Rae Cohen FOUNDING BOARD MEMBER AND CURRENT PRESIDENT OF

Newport Theater Arts Center For over forty years, the Newport Theater Arts Center has been satisfying thespian yearnings of those with a passion for the world of theater.

If you’ve always wanted to act but aren’t ready to give up your day job, consider auditioning for an upcoming play at this local community theater based in the heart of Newport Beach. Rae Cohen, one of the local visionaries who helped bring this entity to fruition, tells of the the theater’s origins and present day offerings.

How did the concept of a Community Theater in Newport Beach originate back in the 1970’s and what inspired you to make it happen?

The City acquired the property from the state after plans to build a freeway ramp were changed. Some community folks requested a theater be considered. I joined the group in 1979, the year the City determined The Friends of the Newport Theatre Arts Center would be the organization to operate the facility as a playhouse.

Did you create this alone - or did you have a group of co-creators who worked with you?

I was one person on the board, but about seven other community people were involved, including a couple of mayors. I came in as a recording secretary. It was not my idea.

How long did it take to stage the first play?

The group formed in early 1979 and the first production was January, 1980. Earlier shows had been planned but we weren’t able to get it together until January.

Since the theater opened, how many plays have been performed?

As accurately as I can count, it would seem we recently staged production 231, Sherlock Holmes, The Final Adventure.

How many local residents have performed in these plays?

We have had many, many Newport Beach actors over the forty-one years, including some

students, and we also attract performers from Costa Mesa, Long Beach, Huntington Beach, Irvine, Mission Viejo. Our last show had an actor who drove in from Hollywood and the next show will feature an actor from San Diego.

Do you have a standard director on board or do you use a different one for each play?

We hire directors for each production. Some of our board occasionally direct but most of the directors send us their resume and suggest plays in which they are interested. Many of our directors have been from local colleges and universities, faculty as well as students. Each play

has a different director. Directors are usually selected at the beginning of the season.

Who picks the plays?

We have a play reading committee that reads and sees plays all year long. Directors also submit plays they are interested in. We try to pick a variety for each season. Once we make our choices, however, we have only begun. We then apply for rights from Samuel French, Inc. or Dramatists Play Service or one of the other houses. Out of the first five we apply for, we may get rights to two or three. Reasons we do not get rights include,” too close to Los Angeles,

the estate of the deceased playwright is not releasing rights at this time, or another regional or professional theater may be interested in doing the same piece next year.” Then our committee goes back to the drawing board to make other selections and we apply again. It often takes three, four or five months to get rights to all five shows for the following season.

Who selects the actors?

We have open auditions for every production.

Notices of auditions are publicized on our website, in an actors’ publication called Backstage, on Facebook and on various internet sites actors are acquainted with. An actor can also call the box office for information on audition dates.

The director selects the performers for each production. We do send out a season brochure announcing all the productions to anyone who requests it.

How many volunteers comprise the cast and crew of each play?

Of course, the number varies, depending on the size of the cast. Last year we did The Gin Game with only two actors. We also did the musical of Floyd Collins, with seven in the orchestra, fifteen in the cast, plus the tech people, the set builders, the stage help, the ushers, so thirty-plus people worked on that one.

What is the commitment from actors for a typical play - how many hours of rehearsal time?

It’s a big commitment, so you have to love it.

After auditions, there are usually four weeks of rehearsal, usually four times a week, maybe sixteen hours. Then there is tech week, also known as hell week, which is more days and more hours. Finally, our productions run five weekends, with twenty performances. So nearly three intensive months are involved.

What is up next?

Our next production is Taking Sides by Ronald

Harwood. It’s an excellent, tense drama about Wilhelm Furtwangler, one of the great conductors of the twentieth century, who was at the height of his career when the National Socialists came to power. While many fellow artists left Germany as an act of protest, Furtwangler remained. He was accused after the war of being a sympathizer. He claimed he stayed so that he was able to serve and save many of his fellow citizens. It will open January 24, 2020.

Who is the best contact for anyone wanting to be in a play or volunteer backstage or buy tickets to a show?

Our box office manager Kathi Cervantes. If she doesn’t know, she finds out. She can tell audition dates, sign up volunteers and sell tickets.

