The snowy owl lives in the Arctic Circle and travels south for the winter months. In North Dakota, you can see these birds across the state during the winter season. North Dakota is one of the midwestern states where the snowy owl lives all winter long.

As I sit here writing this, the ground is covered in our first snowfall of the season. And it is that first “substantial” amount that makes you truly realize it’s here to stay. Winter has arrived, and I totally believe revived, after chasing the tails of our most perfect fall. I do confess, I do love winter and every snowflake that falls. So indeed, it is a time of celebration. Our thoughts have turned to the awaited season, the holidays, and our anticipation for the month that is ahead.

In this issue, we are excited to share with you a multitude of creative and beautiful ways to adorn your homes for the holidays. From setting an inspiring table for your guests to offering our readers a bounty of ideas to help you present your home in holiday finery, it is all here.

The good news is that women across the region now have an expert to turn to for help with pelvic floor issues. Dr. Erin Maetzold, who recently joined Essentia Health in Fargo, is the only fellowship-trained urogynecologist in the entire state of North Dakota.

Urogynecologists are board-certified obstetrician-gynecologists or urologists who complete a three-year fellowship and certification in female pelvic medicine and reconstructive surgery. This fellowship provides expertise in the evaluation, diagnosis and treatment of conditions that affect the muscles and connective tissue of the female pelvic organs.

Dr. Maetzold recently completed her fellowship at the University of Iowa Hospitals and Clinics in Iowa City. When it came to choosing where she would begin her career as a urogynecologist, Dr. Maetzold knew that Essentia Health in Fargo was a perfect fit.

“I knew I wanted to come to Essentia after meeting with the OBGYN team and seeing how dedicated they were to improving women’s health,” she said.

“I think having people who truly care about women’s health throughout their lifetime is so important.”

And Essentia Health-Fargo has proven to be a good match for Dr. Maetzold in more ways than one. She was born in Devils Lake and grew up in

“It’s a fairly new subspecialty in the field of medicine,” explains Dr. Maetzold. “Traditionally, many OBGYNs were trained with certain urogynecological techniques, but it became a certified fellowship in 2011.”

Dr. Maetzold says that as the only fellowshiptrained urogynecologist in North Dakota, her main priority is to reduce the stigma surrounding many of these conditions and educate women about available treatment options that can dramatically improve their quality of life.

With a small number of fellowship graduates each year, Dr. Maetzold is part of a select group of specialists in the country. She is proud to become the only fellowship-trained urogynecologist in North Dakota and recognizes the positive impact that her move to Fargo will have on local women.

“I know that many women suffer from these issues, so being able to help provide additional care and give women more treatment options is really important,” she said. “Many of these patients in North Dakota or northern Minnesota don’t want to travel hours and hours to go see a specialist in another state, so being able to get this care close to home is going to be helpful for so many.”

Bringing evergreen trees indoors has traditionally been used to celebrate winter festivals by both Pagans and Christians for thousands of years. Pagans used evergreens to decorate their homes during the winter solstice as a symbol of light in a dark winter with hopes of spring. Early Romans decorated their temples during midDecember to honor Saturn, the god of agriculture.

In England, George III’s wife, Queen Charlotte, made societal history in December 1800 by setting up a yew tree in the drawing room at the Queen’s Lodge in Windsor and hosting a large party. The tree was decorated with baubles, fruit, toys and small wax candles — a sight that delighted noble guests. In 1848, an illustration of Queen Victoria, Prince Albert and family standing around their Christmas tree at Windsor Castle was featured in the London news. Victoria and Albert were popular royals and soon all British homes began to include an evergreen tree during Christmas.

This is the third home Birmingham has worked on for the homeowners and each design project was uniquely different because of its geological location. This past winter, while her clients were wintering in Florida, Birmingham helped them with their local summer home build. Deciding on surfaces, furniture, lighting, flooring and more all from afar proved to be a positive experience. “I’m just so grateful they put

It’s all in the details, such as lighting fixtures and furniture, and Birmingham loves them. “I loved picking out the lighting and furniture the most,” she says. “I like to use the analogy that lighting in a home is like jewelry to an outfit. Finding the right mix is so important. Finding quality, comfortable and lovely furniture is most important. Scale, fabric and style all have to meld. Also, knowing how a family lives — who gathers at what times of the day, the age of the homeowner and their frequent guests.”

Understanding scale is crucial when it comes to purchasing furniture. Birmingham adds, “I feel bad when a client comes to us and says that they bought furniture that was too big or too small. It’s the Goldilocks

challenge — it has to be ‘just right.’ I’m just incredibly happy and satisfied when my clients love their new spaces and feel totally at home. It’s so heartwarming and satisfying.”

