Crazy Good The real Boca Raton has a quality of life most can only imagine Written by MARIE SPEED

’ve noticed what I’ve come to call “Boca envy” over the past two decades from people living in other towns like Delray or West Palm or Pompano when this or that comes up in the news about Boca.

People invariably roll their eyes and say,“That’s sooooooooo Boca” and it’s never in a flattering way.

They make fun of Boca’s wealth and its upscale lifestyle and its valet parking and high-end restaurants and surgically modified women—the works. It’s a thing here, and we decided to have some fun with it in our Crazy Rich Boca feature in this issue (page 86). Yes, we do have a certain level of affluence; yes, we do drive nice cars and dine out several times a week; yes, we do enjoy the finer things in life. And sometimes it gets to the crazy rich level.

But there is that other Boca too, the real one, that none of the naysayers seem to acknowledge.

And it deserves a few shout-outs: • Boca Raton has five miles of pristine beachfront—no condo canyons—because the city fathers in 1974 were smart enough to buy it up before developers could get ahold of it.

• Boca was green before green was a thing. We were one of the first cities in Florida to recycle; we have special “turtle lights” during nesting season; we have 46 parks, miles of bike trails, are a tree city and use recycled wastewater for irrigation. Plus, we just hired a sustainability officer and have launched a new sustainability program called Coastal Connection.

• We have a robust and diverse business community, meaning we are not dependent on only one source of economic support—like tourism—for our survival.

• We have A-rated public schools, our own airport, three colleges, a thriving arts community and shopping and dining that attracts people from here to South America.

• Boca gives. Our philanthropic community is big and it’s off-the-charts generous, year after year.

And that’s just for starters. So yes, Boca can be crazy rich, but not in the way many people think.

Our real wealth has less to do with money and more to do with smart thinking, hard work and a shared vision that honors where we live.

That’s what I call rich.

WHAT’S IN A NAME? Ever wonder who’s behind the names of some of our roads and parks? Here’s what we know: BUTTS ROAD: In the 1920s, August H. Butts and his family owned a large bean farm in Boca on each side of Glades Road from I-95 to Florida’s Turnpike. The family ultimately sold much of its land to Arvida Corporation. Today, some of it is Town Center mall, Royal Oak Hills and Boca Square; other parcels were donated to Florida Atlantic University and St. Andrews Episcopal Church. Butts Road runs along the east side of Town Center, a tribute to the family’s contribution to the local economy.

CLINT MOORE ROAD: This road was named after road and paving contractor Clint Moore, who owned land in the western part of the county in the mid-1920s.

PALMETTO PARK ROAD was named after the“Palmetto Park Plantation,” a property owned by Harley Gates, Boca’s first judge. His house was on the northwest corner of what is now Palmetto Park Road and the Intracoastal Waterway.

SANBORN SQUARE was named in honor of William Sanborn, a dentist from Detroit, who owned that plot of land and eventually deeded it to the city.

This feathered concoction is the prefect afternoon wedding topper.

LYNN UNIVERSITY is named after its major benefactors, the late Eugene M. Lynn, and his wife, Christine, who is still active with the university.

MIZNER EVERYTHING: Boca is Mizner-ville, with many buildings named after society architect Addison Mizner, who put Boca on the map with his grand Cloister Inn (now the Boca Raton Resort & Club), which he built in the late 1920s, at the onset of the Florida land bust.

JUDGE WINIKOFF ROAD is named after Palm Beach County Circuit Court Judge Jeffrey A. Winikoff, the“unofficial mayor of West Boca,”who died in 2008.

wo years ago, ocean-centered artist Lauren MacLeod was, from a creative standpoint, drowning. At the time, the Boca Raton resident was juggling two artistic practices—as a photographer and as an acrylic painter—with substitute teaching. None of these careers fulfilled her, and the art foundered. Looking back on this transitional period, MacLeod can understand why.

“I did landscapes and portraits and abstract paintings, and it wasn’t my work,” she recalls.“My thought process back then was, paint what’s popular.

Paint what’s selling. It never worked out for me, and it’s because I was forcing it.”

Encouraged by her husband to embark on a different path, MacLeod, 32, closed her photography business, left teaching, and looked for a way to reboot her art. She discovered it in 2017 on the Ninth Street Boardwalk in Deerfield Beach:“I’m sitting there with my kids, and they’re playing in the water ... and there’s all of this trash underneath me that had been raked into the seaweed. It was just disgusting.

“And … it just clicked. I took a bunch of plastic trash home, and I played with resin-casting it. I poured it into molds and created some mixed-media art with it.”

MacLeod named her new venture Mermaid Trash, a line of oceanic wall art,

cutting boards, serving trays, key chains and bracelets, all designed from upcycled plastic and reclaimed driftwood from local beaches.

Her 8-year-old daughter, concerned that mermaids could no longer swim in oceans so polluted, is credited with coining the name.

Mermaid Trash not only generated financial success and renewed attention in MacLeod’s work—her Instagram followers shot from 5,000 before last September to more than 28,000 in 2019—but it transformed MacLeod into an eco-advocate. Proceeds from the sales of her art benefit ocean conservation efforts statewide, and she took part in 2018’s successful Strawless Summer initiative in Deerfield Beach. She continues to pay it forward by being transparent about her art process, posting time-lapse videos on YouTube so that others can replicate her work—and beautify their own beaches.

“Mermaid Trash, from the very beginning, was about teaching people and bringing awareness,” she says.“So when it came to my art, I said, I can’t covet one thing and be free with the rest. I need to share that wealth and knowledge too.”

Now, she says,“people are tagging me in their cleanup efforts. They’re collecting trash on the beach in the name of Mermaid Trash. It proves to me that making it about the mission and the art—and not about me— made all the difference.”

lena Klionsky knows all about playing through pain. In the fall of 2018, the pianist was just about to undergo her ninth surgery on her upper limbs—all resulting from an incident in 2015, in which she helped her father break a fall— when the White House invited her to perform at its Holiday Open House in December.

“I got [the invitation] the day before my

surgery,”she recalls.

“I said, ‘There’s no way in hell this is going to happen. It’s the biggest honor, being a Jewish immigrant and a refugee [from Soviet Russia]. We were exchanged for grain back in ‘74 when I was a child. So being stateless, being a refugee, then becoming an American, loving this country, and being invited to the White House—that was the ultimate gift. But ... this is so pathetic that I

finally get this enormous break, and I can’t do it.’”

Cut to five weeks later.

Klionsky, in a black evening dress, sat behind a gold-encrusted Steinway and entertained the White House’s executive staff for two continuous hours.