Winter Skin: Let’s Make it

ven in our mild coastal part of the world, keeping your skin soft and glowing during the winter months can be challenging. Maintaining your routine hydrating professional facials is a must during the chillier months, but incorporating a little “DIY” home remedy in between treatments can ensure you are always party picture perfect throughout this season.

As the weather cools, skin tends to get dry and flaky. The solution - dry brush and exfoliate. A natural bristled brush, to gently remove dead outer layer skin is the first step.

When dry brushing, use a small circular motion with a light touch, followed by a luke warm rinse.

For deep moisturizing exfoliation, the easy-to-make Pumpkin-Cinnamon Facial Scrub will do the trick. Made of all natural, easily available ingredients, this no-fail beauty product will brighten your skin tone and smooth your complexion. Apply scrub to face and leave on for ten minutes to penetrate the skin. The pumpkin enzymes will do their magic. Then use a washcloth to gently remove the product along with any flaky surface layer facial skin that needs to be sloughed off. Rinse repeatedly with luke warm water and pat dry.

Complete your beauty regimen with the application of your favorite moisturizer. n

Pumpkin-Cinnamon Facial Scrub Ingredients 1 cup canned organic pumpkin 2 Tbsp. avocado oil 2 Tbsp. honey ¼ tsp. Cinnamon oil ½ tsp. Lemon juice ½ cup natural raw sugar

Directions Blend first five ingredients. Stir to create a smooth consistency. Add ½ cup sugar last, stir to evenly distribute all ingredients. Warm in microwave for about 10 seconds before applying.

A

s 2020 arrives, it signals the start of a new decade; but to renowned actress and entrepreneur Jane Seymour, it is a significant milestone.

For 2020 marks her fiftieth year as a working actor, having received her first screen credit in 1970, at age 19.

Fifty years in show business is quite an accomplishment, one that Seymour is happily marking with a winning role in the award-winning Netflix comedy “The Kominsky Method.”

She’s playing Madelyn, the long-lost love of Norman (Alan Arkin), a couple reunited in romance after 50 years (and other spouses). It’s a role she is thrilled to play, especially since the show’s creator, Chuck Lorre, is such a force in creating some of the best shows on television (“The Big Bang Theory,” “Mom,” “Two and a Half Men,” “Young Sheldon”).

“I think it’s amazing material. I think Chuck Lorre is brilliant,” Seymour says. “And of course working with Michael [Douglas] and Alan is wonderful. But Chuck, he’s incredible. I just thought that I know this character and I was absolutely convinced I could play her. And Chuck liked what I did so much, he kept giving me more material!”

Seymour laughs and elaborates: “It’s like you earn something, I’ve earned my stripes by surviving my life and being who I am today, which makes me able to authentically play her.”

The 68-year-old actress, who first made her mark at 22 as a gorgeous British ingénue and “Bond girl” in “Live and Let Die” (1973), has always worked, mixing up doing feature films, Broadway shows, made-for-TV movies, TV mini-series and starring in her own TV shows (“Dr. Quinn, Medicine Woman” being her most well known). As the years have passed, her talent remains – as does her natural beauty.

Seymour points to the “natural” part of that statement as one of the reasons she’s been able to sustain such a long and varied screen career.

“I didn’t do any of that plastic stuff,” she says frankly. “I didn’t kill my face, I haven’t done any of that, lasers, surgery, and because of that, I think I’m accessible, I’m relatable, because I’m authentic. I think it is just that simple.”

But there’s more to it than that, as Seymour admits. “I never did succumb to any of the insanity of Hollywood. I just got on with working hard. I just kept plugging along, creating my own material, too. So I think from the perspective of a producer, rather than just an actress. I care about working with the team and making the project work, giving of myself to help contribute to it working.”

She has been producing films, documentaries and television shows since the 1990s, but it is actually a whole different world that has given Seymour both artistic satisfaction as well as a very profitable revenue stream.

