START WITH HUMILITY AND GRATITUDE QUESTION: I’ve been with my employer for almost 10 years. Over the last four years I’ve received two promotions, but no increase in pay.

It’s getting to the point where I feel like the owner is taking me for granted. How can I approach him about a raise without jeopardizing my career?

The best way to ask for a raise is to first research your industry, and more specifically, your job title. Go in with an attitude of humility and gratitude — combined with the research you’ve done, and your accomplishments with the company — and ask what you need to do in order to make more money. Don’t issue an ultimatum, or ask for an answer immediately. Have a friendly, professional conversation, and politely ask your boss to give your request consideration.

Remember, you can’t control how he will react. All you can do is approach the situation with the proper posture and attitude. In many cases, that makes all the difference.

ANSWER: Trust me, we’ve all been in situations where we’ve felt we deserved better — or more. And sometimes we’re right. QUESTION: I’m in an unhappy place in my career. I don’t enjoy my current job, but I don’t know what I really want to do, either. How can I learn what I was made to do?

ANSWER: I believe it all starts with discovery. Once you realize who you really are on the inside, you can more easily begin to unpack and examine the things you’re passionate about and where your true talents lie.

I’m not talking about some kind of pat-yourself-on-the-back exercise.

I want you to sit down, and make a list of some serious stuff. Write out your talents, your weaknesses, what excites you, and the things that exhaust you. The answers to these four questions will help provide an early picture of what you should — and should not — be doing with your life. You might also consider running your answers by a close friend, someone who cares enough to want the very best for you, but is willing to be completely honest about your attributes.

There are four essential components of a human being: personality, passion, talent, and values. Once you discover what speaks to all of these, I think you’ll begin to realize your purpose in life.

A: Sure. It always depends on what kind of customer service you were doing and if you fi t the needs of a particular company for a specifi c sales job. Some companies need a lot of very specifi c experience while others are more willing to take a chance. You have to realize that your initial time in sales will be a learning and training experience. To quote sales guru Brian Tracy: “Start a little earlier, work a little harder and stay a little later.” People with a good work ethic will always succeed faster than those without.

Q: I am working full-time for a ride share company, but I want to apply my education to a better position. I was fi nishing a law degree in Afghanistan while I worked with the US military, but when I look at ways to do the same thing here, the laws are so different that my education and experience doesn’t count. I am still interested in learning more and want to become a citizen, because I need to support my wife and children. Are there other jobs that would be a good fi t for me?

career as a saucier is highly prestigious because it is the highest position of any of the station cooks.

This style of chef is found in the classic brigade style kitchens used in some of the larger restaurants and entertainment venues. It is the person who is responsible for creating all of the sauces, stews, soups, and may also be responsible for hors d'ouevres and sautĂŠing food to order.

The job description of a saucier chef is going to vary from restaurant to restaurant. In most instances, they will be responsible for preparing items as required by a daily menu. They will operate a variety of kitchen appliances and follow all job related duties as assigned to them by the executive chef and potentially the sous chef.

To take on the career as a saucier, it is important to attend culinary school. This is because any employer wants to see basic knowledge of sauce, soup and stock preparation. Some employers will even put a person in the kitchen for a day to see what they know prior to making an official job offer. The highest paying saucier chef is found in the larger resorts and well-known restaurants around the country. One needs to understand the job description of a saucier chef through and through in order to be prepared for what they are going to face on the job. Some saucier chefs will be able to have free reign over the sauces that they create while others will follow a recipe that has been approved by the executive chef. Many saucier chefs will be given very limited on-the-job training because they are supposed to know how to perform their job from the moment they walk through the door. If a person does not have a degree from a culinary school, it will be hard to learn about all of the sauces within the job.

Creating sauces and stocks is considered to be one of the hardest things that a chef has to do. Cutting vegetables, grilling meat, garnishing, and other tasks in the kitchen are visual. A saucier has to rely on their taste buds in order to develop the flavors and know when something else has to be added. The job becomes especially difficult when sauce is needed in a timely fashion - and this is why the position has prestige.

