Vanilla, a Spice Proudly Originated in Mexico Did you know that vanilla is a type of orchid and that among over 20,000 varieties of orchids, vanilla is the only type that produces something edible? Although it originated in Mexico, this spice is also native to Central America. The Aztecs called it tlilxochitl, “black flower,” alluding to the color of the cured fruit. They used vanilla to flavor their cacao-based drink xocoatl, or chocolate. Montezuma, the Aztec emperor of Mexico, is said to have served it to the Spanish conquistador Hernán Cortés in 1520. Cortés then introduced cacao and vanilla beans to Europe. Vanilla-flavored hot chocolate became the rage in European courts. The Extensive Curing Process Interestingly, fresh vanilla beans have no taste or aroma. They must undergo an extensive curing process that results in the release of vanillin with its distinct aroma and flavor. This processing takes several months. It takes about 4.5 pounds (2 kg) of the green vanilla beans to end up with less than one pound (half a kg) of dried vanilla bean. Thus, producing vanilla is quite a labor-intensive project. Don’t Be Fooled By Knock Off Vanilla Vanillin has also been produced synthetically, though the imitation flavorings are not the same as the original. Both chefs and gourmets will attest that there is no substitute for the flavor of true vanilla. Unsuspecting tourists seeking the famed Mexican vanilla may be offered the artificial kind. Remember, you get what you pay for, so choose a quality product after reading the label. The next time you try ice cream made of natural vanilla, think of its long history and the work involved in producing it, and enjoy the flavor!

Exclusive Interview with Mr. Jose-Manuel GARCIA, Founder of IVI DMC2 To remain in the industry and continue to succeed is easier said than done. That being said, we’d like to take this opportunity to interview the visionary, founder, & master coach who has spearheaded IVI DMC2 for three consecutive decades.

CQ: You are known for being a visionary, thus, what moved you to create this company? JMG: After 17 years of hotel sales and marketing experience, I saw the need to creating a good, strong, and unique company which could properly serve the growing and demanding incentive travel industry. Back in the early 90’s, only a handful of incentive houses such as: Top Value, EF Mac Donald, Sunbelt Motivation, Carlson Marketing Group, S&H Motivation, ITA Group, Creative Group, and Maritz Travel were handling this niche of business; but they could not keep up with the growing demand and quality expected. This fact made me realize that I had the opportunity to step in and improve service and quality standards. After 30 steady years, I am very proud with the improvement that we have dictated in the industry in this regard.

CQ: What are your 3 biggest accomplishments? JMG: I am very proud of my hospitality dream came true: To significantly improve the ground services rendered to the incentive travel industry. This has been achieved over a period of three decades not only in Cancun, Mexico but also currently holding strong throughout 13 Latin American countries. And I envision accomplishing the same in our upcoming incentive travel destinations as well.

CQ: Please tell us what IVI’s culture is, that is, how is this company different from other DMCs?

Also, we were the first in-bound travel agency in Latin America to spearhead top standards of quality and a new culture in operating destination management services. As a Mexican and a citizen of Latina America, I feel a sense of accomplishment for having reached the above goals.

JMG: For the last 16 years, IVI has been one of the first worldwide DMCs performing with certified ISO 9001:2008 standards, and is also one of the few Accredited Destination Management Companies by the ADMEI making IVI a DMC one level above the others. Due to this fact, we rebranded our name to IVI DMC²; this certainly positions our company ahead in our niche. In addition, and because of our reputation in the industry, our loyal clients continually ask us to open operations in destinations where they have the need of top quality services.

My third accomplishment is certainly a very encouraging one: We have been recognized in the professional environment as an academy of DMCs. In what sense? Throughout these years I’ve seen staff that have been trained and groomed in our company that are currently working for renown hotel chains and in-bound companies. Reportedly, there is a club for former IVI DMC² staff; this is simply amazing!

November 2015 CQ: How do you see the company changing in the near future, and how do you see yourself creating that change?

CQ: How do you feel about the fact that IVI DMC² has led the DMC niche for 30 years? JMG: I feel much pride and joy. This has been achieved by means of a clear vision, a solid know -how, know-who, know-where & know-why. I am always ready and open to new changes in technology and new fresh thinking to react accordingly to the times we live in. I am positive that if we continue to abide by the "attitude is everything” motto, we will continue to spearhead and mark new trends in this noble industry.

JMG: IVI has already made a quantum leap without losing the long-standing family touch. Jose-Manuel (MANOLO) Garcia, my son has recently been appointed as the new President, and Karla JIMENEZ his wife, as the new Vice President. Also, we reinforced the Corporate Marketing & Business Director position by assigning it to a seasoned colleague, Francisco BAEZA. Furthermore, my current partners such as those in LATAM are very committed to our brand. Along with them, we have coined this team philosophy: "One for all, and all for IVI DMC²".

Travel Tip: Beat the Clock… Not! If you can’t get to the airport, you aren’t going anywhere. So always allow extra time to reach the airport. If it takes thirty minutes to get to the airport, don’t allow thirty-one and still expect to be on time for your flight. Remember, arriving at the airport an hour early and having to wait for your flight is far better than arriving an hour late and having to wait three hours for the next flight. Arriving early gives you time to check in, deal with lengthy lines, and negotiate the airport maze (especially if you are unfamiliar with some larger terminals). If you have a boarding pass, it’s fine to reach the gate fifteen minutes prior to departure - but play it safe: twenty minutes or more is much safer. If you don’t have a boarding pass, make sure you check in at least thirty minutes before your flight is scheduled to leave. Your seat can be reassigned to someone else if you do not show up on time.