“When I turned 40, I went through a terrible divorce and I lost everything, financially and emotionally,” she remembers. “My mother’s advice was to give the last money I had to someone who was worse off than me, which it

turned out to be anyone who was abused as a child, a cause I gave to at a charity event. That led to an artist coming to my house, who saw some of my artwork and offered to give me lessons. I pointed out to him that I was penniless, homeless – about to be homeless – and just in desperate debt from no fault of my own. So he said, ‘Well, the next couple of days I’m free. I’ll teach you how to paint for free.’ And he did. And I couldn’t stop!”

That artistic sparking has led to a whole collection of different businesses for Jane Seymour, beginning with her Open Hearts jewelry collection, started in conjunction with Kay Jewelers more than ten years ago. That idea also came from her mother.

“My mother’s advice about dealing with adversity, and accepting it, however dire it was, was opening your heart and reaching out to help someone else,” Seymour explains. “She said it is important to have a purpose; and when you have a purpose, that helps you heal. So I kind of interpreted that as two hearts that were open, connected, and that’s where the image came up.”

That business (she owns the copyright to the Open Hearts) has burgeoned into a whole new world for Jane Seymour. “From Open Hearts, I realized that I had a brand. I created a brand and my brand was authentic. It was not based on being an actress. I created the images and got involved with the design in a very personal way. I actually own the Open Hearts design trademark globally,” she reveals.

“Then I started doing children’s clothing and

eventually ended up with Michael Amini, doing a very successful furniture line, which is literally sold globally. We do collections for AICO, Mike’s line. And I’ve been showing my artwork in galleries all over the country, I usually do about 12 shows a year. So that’s all now part of my life. And a part of me goes, ‘Wow! How did that happen?’”

It all happened because this dynamo mother of four (and grandmother of nine) decided to take her destiny into her own hands. Nowadays, she’s so busy that the typical “when will you retire?” question asked of women her age makes her chuckle.

“Life is really good. I have a lovely guy in my life. Even more important, I have my children, who are phenomenal. And the fact that I’m still having a very interesting time, so many outgoing, growing experiences, being creative in many different areas means my life is great.

I’m definitely not ready to give up and just sort of pull the covers over my head and just say I’m done,” Seymour laughs. “I am busier now more than ever!” n

“hey, let’s meet for coffee in the morning.” A simple statement that has led to a saga of what can only be described as a national phenomenon. From flashy Ft. Lauderdale, Florida, up to Newport, Rhode Island and out to Newport Beach, California, Cars and Coffee truly has taken on a cultural life of its own. But here, in the OC, the weather is ideal for a shorts and sweatshirt Saturday stroll with a gang that’s more than ready for a morning amidst shiny paint jobs, gleaming chrome and some seldom seen classics. Welcome to Cars and Coffee, Orange County style, where visitors to the Outlets at San Clemente can view for free automotive excellence usually seen at admission based events.

Today is no exception as the discerning eye glimpses Jeff Wu’s immaculate 1957 Mercedes Benz 300 SL roadster parked next to two 300 SL gull wing coupes, parked next to another 300 SL roadster. And finally, like a radiant red exclamation point at the end of this chorus line of collectibles sits Dave Shockley’s 1949 MG TD. No, this isn’t the Concourse event at Pebble Beach; it’s just another Saturday morning.

Curiosity made us ask Just how did this all come about?

When questioned, locals generally agree with the lore of some 30 years ago when a group of hot rodder types -

Donut Derelicts, by name – met up for an ad hoc hot rod meet at a Huntington Beach donut shop. It grew from there. Eventually, the non hot rod groups sought other venues resulting in today’s happening. With a simple statement, an entire movement ended up in the parking lots of donut shops, coffee houses, restaurants and strip malls all to admire the craftsmanship in these old cars and, more importantly, to share friendships. What was a few visiting friends just hangin’ out decades ago, has become an event with its own identity and culture. Additionally, the concept name has been copyrighted and trademarked; offshoots have sprung up on cable TV shows and social media postings galore.

The European car press has even come to town to cover it. Once again the car culture has an audience not witnessed since the ‘60’s muscle car glory days.