“It was hard and painful, but who cares?”she says.“It lifted my spirits so much, and I started believing in myself again.”

The performance is the latest career pinnacle for the part-time Boca

resident, who played her first concert at age 5, was accepted into Juilliard at 10 and performed at Lincoln Center while in 11th grade. Her professional breakthrough came at age 19, when she played a concert alongside Itzhak Perlman and the Chattanooga Symphony Orchestra, and over the next several decades became an internationally renowned concert pianist.

In the process, she’s had to endure multiple physical hardships. In 2002, following a concert in New York City, she suffered a severe injury to her right hand that required two surgeries and years of physical therapy, not to mention the emotional toll of being unable to perform.

Then, in 2015, she tore both shoulders, rotator cuffs and biceps, and was sidelined, on and off, for four years.

When she couldn’t play, Klionsky wrote a book, Wisdom From My Teachers, a guide for musicians who have faced setbacks and are looking to jump back into the fray. Her own comeback has earned her a poignant nickname: the Piano Phoenix.“It’s been like a roller coaster,” she says.“The difficult thing is you get depressed. But ... I discovered that I love it so much that I have no life without my piano playing. I’m not me if I don’t play.”

fter a weekend away in Miami Beach, 14-yearold Ely Factor came home to a surprise: a completely made-over bedroom. Inside were bunk beds for him and his twin sister, a Miami Dolphins locker, an oversized bean-bag chair, a graffiti wall, a mini fridge and sports memorabilia.

“Oh my god! Oh my god!” he yelled out.“It’s like a man cave!”

The room was made over by Special Spaces Boca Raton, a nonprofit that transforms the bedrooms of children with life-threatening cancer, heart conditions, brain tumors and organ transplants. Ely had been battling bone cancer for two years, and as things

are looking up, the new room has been the icing on the cake.

“Where does a child go after all the hospital visits and after the doctors’ visits? They go to their bedrooms. So we try to give them the bedroom of their dreams,” says Peggy Peterson, director of Special Spaces’ Boca Raton chapter.

Since the national nonprofit launched in 2004, chapters across the country have transformed more than 1,000 bedrooms. It was just days after Peterson formed the Boca Raton chapter that it received its first makeover request: a teenage girl named Marissa with Rett Syndrome, a genetic neurological disorder that affects a person’s

ability to speak, walk, eat and even breathe.

Peterson collaborated with her friends from St. Jude Catholic Church to raise $6,000. Marissa used her eyes to communicate through an iPad, helping the team create an inviting, brightly colored bedroom and therapy room—complete with framed Justin Bieber poster. When it was revealed, Marissa immediately lay in her new bed.

“Her mother said that [means] she loved her room,”Peterson says.

“That touched our hearts.

We were all crying.”

Since then, the Boca Raton chapter has completed makeovers for 11 more children—filled with princesses, superheroes, anime characters

and more. In November 2018, Ely and his family were treated to VIP tickets to a Dolphins game, and when he returned home, his room was one fit for a sports fan.

“It was beyond incredible, just to see all these selfless people come together,” Nancy Factor, his mother, says.“He wakes up with a smile, and he goes to bed with a smile.”

Ely was diagnosed with bone cancer when he was 12. His football and basketball playing came to a screeching halt as he underwent chemotherapy and six surgeries.

Today, he’s cancer-free.

“We’ve just had a long couple years,” Nancy says.“His only wish or goal was to be a kid again. So I think this was the essence.”

ack in 1990, IBM’s newest rollout looked like a glorified cash register—which it was. But its glories are still being appreciated today.

The tech company’s 4650 Point of Sale Register, developed in IBM’s storied Boca Raton plant in the late 1980s, was the first touch-screen interface of its kind. It would open up a universe of possibilities that continue to ripple across every iPhone, iPad—pretty much any screen that’s activated by your finger.

As mechanical engineer Ray Trombley, the device’s product manager, recalls, the technology evolved as a solution to a customer’s problem. That customer was Burger King, headquartered in Miami. The fast-food giant sought a more efficient process for placing customers’ orders.

Trombley oversaw the product’s gradual refinement over a two-year period. Twenty hardware engineers and 18 software engineers spent two years working under him in the Boca facility to create a countertop terminal that allowed restaurant employees to tap in orders with their hands.

“It started with a Burger King cash register and moved into a technology base, so that in 1990, at the National

Restaurant Association show in Chicago, we unveiled our new product,”Trombley says.

“You couldn’t get into our booth.”IBM made its interface available to third-party software developers, and touch panels are now the standard operating procedure for industries worldwide.

Trombley retired in 1993, at age 53, and he still lives in Boca Raton.

He started off in aerospace, repairing memory boards for Project Gemini. But he is wary of accepting too much praise.

Among his hundreds of fellow-employees, he is quick to credit Ernie Galinas, Lou Teti and Dr. Pat

Panacidi for the product’s successful rollout. He’s even humble about the touch panel’s historic innovations.“Nothing’s been invented,” he says.

“Sometimes the technology’s there; you just have to have a group that goes, ‘now’s the time to grab everything and put it together.’”

“E

verything I learned at the carnival has helped me be successful at the YMCA,” says Jason Hagensick, CEO and president of the South County YMCA since 2016, after the retirement of longtime CEO Dick Pollack.

Hagensick is the fifth generation of the Texas Hagensick family, which has owned a traveling carnival in the Midwest and West for five generations. He has memories of summers traveling through Iowa, Minnesota, Colorado and points in between with the show.

“When I was younger we’d be in one of the [carnival] games,” he says.“That was a way for my parents to babysit us. They would know exactly where we were at all

times. We learned how to make change, how to count, how to deal with customers. How to have responsibility.”

And they were all lessons that he has applied over his almost 30 years working for the YMCA. Hagensick“fell in love with the Y” when he was 18 and volunteered as a coach in the Y’s local basketball league. He started his formal career at the front desk of the Corpus Christie Y in 1989, working in Southern California, Texas and Chicago after that; he met his wife at the San Antonio Y. He joined the Boca Y almost three years ago and is committed to its holistic approach, serving people“from

the moment they are born all the way up to the end of their lives.”

Notable programs include the water safety drowning protection program for small children, bike safety programs, as well as a battery of programs aimed at the elderly, including a Parkinson’s option. He says he is focused on the “overall strength of the community,” as well as the Y’s longtime spiritmind-body ethos. This summer, the Y will offer a full roster of activities, from camps to classes (visit ymcaspbc.org/summercamp). The Boca Y currently serves 70,000 people, and Hagensick knows it’s time to expand its campus, launch a new location in Delray and expand the Boynton Y—all high on his YMCA wish list.

ot to admit it: I didn’t even know Tequila was a town.