And, although this is not exactly a fairy tale, this story has a very happy ending for all, according to the homeowners.

“This is the third home that we have partnered with Linda. My husband and I are extremely impressed with her talent and hard work on this project while we were in Florida. Sending us fabric samples and pictures of art, furniture and lighting — it can be done from miles apart! It was definitely less stressful having someone in North Dakota looking out for us. The word glögg is spoken by the Swedish and Icelanders, gløgg by Norwegians and Danes, and glögg by the Finnish and Estonians.

No matter how it’s pronounced or spelled, this Nordic mulled holiday drink has been warming souls since the early 1600s. Traditionally, spices were added to the poor-tasting wines of the time to enhance the flavor. As the wines improved over time, the warm-spiced Gløgg remained popular, eventually becoming a traditional Christmas beverage.

Dating back to the 1600s, this warm-spiced Christmas drink is still enjoyed today during the holidays. In Scandinavian countries, outdoor markets traditionally draw revelers during the holidays for food, social interaction, and gløgg. Try it for yourself this Christmas and fill your home with its wonderful soothing fragrance.

CLASSIC GLØGG

INGREDIENTS:

½ cup raisins

1 cup akevitt (or brandy or vodka)

1 cup water

½ cup sugar

2 cinnamon sticks, broken in half 4 whole cloves

6 whole cardamom seeds, crushed

Peel of 1 orange, thinly shaved

1 small piece ginger, peeled and cut in half 2 cups burgundy or pinot noir wine

2 cups port wine

Blanched almonds

METHOD:

Soak raisins in akevitt (or brandy or vodka) for 30 minutes.

Put a large pot on the stove over high heat. Add water and sugar to the pot and stir with a wooden spoon until the sugar is completely dissolved.

Lower the heat to medium and add cinnamon, cloves, cardamom seeds, orange peel and ginger. Stir again with wooden spoon. Do not allow the mix to come to a boil from this point on.

Add the akevitt-raisin mixture, burgundy or pinot noir wine and port wine.

Sweeten and spice to taste. Strain, garnish with raisins and slices of blanched almond and serve hot off the stove.

Note: The drink can be made a day ahead and kept covered, on the stove, at room temperature. Reheat before serving.

SPICED ORANGE GLØGG

(non-alcoholic option listed below)

INGREDIENTS:

2 cups orange juice

¼ cup firmly packed brown sugar

1 tsp. slightly crushed cardamom seeds

1 piece fresh, peeled ginger about 1-inch square, or 1/8 tsp. ground ginger

1 28-ounce bottle white table wine, Reisling or Rhine (or 4 cups white grape juice)

METHOD:

In a non-aluminum saucepan, combine the orange juice, brown sugar, cardamom and ginger. Heat slowly to a boil. Add wine (or grape juice).

Serves six to eight.

A said favorite of the Vikings during their long voyages, ebelskivers are delicious, pancake-like, fluffy treats that are often enjoyed with a cup of hot gløgg at Christmas. Filled with sweet or savory fillings, they are also enjoyed with syrup, dusted with powdered sugar, or dipped in chocolate or jams.

Another Scandinavian classic enjoyed with gløgg is riskrem. This Norwegian dessert, similar to rice pudding, is flavored with cinnamon, vanilla and raisins and served chilled.

Commonly used spices in gløgg are cloves, cinnamon, cardamom and ginger. Other flavorful ingredients include citrus peel from oranges and lemons, almonds and even raisons. Many recipes call for a red wine base with the addition of port, sherry, vodka, akvavit or brandy. Purchasing a high-end red wine is not necessary for this liquid treat, as the spices, fruit and nuts will take flavor command over this unique holiday beverage.

At Christmas in Sweden, gingerbread and lussebullar (also called lussekatter), a type of sweet bun with saffron and raisins, are typically offered. It is traditionally served at Julbord, translated literally to the “Christmas table,” the traditional Scandinavian Christmas buffet.

In Denmark, gløgg holiday pairings typically include æbleskiver (Danish pancakes) sprinkled with powdered sugar and accompanied by strawberry marmalade. In Norway, gløgg is paired with its popular holiday treat, rice pudding or riskrem. Perfect for a gathering this holiday season, serve a warm cup of gløgg with cookies, small sandwiches, hors d’oeuvres or other nibbles. Give it a try — it just might become a Christmas tradition for you, too!

What is aquavit?