Here at the Outlets in San Clemente, the cars are the draw and the participating people make it happen. On Saturday mornings they gather, the harried physician; the retired CEO; the jet setting entrepreneur and local shop keeper all become one: just a car guy- or gal – simply hav-

What an amazing morning this has turned out to be. Viewing really top of the line cars,

sharing owners’ stories, the strolling crowds drinking coffee and scratching the occasional dogs head! Truly more than just a cup of coffee.

And finally, as if on cue, from the next row of classics comes unfamiliar exhaust tones.

Quickly following the group headed to the noise, one catches sight of reddish brown fenders and distinctive double bubble hood of the front engine, two-door coupe slowly pulling into the spectator filled lane. There, like sighting a very rare gemstone, sits the Italian automotive equivalent - an Alfa Romeo Zagato Coupe - SSZ. A precious jewel indeed! Then, as quickly as it appeared, it was gone, absorbed into the crowd leaving only a faint scent of petrol fumes and the nodding heads of those who know of these legendary cars. And of those who will search for it at next week’s Cars and Coffee. n

Hosting Efficiently to Welcome Guests

W

e all know that having people come to visit and stay with us overnight during the holidays can create a challenge in finding the space to accommodate everybody comfortably. Now that the season is over and your guests have gone, it may be time to re-evaluate your needs and start planning for your next round of visitors.

If you have an older home and the rooms are broken up into smaller spaces, it is more challenging to entertain large groups of people. As a designer and general contractor, when I remodel a home for a client I don’t just consider every day living. I also think about creating multifunctional rooms that are warm and inviting.

Most people don’t have the space in their home to exclusively use a room as just a guest room a few times a year. The rooms have to be multifunctional or it will be a waste of space. Hosting efficiently is making the space comfortable for everyone so each room can be used to its maximum enjoyment and fullest potential. Space planning in your home is crucial. If you don’t have space planning, you can’t lay out the rooms and see all the options you can have. You must go through the process of finding out what will fit and won’t fit, keeping in mind the multifunctional uses that the room can evolve into.

I had the honor of remodeling the home of legendary Disney Imagineer Tony Baxter. Tony is known for entertaining guests in his home on a regular basis. He had a guest room upstairs for years that had been rarely used. I helped Tony transform this room into a multifunctional guest bedroom and second home theater. It offered an additional place to watch movies and included a custom-made sofa bed for when guests stay overnight. The movie screen that comes down from the ceiling is hidden in a custom-made beam above the window. The beam matches all of the vintage woodwork throughout the room and home. We also extended the room out over the original balcony and left a small balcony between the guest/screening room and master suite. The patio outside the door offers a great view of the backyard. The door heading out to the patio was hand-made and custom-finished by my craftsmen, designed to mimic the existing doors that Tony already had downstairs. We

Four years ago Nikki was an out-of-work, single mother trying to figure out her next career move. When she heard about a party rental business available for sale, she was intrigued.

When Amber got her first after school job at Mother’s Market, she was immediately drawn to the skin care section where she happily offered demos and advice on which products were most successful.

By age 17 Amber was already manifesting her studio and started creating renderings of the spa she would one day own. “I am a manifester,” shares Amber. “I have successfully manifested everything I ever wanted. You do become your thoughts.”

After an apprenticeship with esteemed dermatologist Dr. James E. Fulton, inventor of the skin product currently known as Retin-A and founder of the Vivant Skin Care line, and a degree from cosmetology school, Amber was ready to pursue her dream. The current Corona del Mar location, opened recently, after nearly 20 years in its former space, is the culmination of Amber’s vision for the ultimate skin care experience. To help her create the right ambiance, Amber reached out to long time client and friend, Designer Laura Brophy, to bring Amber’s manifestation to fruition.

“Laura was a client at my original location in the Shape Up Fitness location where I opened my first studio,” tells Amber. “We started talking about an updated vision for the facility and I felt such an alignment with her concept that I knew she was the right designer for the space. She ended up redesigning the facility and everything looked amazing. I especially loved that she incorporated design elements from local sources to enhance the community vibe. At that point, I knew I could never work with anyone else. So when it was time to open my new location, I immediately reached out to Laura, who by then was also a dear friend.”

“I listened to Amber’s hopes and dreams for her new space and interpreted her vision into the space,” says Laura, who has been a designer for 16 years and has served clients locally and elsewhere, including New York and Park City, Utah.