I knew tequila had to be made in Jalisco, Mexico, to merit the name, and I was in Jalisco to see the liquor being made, but that my favorite beverage was named after an actual place—I had no clue. From Guadalajara, the best place to fly into if you are visiting Tequila, our bus passed through miles of sandy-colored scrubland.

Then we topped a hill and saw a solid blue vista stretching to the mountains. It looked like a lake, but it was field after field of Weber blue agave, the only kind used to make premium tequila. (It really is blue.)

Agave is an unlikely-looking crop—and a scary one. When we met the jimador (agave harvester), he warned us repeatedly about avoiding the plants’ spikes. Armed with his coa, a long flat knife like a machete, he showed us the techniques for pruning agave. The leaves are trimmed every year with a different cut until they mature— eight years or so. He harvested the piña—the pineapple-shaped fruit that weighs around 100 pounds when ripe—and let us taste the

raw fruit. It tasted a lot like wood and was about that juicy. It’s hard to see how anyone could envision making a drink out of this dry stuff.

But of course they do, after a lot of roasting and mashing and sieving and aging. We sipped lots of tequila flights in Tequila—most of the distilleries offer tours and tastings of everything from silver to anejo to reserve—and came away with an even higher regard for the magic liquid.

But there’s more to Tequila than tequila, though everything from murals to motorcycles bears the emblem of the agave. The town— founded in 1530—is built around a central plaza anchored by an 18th century church, Our Lady of the Purísima Concepción, whose bell rings every evening. The tiny cobbled streets wind past open doors of shops, bars and restaurants as the day begins to cool. The costumed voladores set up their pole and perform the ancient Mayan dance to appease the rain gods, a ritual now preserved as Intangible Cultural Heritage by UNESCO. In fact, the whole town of Tequila is designated a World Heritage

site by UNESCO. That doesn’t mean it’s lacking in modern luxury—the Relais & Chateaux Hotel Solar de las Animas, built in traditional colonial style around a courtyard, has an antique charm, but the beautiful pool, serene rooms and excellent food are completely 21st century.

Not far out of town is evidence of the ancient culture that first settled the area and, perhaps, made pulque from the wild agave.

Rediscovered in the 1970s, the site wasn’t excavated until the ‘90s.

Los Guachimontones, circular stepped pyramids arranged in a circle, were made by the Teuchitlan people around 200-300 C.E. The weird mounds are believed to be cosmograms—mythological maps of the universe. In a hole at the apex, worshipers erected a pole and performed rituals much like the voladores do today.

Who knew? Again, I didn’t. Like most Norteamericanas, I know more about the kings of England than I do about the history of our neighboring country. I came home from Tequila with two goals: 1) Learn more about Mexico. 2) Drink more tequila.

Veterans’ Best Friends

Military vets have told a researcher that dogs give them purpose and save them from self-harm—and she’s proving it in studies Written by LISETTE HILTON

ears before becoming a professor in Florida Atlantic University’s College of Nursing, Dr. Cheryl A. Krause-Parello says she knew there was something powerful about the human-animal bond.

Krause-Parello turned the theory into a research initiative called Canines Providing Assistance to Wounded Warriors (C-P.A.W.W.), aimed at studying how that bond and other interventions might help struggling, sometimes suicidal, military veterans.

“It’s really taking a deep dive into how the animals help veterans stay tethered to society,”she says.

It was Krause-Parello’s husband, David, who piqued her interest years ago when the couple lived on Staten Island. David, a Marine Corps veteran, was a first responder during the 9-11 rescue and recovery effort.“As soon as the first tower got hit, he was down at Ground Zero,” she says.

David Parello remained at Ground Zero for the next year and a half, searching through the rubble for remains. Krause-Parello remembers her husband coming home from work every night, showering, eating dinner, then

Krause-Parello’s pursuit of scientific evidence is what’s needed to change policy and get funding, for example, for veterans with post-traumatic stress disorder (PTSD) who might benefit from specially trained service dogs. Service dogs not only help wounded veterans with their daily lives but also sense post-traumatic stress symptoms or anxiety, helping to refocus troubled veterans. These dogs might nudge veterans, walk next to them, stare at them or, in the case of big dogs, put their paws on veterans’ shoulders.

“It’s like they’re snapping the veteran back to reality and bringing them to the present to look at them. It is amazing to watch them do this,” Krause-Parello says.

But to train a service dog can cost up to $30,000, an expense that isn’t covered for veterans coping

sitting silently while petting the family dachshund, Samantha (Sam).“I knew he was experiencing a lot of stress from what he was seeing and what he was finding in the rubble. And it was almost like every time he pet her he was petting his trauma away,” Krause-Parello recalls.

She later asked her husband about his time with Sam. David said Sam provided calm: She was always there, she didn’t ask questions, she was nonjudgmental. It was a beautiful and authentic relationship.

Krause-Parello, a nurse researcher, started C-P.A.W.W. in 2013 with the aim of better defining the relationship medically and psychologically between veterans, their dogs and potentially other animals. The research started when she was at the University of Colorado, and continues at FAU.

Krause-Parello is trying to engage people who might want to invest in her nonprofit research. While most of her work is on the human-animal bond in veterans, she and her team are also conducting studies looking at the ancient Chinese practice of qigong and yoga as interventions for at-risk military members.

Local veterans can also get involved; Krause-Parello says she’s always looking for veterans to partner in the research process.

The founders of a new fitness app espouse the benefits of a lean lifestyle Written by LISETTE HILTON

H

e was a collegiate and pro tennis player. She, a model. Together, Jon Pearlman and Lyuda Bouzinova have created Mission Lean, a sustainable lifestyle program of workouts, meal plans and tips for being lean and healthy. The Boca Raton residents are young— Pearlman is 30 and Bouzinova 32.

But they’ve experienced elite sports training, body image issues and more in their quests to be healthy and fit. In 2019, the pair launched the Mission Lean app available on iTunes, which for $19 a month offers members fat-burning high-intensity interval training (HIIT) workouts, clean-eating plant-based nutrition and more.

Pearlman was playing singles tennis at Harvard when he realized that collegiate strength and conditioning, which often focuses on the needs of football players, doesn’t get the best results for tennis players and other athletes who rely less on force and more on agility, flexibility and quickness.

“I struggled as a young player with fitness, and I was always trying to figure out a formula for

how I could get an edge over my opponents,” he says.“That’s when I started to become focused on the lean body fitness approach.”

