COVER STORY

In this May issue we have lots of exciting and beneficial articles relating to health, diet and exercise for you to read and hopefully be able to apply to your lifestyle in a positive way. I went along to Roman Spurs ‘How to grow your own organic food’ talk at the Barry Jones Auditorium and found it so inspiring. I wrote an article highlighting the benefits of growing organic food, along with some tips from Roman. This month I was lucky enough to go for breakfast at the organic Cafe with the Footy shows very own Beau Ryan when he visited Ipswich for a segment on the show. I have to admit I was pretty excited about this interview, for obvious reasons! If you’re anything like me and are a bit of a bookworm then the book giveaways this month should appeal to you. Featuring the latest hardback copy of Jeffrey Archers ‘Cometh the hour’, a delightful hardback. Mothers Day is fast approaching and we’ve got you covered with 10 free double passes to the movie ‘Mother’s Day’ starring Jennifer Aniston and Julia Roberts, it’s the perfect cinema date for you and your mum! ‘BEAU KNOWS’ AND THE FOOTY SHOW FEATURE IPSWICH Ex rugby league player and Footy Show favourite, Beau Ryan, visited Ipswich recently for his regular segment ‘Beau Knows’ and also to promote his brand new segment that aired live on Channel 9’s ‘The Beau Show’. Beau visits Leagues Clubs in heartland towns around Queensland and in New South Wales to showcase the club, the town and to meet the fans. Ipswich was chosen for the first segment because of its huge rugby league focus and the fact it is home of the QRL State champions, The Ipswich Jets. Growing up in Wollongong Beau can’t remember a time where he didn’t have a footy in his hand. Playing since the age of seven and falling in love with the sport, he played his first professional game in 2007 when he says the highlight of his career was his first ever game for the West Tigers. He went on to have an amazing career playing for the Tigers until 2012 before going to the Cronulla Sharks where he played until 2014. Up until 2013 Beau was lucky,

with no major injuries during his whole career, until 2013 when he seriously injured his neck. It was this injury that eventually made him retire from competitive football in 2014. Although still in love with the game and otherwise physically fit and healthy, the location of the injury meant that he couldn’t continue to play. “I had to put my health and my family first,” Beau said. “My wife told me if I didn’t stop playing NRL she wouldn’t be able to watch me play anymore, so I made the decision to retire early.” Always a regular on the Footy show during his career, he became a permanent fixture after announcing his retirement. The loveable, and let’s face it, easy on the eye character has a way with engaging with the fans and

making people laugh. Fans watching the Ipswich coverage on the show saw Beau appear at the Ipswich Corporate Centre with Eric Grothe, who also played for the Cronulla-Sutherland Sharks, and a good friend of Beau. It was an exciting evening for the Footy Show and the Ipswich Jets fans, featuring Beau’s new and regular segments, as well as the ‘Love in the Club’ feature. In this quirky segment single fans are matched with other single fans, during live crosses to the Channel 9 studio. This made for hilarious television. Catch Beau on his adventures around the country on Channel 9’s The Footy Show, Wednesday nights at 8.30pm. Photo: The Footy Show’s Beau Ryan during his visit to Ipswich.

hen we eat food that hasn’t been grown organically it means it has been sprayed with chemicals to kill insects, which we then ingest. This causes health problems and destroys our eco systems. Urban gardener Roman Spur, who visited the Ipswich Library recently, had some great advice about the benefits of growing your own organic food. He shared his gardening tips and encouraged the community to ‘think outside the box’ when it comes to growing your own food. Roman, who made it his life mission to share his knowledge and help others achieve organic crops and a wholesome life, started his blog ‘Spurtopia’ to record his family’s own journey and to inspire others. Roman says you can become a gardener anywhere, it doesn’t matter if you live in the city or if you are renting, there’s always space,

you just need to utilise that space. When Roman and his wife arrived in Australia seven years ago they were astounded at the amount of waste in our society. They lived in a rented unit in New Farm but that didn’t stop them from building a ‘small kingdom’. They grew strawberries in milk cartons in holes in the wall, tomatoes against fences and used the lawn space they did have for everything else. He now grows 75 per cent of his family’s food intake directly in his garden, from fruit, vegetables, tea and honey and there is always excess to give to their surrounding neighbours. Romans tips for growing organic include: join a gardening club, utilise what space you have, think outside the box, and stop eating food that isn’t organic. He also says, “get chickens, they provide fresh eggs and chicken poo is an excellent fertiliser!”

