La ola de El Frontón, en el municipio grancanario de Gáldar, es considerada la número uno del mundo para la práctica del bodyboard. Sus amplios tubos de izquierda y derecha mas una sección final a modo de rampa de lanzamiento para realizar aéreos, atraen a riders locales y foráneos. Tal es la magnitud de esta ola que el circuito mundial de bodyboard acaba cada mes de diciembre en este spot. The wave in El Frontón, in the municipality of Gáldar (Gran Canaria), is regarded as the world’s best bodyboard wave.The large left to right tubes and a final section in the form of a launching ramp for aerials attract both local and visiting boarders. Because of the size of this wave, the world bodyboard circuit ends here every year in December.
Salpimentar 2 kg de pescado de roca cortado en rodajas separando la cabeza y la ventresca. Freír ligeramente la ventresca y la cabeza. Cuando estén listas, hervir todo en un caldero con sal y cilantro durante ½ hora. Freír el resto del pescado y colocarlo en una fuente. Picar finamente dos dientes de ajo, 3 tomates, 1 pimiento, 1 cebolla y 1 manojo de perejil; y preparar una fritura (utilizando el aceite del pescado) agregando 1 cucharada de pimentón al final. Añadir la fritura al agua del pescado y dejar hervir 15 min. Filtrar el caldo. En otro recipiente colocar 2kg de papas cortadas en rodajas y, encima, los trozos de pescado frito. Bañar con el caldo, salar y dejar cocer lentamente.Añadir un sofrito con ajo majado, comino y azafrán, un poco de colorante disuelto y una cucharadita de vinagre. Hervir durante unos minutos y dejar reposar antes de servir. Sprinkle 2 kg rock fish with salt and pepper. Remove the head and the belly and slice the rest. Lightly fry the belly and the head.When they are done, boil them in a pan with salt and fresh coriander for ½ hour. Fry the rest of the fish and put it aside. Finely chop 2 cloves of garlic, 3 tomatoes, 1 pepper, 1 onion and 1 bunch of parsley and fry together to make a sauce (with the oil used to fry the fish), adding a spoon of paprika at the end. Add the sauce to the water from the fish and boil 15 min. Sieve the stock. In another pan place 2 kg thickly sliced potatoes on the bottom and then place the pieces of fried fish on top. Cover with the stock, sprinkle with salt and cook at a low heat. Mix together crushed garlic, cumin seeds, saffron, a little powdered yellow food colouring and a teaspoon of vinegar and add to the fish. Boil for a few minutes and set aside a short while before serving.