Akevitt (Norwegian), akvavit (Danish), or aquavit (English) are all the same names for a traditional holiday spirit home to Scandinavia – Norway, Sweden, Finland, and Demark. It hearkens back to the 1500s and remains a cultural mainstay. The name comes from the Latin Aqua Vitae (water of life) assimilated into their own languages. Aquavit is distilled from potatoes or grain mash and flavored with a multitude of spices including dill, caraway, juniper, cardamom, fennel, coriander, citrus, and anise. The spices used to create the specific flavor characteristics are localized to each Nordic country. Swedish and Danish aquavit is clear. Distilled from grain, they lean heavily on dill, coriander, and caraway. The Swedes create their clear aquavit with stronger fennel and anise components. Traditionally, Norwegians use potato mash and incorporate caraway, dill, fennel, anise, and coriander. Aged in casks, the Norwegian spirit takes on a golden color. Since 1821, the Norwegian-made LINIE aquavit has been aged on a 4-month sea journey across the world, crossing the equator twice, LINIE meaning equator “line”. Stored in 333-gallon sherry casks on the ship’s main deck, the aquavit is exposed to the natural fluctuations of the sea weather’s temperature, humidity, air pressure, and rolling wave movement accelerating the aging process. The journey, live-streamed on their website, begins at Oslo, then onto Baltimore, through the Panama Canal to Tacoma, and then off to Japan, Australia, and back to Oslo— you can actually follow the voyage on the LINIE website. You don’t have to be a Viking or Scandinavian to enjoy pickled herring with crackers and “smorrebrød “open-face sandwiches with friends. *Raise a tulip-shaped glass of aquavit and shout “Skål”!

till sated from your Thanksgiving feast? It’s not the time to take your foot off the gas. December is upon us and if the Farmer’s Almanac prophecies are remotely accurate, which I have no reason to doubt, we are in for a cold, snowy winter, which makes the toasty kitchen the place to be.

It wasn’t until I spent time in Stockholm that I really came face to face with Nordic culture. Scandinavia includes Norway, Sweden, Finland, Denmark and, in some circles, Iceland and the Orkney Islands located off the coast of Scotland. If you are wondering why islands off the Scottish coast is included, this archipelago of 70 islands were annexed by the Danish in 875 until 1468.

Early in my career, the momentum of cooking changed dramatically when a few French chefs went rogue, creating what would become known as the “Nouvelle Cuisine” movement. This new movement was a hard right turn from the heavy flour-laden sauces to light, fresh, bright flavors and complex textures. I was hooked. It suited my artistic side perfectly and being a Garde Mange chef (cold kitchen) at the time, it was a great fit. It smacked of the Japanese style of precision and contrasting flavors that was totally in step with the Scandinavian style, in particular the open-faced sandwich and smørrebrød

I embraced this new style, incorporating the Norwegian techniques of curing meats and fish and the pickling of various vegetables that created a bright, colorful visual appearance. Nordic chefs have changed the face of modern fine dining, creating a global phenomenon. Driven by sourcing local ingredients, foraging and studying the history of their culture, chefs like Rene Redzepi of Noma in Copenhagen turned fine dining on its head and influenced a whole generation of upcoming chefs. The Franztén Group based

in Stockholm has established award-winning restaurants worldwide. Maaemo in Oslo, Norway, is a Michelin three- star restaurant that has brought back the experience of fine dining with locally sourced ingredients, superb service and elegant trappings.

Now, weave your way through the rugged valleys and mountains of central Norway to the medieval village of Numedal, home to Nevada Berg, the new voice of Norwegian cuisine. Author of the award-winning book, North Wild Kitchen, she captures the essence of Scandinavian cooking. It is a must-have for anyone who loves cooking and eating well. I had to ask Nevada, with all her knowledge, what would be on her Christmas Eve table. Christmas Eve, or Julafton, is the night they open presents and eat a big Christmas meal with a healthy amount of Gløgg (mulled wine) and dark, spiced beer. Lamb and mutton play a big part in the Norwegian diet so Nevada and her family will be having Pinnekjøtt (cured lamb ribs) with mashed rutabaga and rice porridge. Making Pinnekjøtt is a severalstep process — salt-curing lamb racks, airdrying them, smoking (optional), cutting the racks into ribs, rinsing off the salt and, lastly, steaming them for the table. The dessert, rice porridge called riskrem, Nevada shared, is a Christmas Eve tradition where one almond is hidden in the porridge and whoever finds it gets a marzipan piggy candy.