The goal was to create a warm and soothing environment where clients can experience pre-treatment and post-treatment respite. Laura accomplished this and more. The intimate and private wait lounge is anchored by a vintage rug and an oversized floor pillow that invites cozy relaxation. A book case style bar cart

Dr. Katherine Ahn Wallace of Aviara Centers Brings Holistic Approach to Dentistry

T

he shape of your face has long been associated with aesthetics but recent research suggests that craniofacial qualities are also associated with health issues that range from chronic migraine headaches to cardio vascular disease, as well as diabetes or even cancer.

In the last few years, important discoveries have been made with respect to dental health’s connection to overall health and at the forefront of these revolutionary findings is Dr. Katherine Ahn Wallace of Aviara Centers.

Good dental health begins in infancy (some would say, in the mother’s womb), long before a single tooth has emerged, according to Dr. Ahn. “Improper jaw development can lead to severe health issues,” explains Dr. Ahn, who has devoted herself to understanding and remedying the problem.

When the jaw doesn’t grow to its full size, the teeth don’t have adequate space to emerge. The typical result is a set of crowded and crooked teeth. But the more severe problem associated with an underdeveloped jaw is that the tongue doesn’t have enough room to comfortably rest and properly function, resulting in airway obstruction; the primary cause of teeth grinding, clenching, TMJ disorder, and sleep apnea. Airway compromise and sleep-disordered breathing (SDB) are linked to many conditions including poor behavior and latent bed wetting in

So what do you do to get your baby’s jaw to grow properly? Dr. Ahn urges mothers to breast feed for 18 to 24 months. “Breast feeding is not only perfect nutrition for the infant, it also plays a major role in jaw growth,” says Dr. Ahn. If the infant is having difficulty latching on, Dr. Ahn also advises mothers to seek evaluation by a dentist that specializes in frenectomies to see if he or she has extended frenum attachment or “lip or tongue tie” which could prevent full range of motion of the lips and tongue for proper feeding. She also explains that finger sucking, pacifier use, mouth-breathing and soft inflammatory diet all create an environment that contributes to improper jaw and facial growth and should be addressed as soon as feasible.

Dr. Ahn recognizes that many mothers can’t easily breast feed and for those who rely on bottle feeding, she offers a protocol to h elp with jaw development. For children as young as two years of age, she recommends using a special appliance designed to guide the growing jaw.

For older children and adults, treatment often entails a combination of using muscle retraining appliances, jaw development appliances, braces or Invisalign along with myofunctional, craniosacral, osteopathic, breathing, sleep and nutritional therapy. With extremely severe cases, surgical intervention may be required. Dr. Ahn is passionate about helping her patients achieve proper face and jaw development, improving their smiles and their overall health.

Amanda Ibanez, who suffered from frequent debilitating migraine headaches, saw improvement within four weeks of beginning treatment with Dr. Ahn. Amanda sought Dr. Ahn out after exhausting numerous other treatment options that didn’t seem to work.

“I couldn’t find relief for my migraines from any other source - ER visits, daily chiropractic visits, acupuncture, dietary changes, even Botox. You name it - I tried it,” shares Amanda.

Dr. Ahn’s comprehensive plan to correct Mai’s health issues, stemming from an underdeveloped jaw, entailed myofunctional therapy and jaw expansion and the result, according to Mai, was the complete elimination of her uncomfortable symptoms.

“I have no more pain, no more numbness, no more discomfort and am excited to put the final touch to my treatment by restoring my worn teeth with veneers,” Mai says.

Lisa Chang, another patient of Dr. Ahn’s, suffered from migraines and sleeplessness before treatment. “The migraines are gone and I feel so well rested,” says Chang, whose sons are also in treatment with Dr Ahn. “It’s truly a revolutionary process the boys are going through to fix their bites, jaw structures, and breathing airways,” says Chang. “I am so thankful for Dr. Ahn and her staff for taking care of my family’s health.”

When it comes to remediating airway obstruction issues, the younger the patient, the better, according to Dr. Ahn who believes its best to treat patients under the age of 10.