Today, Pearlman, author of The Lean Body Manual, describes his approach as “shorter training but intense.” He says,”You’re raising the heart rate and basically burning fat way after the workout.”

As a model, Russian-born Bouzinova learned different lessons about true fitness. She says her goal as a teen and young woman was to be as thin as possible.

“I always equated being thin with being healthy,” she says.

“People were just trying to eat fewer calories and burn as many calories as possible. Eating fewer calories than you need to sustain your body is so unhealthy. When I think about it, I feel so upset with myself that I did this to my body.”

Her goal has gone from thin to healthy lean.“Yes, you’re probably going to lose weight doing this program, but that’s just a byproduct of getting healthy and staying injury-free,” she says.

Bouzinova, who has a bachelor’s degree from Boston Univer-

sity and a master’s from Fordham, met Pearlman nearly eight years ago at a track workout in Boston.

The two have been making lean fitness magic ever since.

For the last few years, the duo has become certified as personal trainers, built a social media following and honed their Mission Lean approach, adding a nutritional component with recommended meal plans and recipes.

The program doesn’t eliminate food groups or require steep calorie cuts, they say.“It’s basically single-ingredient foods, like a lot of produce, grains, fish. You can eat meat. We don’t really have a lot of meat recipes, but we don’t say not to,” Bouzinova says.

There are separate workout programs for men and women that take from 30 to 45 minutes.

The HIIT workouts continue to burn calories long after the exercising is done. And participants can do the workouts anywhere— in most cases without having to frequent a gym.“The idea is you want to get people in the habit of training like this so it becomes a lifelong thing,” Pearlman says.

of her grandmother and many Seminole tribe members. The archival outreach eventually helped launch the Ah-Tah-Thi-Ki Museum (her former husband David Blackard was its first director), and today, Patsy West has assumed the mantle of ethno-historian, tribe archivist and chronicler of Florida Indians, based on her decades of painstaking research.

She is now writing her sixth book and has penned hundreds of articles for the Seminole Tribune. She knows everyone in the tribal community as well as Florida’s historical one, and is arguably the leading authority on the Seminole and Miccosukee tribes. We met with West to take a look at her Indian art collection, and to listen to her insights on growing up with the state’s native population.

How she became involved with the tribes: Because of my great-granddad and his friends, I just picked up with the grandchildren of those people. I was like more of an insider when I first started my career than anyone else was. As a result of being accepted, I have spend the last 46 years with the people—Miccosukee people and the Seminoles. … The people who speak the Miccosukee language represent 70 percent of the entire population of recognized tribal peoples in Florida.

Difference between Miccosukee and Seminole tribes: The Miccosukee have been traced back to the northern part of the Florida peninsula from 1540, when Desoto came through, and they have always utilized the peninsula for hunting. They lived on the islands in the Everglades. And they continued to do that before the Seminole wars and after the Seminole wars when my family knew them. They are the native Indians. The Creek (who became part of the Seminole tribe) lived in Southern Alabama.

All the books and popular and professional textbooks say [the Seminoles were driven into the Everglades], but nobody went back to check the facts, and that’s what I’ve done, because that’s what I’ve done with my life: record the history.

[The Seminole name] was not put on them by themselves—it is a name that was put on them by the U.S. government because of the Seminole Wars. It’s a shame, really, but that’s the way it went. Because none of the history was written (it was an oral history), how can you know it then?

There was a break with the people along the Trail and the people who came onto the federal reservation in the 1950s. This division between the Seminole Tribe of Florida and the Miccosukee Tribe of Indians of Florida occurred because of the federal recognition of the Seminole Tribe of Florida as a federal entity. [The Miccosukee did not go along with that], so they had to form a tribe themselves. But the United States wouldn’t recognize them, so under Council representative Buffalo Tiger (acculturated from his time working in the economic atmosphere of the Miami tourist attractions) a contingency of men were invited to Cuba to

be recognized by Fidel Castro. This event called attention world-wide to their plight, which translated as great political leverage. As a direct result, the embarrassed U.S. Government recognized these traditional people as the Miccosukee Tribe of Indians of Flordia in 1962. Those are the last holdouts, and they formed that tribe to protect their interests.

That’s why the Miccosukee Tribe is separate. ...Those are the last holdouts, and they formed that tribe to protect their interests.”

On Miccosukee art: In the ‘20s, they created their art for themselves to wear. And what David Blackard found out was about every 10 years, patchwork has an evolution and moves into another phase, so you can literally categorize it by decade. … People always go back to designs they love, but there are markers you can see.

During the tourist era, they started selling baskets made out of sweet grass and embroidery thread, and some of those got quite exciting during the ‘70s where they put sort of pyramidical designs in, but the patchwork is old and bright and definitely their major art form.

On her relationship with the Indians: They are not “they”—they are my friends. They realize that the other people—the ones who consider them a “they”—do not know anything about them. And they are coming in with all kinds of misinformation. I’ve just always been there ever since the ‘70s; Chairman James Billie has been my really good friend for years.

I just do my work. They know I know is the whole point. That’s usually what they say: “She knows.”

And I do know. I know a lot of things that are for public use and for private use. Let’s just put it that way. Because I’ve been with the families for a long time. And I write whenever I can, because it solidifies it for the outside culture off the reservation, and it helps people understand more. … My reason for writing is for the people.

The reason they are so different is that they have never been defeated; they have never been placed on a reservation under somebody’s thumb. They have always been free people, and they will always be free people. They have none of that mentality of being put upon. They are truly their own people. That alone has made them who they are. They are very staunch in their beliefs.

Naturally, everyone maintains that homemade sauce is the best. But when you check all the foodie websites ranking top store-bought sauces, two pop up in first or second place time after time: Don Pepino and Muir Glen.

What you are looking for in a good sauce is basil (very important), followed by other spices as well as tomatoes, garlic, onions, salt and olive oil. There should be no more than a few grams of sugar and, ideally, no additives or preservatives.

And although homemade dough is always best, for most of us mere mortals you can get readymade pizza dough at Publix, Trader Joe’s, Whole Foods, Doris Italian Market and on and on. Our friend and Italian cook Joyce Shelfo says Publix will even roll out the dough for you. Former Palm Beach Post food writer Jan Norris says most pizza places will also sell you dough. For a basic dough recipe, turn to page 84.

You can get fresh shredded mozzarella from Joseph’s Classic Market and Doris Italian Market, among many others.

Pizzas can be topped with any number of things—standard is mozzarella, tomato sauce, pepperoni or sausage, mushrooms and fresh basil, but anything goes when it comes to pizza.