Current and retired female members of the Queensland Police service gathered at the Brothers Leagues club in Raceview recently to celebrate the amazing milestone of 85 years of women in Policing. It was a very proud moment for everyone involved and a real treat to hear about the first female officers in Queensland. Eileen O’Donnell 35, and Zara Dare 45 who were appointed in 1931. In a time where the police force was completely male dominated these women began to pave the path of success and equality for Policewomen in Australia. Although these women had been appointed Policewomen, they were not actually ‘sworn in’ and had no uniform or powers of arrest. Their main duties were helping female victims and also young children in domestic violence cases. It wasn’t until 1965 that women were sworn into the ranks and given police uniforms. Former Deputy Commissioner Kath Ryner spoke about her experience in the Police Force, the struggle to be taken seriously and to prove women were just as valuable as male officers. On September 1 1970, 39 years after the first policewomen were appointed, and on the same day Ray Whitrod became Police Commissioner, and equal pay was finally achieved. In 1971 the minimum height for women joining is set at 162.5cm and the bar on married women joining was

removed, so women no longer had to choose between marriage and a career. When Commissioner Ray Whitrod took over he introduced a programme that called for the same introductory training for female recruits at the academy as men. It was a great time for women in the Police service, but between 1976 and 1978, under commissioner Terrence Lewis, recruitment and advancement of women in the Queensland Police stalled, with the number of female officers dropping to five per cent. Then in the1990s the Police Service Administration Act and the Queensland Anti-Discrimination Act reinforced merit-based criteria of employment. Kath Ryner said women have had a tough ride during their careers and have had to fight for their positions. Mayoress Janet Pisasale said, “I know the long hours you put in and how hard your job is. I appreciate everything you do for us and don’t ever take it for granted.” Photo: Kath Ryner accepts a Certificate of Appreciation from John McCrae and Superintendent Charysse Pond.

Sugar intake and the emotional rollercoaster Do you feel like you’re on an emotional rollercoaster? Are your kids regularly misbehaving, anxious or sick? Sugar is one of the worst ingredients in the modern diet and reducing your intake could be the answer you are seeking. Here are SOME facts about sugar: • it can cause hyperactivity, anxiety, inability to concentrate, poor impulse control, and crankiness; • it increases hormones that control appetite and fat-storage that cause obesity; • it can cause insulin resistance which leads to Type 2 diabetes, cardiovascular disease and metabolic syndrome; and • it causes tooth decay. Did you know? Sugar is listed on food labels by many names, including corn syrup, dextrose, fruit juice, glucose, maltodextrin, maltose, and molasses. How can I reduce my family’s sugar intake? • read labels and be on the lookout for sugar in any form;

• drink water, not soft drinks or juices. This applies to adults and children; • replace sugar with the natural sweetener, stevia in your coffee; • eat mainly fresh, unprocessed foods; • plan ahead and have healthy snacks and water organised; and • know that it’s ok to say NO. Of course, the biggest challenge is to be prepared for your children to nag and whine at first, but keep the big picture in mind. You’re trying to give them better health and a better quality of life – for the rest of their life.

“LOGAN IS WHERE I WANT TO BE” Before he became a Rugby league star, Parker was learning to kick a footy in Loganlea and playing juniors at Logan Brothers. Parker recently moved his family back to the City of Logan to the leafy and family-friendly suburb of Cornubia. “My wife Margaux and I share a passion for renovating properties so in the early stages we moved around fairly often, Parker said. “When the kids started coming along, we had to think beyond the house we wanted to do up and look at what was around it. “Logan’s got a leafy outlook, is close to bushland and walking or riding trails. There are plenty of good schools nearby, as well as great access to shops, local sports clubs and local parks. “Logan has certainly grown and there are new roads, housing estates in places that used to be paddocks,” he said. Lifestyle and location are Logan’s best assets. Situated between the city, the coast and