Dane began treatment with Dr. Ahn at age seven. His mother, Kim Austin, was concerned because Dane was complaining of headaches and his teeth were coming in crooked, overlapping and crowded. She also noticed that he was clenching and grinding his teeth at night and sometimes sleep walking.

“My son had a wonderful experience with Dr. Ahn. He was always excited for his follow up appointments because Dr. Ahn and her staff made the process and experience extremely comfortable,” Kim shares. “He is now 12 years old and not only does he have a beautiful smile, from a health perspective, his airway is no longer obstructed, he no longer clenches and grinds his teeth and he now sleeps soundly.”

As the famed chef whose 40-plus restaurants worldwide have satisfied lovers of his world-class melding of Japanese-Peruvian-Californian tastes for decades explained, “You should eat sushi the moment it is handed to you – and do not add soy sauce. Soy sauce adds too much salt and changes the taste.” And he says you should “always sit at the sushi bar,” for ultimate taste and freshness. Ingredients 18 ounces (about 500g) flu e filet Rocoto chili paste (Other chili pastes can be substituted for Rocoto) Cilantro (coriander) leaves, stems removed 1 tablespoon plus 1 teaspoon yuzu juice 2 tablespoons plus 2 teaspoons lemon juice Sea salt Preparation Cut the fish into paper-thin slices.

Fan out the fish slices on a serving dish.

Add a small dollop of Rocoto chili paste on each slice.

Put the cilantro leaves at the center.

Drizzle the yuzu and lemon juice over all.

Sprinkle with sea salt to taste. Th flavor of this dish depends on the salt, so if too litt e is used it will taste bland.

NOTE: Eating the fish pieces together with the cilantro is a must.

e’s back, and we’re so glad! After a short hiatus, David Wilhelm is back and better than ever. David and his business partner, Gregg Solomon, have created a go-to spot for locals, complete with harbor views, friendly ambiance, welcoming bar, and of course delicious food.

Wilhelm has been in the dining game for over 30 years. He has made his mark with notable eateries such as French 75, Sorrento Grill, Chat Noir, Chimayo and Kachina as well as several other popular restaurants.

The opportunity for Tavern House kitchen + bar presented itself while David was enjoying some rare time off after moving on from his partnership with Jimmy’s Famous American Tavern. The owner of 3-Thirty-3 approached him with an offer that he couldn’t refuse. He immediately put away his golf clubs, called his buddy Gregg, and just like that, the band was back together.

Laura’s House celebrates 25 years of Silver Linings at annual gala

Return of Historically Low Rates

n what has become a tale of two narratives with respect to lead indicators, economists are at odds as to whether we can expect the best of times, the worst of times or something in between.

On the one hand, trade tensions and dropping bond yields portend an eminent slowdown in the U.S. and world economy and a heightened risk of recession. Another scenario, citing healthy consumer spending, strong business confidence, low unemployment and better than expected earnings, supports the no-recession narrative.

Complicating the recession narrative further was a positive revision on GDP recently even as global bond yields moved lower in the U.S., and more negative in Europe and Japan. While our own personal belief is the recession talk may be overdone, at some point, even with the U.S. economy in good shape, should the economic slowdown in Europe and China continue, the U.S. will be affected. This idealogy will play a role in the Fed’s September meeting. Odds favor another rate cut as the U.S. looks to keep it’s interest rates in line with the rest of the developed world.

Mortgage activity has picked up big-time as rates have returned to near historical lows.

While the high priced coastal housing market remains sluggish, we are optimistic the current low rate environment will motivate on the fence buyers. The drop in monthly payments from refinance transactions will also benefit the economy as more money will be available to purchase other goods and services. Given our belief about the resiliency of the U.S. econo-my, and given where interest rates are at the moment, it is hard to argue against locking-in purchase and refinance transaction as these levels. However, as evidenced by central bank policy in Europe and Japan, rates can go lower or even negative in today’s world.

he year 2019 will be remembered in the real estate world, for its mortgage rates that persistently and unexpectedly declined.

