Coral Reef

Un arrecife de coral es una estructura de piedra caliza que proporciona refugio para casi un cuarto de toda la vida marina que hay en los mares. Como uno de los más grandes y complejos ecosistemas del planeta, los arrecifes de coral son hogar de más de 4.000 especies de peces, 700 especies de coral y miles de otras plantas y animales.

aralelamente a la costa de nuestra Riviera Maya serpentea bajo las aguas del Mar Caribe una maravilla natural casi única en el Mundo, se trata del famoso Sistema Arrecifal Mesoamericano, precisamente nuestro arrecife coralino. Debemos destacar que en cuanto a su longitud ocupa el segundo lugar después del arrecife australiano. Se extiende por la costa oriental de México, Belice, Guatemala y Honduras recorriendo más de mil kilómetros (625 millas), lo que permite identificarlo como el más grande del Hemisferio Occidental. Constituye un ecosistema de elevada fragilidad que proporciona alimento y refugio a muchísimas especies marinas, sumado a que es la primera protección física para las costas en caso de huracanes. Estos son algunos de los motivos por los cuales merece extrema atención en cuanto a su protección y conservación. La Fundación Orígenes de Quintana Roo, A.C. en colaboración con el H. Ayuntamiento del Municipio de Solidaridad y otros grupos están trabajando en un programa hacia la Certificación de la calidad de las Playas de Tulum. Será la primera playa mexicana en alcanzar tal alto reconocimiento mundial. La playa y el arrecife comparten íntimamente el Ecosistema, por lo que una de las primeras activida-

elow the waters of the Caribbean Sea and running parallel along the coast of our Riviera Maya, winds a unique natural marvel our coral reef, or more specifically, the famous Mesoamerican Reef System. Second in longitude only to the Great Australian Barrier Reef, it extends along the eastern Mexican coastline of Belize, Guatemala and Honduras covering more than 625 miles (1000 kilometers), making it the largest in the Western Hemisphere. The Mesoamerican Reef is comprised of an ecosystem of enormous fragility yet provides nourishment and refuge to a many different species of marine life, which is why its protection and conservation deserve close attention.

Muchas veces confundido como planta o roca, el coral se compone de animales diminutos y frágiles conocidos como pólipos y de los esqueletos de estos cuando mueren. Hay dos tipos de coral: el coral duro, cuya estructura de carbonato de calcio (también conocido como piedra caliza) forma los arrecifes de coral (coral cerebro) y el coral suave, que por su forma y flexibilidad se asemeja más a las plantas. Los arrecifes coralinos son uno de los recursos de biodiversidad de más valor conservacionista y económico de los países de la región tropical y subtropical. Sin embargo actualmente se encuentran seriamente afectados o amenazados por actividades humanas ecológicamente insostenibles (sobre pesca, contaminación, sedimentación, colecta indiscriminada de organismos, daños mecánicos producidos por embarcaciones, anclas, buceo, etc.) y por factores vinculados con el cambio climático mundial (principalmente calentamiento del agua a causa del efecto de inver-

For this conservation team, one of the first tasks for achieving this certification was to facilitate a group of divers and local biologists to constantly monitor the reef. In charge of this operation was Dr. Pedro M. Alcolado, an international expert on the subject and Scientific Investigator from the Cuban Institute of Oceanology. The following is an interview with Dr. Alcolado, who informs us of how delicate, important and valuable each part of this ecosystem is. A coral reef is a limestone structure that provides refuge to almost a quarter of all the marine life in the sea. As one of the biggest and most complex ecosystems on the planet, coral reefs are home to more than 4000 species of fish, 700 species of coral and thousands of other plants and animals. Often mistaken as a plant or rock, coral is composed of tiny, fragile animals and their skeletons (once they die) known as polyps. There are two types of coral: hard coral, whose calcium carbonate structure (also known as limestone) forms the coral reefs (the coral brains) and soft coral, which due to its form and flexibility looks more like a plant. Coral reefs are one of the most bio diverse resources that have conservational and economic value in the tropical and subtropical regions. However, they are seriously affected and thre-

Los mares mexicanos del Caribe y Golfo de México poseen una extensión estimada de 1 350 km2 de arrecifes coralinos. Estos arrecifes sostienen importantes recursos pesqueros de elevada calidad y demanda, y su uso para el buceo los hace un producto de alto interés para el desarrollo del turismo. Por otra parte, muchas costas de Quintana Roo, incluyendo playas, son efectivamente protegidas por largas cadenas de crestas coralinas. Por ello el conocimiento de sus características biológicas y ecológicas, su funcionamiento y requerimientos, su fragilidad y las vías para su protección y uso sostenible es de gran importancia en los sectores de la pesca, el turismo y el medio ambiente, entre otros. La participación de voluntarios de centros de buceo, áreas protegidas, instituciones científicas y las propias comunidades (pescadores y aficionados al buceo) es muy necesaria para alertar de forma temprana a entidades designadas y a organizaciones no gubernamentales conservacionistas lo que acontece en ese importante ecosistema. Esto permite mantener una vigilancia de gran escala geográfica con bajo costo, y sin afectar la actividad laboral en el mar en el caso de los guías de buceo turístico. De este modo se puede reaccionar rápidamente tomando las medidas viables que correspondan o realizando las veri-ficaciones o investigaciones donde sean necesarias Para poder participar en esa necesaria iniciativa debe capacitarse a los interesados y a los que de alguna manera utilizan o protegen los recursos de los arrecifes, con los conocimientos básicos que les permitan discernir cuando se está ante una situación desfavorable o de mejoría que merezca ser considerada e informada oportuna14 IN RIVIERA MAYA