Tips

“Use parchment (make the pizza on it and place into hot oven directly on the stones/ steel). It makes moving the pizza easier.

“If you use fresh mozzarella you’ll need to ‘dry’ it first, or it will make your dough soggy.

(Squeeze the ball in a paper towel.)

“I like to ‘par bake’ my crust for just a couple minutes to ‘set’ it, then remove from oven and dress for final baking.

“Sprinkle dough with olive oil and freshly grated Parmesan or Locatelli Pecorino prior to par baking. This will act as a barrier for when you put sauce on the dough and keep it from getting soggy.

“Use very little sauce; a little goes a very long way for pizza—don’t drench the dough.”

83 Must-Have Tools For Pizza Making According to seriouseats.com and other sources, these are your basics: STAINLESS STEEL BENCH SCRAPER: A bench scraper is great at scraping up leftover bits of dough and flour stuck to your counter, getting up those last bits of garlic for the sauce, even splitting up large balls of dough. A good multipurpose kitchen tool.

PIZZA STONE OR BAKING STEEL Pizza stones are great, but some cooks swear by a baking steel, which is more conductive and can get hotter, which translates to crusts that are crispier, with a better char (which we like).

PIZZA PEEL This tool is intended to “launch” the pizza, meaning it is the thin blade that you slip under the pizza to get it into the oven, and then to retrieve it when it is ready.

It has to be thin enough to slide under the pizza, but durable enough not to eventually bend or warp. We hear wood is a better bet than metal (dough sticks to metal more readily), and two good peels are Perfect Peel Bakers Board in cherrywood or the KettlePizza Pro Peel in teakwood and heavy-duty aluminum.

PIZZA WHEEL This is the best way to cut pizza. Period. You can buy pizza wheels anywhere from Home Depot to Sur la Table.

84 Dough Recipe NEAPOLITAN PIZZA The classic pizza is a Neapolitan pie, thin with a crispy crust with an interior described by Seriouseats. com as “moist, poofy, and cloud-like.”

INGREDIENTS 20 ounces (about 4 cups) bread flour, preferably Italian-style “00” 4 ounces kosher salt (about 4 teaspoons) 3 ounces (about 2 teaspoons) instant yeast 13 ounces water Combine flour, salt, and yeast in a large bowl and whisk until homogenous.

Add water and incorporate into flour using hands until no dry flour remains on bottom of bowl. Cover bowl tightly with plastic wrap and allow to rise at room temperature for 8 to 12 hours.

Turn dough out onto lightly floured surface, and divide into four even balls. Place each in a covered quartsized deli container or in a zipper-lock freezer bag.

Place in refrigerator and allow to rise at least 2 more days, and up to 4. Remove from refrigerator, shape into balls, and allow to rest at room temperature for at least 2 hours before baking.

85 Baking the pie

Dish.allrecipes.com lists these steps: 1. Preheat the oven. Generally, the hotter the oven, the better the pizza will be. The best oven temperature for pizza is between 450 and 500 degrees F (250 to 260 degrees C).

Large, thick-crusted pizzas might need an oven temperature closer to 400 degrees F (200 degrees C) so the crust can cook completely before the toppings burn.

Place your pizza stone or pizza blade on a lower oven rack. You can also use the grill to bake your pizza.

2. Form the pizza dough and place it on a peel dusted with a little flour or cornmeal. Brush the crust with olive oil to help ensure a crispy crust.

3. Slip the loaded pizza onto the hot pizza stone/blade in the heated oven.

TIP: Jiggle the peel to make sure the pizza isn’t sticking.You want it to slide off the peel easily. If it’s stuck, gently lift the sticky dough and dust with a wee bit more flour or cornmeal.

Place the tip of the peel on the edge of the stone/blade at the back of the oven. With one swift motion, jerk the peel back out from under the pizza. If the pizza slides freely on the peel, it should land perfectly in the middle of the pizza stone/blade. If the pizza sticks to the peel, your toppings will slide off the pizza onto the stone, which you do NOT want.

Close the oven door and let the pizza bake.

4. After 5 minutes of baking, check the pizza. If some spots are browning faster than others, turn the pizza; slip the peel underneath it like a giant spatula. Rotate the pizza on the peel and return it to the baking stone/blade using the same swift motion described above.

If you like, remove the pizza from the oven halfway during baking to brush more oil on the crust. This added oil will help darken the crust and make it even tastier.

5. The pizza is done when the cheese is melted to a medium-to-dark brown. Color means flavor. Carefully remove the pizza with the peel and let it cool slightly. If you want, top it with additional fresh toppings. Slice with a pizza wheel or chef’s knife, and serve.

t was late, maybe 2 or 3 in the morning, and Gerry Kinnard could feel the pitch-black Florida swamp closing in, beckoning him, like a warm sleeping bag. Maybe he could just take a quick nap in the underbrush. But he knew he had to keep pedaling.

Below him, the ground had turned to sugar sand, and his mountain bike’s meaty tires struggled for grip, like he was on ice.

He was somewhere in the Ocala National Forest, perhaps down the wrong path, maybe just downright lost. Fatigue had sapped his ability to think.

98 Two years earlier, Kinnard would never have imagined himself lost in a Central Florida forest. A West Boca operations manager at a marketing company, Kinnard had been dangerously out of shape. When he hit

270 pounds, he vowed to change that. He got himself a trainer and set a goal he had always thought just sounded cool: biking across Florida.

He did training runs by riding the sidewalk along Palmetto Park Road,

all the way to the ocean and back, or on top of the hundreds of miles of gravel levees that hold in the Everglades. He also became president of FORCE, Florida Off Road Cycling Enthusiasts, a group that raises money to maintain local bike

trails, including West Delray Regional Park. After six-day-a-week workouts and a 90-pound weight loss, he’s now 52 and in better shape than many teenagers.

Kinnard set out in December 2017 on his first Central Florida Individual Time Trial, or CFITT. With 100 other serious cyclists, Kinnard dipped the back wheel of his bike in the ocean near New Smyrna Beach. If all went well, he’d ride his front tire into the Gulf three days later, having stopped for little more than a bathroom break along the way. CFITT isn’t a race against others as much as it is against yourself; the rules require timed riders to accept nothing from anyone else—not food, not even water.

Working with his trainer, Kinnard developed a system where

he’d consume calories every 30 minutes to keep his energy up. But sometime late that night, with perhaps 100 miles behind him, he just forgot to eat a scheduled rice cake and banana. It was enough to cause his system to nearly crash.