Serving food to the public is both a rewarding and fast paced career. It gives an outlet to creativity, and depending on the specialty can lead to direct customer interaction, such as a personal chef or a caterer. While these two careers sound similar, there are marked differences between the two and require different licensing guidelines.

Caterer:

Caterer and a Personal Chef

A caterer is a person or business entity who prepares food at one central location, like the main kitchen or commissary, and then transfers and serves the food at the location defined by the client. While the food is never completely cooked from start to finish on location, it may be assembled, finished, or plated for the client right before service. Caterers are not full service portable restaurants; they serve food to clients on a large scale in an efficient and timely manner. A caterer generally works with a client for a particular event, and creates a menu evolving around it.

Since food and beverages will be served on site, a liquor or alcoholic beverage license will be needed, along with any permits that are required for each event.

Some sites at a location require permits to be filed months in advance. In the main

kitchen where the food will be prepared, health and work safety inspections may be done, as well as filings for any health permits or any business license from the local, county, and state levels.

Personal Chef:

Preparing Food In Clients Homes A personal chef may sound similar to a caterer in that food is assembled or finished at a location specified by the client. However, the main difference between a caterer and a personal chef is that a personal chef will prepare food in a client's home from start to finish. While the cooking may be done on a large scale, such as dinner parties and holiday events, the personal chef generally works with one client or one client's family household for any given meal. The personal chef will work with the client in creating dishes based on the client's personal food preferences, and sometimes nutritional or religious needs.

Both catering and personal chef careers are rewarding and fast paced. Much of the paperwork regarding licensing is avoided when working as a personal chef, such as health and work safety codes, but should be examined with each municipality prior to starting the business to ensure all guidelines are followed properly.

A BURDEN TO HELP? Dear Dave, Do you believe the adult child of a senior citizen, who is physically and mentally healthy but has neglected to plan for retirement, should be burdened with providing financial assistance to that parent?

Robbie Dear Robbie, Based on the wording in your question, I can only believe you don’t think the adult child should be “burdened” to provide this assistance. My guess is you’re talking about one of your own parents. I understand that you might be aggravated with a parent who has been irresponsible with their money. But in my mind, there’s a bigger question. How big is the burden?

I talked to a guy recently who was making $1.5 million a year. He was questioning whether he should help his dad — an older man in poor health, who didn’t handle his money well — by giving him $1,000 a month. There’s no question you give that guy money.

You’re making millions, but you don’t want to help your sick dad?

Come on! But if you bring home $2,000 a month, and your family is barely getting by, you’re not morally required to financially take care of a parent who was irresponsible with their money.

It’s all relative. Do you have the money? Can you provide this help without placing an undue burden on yourself and your family?

If the answer is yes, you may be asking more about your own aggravation than any sort of moral obligation.

But no, you’re not morally obligated to destroy your own life, or your family, to take care of a relative who didn’t take care of themselves financially.

SEPARATE EMERGENCY FUND? Dear Dave, I’ve going to be debt-free with a full emergency fund in pace by the end of the year. I’m going to get a dog after that, but I wanted to make sure I did it the right way and was in good financial shape before making that move. Is a separate emergency fund for pets a good idea?

Scott Dear Scott, My wife and I love animals. We’ve had a least one dog the whole time we’ve been married. Still, I think a full emergency fund of three to six months of expenses will cover you and your pet.

You go through some expense as a pet owner, along with happy, wonderful times and heartbreaking things, too. We lost our golden retriever recently, and I can tell you that was really hard on everyone. You love them like they’re family, but you still have to use common sense sometimes, and remember that they’re animals and not human beings. Part of that includes spending reasonable amounts of money on them — and in some unfortunate cases — doing things with the animal’s best interest, not our own desires, in mind.

What is a reasonable amount? That depends on how stable you are financially. It’s really a ratio question of expense to means. But no, I wouldn’t recommend a second emergency fund just for pets.