the country, and Logan lifestyle remains affordable for families and retirees. Logan has plenty of hidden secrets on its doorstep too. Whether it’s the Eagleby and Berrinba wetlands, the Logan and Albert rivers, the Daisy Hill Conservation Park or one of the 900-plus parks, there are plenty of places to explore. Construction is underway in the master-planned communities at Flagstone and Yarrabilba, new townships that will attract tens of thousands of new residents in future years. These new communities are bounded by protected green corridors. The city is also home to some of the region’s leading schools, giving families a diverse choice of education options from primary right through to university. TAKE TEN STEPS TO BETTER SKIN HEALTH Struggling with your skin or just want to feel a bit more ‘fresh faced’? Then take a look at your skin care routine and apply some of the techniques below to get your skin on the road to recovery. 1. Exfoliate Gently exfoliate your skin with natural based oil such as olive, coconut or almond oil. If you want to be super natural, just mix some sugar with some coconut oil for the perfect exfoliator! Exfoliate every two days to remove dead, flaky skin. 2. Prevent sun damage Sun damage is the quickest way to age your skin. Always wear a daily moisturiser that has an SPF in it. Also, avoid being in direct sunlight between the hours of 10am and 2pm. 3. Stay hydrated Drinking lots of water keeps your skin hydrated, therefore increasing the elasticity making it appear glowing and healthy. 4. Understand your products Don’t use products for the sake of it. Understand the ingredients, lots of skincare products have hidden harmful chemicals. Always use natural products that are paraben free. If you are using a lot of products each day you could be causing your skin stress and actually causing breakouts. Ask yourself what is working for you and if you need everything you’re using.

The main products you need in your skincare routine are: • a natural based make-up remover (never go to bed with makeup on!) • a daily moisturiser with an SPF • a moisturiser for night time • a gentle, cleanser, toner and exfoliator 5. Eat a healthy diet A diet of processed foods and lots of refined sugar can affect your skin greatly. You are what you eat after all. A diet full of vitamin C and leafy greens is best for your skin. Also incorporate foods rich in antioxidants such as organic blueberries and also foods that are naturally high in producing collagen such as dark green vegetables, red fruits and vegetables, brazil nuts, avocados, flaxseed and fish 6. Avoid hot baths / showers We all love a long hot soak in the bath but doing so often will strip your skin of its moisture and natural oils. 7. Don’t Stress When your body is stressed, your skin is one of the first things to suffer because your body produces more of the cortisol hormone. Your skin becomes more prone to breakouts and unable to fight off bacteria that cause acne.

8. Drink Green Tea Not only is green tea great at relieving stress symptoms, it has anti-inflammatory properties which do wonders for a healthy complexion. 9. Get more sleep When you sleep your body gets a chance to refuel and repair itself. As part of the repair process your body makes more collagen, which is your skins best friend. The more collagen your skin has, the less wrinkles will appear. 10. Wear less makeup This can be scary but wearing less make-up, especially foundation will leave your pores free and exposed to oxygen. A build up of make-up clogging your pores will ultimately give you spots and poor complexion.

TRANSITION TO SECONDARY EDUCATION It has been our experience at St Edmund’s that the transition from Primary Schooling to a Secondary education can be difficult for some boys. At St Edmund’s College we have responded by running a programme known as Eddies’ Rookies. Chris Leadbetter, Principal Many students come from an environment where the total school population can be quite small. The relationship with the teacher can be quite different as well and a secondary way of operating is much different. This can lead to anxiety in some boys. Eddies’ Rookies is a programme for students from Year 6 who are enrolled for the following year. The aim is to have students experience elements of school life prior to the boys

commencing at the College. Students will be involved in some teaching and learning experiences as well as being involved in Creative Arts and Sports programmes. Currently this has been conducted on some Friday evenings through until Term 4 Orientation. Parent information sessions have also been conducted and these have been very well received. Our new families are also invited to our

community events such as the Foundation Dinner, The College Race Day, Performing Arts evenings, Sporting Events and The College Musical. It is our hope that this programme does much to relieve any anxiety. We also wish to welcome our new families and to prepare our boys for success. As our motto says: POSSUNT QUIA POSSE VIDENTUR: “They are achievers because they see they can” It is our hope at the College that all boys feel welcome and our new families enjoy being a part of our special community. TEN MUST-HAVE APPS FOR YOUR PHONE Whether you’re an iPhone or Android user, you need these apps in your life to help you get organised, de-stress, get creative and save time... 1. Kindle It’s great being able to read a paperback book but sometimes the book you’re after isn’t available at your local bookstore, also hard copy books can get really expensive. The kindle app gives you access to all e-books on amazon, for instant download and at a fraction of the price of the physical book. The best thing about kindle is you can try a sample of the book for free before deciding on whether to purchase.