“It got to the point where you’re on the bike and you fall asleep, and you luckily jerk yourself awake before you fall,” Kinnard said.“That’s when you start looking for bushes to fall asleep in. But somehow you keep pedaling.”

Part of his desire— maybe need—to finish was because he had told everyone he knew about his plans. He couldn’t come back to Boca having failed.“When I hopped on the bike that morning, I was going to finish, period.”And so, he powered through, the sun rising behind him the next morning between the Florida lake country slash pines.

Thirty-nine-and-ahalf hours after he began, Kinnard rolled his front wheel into the Gulf near Yankeetown.“When I finished, the sense of accomplishment was incredible,” Kinnard says.

“We go to work every day and just sit at a desk and send emails, but hey, here I am, I just rode across Florida.”

This idea of traversing Florida has lured adventure athletes for years. Like Kinnard, they bike, hike, run, kayak,

99 paddleboard or a combination of all of that, on their way from coast to coast. For years, they’ve plotted routes through unwelcoming coastal traffic and even less hospitable forest trails, some that receive little maintenance, requiring adventurers to constantly cross downed trees.

But soon going across Florida will be far easier.

The state is expected, perhaps in as little as two years, to open the first-ever cross-state path for cyclists and run-

down to sketch out what the route might look like.

They call it the Florida Coast-to-Coast Trail.

“At the time, we were just drawing lines on a map to connect the existing trails,” recalls Samantha Browne, chief of the Office of Greenways and Trails within Florida’s Department of Environmental Protection.“It was a fun little project to imagine what it could look like.”

The plan was ambitious and, they’d soon learn, far harder

and approvals.

Years later, it’s still unclear how to cross either of those spots.

In Sumter County, lots of potential trails have been mapped out, but the plans have been hung up by locals who don’t want to pay for the minimal yearly maintenance after they’re built.

And on the eastern end, the federal government has forced the state to consider joining the trail with the main road that heads into the Canaveral National Seashore, a

In 2014, the Florida Legislature dedicated $50 million to fill in gaps in existing paved biking and walking trails to connect St. Petersburg to Titusville. State transportation planners and bike and pedestrian advocates sat

The 250-mile route they sketched had 70 miles of missing pieces.

Among them was a 22mile stretch in Sumter County that would need an entirely new paved trail through who knows where. Then, on the far eastern side, the protected land within the Canaveral National Seashore would present a morass of paperwork

Last April, the Vero Beach adventure company Genesis Adventures held the first running race on the Florida Coast-toCoast Trail. Owner Brian Duncanson says he was inspired by Oregon’s Hood to Coast race.

“People want an epic sort of journey to take them out of their everyday lives,”he says.“We thought we could do that here in Florida.”

200-mile stretch of the trail from Clermont to Brooksville. Teams of six to 12 people endure legs of about 5 or 6 miles, running nonstop through the night. The first year a hundred runners from as far away as Texas and Chicago participated, and he planned a second run across the state this past April.

That start is better than the first run of the CFITT race, which attracted just 10 people when it began nine years ago. That year, just two of the racers finished, and one of them was the race organizer, Karlos Rodriguez Bernart, owner of Singletrack Samurai Productions of De Leon Springs. Now, about 40 percent of the 100 people who tackle CFITT yearly end up finishing.

The idea of making the race one where participants cannot accept help from anyone else was a throwback to the races of yesteryear, Bernart says.“We wanted to go back to the way the Tour de France and other historic races were run. No support teams and chase vehicles, just a person on a bike trying to finish.”

There are no trophies at the end, no medals.

“Nothing but a thumbsup, that’s it,”Bernart says.

Heading into December’s CFITT, Fort Lauderdale graphic designer David Bohl was planning

his third attempt. Last time, he managed to finish 300 miles in 36 hours. The toughest part of that ride, though, was the cold, dipping below freezing and causing one rider’s eyes to gloss over. In the middle of the night, somewhere in small-town Florida, he stopped in to a police station, where they diagnosed him with hypothermia.

Bohl got into endurance racing a decade ago, not long after he got into biking. He’s 48 now, and he says racing across Florida is like fighting getting older, like denying the idea of slowing down by literally speeding up. He’s even picked up sponsors now, including BikeTech shops and Salsa Bicycles. He figures he can continue until he’s 65, at least, and he has

plans to someday bike from British Columbia to Mexico and to compete in a ride that unbelievably is even longer: the Florida-Alabama border to Key West.

“At some points, yeah, it’s physically difficult,” Bohl says.“But in some ways it’s easier than what life throws at you, you know? You can discover things about yourself out there that you didn’t think you could do.”

Kinnard managed his first CFITT with help from Filippo Barbieri, a Delray exercise physiologist with the SpeedLab National Training Center.

Barbieri works with everyone from Olympic athletes to people battling depression to weekend warriors looking to tackle some life’s goal. It’ll cost about

The success Kinnard had, dropping nearly three digits in weight and turning into an ultra-race cyclist, is something Barbieri sees as among his best accomplishments.“That’s worth 10 gold medals to me.”

In addition to supporting arts organizations behind the scenes, the Council has expanded its own events in recent years, from its monthly in-season Culture & Cocktails conversations with arts luminaries to the gallery space in its Lake Worth headquarters, which showcases edgy work from Palm Beach County artists.

Lawrence sees a sunny future for the arts in the Palm Beaches, noting that 31 cultural institutions are in the planning or implementation phases of major capital expansions and improvement programs. But he’s also fighting storm clouds in the form of draconian budget cuts to the arts, enacted last year, that have affected cultural organizations statewide. He comments on these and more with Boca mag.

Last year, Florida’s government slashed arts funding tremendously. How has this affected arts institutions in the county?

The cuts the state made have been drastic—a 90-percent reduction to the funding. They’ve had an enormous impact.

apply for up to $150,000 in grants were getting $8,000 and $9,000 instead. That means reduction in services, reduction in programming, reduction in the number of people served.

Cultural institutions do come here for help.

We have been working with cultural organizations in a committee

we’re calling the Cultural Coalition, that is working on a number of legislative priorities, the first of which is to restore that state-level funding.

What was the state’s justification for the cuts?

I can probably surmise that it’s the usual—that the arts are“nonessential.”That is the story we hear across the country.

It’s imperative for us to be able to make the arguments about how the arts help in education, in crime prevention and streetscape beautification, and help build business by attracting and retaining talent to our communities. Look at the economic impact in Palm Beach County—$633 million every year.

What are the new happenings this year in the arts in Palm Beach County?

One of the biggest is the opening of the Norton.