While rates aren’t going to plunge another percentage point – November’s average rate for a 30-year fixed mortgage was 3.7%, compared with 4.87% in the year-ago month, according to Freddie Mac. The average fixed rate is predicted to be 3.6% in 2020, which would be the lowest annual average ever recorded in Freddie Mac records going back to 1973. It compares with 3.9% in 2019 and 4.5% in 2018, according to Fannie Mae. The current record was set in 2016 when the annual average fell to 3.65%.

Mortgage rates are set, ultimately, by bond investors who keep a steely eye on inflation as a gauge of the yields they are willing to take. Rising inflation eats into their returns and leads to higher mortgage rates. In a low-inflation environment, like today, they can still make money while taking low yields, which translates into low rates for borrowers and support to the real estate market.

WITH THE RETURN OF THE ESTEEMED MICHELIN GUIDE TO CALIFORNIA EARLIER THIS YEAR, OC CHEFS ARE SEEING STARS.

range County’s vibrant and ever-evolving restaurant scene rose in prominence earlier this year when the prestigious Michelin Guide unveiled its inaugural California edition, with a reveal event held at the Pasea Hotel and Spa in Huntington Beach in June.

“Michelin is honored to reveal the 2019 star selection and to celebrate the talented California chefs and their teams included in the first statewide Guide in the U.S.,” stated Gwendal Poullennec, international director of the Michelin Guides. “California’s trendsetting, laid-back and health-conscious culinary scene continues to boom, and as a result is an amazing showcase for the great local produce.”

At the oceanfront celebration, a total of 90 California restaurants were awarded Michelin stars, including two one-Michelin-starred restaurants in OC, including chef Carlos Salgado’s Taco Maria in the OC Mix in Costa Mesa.

“The enticing scent of meat cooking over the fire and house-made heirloom masa tortillas on the griddle set the tone for an amazing experi-

ence,” noted Michelin Inspectors. Hana Re, chef Atsushi Yokoyama’s omakase restaurant, located at The Lab Anti-Mall in Costa Mesa, was also awarded a star.

Five restaurants in Orange County—Gabbi’s Mexican Kitchen, Garlic & Chives, Hiro Nori Ramen, LSXO and Mix Mix Kitchen Bar—were also named to the Bib Gourmand list, which is a subsection of the guide that highlights “restaurants that serve high-quality meals which include two courses and a glass of wine or desert for $40 or less.” Debuting in 1997, the Bib Gourmand acclaimed rating recognizes friendly establishments that serve good food at moderate prices, according to the iconic dining guide.

Additionally, several OC restaurants, including Newport Beach’s Marche Moderne, Bluefin and Javier’s, as well as Costa Mesa’s Vaca, among others, also received “The Plate” designation, which means “Fresh ingredients, carefully prepared, a good meal.” Launched in the 2016 edition of the Paris guide, The Plate Michelin recognizes restaurants that simply serve good food.

Receiving a Michelin star can have an immediate impact for a chef, often raising one’s profile to an eminent level. Michelin-starred Chef Craig Strong of Ocean at Main in Laguna Beach and formerly Executive Chef of Studio at the Montage in Laguna Beach, knows first-hand about earning the coveted honor.

“Earning a Michelin-star was one of the highlights of my career,” says Strong, who was bestowed a Michelin star for two consecutive years (2008 and 2009) while he was chef de cuisine at what is now The Langham Huntington, Pasadena.

“With the award comes such an incredible sense of accomplishment and pride, but it’s something you must then validate day after day, and year after year. Michelin’s standards pushes chefs and restaurants to become better by forcing them to maintain consistency day after day, year after year,” he says.

Strong also explains that twenty years ago, there were high-end restaurants and there were chain restaurants, the middle ground was yet to be defined. Today, diners want intention without the pretense.

“I created Ocean at Main as a convergence of both,” says Strong. “It’s a culmination of my 25 years in fine dining restaurants and luxury hotels infused with the warmth and approachability of a neighborhood restaurant. People like refinement, but they also want menus that have versatility. At Ocean at Main, we see guests ordering a beautiful salmon or sea bass, and at the same table, their dining companion is enjoying a burger or pizza, but one that is still executed by a Michelin-starred chef. We’re taking the spirit of elevated hospitality you’d receive at an ultra-fine dining restaurant and applying it to a more approachable setting.”