2. Calm.com If you live a busy and stressful life (which is pretty much everybody these days) and you find it hard to wind down, try the calm app. There is short (I’m talking as little as 3 minutes) guided meditation or beautiful soothing music, like raindrops, the ocean, waterfalls, crackling fire for you to listen to, and unwind. 3. A Beautiful Mess This app is a photo editor. You upload your image and choose from a huge range of filters. You can also choose text in the most fashionable of fonts and orders. These are downloaded straight to your camera roll and can easily be shared to your social media.

4. The Good Edit If you care about the environment (which you should) the good edit is the app you need. It provides instant ratings on how eco friendly a fashion brand is. The app tells you if a brand uses organic cotton, is made overseas, is made in sweatshops. It’s great if you want to start making positive changes in your life but don’t have time to spend hours on research. 5. Nike+ Running Whether on a treadmill, trail or track, the app accurately records your pace, distance traveled and time, complete with audio feedback and a route map. The app also comes with a host of gamified social elements such as sharing runs, achievements and the option to challenge your friends to beat your time or distance run. Neat features include the ability to load a “Power Song” of your choice, as well as setting up Spotify Premium “Pace Stations” of running music tailored to your target running pace. 6. Buzzfeed BuzzFeed was voted to the App Store Best of 2014! BuzzFeed has it all: the news you want now, the stories and

BOOK REVIEW

One hundred days of happiness What would you do if you found out you only had 100 days left to live? That’s exactly the question that Lucio Battistini is faced with when he learns he has inoperable cancer. One Hundred Days of Happiness is the first novel by Italian film director, writer and producer Fausto Brizzi. It sounds like a morbid storyline but it is told directly through his eyes, with humour and big plans for his remaining 100 days and written as a daily countdown from 100 to 0. Despite the inevitable tragedy awaiting Brizzi’s anti-hero, it’s a simple feel-good narrative with plenty of gentle comedy thrown in to further lighten the load. Lucio’s main goals are to treasure his loved ones, win back his wife, who has kicked him out of the family home after a brief affair. He wants

to find love for his widowed father in law and make good memories to last his children’s lifetime. Set in Italy, Lucio gives us an amazing taste of the culture and lifestyle of the country, he reels us in with his lovable and humorous character. It’s an easy, heart-warming read that makes you question what are the most important things in life ask yourself, are you living your life to the fullest, are you really happy and what would you do with your 100 days? Published by Pan MacMillan – available in bookstores now.

Stand by for the latest celebrity gossip and entertainment news from the world of stage, screen and television. ‘The Voice’ returns ‘The Voice’ is back for its fifth season in Australia and Irish singer Ronan Keating has been revealed as the new judge who’s moved over from The X Factor, joining previous show favourites, the Madden brothers, Delta Goodrem and Jessie J. Let’s hope this year sees less arguments between Jessie and Deltra!

The Kardashians If you’re a fan of ‘Keeping up with the Kardashians’, you could be in for a treat amidst news that Kris Jenner is plotting to debut the wedding of her son Rob (who has not appeared in recent series of the show due to shame about his weight increase and fights with his family) to Blac Chyna. The pair are recently engaged, much to his families concerns and ongoing issues with diva Blac Chyna. Kris Jenner, the families ‘momager’ knows how to cash in on a family drama though and rumours are flying the wedding will appear on the famous show, watched by millions. In the twisted web of the Kardashian/Jenners, Blac Chyna is the ex partner of ‘Tyga’ who is now famously linked to Robs

sister, Kylie Jenner. Blac Chyna, and Tyga have a son together. Does this mean Rob Kardashian will be a step-parent to his sisters boyfriends son….

‘Mothers Day’ - the Movie Chick flick ‘Mothers Day’ hits the big screen this month seeing cast member Jennifer Aniston reunited with Jason Sudeikis again, after previously working with him on Horrible Bosses 1 & 2 and ‘We’re the Millers’. In press interviews for the promotion of the movie Jennifer says she owes her figure and appearance to strict 5am workouts and pilates. Aniston also says she tuned in to watch every episode of ‘The people v OJ’ the American crime drama TV series about the trial of OJ Simpson, which starred her long time co star and friend David Schwimmer.