I don’t think we fully appreciate yet just what that institution alone is going to do for culture in the Palm Beaches. Their opening season of lectures and performances and art-making activities … is going to transform the way the arts are delivered. You can see the change in the businesses in that neighborhood, which they’re now calling the Norton District.

That’s what culture can do for a neighborhood, and for a city, and for a community.

Are there cultural areas that could be better represented in Palm Beach County?

What I would like to see is more culturally specific organizations.

It would be great to see African-American dance companies and Latinx music groups throughout the county. I’d like to make sure that we are, in all our cultural forms, representing all of Palm Beach County.

Does the Cultural Council also support for-profit entertainment—like the West Palm Bach Amphitheatre or Palm Beach Improv?

We do need to think as broadly as possible about the cultural sector, and find ways to … connect people to experiences. The public are not making the nonprofit/ for-profit distinction.

When a cultural experience nowadays can be an evening out at dinner—which is what a recent study from Americans for the Arts showed—we have to think about craft beer, culinary experiences, for-profit galleries and concerts and those kinds of activities as cultural experiences, too.

ave Lawrence grew up in a culture-saturated home in his native Indiana. His parents would take him to museums, and Broadway musicals played in rotation on the home stereo.

His own artistic talents would be just as eclectic. He started playing cello in the fourth grade, and he later mastered the saxophone and acted in community theatre. But it’s in the advocacy side of the arts that Lawrence would forge his career, spending nine years at the helm of the Arts Council of Indianapolis. And in August 2018, he succeeded Rena Blades as president and CEO of the Cultural Council of Palm Beach County, the civic organization tasked with championing, engaging and

or most, well-rounded dining options means there’s a great Chinese restaurant nearby. Or at least within delivery distance.

Palm Beach hasn’t had that.

There are Asian fusion venues (not the same thing), or good Chinese places across the bridge. Then Hai House opened in late 2018, on Worth Avenue no less. Hopes were Hai (sorry) that this would take care of a General Tso’s craving in the middle of perusing investment statements. Plus, Hai House delivers.

And its pedigree is very good.

Executive Chef James Strine, who recently left Hai House, was a Buccan, Grato, and Boulud alumni seeking an American-Chinese take on moo shu pork and Peking duck. It’s financed in part by Manny Bornia, known for bringing the short-lived and much-lauded Basque Spanish mobile kitchen to West Palm’s Biba.

So what Worth Avenue ended up with isn’t supposed to be car-

bon-copy Chinese, although even with that caveat, diners still insist on comparing it to their favorite New York takeout. On this menu, you can at least find some dishes made in a familiar style.

First on the table are addictive, crispy wonton noodles and three sauces: sweet duck, zingy mustard, slightly zesty chili oil. The cold sesame noodles ($7) are refreshing and silky with a bite of cilantro.

The three pieces of crab Rangoon dim sum ($12) in chewy dough squares have a stone and lump crab filling with cream cheese, in orange duck sauce. Lots of cream cheese, which puts them in the same category as upscale bites at a neighbor’s open house.

The plus: Mongolian beef and broccoli ($42), which was a NY strip steak sliced in well-seasoned sauce, with dried garlic bits and scallions. The garlic bits and scallions also appeared on the Char Siu ribs ($15; tender, moist meat), and the flavorful moo sho pork ($18), which also had carrots and

daikons and good pancakes.

Our General Tso’s chicken expert said this dish was serviceable ($19), and not too sweet, although there was one bite of pepper that had me gasping for water.

Our server pushed a lot of dishes and gave an overlong litany about the menu. Drinks took 20 minutes to come from the bar, and it was not crowded. We tried the dessert special, a red velvet cake dish ($10) that was a couple of steps up from a doughnut. Some kinks have to be worked out.

Our server said the Palm Beach fried rice on the menu ($32) has scattered gold flakes on it, even though the menu only touted blue crab, roast pork and a fried egg.

That would be a pricey gussying up of a comfort dish, which sums up our Hai House experience.

Much like The Island itself, it deviates from the norm.

At least the fortune cookies that arrived with our bill left us laughing. One example: “Illuminati Meeting. Here, Monday 4 p.m.”

f Boca Raton’s La Petite Maison (not to be confused with La Vieille Maison) was on your radar in the early 2000s, I’ve got good news. Owners Sylvia and Guy Augier moved north and opened the French Corner Bistro & Rotissorie in West Palm Beach—in 2005.

The comparative low profile may be because this tiny restaurant is stuffed into a U-shaped strip shopping plaza west of Military Trail, next to a Honey-Baked Ham store. But if you follow the steady stream of cars and diners, you’ll find a cozy lunch and dinner restaurant serving delectable cuisine grand-mère. Guy has passed on, so Sylvia now runs the place with her daughter and grandson.

Sylvia bustles and hustles between the close-knit table setup.

She provides mouthwatering

descriptions of her food that are invariably accurate. Despite the crowded dining room, individual conversations stay at the table; everyone has wine and a good time.

This is the closest atmosphere I’ve found to a true French bistro.

There are a few outside tables, but the lime-green walls covered with French posters and artwork surrounding the white-clothed tables is preferable to gazing at parking spaces.

An extensive a la carte menu is offered, as well as a prix-fixe meal ($36.50 for three courses), so we started with French onion soup (lots of cheese) and escargot in an oozingly tasty garlic butter. The beef bourguignon came with mushrooms, parsley and rosemary and some wonderfully smooth mashed potatoes on the side. Dark, rich, flavorful gravy binds everything in a

comfort zone.

The rack of lamb with mint jelly (of course!) and a large square portion of potato gratin was $4 more, and included three double-boned chops. The fish of the day, a light, flaky branzino, arrived with the tail on, and a lemon butter sauce with capers alongside rice.

Dessert of the day was vanilla ice cream cake drizzled with raspberry coulis, and it was an appropriate sweet ending.

If you appreciate country pâté, frog legs Provencal, salmon in a tarragon sauce, duck à l’orange, veal kidneys and other traditional French recipes, this is your place for a tête-à-tête. There’s a reason the dining room is full almost every night.

e’ve heard of dancing in the dark, but what about dining in the dark? It was a thing a few years ago, but it’s a daily kitchen reality for iPic Entertainment’s chief operating officer, Sherry Yard.

“I always work with what I want to eat at a theater; to make an exciting dish that nobody’s ever seen before,” says the chef.“It’s not an easy process. Will it dine well in the dark without forks?

“That’s the difference between iPic and any other dining experience. I like to create food that you drive across town for; come for the food, stay for the movie.”