The Nordic countries embrace Christmas traditions. St. Lucia’s Day on Dec. 13, the festival of light, starts the holiday celebrations right up to Christmas Eve. In schools, an appointed girl will dress in a white gown and wear a wreath with a lit candle wreath upon her head. She will then lead a procession of both boys and girls in St. Lucia’s honor through the school while the children hand out Lussekatter (saffron buns) to friends and loved ones.

There are so many wonderful things to bake and cook on these dark cold winter days. Scandinavians celebrate the holidays enthusiastically through New Year’s Eve. Sounds good to me. Spread a little Christmas cheer with these St. Lucia saffron buns, a favorite of Nevada Berg. Merry Christmas!

You’ll want to eat these buns fresh. Use any stale leftovers (that is, if there are any) to make a delicious bread pudding. Makes about 14 buns.

INGREDIENTS:

2/3 cup (150g) butter

2 cups plus 1 Tbsp. plus 1 tsp. (5dl) milk

2 ounces (50g) fresh yeast or 2/3 ounces (17g) active dry yeast

¼ teaspoon (0.5g) ground saffron or saffron threads, gently crushed

¾ cup (15g) granulated sugar

1 tsp. salt

2 large eggs

7½ cups (900g) allpurpose flour, plus more if needed

Raisins, for decoration Egg, for egg wash

METHOD:

In a medium saucepan over medium heat, melt the butter. Whisk in the milk, yeast and saffron and remove from the heat. Add in the sugar and combine. Whisk in the 2 eggs and pour the mixture into a large bowl. Add in the flour and salt and mix to form a sticky dough. Turn it out onto a lightly floured surface and knead until smooth and elastic, about 5-10 minutes. Cover with a tea towel and let it rest for 45 minutes, or until doubled in size.

Divide the dough into 14 or so equal portions. Working with one piece of dough at a time, roll out into a strand, roll up one end into the middle, and roll the other end into the opposite side, forming an S-shape (see photos for inspiration). You can also shape them as desired. Place the buns on two large parchmentlined baking trays. Let the buns rest, covered with a tea towel, for another 15-20 minutes, until doubled.

Preheat the oven to 400°F / 200°C. Decorate the buns with raisins. In a small bowl, whisk the egg for the egg wash and, using a soft-bristled brush, lightly brush the egg on top of the dough.

Bake the buns, one tray at a time, for 10-12 minutes, until golden.

Lucia Festival of Lights

Lucia was an Italian saint, born in about 284 A.D. in Sicily, known for her generosity in feeding the poor and homeless. Today, in commemoration, almost every town in Sweden chooses one girl to be that year’s Lucia girl to lead the town’s Lucia parade. The chosen girl wears a white full-length chemise with a red sash around her waist and a wreath of lingonberry sprigs on her head that holds real candles for a halo effect. She is joined by a group of Lucia attendants and “Star Boys”, who together form a choir that sings Christmas carols and the traditional Lucia Song. Individual families choose their own Lucia – usually the oldest daughter — whose duties are to sing and serve the family saffron buns and peppakakor, ginger cookies.

PLUM PUDDING,

an English holiday treat

Christmas brings all the usual suspects: fruit trifles, cakes and a will-power testing number of cookies and pies. Lacking in contemporary popularity, especially on this side of the pond, plum pudding deserves a revival. Often confused with its wanton cousin fruitcake, plum pudding is entirely divine.

Much like the way it is served on fire, light needs to be shed upon our Yankee thoughts concerning plum pudding. The dessert dates back to medieval England, where the word “plum” referred to dry fruit and “pudding” simply meant any type of dessert. Plum pudding contains no plums and is more aptly described as a steamed cake, with its beginnings rooted in necessity.

Unlike today, plum pudding was made of fats, spices and alcohol used as preservatives and mixed with meats, vegetables and grains stuffed into the stomach or intestine casings of animals. As the 16th century came to a close, continued on page 69

Grease and sugar any recipe that calls for grease and floured pans. At first, I worried that the sugar would caramelize, creating a sticky sauce, but the sheer, lace-like coating does nothing of the sort. Unlike raw flour, which clumps, sugar granules want to establish an even layer. Toasted sugar creates a sweet, sparkly, crunchy crust.

Grease the pan, add a big scoop of sugar, tap around until there’s an even coat, then toss the excess. Use the trick anywhere you would grease and flour, excluding savory food. You can even grease, line and sugar, too. I love the texture it lends to soft cakes. The sturdy crust stands up better to frosting and adds a delicious crunch. If you’re feeling fancy, add salt or ground spices to the sugar. Or, if you’re making chocolate cake, stir in cocoa powder.

Native to western Asia and the Middle East, figs commonly found dried, are delicious when eaten fresh. They are packed with vitamin A, C, calcium, iron, potassium, and magnesium.