Troye Sivan’s debut album Global singing sensation Troye Sivan who rose to fame through his youtube videos, released his debut album ‘Blue neighbourhood’ in 2015, with hit song ‘Youth’ being streamed over 100 million times. He is currently touring around the world and is set to hit Brisbane in August. He recently tweeted “YOUTH was streamed for the HUNDRED MILLIONTH TIME on @ spotify. I am so gobsmacked and thank you one hundred million times from me, I sound like a super villain pop singer like ‘yes my song has been streamed ONE HUNDRED MILLION TIMES’!!! feel like I should chuck in an evil cackle for good measure.”

So, that’s all for this edition, but I’ll be back in the June edition with another rundown on the entertainment scene. Hayley Walker

LIVE LOCAL, SHOP LOCAL AND SAVE Each year, Furniture Court and Beds R Us proudly sponsor the Ipswich Show - and to celebrate they have a massive storewide sale, with amazing products at a huge discounts.

Helping out ‘Team Cupcake’ David Holdorf of Furniture Court and Beds R Us does a lot to support the Ipswich community, so when Carmen Wojcicki from ‘Team Cupcake’ asked for his help he did so without question. ‘Team Cupcake’ is a local organisation that helps people in the Ipswich Community who fall on hard times. When Carmen heard about a lady named Vicki whose husband is suffering with terminal brain cancer, and wanted to help Vicki and her family, she

contacted David for help. David negotiated with Sleepyhead, to donate a mattress base so that Vicki’s husband, who needed to sleep in a separate bedroom would be able to do so without disturbing his family members. Carmen also gave Vicki a voucher for fuel and groceries to help her out financially. Above: Vicki and her husband thank David Holdorf and Carmen Wojcicki for arranging the bed donation.

This Show Sale is one not to be missed for people who need to upgrade or buy new furnishings. The team at Furniture Court and Beds R Us have the expertise to satisfy any furniture or bedding need. The will also have a trade stand at the Ipswich Show, where they showcase exciting new products and remind the public that as a family run business, they look after and value every one of their customers. David Holdorf has been a major sponsor of the show for a number of years and will continue to do so, as he feels it is a great way to give something back and say thank you

to the community that has seen their business grow and remain a strong retailer in Ipswich. So, don’t forget to drop by the stand at the Show, say hello and find out what’s new on the home furnishings scene. If David and his team can’t give you the right product at the right price, then you are probably at the wrong stand. Furniture Court and Beds R Us want you to know that buying local and supporting community businesses like themselves ensures a great future for Ipswich. The store is in South Street, Ipswich just down from the Ipswich Council Chambers.

The event is a charity bike ride to sick kids by raising funds for the Children’s Hospital Foundation and the Humpty Dumpty Foundation. Steve needs to raise $7500 to ride, to go towards buying medical equipment for the Childrens Wards at Ipswich Hospital. “This year, the ride celebrates its

10th year and our challenge to ride from Sunshine Coast to Sydney 14th – 22nd October,” Steve said. Amalgamation of Virtual Reality (VR) with art has been a natural process. Combination of reasons within my day-to-day life drew my thoughts towards Virtual Reality in my paintings. VR is not just about the Oculus Rift or a Vive gig, it is also to do with the thoughts and vibes of individuals. Intense longing and my passionate relationship with my FIFO partner brought my thoughts onto canvas and indicated the presence of VR in my life. VR is a simple concept but the challenge for a fine artist lies in making art more interactive and

engaging with its viewer. It has to be more absorbing and necessarily needs to communicate more with its audience. VR is gaining a lot of momentum these days in Australia and around the world. I desire to bring VR concepts on painting canvas and make it intensely interactive and engaging. Will be looking forward for more expansive thoughts in the coming future and make necessary efforts on developing the VR at another level. It’s just the beginning, lets see what lies ahead.

