Others think you’d have to be crazy house cured ham, to eat at a mobile food shack. gruyere and butter baguette. cucumber and brie sandwich. pulled pork sandwich with julienned jalapenos and vegetable chips. Some think it’s crazy to sit in that shack year-round, trying to make people happy country pate, cornichons and one cup of soup or one kailua pork plate at a time. mustard sandwich. chickpea spread, pickles, red onions and roasted green chili sandwich. pesto chicken salad with red onions. OLIVIA what inspired you to open this cart?

I think I just figured it was cheaper than starting my own restuarant and I didn’t want to work a 9-5.

why this kind of food?

We live in a soup town, i think. Portlands rainy most of the time so it’s a good scene for something warm, hearty and quick, like soup!

what makes your cart stand out from all the other carts?

Not a lot of carts do just soup. We make everything from scratch and are here before most of the other carts. Also, we are a member of the Community Supported Agricultural group.

CHUCK what inspired you to start this cart?

I lived in Portugal and wanted to integrate Portugese tastes and flavors into a cart.

why does your food cart stand out?

No one else sells deep fried anchovies! We’re just about good, simple flavors done well.

what is your favorite part about your cart?

This is my second Euro Trash cart, I’ve also got a Euro Trash on the east side. This one’s only been open for three weeks, and it’s already super fucking popular. I am proud of this cart enjoy the food and the people.

We have a big window that is inviting and makes people feel comfortable.

what is your favorite thing about running your food cart? I get to work outside and talk with lots of interesting people. Every day is different some how.

why did you choose this type of food?

I worked at this amazing barbecue joint in North Carolina, and that experience really influenced me.

what inspired you to start this cart?

I really wanted to work for myself, not for anyone else, and I figured this would be the business with the least start-up cost.

I decided I never wanted to work for someone else again so why not start a restaurant.

Local ingredients sourced from farmers we know personally, and everything is actually made in the cart.

what is your culinary background?

I’ve worked at various supper clubs, and I was a chef at Abernathy Kitchen in Ladd’s Addition.

why did you go with your type of food?

I really wanted to take the food that I grew up with and serve it to a new audience. I figure all people want is to eat comfort food like they remember from when they were kids.

what inspired you to start this cart?

I liked the idea of building my own cart because it just seemed more personal than starting a restaurant.

ABOUT

RICKY+KEVIN what does the name of your cart mean?

Well, 808 is the area code of Hawaii and “grinds” is the term for when you and your buds are hungry and you want to go get food, you say “we should go get some grinds” or “let’s grind”. It’s like saying “let’s get some grub”, y’know?

why did you choose this type of food?

Because I’m Hawaiian myself, and I lived in Hawaii, and this is what me and my family and friends love to eat.

why does your food cart stand out?

We’re the only cart in Portland that has the 808 chicken. It’s bomb.