One baking tip for chopping figs is to first coat them with flour to prevent them from sticking together. This will also hinder the figs from sinking to the very bottom of the baking pan.

ENGLISH STEAMED PLUM

INGREDIENTS:

1 cup light molasses

¾ cup melted butter

½ cup warm milk

2 eggs beaten

1 cup all-purpose flour, plus additional for tossing fruit

1 tsp. baking soda

1 tsp. salt

1 tsp. ground cinnamon

½ tsp. nutmeg

½ tsp. ground cloves

I Tbsp. orange zest

1 pint candied mixed fruit (or diced dried fruit such as pineapple, pears, apples and plums)

1 cup raisins

1½ oz. brandy Holly sprig for garnish

PUDDING

METHOD:

There are several options I have tried when baking. I have used loaf pans, round cake pans, and cupcake pans – all work perfectly. A brandied hard sauce is the crowning glory to this dessert.

WITH HARD SAUCE

Preheat oven to 350 degrees. Combine molasses, melted butter, milk and eggs in a mixing bowl. Next, combine the flour, baking soda, salt, cinnamon, nutmeg and cloves in a large mixing bowl.

Fold in dry ingredients to the wet ingredients in three additions. Toss candied fruit and raisins lightly with flour to prevent sinking and add to batter. Stir in brandy.

Pour into a greased and sugared* pudding mold, metal gelatin mold or oven-proof bowl. Cover tightly with heavy-duty foil and tie with kitchen string to secure. Place on a rack in a large covered pot/stock pot. Add 3 inches hot water to pot. Place in preheated oven.

Steam for 2 hours, checking water level occasionally. Insert a toothpick to test for doneness. Let cool for 5 minutes on a rack before turning out. Dust with powdered sugar and serve with a sprig of holly and hard sauce. To light your pudding, see directions.

dried fruits became more plentiful and readily available and plum pudding made a delicious shift from a savory necessity to a sweet dessert.

Traditionally, the cake would be stored for weeks in a cool spot and “fed” weekly with brandy. Sugar, spices and alcohol promoted its longevity. Plum pudding was typically made four weeks in advance, or on Sunday before Advent, and remained edible for up to one year.

When I set out to make this traditional English dessert, I realized I was without a pudding mold. Any baking dish sufficiently greased and sugared* will do. I used a copper baking dish, which yielded two puddings. If you are without a pudding mold, you simply need to cover your baking dish tightly with greased aluminum foil to achieve the same end result.

Plum pudding is baked in “bain-marie,” or water bath-style, using steam to cook — in the same manner as custards. I steamed my plum pudding for a little more than two hours at 350 degrees. Historically, the “plums” in this pudding were prunes, raisins, currants and apricots, but any dried fruit will do, such as pineapple and cranberries. Nearly as important as the fruit and brandy are the spices. Cinnamon, ginger, nutmeg, cloves and allspice play key roles. Adding orange zest and candied fruit peel and presoaking dried fruit in cognac or brandy is a taste benefit.

Lighting the Christmas pudding, immortalized in Charles Dickens’ classic, A Christmas Carol, and also the carol, We Wish You a Merry Christmas, became a special event in English homes.

Full of delightful textures and flavors, your guests will arrive singing, “Oh, bring us a figgy pudding. Oh, bring us a figgy pudding. Oh, bring us a figgy pudding and a cup of good cheer.”

HARD SAUCE INGREDIENTS:

¼ lb. butter

1 cup sugar

1 pinch salt

1 tsp. vanilla extract

1 oz. brandy or rum

METHOD: Beat all ingredients together until combined. LIGHTING

True to tradition, plum pudding is served soaked in cognac or brandy and set aflame. Here’s how.

* CHOOSE YOUR PLATE WELL - Your plate is important in this fiery and festive endeavor. Turn your steamed pudding onto a serving plate with a slight depth to it and wide enough to catch any spirit.

* PREPARE YOUR BRANDY - The brandy must be piping hot. Pour 3 or 4 tablespoons of brandy into a longhandled metal ladle, and heat it over a gas flame or lit candle until hot. Do not boil as it will burn off the alcohol and will not ignite.

* LIGHT BEFORE POURING - Use a long stick match, if possible.

* POURING BRANDY - Do not pour the brandy on the pudding before lighting, which will make it nearly impossible to light. Instead, light the piping hot spirit while in the ladle. Immediately pour over the pudding.

* CARRY CAREFULLY - Be cautious when carrying your plum pudding to the table and enjoy the awe of your guests!