EDUCATION

A PASSIONATE LIFE WestMAC graduate’s success story

LEARNING BY DOING AT IPSWICH GRAMMAR SCHOOL With over 150 years of experience in teaching boys, we understand what makes them tick. Over this time we have developed and implemented innovative approaches to address the specific needs of boys as students. Boys learn by doing. They are active learners. They need to be heard. They are strongly influenced by peers and adult mentors. Their learning drops off if classroom discipline is not maintained.Yet they respond to the right incentives, and teachers have a strong impact. Our focus is to recognise each boy as an individual and offer him the opportunities to discover and explore his full potential. We encourage the boys to be selfmotivated, to strive to do their best in everything they do, and to have the confidence to take risks.
We provide them with the tools to express themselves clearly and to share their ideas; to be creative, innovative, and enterprising thinkers, to know how to gather and analyse information and make informed decisions. These are the tools they will need for tomorrow’s world. Our students are among those who will be the thinkers and

leaders of the 21st Century.
Talents, abilities, and challenges, are recognised and teachers are able to accommodate different rates and styles of learning. From Prep to Year 12, learning support specialists work closely with classroom teachers on a daily basis to monitor students’ core learning. They have the skills and knowledge to extend gifted and talented boys and assist those needing extra help. Inclusive support is offered within the classroom setting so the boy’s educational experience is both stimulating and comprehensive. The boys are encouraged to find their own pathway and be proud of their individual achievements. To give every boy the opportunity to reach his dreams, he needs to have best start to his school life. Big dreams start here, Bright Futures start here, It all starts here. To find out more about Ipswich Grammar, to see the school in action and judge for yourself, take a personal tour of the campus on Open Day and meet with the Ipswich Grammar leadership team. A zombie movie and the Fruit Ninja video game seem a world away from the scholarly confines of West Moreton Anglican College. Yet they have been instrumental in the successful career of Year 2002 Alumni Phil Larsen who gave the impassioned Scholars Assembly recently. At the age of 30, Phil has travelled extensively, completed a Bachelor of Business - marketing and advertising degree and was honoured in 2014 as the Lord Mayor’s Young Business Person of the Year. He is now successful in the new-age, non-traditional career of video games marketing. It all started with a solid education in the hallowed halls of WestMAC. “At school I loved Maths, English, Geography, and Economics etc. I wasn’t sure that I wanted to do anything with any of them. But I feel like, by taking them all in, one class at a time, I was able to learn a new perspective,” he says. “When I was here I tried to take in every moment and I really tried to apply that to something I could turn into a career. “I did a multi-media course studying programming and film and ended up topping my class – I don’t know how. I ended up making a zombie film – I guess it’s because I was able to apply my passion.” Before applying his passion to further education or a career, Phil says he spent some time travelling and building life experience by working at Target and even parking cars. After completing his degree, Phil was able to combine his passions of film making, marketing

and video games, including one of the most successful video games on the planet. “Over the years I was able to market many games, including Fruit Ninja. I know most of you have played Fruit Ninja, that’s for sure. Fruit Ninja is definitely one of the biggest downloaded games there is,” he says. “I found a lot of joy in seeing something like that come to life. I was able to apply my passion with something I was really good at such as marketing.” Phil says passion is one thing, but you also have to come up with ideas. “I would say that ideas are the most valuable thing we have and small ideas executed well are much, much more valuable than grand ideas that you don’t follow through,” he said. Phil also had some advice for students: “don’t worry too much about what you want to do for the rest of your life. That changes all the time.” He said that even at 30 he still doesn’t know what he wants to do with his life. “But what I will do is try and take in every moment. Use what you love and put it into every single job you do – be it academic or tedious etc, even washing your car. I’ll make a game of that,” he vowed. CHAR SUI (Chinese BBQ Pork) FROM ‘FOOD AND BEER’ BY ROSS DOBSON

Barbecue sauce • 250 ml (9 fl oz/1 cup) tomato sauce • 60 ml (2 fl oz/¼ cup) plum sauce • 1 tablespoon sesame oil • 220 g (8 oz/1 cup) sugar • 1 teaspoon Chinese five-spice • ¼ teaspoon ground white pepper Method Cut the pork lengthways into long, sausage-like fillets about 5 cm (2 inches) thick, then place in a bowl. Stir together all the barbecue

sauce ingredients to dissolve the sugar, then pour over the pork. Rub the sauce into the pork, coating the meat evenly. Cover and refrigerate for 3-6 hours, or overnight. Preheat the oven to 220˚C (425˚F). Line a baking tray with baking paper. Lay the pork on the baking tray, reserving the barbecue sauce for basting. Roast the pork for 20 minutes, or until the edges are just starting to char. Turn and cook for another 20 minutes. Turn the oven down to 160˚C (315˚F) and roast for a further 2 hours, brushing with the reserved sauce and turning every 20 minutes, until the pork is very tender and deep red. Remove from the oven and set aside to rest for 30 minutes. Combine the soy sauce, rice wine and sugar in a bowl. Pour in 125 ml (4 fl oz/½ cup) water, stirring to dissolve the sugar. Slice the pork on a serving platter. Drizzle with some of the soy sauce mixture and garnish with coriander. Serve with steamed rice and Asian greens.

