth’s inhabitants, not only a few species like the Dugong.

here is an undeniable beauty to the islands of Okinawa, and a big part of this beauty has to do with its natural and marine diversity. There is a place in the main island of the Okinawa Prefecture that devotes itself to the care and preservation of countless species, including one of the largest species of manta rays in the world, the whale shark, the sea turtle and the manatee: such place is the Okinawa Churaumi Aquarium. The aquarium is located inside the Ocean Expo Park, north of the capital city of Naha. Aside from the aquarium, the park features many other attractions that will surely captivate visitors with an experience they will never forget. Some of them are the Dolphin Lagoon, the Manatee Pool and the Sea Turtle Pool, to admire these species up close and learn about them, all free of charge. Additionally, the park is home to the Okichan Theater, the Native Okinawa Village (a re-creation of a traditional community from the Ryukyu Kingdom between the 17th and 19th centuries), the Tropical Dream Center (featuring over 2,000 orchids, wetland and aquatic plants, tropical fish and butterflies), Kids’ Adventure Land and Emerald Beach, where you can bask in the crystalline waters on a sunny afternoon from April to October. For a meal or drink, you can stop by the Inoh Restaurant or the Ocean Blue Café.

Abierto desde el 1 de noviembre de 2002, el concepto del acuario gira alrededor de la idea de recrear hábitats naturales para la vida marina de Okinawa. Es el primer acuario que resguarda tiburones ballena con un programa de crianza en cautiverio. El acuario también cuenta con la primera exhibición de arrecifes de coral del mundo, que brinda las condiciones ideales para que el coral se reproduzca y sostenga a la vida marina. Churaumi significa “hermoso océano” en el dialecto de Okinawa, y no hay una descripción más precisa para estas instalaciones. The Okinawa Churaumi Aquarium is a worldclass aquarium designed to create an immersive experience for visitors. Open since November 1st, 2002, the aquarium’s concept revolves around the idea of recreating natural habitats for the Okinawan sea life. It’s the first aquarium to keep whale sharks with a program of captive breeding. The aquarium also boasts the world’s first large coral reef exhibit, providing the ideal conditions for coral to reproduce and sustain marine life. Churaumi means “beautiful ocean” in Okinawan dialect, and there isn’t a more accurate description for these facilities. An average of three million people visit the aquarium each year, and each visitor can expect to discover something new. You can learn about approximately 70 species in the Coral Sea exhibit, an open tank based on the coral that live in the waters of Motobu Town. The aquarium uses water directly taken from the beautiful clean sea of Okinawa, 300m off the coast of Ocean Expo Park—a privilege most aquariums don’t have. You will also be able to (gently!) touch and see species like the starfish and the sea cucumbers up close in the Life in the ‘inoh’ touch pool.

Shark enthusiasts can’t miss the Shark Research Lab to learn about shark habitat and behavior. The Kuroshio Sea tank is 10m deep and 35m wide, with a capacity of 7,500m 3; here you will discover the two resident whale sharks, the largest of which measures 8.7 meters in total length, along with species like the skipjack tuna, manta rays and much more (around other 70 species). The Aqua Room creates an atmosphere of underwater wonder, where visitors can look up at the sea life through a ceiling made of acrylic, as though sitting on the ocean floor. These and many other adventures you will find upon walking into this aquatic wonderland through the Uminchu Gate, where a whale shark sculpture will welcome you into the facilities. Opening hours from March to September are from 8:30 to 20:00 (last admission at 19:00), and during the October-February period from 8:30 to 18:30 (last admission at 17:30). One of the program’s highlights is feeding time, which takes place at 9:30, 15:00 and 17:00 in the Kuroshio Sea. If there is a place in Okinawa you can’t miss on your trip to these paradisiac islands, is the Okinawa Churaumi Aquarium, a true marine haven.