With the newest iPic now open in Delray Beach, Yard keeps adding venues to her resume. She has three James Beard awards; worked with Wolfgang Puck as an executive partner for 20 years; created pastries in her trademark pink chef’s jacket (supporting breast cancer awareness) for the Academy Awards, Grammys and Emmys; and now oversees Tuck Hospitality Group venues. Those include Tanzy at the Boca Raton iPic along with restaurants in California, Miami Beach, Houston, NYC and Scottsdale, to name a few. All that, plus appearing for a fourth season on the ABC TV series “The Great American Baking Show: Holiday Edition.”

“Our (restaurant) menus are all chef-driven and inspired, and we have an executive chef at each location,” she says.“You’re only as good as your last dish.”

If you had your own show on the Food Network, what would it be?

I had an idea years ago. It was called “Bake It Forward,”and it was about going into communities and having a bake sale for them.

What classic cookbooks do you swear by?

I think it’s important to learn, more important than it is to master. It takes time to master.

Take time to learn and build a great foundation.

Any hobbies?

I’m a crazy bicyclist. I live in Manhattan Beach, California, so a bike path goes one way to Malibu and the other up the coast. I’m also an avid Hula Hooper.

I Hula Hoop while watching late-night TV. Favorite meal you don’t cook yourself?

I love breakfast. French toast is decadent. And so is getting a chef to cook it for me. The short ribs on the bottom with a poached egg. An all-day egg sandwich. Candied bacon with brown sugar and the spices.

Buzz Bites II Pizza meets Pizzazz with Louie Bossi’s Taste of Recovery

W

hen a neardeath, life-changing event sparks a charity effort that gives back to hundreds of people, we can put that in the plus column.

Enter Chef Louie Bossi’s third-annual Taste of Recovery on June 1, at 6 p.m. at Old School Square, to benefit the Crossroads Club.

Bossi is now a successful chef and restaurant owner, after overcoming drug and alcohol addiction. His addiction was the catalyst for this charity culinary event that raises money to help recovering addicts. He donates the proceeds from Taste of Recovery, which features many local chefs and restaurants, to the Crossroads Club, started in 1984. It’s a Delray Beach organization that hosts meetings all week, every week.

“My charity means a lot to me to help those in recovery,” says Bossi.“That’s my way of giving back.”

Gastropub. Definitely try the homemade batches of cocktails on tap, which give this west Delray gastropub its name. The artisanal mixes boast ingredients such as H.M. Tonic No. 22—the crisp, tangy part of a very good gin and tonic. The heirloom tomato and feta salad is a highlight with Champagne vinaigrette dressing.

Also popular are the brisket and short rib burgers, the avocado toast and the chicken Caesar. But the drinks

WHAT: The Jewish National Fund hosted its annual brunch, which drew a crowd of more than 1,200 people. In its seventh year, the brunch serves seasonal Florida residents and provides a means to stay involved with the JNF and its friends. WHAT: The U.S Holocaust Memorial Museum honored South Florida’s Holocaust survivors at a dinner attended by more than 600 people. Rita Hilton, a survivor, was awarded the U.S. Holocaust Memorial Museum’s Elie Wiesel Award. She accepted it on behalf of all her fellow survivors in South Florida alongside two Marjory Stoneman Douglas students and their Holocaust studies teacher. More than $1.1 million was raised, benefiting the museum’s “Never Again; What You Do Matters” campaign to keep the memory of the Holocaust alive. The event was chaired by Shelley and Craig Menin and vice-chaired by Marla and Steve Garchik.

appy Father’s Day. It’s been a long, long time since I last visited with you and Mom. Remember, I had a business trip from New York to Kansas City in October 1979, and I booked a return stop in Cincinnati to drop in and say hello. Although we talked every week since I left home in 1966, we had only seen one another a handful of times in 13 years. The last time was your 75th birthday.

Our last visit, if only for a day, was spent rehashing the good old days: your golfing buddies (I was your caddy every weekend, and I learned the game from you) and the time you invited me to your annual Chrismas party with them and offered me a drink. I was 19 and I sipped it, but I hated the taste of Scotch and soda, and you knew it by the look on my face.

Nevertheless, I felt like a real man—just one of the guys being invited to sit with Uncle Bud, Mr. Ahern, Mr. Shea and the rest of your friends.

To tell the truth, I’ve never had the number of friends you amassed in your lifetime. Not even close. Margaret Mary has been shocked, as she always felt I was so outgoing. But M.S. changed me, and being in a wheelchair for 40 years has limited me both physically and socially; that’s my excuse, and I’m sticking to it.

Dad, you were always there for us. I can’t remember your missing one of my basketball games or my brothers’ swim meets. You never criticized or second-guessed my games. Your compliments were few, if any. However, your three sons recognized your pride in our efforts. That was enough.

You were strict and laid out a work schedule every week: cutting grass, shoveling snow, taking clinkers out of the furnace and helping Mom while you traveled the Midwest. Your rules were reasonable but the discipline painful when they were not adhered to.

I remember losing the use of the car when I drank and drove—a no-no in our house.

My children, David and Molly, never got to know you. When I told them about your discipline, they, in unison, said,“I’m glad he wasn’t our dad.”

You taught me that we all need standards to live up to and guide us. You insisted we learn how to shake hands while looking the person right in the eye, to shine our shoes, to treat everyone, no matter what color or age or sex, with dignity—and to insist on the

truth no matter the consequences.

I remember talking with you every Saturday morning. The last time we talked was from a phone booth in Sedona, Arizona on a brilliant morning in the Oak Creek Canyon. When Mom answered and told me you were in the hospital I was concerned, confused.

As usual she underplayed your condition, as did you. You sounded good, but in those old phone booths it was hard to really tell. I told you I missed you and would try to come back from Phoenix to New York through Cincinnati. That night, Paul called me at 3 a.m. in my hotel room in Phoenix to tell me you had died in your sleep.

You were five-foot-eight, and I’m six-foot-four, but I’ve always looked up to you—not the reverse. And I’m now your age when you died—79. It’s hard to believe that was 39 years ago. I remember asking you on your 75th birthday if you were afraid of dying. You said,“Hell, no! I’ve been blessed with your mom and three wonderful sons. What else could a man ask for?”

To say,“I love you, Dad” feels trite. Because it’s so much more than that. It’s love, and it’s respect and admiration. You were a tower of strength, as was our mom. You instilled sound values in us, Dad, and you were—and still are—a tough act to follow. I’ve looked inside of myself many times and asked,“Have I been your equal as a parent?”

The answer isn’t clear, and never will be.