Movie Review - ‘Don’t Tell’ Ipswich residents should keep a look out for the release of a movie produced largely in Ipswich. ‘Don’t Tell’ is a provoking movie of survival from child abuse, starring Kiara Freeman as Lyndal. The former Ipswich Court House temporarily became ‘Toowoomba Court House’, as a film set for the Australian movie. The film is closely based on a story of child abuse. Survivor Lyndal dares to take on a legal battle against Toowoomba Preparatory School after she suffered sexual abuse as an 11-year-old girl in 1990 at the hands of boarding house master Kevin George Guy. Producer Scott Corfield, who describes the movie as ‘a legal drama with heart’, said that Ipswich was chosen as one of the locations because with a cast of 50+ members coming from Brisbane and the Gold Coast they needed places in close proximity. The movie is

essentially a story about the fight for justice in the legal system by a very determined young girl and her lawyer, Stephen Roche, who wrote the book ‘Don’t Tell’. It sheds light on the 2001 case and shows how what Lyndal did gave other victims and survivors of abuse a voice. It also brought about important change in education, instigating the Blue Card background check, which is now compulsory for all staff in schools. ‘Don’t Tell’ features an amazing all-Australian cast including Sara West, Aden Young, Jack Thompson, Rachel Griffiths and Gyton Grantley. Below: ‘Don’t Tell’ Actress Kiara Freeman, who plays Lyndal.

TAP’D TIM RULE | PA HOTEL Beer is something a lot of us love, but why is that? Well, It tastes good and it’s refreshing are the most common responses and they are some great responses, but I’m here today to give you some extra ‘ammo’ when posed with the question as to why you love beer First things first, beer and food is a match made in heaven. It doesn’t matter what you’re eating, a beer exists that can compliment or contrast your meal, and can even cleanse your palate for your next course. My ultimate pairing is spicy cajun chicken wings with a bold fruity IPA - a perfect match! Not only does the IPA cool the heat, it also accentuates the herbs and spices. Now, when it comes to moderate alcohol consumption and its health benefits wine gets all the credit - well not today! Your beer contains just as many antioxidants as a glass of wine plus it’s higher in protein and Vitamin B. Now, while I don’t recommend any alcohol as a health food, if you’re going to have an alcoholic drink, why not have one that contains iron, calcium, phosphates and fibre - beer of course. Also, research by

Italy’s Fondazione di Ricerca e Cura shows that both men and women who drink a little more than one pint of beer a day are 31 per cent less likely to suffer from heart attack, stroke and heart disease. Now I must stress, I am not saying go out and drink as many beers as you can because it’s good for you, moderation is key. Finally, beer, especially in Australia, has the negative stereotype of causing the dreaded ‘Beer Belly’. Beer does not directly cause you to increase in weight, it is what we eat with the beer that ultimately does the damage. To some up, beer, when consumed in moderation, should be something you can enjoy and not something you feel guilty or self-conscious about consuming. If you want to try some cracking beers, and impress your friends with your new knowledge about beer, then head down to Tap’d at the Prince Alfred Hotel, with 72 different products on tap they are the home of all things beer!

Cheers!

With a full calendar of retro/ nostalgia festivals around the country to the mega array of retro-themed products available everywhere, Retro is here to stay. From the biggest national retail chains to tiny, one-of-akind boutiques, you can scarcely turn around these days without falling over a pink flamingo or a pineapple ornament. So why has this trend stuck around when so many other trends have bitten the dust (scrunchies and ra-ra skirts anyone)? Money, honey In uncertain economic times, (and let’s be real, the times couldn’t be any more uncertain at the moment), it is basic human nature to want to hark back to a happier, safer and more innocent time.

