t was a perfect day for a hike, and Austinites Kyle Shirey and Kati Dutcher decided to make the most of it. But it wasn’t the loop around Lady Bird Lake, nor was it the expansive Austin greenbelt they sought.

It was Lockhart State Park, a destination that sits more than 30 miles away from downtown Austin. “We’re trying to get healthier,” Shirey said as he and his fiancée made their way down from the park’s highest point. “We just wanted to try something different.” The couple’s discovery is one that park ranger Lauren Hartwick would like to see more people make. With 11 trails totaling 3 miles – some with notable elevation

park home. Deer, beavers, rabbits, armadillos and foxes can be spotted. Some hikers have reported seeing mountain lions, bobcats and coyotes, but such reports are far and few between, Hartwick said.

The eleven trails of Lockhart State Park The 11 trails offer an opportunity to see plants, wildlife, water and structures built by the Civilian Conservation Corps between 1935-1938. CLEAR FORK TRAIL: This .5 mile trail features views of Clear Fork Creek, historic CCC-constructed check dams and some of the largest trees in the park. (Projected time: 20 minutes) WILD ROSE LOOP: This .4 mile trail winds through habitats of bluestem prairiegrass, Eastern red cedar and green ash trees. (Projected time, 20 minutes) CREEKVIEW TRAIL: This .2 mile trail leads to a fishing spot and links to the Fence Line and Persimmon trails. (Projected time: 10 minutes) HILLTOP TRAIL: Whether ascending or descending this .3 mile trail, you will move through diverse landscapes, park officials say. (15 minutes) FENCE LINE TRAIL: The .2 mile trail allows for a chance to watch the landscape change (20 minutes) PERSIMMON TRAIL: A .2 mile trail on rugged hillside shaded with persimmon trees. (15 minutes) CHISHOLM TRAIL: Connects with Rattlesnake Run, Comanche Loop or Fence Line Trail. (15 minutes) COMANCHE LOOP: Features hilltop views of the entire park and surrounding Lockhart area (10 minutes) RATTLESNAKE RUN: The most challenging trail in the park. The climb will place you near the recreation hall CADDY TRAIL: The .1 mile trail was historically used by caddies to carry golf clubs back to the clubhouse. (5 minutes) CCC TRAIL: The trail begins at the back patio of the recreation hall and leads down via old CCC concrete steps to the park road. (5 minutes)

changes – that can all be hiked in 20 minutes or less, the park offers a viable alternative for those who like to take to the great outdoors to stretch their legs. The park is perhaps best known for its golf course – the community’s desire for a golf course and a pavilion for special events were among the reasons the land formally became a park in the 1930s – but it’s worth taking a walk without your clubs, the ranger opined. “For hiking, I’d classify this park as a hidden gem,” Hartwick said. “It’s not what I’d call unpopular, but I don’t think people here realize what a wonderful place they have in their own backyards.” Lockhart doesn’t feature many elevation changes, but the observatory at the top of the .1 mile Civilian Conservation Corps trail faces northeast and is high up enough to get a view of the town. “We actually have elevation,” Hartwick said. “If you look around most of Lockhart, it’s pretty flat. “There’s enough of an elevation change that I’ll see people getting a pretty good workout simply following the road that goes through the park. Sure, you can run on a treadmill indoors, but why not get outside and enjoy it more?” If wildlife is your thing, there’s plenty of it to go around. The park is a good place to see painted buntings, pileated woodpeckers, and various species of owls. Birdwatchers can especially appreciate January and February, Hartwick said. “You can actually see the birds when the trees don’t have any leaves on them,” she noted. Diets low in carbohydrates trending among people looking to control weight.

ook on social media sites like Facebook and Instagram, and it seems like everyone is trying to lose weight these days.

While some people prefer hitting the gym hard, and others still stick to the tried-and-true method of obsessively counting calories, there are still others who are looking for a diet with easy-to-follow rules. Therefore, it’s no surprise that

low-carb diets are gaining in popularity. A low-carb diet limits carbohydrates — such as those found in grains, starchy vegetables and fruit — and emphasizes foods high in protein and fat. Many types of low-carb diets

Grilled Pork Tenderloin with a fresh pineapple and serrano salsa

Ingredients 4 “certified” Pork tenderloins (trimmed of silver skin and sinew) 2 Dried guajillo chilies, lightly toasted, stemmed, and ground to a fine powder (a coffee mill is great for this, or you can use a mortar and pestle) 1 gold pineapple, peeled and cored, and cut into ½ inch cubes 3 green onion stalks, thinly sliced ¼ cup of chopped cilantro 1-2 large serrano peppers stemmed, seeded, and thinly sliced 2 red bell peppers, seeded, and finely diced Juice of 1 fresh lime (~ 1 tablespoon) 1 tablespoon brown sugar ¼ Vegetable oil 1/3 cup fruity olive oil Salt & pepper to taste

Procedure In a bowl, add the homemade chili powder with the vegetable oil, and mix well.

