WALKING IN WICKLOW

The Glen Beach Cliff Walk The Grade 4 marked walk begins at Glen Beach and continues south to Lime Kiln Bay, on towards the lighthouse road before doubling back in a loop, with a total distance of 4 km.

The walk includes a wonderful variety of habitats including grassland, coastal heath, rock outcrops, and wet springs, each of which support key plant species. of individual grey seals swimming among the rocky shore are common from the trail, while the very observant may be rewarded with glimpses of porpoise and dolphins further offshore.

The trail traverses a landscape of rich cultural interest. The main archaeological sites occur on the southern section of this walk. There is a rock shelter where prehistoric flints were found, the remains of a lime kiln, which gives the bay its name, the ruins of a small church which local lore records as dating from penal times and a holly well ‘Tobar Bride. Local tradition maintains that fishermen would drink from this well in the belief that it could protect them whilst at sea.

Bray Cliff Walk This stunning coastal path takes you 7km along the cliffs between Bray and Greystones. If you want to go one way from Bray, for example, you can hop on the DART to take you back from Greystones.

The path winds its way along the side of Bray Head and is well maintained, although muddy in places at certain times of the year. It also has beautiful sea views, cliffs, marine wildlife and it’ll take you around two hours depending on your pace.

You can climb to the top of Bray Head if you want an even better view along the east coast, over Dublin city and out to the Dublin and Wicklow mountains.

Arklow Christmas Festival 2020 Details of the sixth Christmas Festival have been announced by the Arklow Christmas Festival Committee. The event has been organised with new and safe ways to manage festive activities that would avoid large groups of people and maintain two metre distancing.

The Golden Ticket draw will return this year with lots of prizes to be won - to enter into the draw all you have to do is shop locally, write your name and contact details on the back of a ticket and place in the Golden Ticket Draw Box in participating businesses.

World Snooker Grand Prix 2020 14TH – 20TH DECEMBER The 2020 World Grand Prix will run from December 14 to 20 in Milton Keynes, with extensive live television coverage from ITV4.

It’s the first in a series of three events, with players earning places based on their position in the oneyear ranking list.

Only the top 32 on that list make it to the World Grand Prix. Neil Robertson won the World Grand Prix in Cheltenham in February 2020, beating Graeme Dott 10-8 in the final.

The King George VI Chase 2020 26TH DECEMBER Get up to speed with everything you need to know about the 2020 Abu Dhabi Grand Prix, which takes place over 55 laps of the 5.554km Yas Marina Circuit on Yas Island on Sunday, December 13th.

The Hermann Tilke-designed track is dominated by its 1.2km straight between Turns 7 and 8 which, with slow-speed corners marking its beginning and end, makes it a honeypot for overtaking moves. Other highlights include the tricky run through Turns 15 and 16 into 17, which forces the drivers to brake hard with bags of lateral load still on the car.

Profiteroles with Chocolate Sauce

Raspberry or Strawberry Jelly Block

Strawberries, Raspberries or Mixed Berries (your choice)

500g Carton of Ready to Serve Custard

•

170ml Carton Cream

•

To Decorate – 2/3 bars of Flake, crumbled and Hundreds & Thousands

INGREDIENTS: •

65g/2½oz Odlums Strong White Flour

•

50g/2oz Butter or Margarine

•

150ml Cold Water

•

Pinch of Salt

•

2 Eggs (Lightly beaten)

Filling: • Whipped Cream Chocolate Sauce: • 250g Carton of Cream • 150g Chocolate

METHOD: 1. Preheat oven to 200c/Gas 6. Lightly grease a flat baking tray or place baking paper on your tray to stop any sticking.

2. Place water and butter into a saucepan over a low heat until butter melts.

3. Bring to a brisk boil. Reduce heat and add sieved flour and salt.

4. Stir briskly with a wooden spoon until mixture forms a soft dough and leaves the sides of the saucepan. Remove from the heat and allow to cool.

5. Add the eggs gradually and beat until mixture is smooth & shiny.

6. Drop dough in tablespoons about 3” apart onto the greased baking tray or, put the dough into a piping bag and pipe the dough onto the baking tray.

METHOD: 1. Arrange the sponge fingers, or if you have made a homemade sponge - slice into fingers and arrange in the base of your large glass trifle bowl.

2. Dissolve jelly as per instructions on the pack and add sherry if using. Pour the jelly mixture over the sponge fingers and allow to set.

3. Place your fruit of choice on top of the jelly. Pour over the custard, spreading evenly. Spread over the whipped cream finishing with the crumbled flake and hundreds and thousands.

Simple Christmas Dessert…

Apple Crumble INGREDIENTS •

3-4 Cooking Apples

•

100g Granulated Sugar

•

150g Plain Flour

9. While the profiteroles are cooling, warm cream over a low heat.

Add the chocolate and stir until the chocolate has melted.

75g Salted Butter, softened

10. When cooled, pipe the whipped cream into the profiterole or slit along one side and fill with the cream.

METHOD:

7. Bake for 25mins in the oven until puffed & golden.

8. Remove from oven and pierce the bottom with a skewer to release the steam. Allow to cool.

11. With your melted chocolate, drip over your profiteroles or serve with the sauce on the side.

Traditional Christmas Dessert…

Christmas Trifle INGREDIENTS: •

Sponge Fingers or Homemade Sponge

4 tablespoons of Sherry (optional)

1. Preheat oven to 180c/Gas mark 6.

2. Peel and slice the cooking apples into medium slices 3. In a bowl mix the sugar, flour and butter until it resembles breadcrumbs.

4. Arrange the apple slices in a bowl (pie dish) and sprinkle, covering the apples with the dry mixture.

5. Cook in the oven for 20-25mins or until golden brown.

6. Remove from the oven and let cool for 5-10mins. Slice and serve with custard or ice-cream