Rose-coloured specs The 1950s seemed to have it all. I mean who can argue with a decade that saw the rise of the pink flamingo as the ultimate décor must-have? Retro enthusiasts can’t get enough of the mid-century look and vibe and it’s easy to see why. 50s stuff just seemed to be prettier. Nicer. More charming. It was a more innocent time, away from the stress of instant communication and social media. And, putting aside the fact that this period was not necessarily a fabulous one for women’s rights it was nevertheless a great era.. The 1950s, with its age of prosperity post-World War 2, looks pretty darn appealing when compared to the fast pace and stress of this century.

Dangerous curves ahead Let’s face it, as women we’re becoming better at embracing our curves. We’ve accepted the fact that we have bosoms and bottoms. We understand that, if we’re just everyday women with everyday shapes that probably no one is going to beg us to star in the next Victoria’s Secret parade. And we’re ok with that. Plus, how could you not love an era which hailed Marilyn Monroe, Betty Grable and Jayne Mansfield, all curvaceous dames, as the beauty ideal? And what better way to show off a feminine form than with a full-skirted A-line dress straight from the pages of Vogue 1953? Green is the new black These days, we’re all about sustainability, and what could be

more eco-friendly than upcycling fashion pieces that might otherwise become landfill or stuck in the closet? Upcycling has other benefits as well – you can score amazing, oneof-a-kind garments and you don’t hurt the environment by creating container loads of disposable fashion. Plus, as an added bonus, mass production was only in its infancy during this time, so a lot of the vintage pieces you can still pick up today were actually made by hand using the best fabrics available at the time. This stuff was designed to stand the test of time and is way more durable than a lot of the cheap imported garments available to us today. Xo Rachel

Franchise Owners Tamara & Ryan Russell are excited to open their latest Zambrero restaurant which includes the added bonuses of a kid’s playroom for the full dine-in experience or drivethrough for their customers’ convenience. “We know first hand the importance of eating somewhere child-friendly but with healthy food choices,” Mrs Russell said. “Nutritionally sound, fresh food packed with true Mexican flavour that can be enjoyed by all is a Zambrero priority. We provide options for meat lovers, vegetarians, vegans, the gluten intolerant, and the dairy intolerant – as well as those watching their weight. “Since opening in September 2014, Zambrero has donated over 57,000 meals through our Plate-forPlate initiative,” adds Tamara. For every burrito or bowl (all the goodness of a burrito without the tortilla) sold at any of our restaurants another meal goes to someone in need around the world. We are helping feed the hungry. Plate 4 Plate is our reason for being. “Our guacamole is handmade, we ensure the tomatoes are fresh and juicy, and all meats are slowcooked and spiced to perfection. Orders are made in front of the customer so they can pick and choose how they want their meal to taste”. So whether you are looking for a fast healthy family meal option or the convenience of an easy take home meal, Zambrero will now have a choice to satisfy - and now at Yamanto.

UAV ON SHOW AT RAAF BASE

Queenslanders have witnessed history as Air Force aircrews flew the Heron remotelypiloted unmanned aircraft system out of RAAF Base Amberley for the very first time. The Heron has been operating from RAAF Base Amberley and flying in military airspace alongside C-17A Globemaster III, F/A-18F Super Hornets and KC-30A MultiRole Tanker Transport aircraft. The Heron is flown with fully qualified military pilots who have extensive experience on both manned and remotely piloted aircraft. Wing Commander Matthew Bowers, Commanding Officer of No 5 Flight said the two-week flying schedule involved a series of scenarios that has tested the crew. “Over the past few months our crews have been preparing for operations from a major Australian Air Force base alongside other Air Force platforms,” he said. “The Heron plays a pivotal role in Battlespace Awareness‚ and it has the ability to deliver air power effects in the support of our national security interests.”

Air Force currently operates two Heron aircraft, and the flights from Amberley are regarded as another step in the evolution of remotely piloted aircraft operations in Australia and on deployments. During operations in Afghanistan,

the Heron aircraft completed more than 27,000 mission hours providing intelligence, surveillance and reconnaissance support to Australian forces and International Security Assistance Force partners. The Heron flew its final mission

from Kandahar Airfield on 30 November 2014. In our next edition we talk to the men and women who fly this remarkable aircraft. Below: Heron UAV takes off at RAAF Amberley. (Defence)