Add the pork tenderloins and thoroughly coat them in the ground chili & vegetable oil mixture, cover, and marinate for at least 6 hours in the refrigerator. In a separate bowl, add the pineapple, green onions, cilantro, serrano peppers (to taste), and red bell peppers and mix together. Add the fresh lime juice, olive oil, and salt and pepper to taste, and set aside. On a medium hot grill, quickly sear the tenderloins on all sides to grill mark, then cook to your preferred temperature. Pull the tenderloins off of the grill and set aside to “rest” for at least five minutes to allow the juices to redistribute into the meat. Serve this dish “family style” on a platter, with the tenderloins in the center of a bed of pineapple salsa, along with a side dish of your choosing. Scalloped potatoes pair nicely with this dish, or keep it light and serve as is. ~Parind Vora, Lockhart Bistro

exist, including the ketogenic diet (which was originally used to control symptoms of epilepsy), the South Beach Diet (healthy fats, lean meats and minimal sugar), and the Atkins Diet, a meat-heavy diet stereotypically popular among bacon lovers. Each diet has varying restrictions on the types and amounts of carbohydrates you can eat, but generally the goal is to keep the number of grams of carbs to a bare minimum. According to the Mayo Clinic, some low-carb diets may have health benefits beyond weight loss, such as reducing risk factors associated with type-2 diabetes and metabolic syndrome. The idea behind the low-carb diet is that decreasing carbs lowers insulin levels, which causes the body to burn stored fat for energy and ultimately leads to weight loss. In general, a low-carb diet focuses on proteins, including meat, poultry, fish and eggs, and non-starchy vegetables like zucchini, cabbage, broccoli, squash, spinach, lettuce and other leafy vegetables, as well as non-sugary fruits like tomatoes and avocados, which are high in unsaturated fat but also a good source of protein and fiber. A low-carb diet generally excludes or limits most grains, legumes, fruits, breads, sweets, pastas and starchy vegetables, and sometimes nuts and seeds. Some low-carb diet plans allow small amounts of certain fruits, vegetables and whole grains. According to mayoclinic.org, a daily limit of 0.7 to 2 ounces (20 to 60 grams) of carbohydrates is typical with a low-carb diet. These amounts of carbohydrates provide 80 to 240 calories. Some low-carb diets greatly restrict carbs during the initial phase of the diet and then gradually increase the number of allowed carbs. The low-carb way of eating differs from the standard provided by the Dietary Guidelines for Americans, which recommends that carbohydrates make up 45 to 65 percent of your total daily calorie intake. Mayoclinic.org says low-carb diets may lead to greater short-term weight loss than low-fat diets, but over time, the advantage is less obvious. But weight loss isn’t the only reason people turn to the diet. Some people use the diet to prevent or control metabolic syndrome, diabetes, high blood pressure, cardiovascular disease and diabetes. How is cannabidiol different from marijuana? CBD stands for cannabidiol. It is the second most prevalent of the active ingredients of cannabis (marijuana). While CBD is an essential component of medical marijuana, it is derived directly from the hemp plant, which is a cousin of the marijuana plant. While CBD is a component of marijuana (one of hundreds), by itself it does not cause a “high.” According to a report from the World Health Organization, “In humans, CBD exhibits no effects indicative of any abuse or dependence potential…. To date, there is no evidence of public health related problems associated with the use of pure CBD.”

In December 2015, the FDA eased the regulatory requirements to allow researchers to conduct CBD trials. Currently, many people obtain CBD online without a medical cannabis license. The legality of CBD is expected to change, as there is currently bipartisan consensus in Congress to make the hemp crop legal which would, for all intents and purposes, make CBD difficult to prohibit.

Is cannabidiol safe? Side effects of CBD include nausea, fatigue and irritability. CBD can increase the level in your blood of the blood thinner coumadin, and it can raise levels of certain other medications in your blood by the exact same mechanism that grapefruit juice does. A significant safety concern with CBD is that it is primarily marketed and sold as a supplement, not a medication. Currently, the FDA does not regulate the safety and purity of dietary supplements. So you cannot know for sure that the product you buy has active ingredients at the dose listed on the label. In addition, the product may contain other (unknown) elements. We also don’t