atened by indefensible human activity (over-fishing, pollution, sedimentation, indiscriminate collection of orga-nisms, mechanical damage produced through disembarking, anchors and diving, etc.) and by factories linked to world climate change (principally the rise in water temperature caused by the greenhouse effect and the increase in the frequency of intense hurricanes and of the concentration of CO2 in the water). The seas of the Caribbean and the Gulf of Mexico possess an estimated 1350 square km of coral reef. These reefs sustain an excellent quality of marine life for fishing and diving, and the demand for this natural resource fuels our tourism industry. Many of Quintana Roo’s coasts and beaches are protected by a large chain of coral reef crests. These crests are a first line of defense against hurricanes and tropical storms which can cause significant beach erosion. Although the reef provides protection to our coastlines, they are extremely fragile. This is why it is important for all of us to understand and learn more about how we can help preserve this natural wonder. The participation of those in the local communities such as volunteers from dive centers,

mente. El monitoreo de voluntarios de alerta temprana no requiere de aditamentos de muestreo ni empleo de tiempo extra a los que laboran en el medio marino. Sólo se basa en la observación sabia basada en los conocimientos adquiridos y el dominio de la elaboración de los sencillos reportes que demanda. Esta actividad también sirve para concienciar más a las personas sobre la importancia, fragilidad y necesidad de protección de los arrecifes, y da una oportunidad más a las empresas lucrativas para materializar su voluntad de contribuir a la conservación de los ecosistemas y sus especies. Ese tipo de iniciativa se aplica ya en la Gran Barrera Australiana, Indonesia, Florida y Cuba. Aparte de los factores dañinos mencionados al principio (contaminación, sedimentación, daño mecánico, sobrepesca, etc.), actualmente por el gran impacto negativo que ejerce sobre los arrecifes coralinos, ha de prestarse especial atención a la merma (por pesca) de las especies de peces herbívoros (que se alimentan de algas) como los peces loros y cirujanos. Estos son los responsables del control del crecimiento excesivo de las algas que compiten contra los corales por la ocupación del espacio, y además favorecen la aparición de enfermedades de corales al propiciar el desarrollo de mi-croorganismos patógenos a través de la liberación de sustancias orgánicas solubles al agua. Se ha comprobado que donde abundan las algas se enferman más los corales y el cubrimiento del fondo por ellos es cada vez menor. Esos peces cuando tienen tallas mayores son mucho más eficientes en la eliminación de algas, y además sufren menos riesgos de ser depredados por peces carnívoros. Además, son siempre más escasos que los pequeños y más codiciados por los pescadores. Es fácil comprender lo peligroso que es pescarlos, amén de la pérdida de

scientific institutions and those in the protected areas (fishermen and divers) is necessary to provide early alerts to nongovernmental conservation organizations as to what is happening in this important ecosystem. This allows us to keep watch on a grand geographical scale with minimum costs, without affecting the fishing and tourism industry. By providing these early alerts, the organizations can react quickly, taking the necessary measures and carrying out verifications and investigations wherever necessary. For this initiative to be effective, it is important that those groups and individuals who are involved in the reef’s protection be empowered with the basic knowledge of potential hazards or possible improvements. The responsibilities of early alert volunteers do not require scientific tools, nor does it demand extra time of those who work in environmental institutions; it’s only based on the utilization of acquired knowledge and analysis of basic reports. These activities help to provide a general awareness of the importance, fragility and necessity of the protection of the coral reef; it also gives an opportunity to large companies to demons-trate their willingness to contribute to the conservation of the ecosystem. This type of project has already been applied in Indonesia, Florida, Cuba and the Great Barrier Reef of Australia. Aside from the damaging factors mentioned earlier (pollution, sedimentation, and overfishing, etc), special attention has to be given to decrease the amount of waste from the fishing industry. Additional precautions should be taken to protect the species of herbivore fish (that feed on algae) such as the parrot and the surgeonfish. These fish are responsible for controlling the excessive growth of algae, which competes against the coral for space. Too much algae can cause coral illnesses, produced by pathogenic micro organisms, through the release of soluble organic substances in the water. It has been proven that where algae are more abundant, more of the coral becomes ill. Up until the early 1980’s, there were three main species of herbivores that protected the reef, the parrot fish, the surgeon-

La importancia de no pescar loros y cirujanos se ha hecho mayor cuando el erizo negro de espinas largas (Diadema antillarum), uno de los herbívoros principales del arrecife, sufrió una pandemia mortal en todo el Gran Caribe debida a una enfermedad desconocida a principios de los años ochenta. Ahora los peces loros y cirujanos están solos en esta faena y son cada vez más escasos. Los peces herbívoros pequeños también hay que protegerlos como fuente de futuros peces grandes que serían. Esto es lamentable ya que se ha demostrado que donde no hay control de algas por herbívoros la velocidad de recuperación del arrecife ante huracanes es mucho más lenta y de hecho los huracanes parecen amenazar cada vez más. También es vital evitar causar estrés adicional a los corales duros que ya están padeciendo la enfermedad llamada “blanqueamiento” causada principalmente por el calentamiento anormal del agua que ocurre cada cierto número de años, principalmente con la ocurrencia de eventos “El Niño”. Esa es una enfermedad no contagiosa de tipo fisiológico consistente en la pérdida de las algas microscópicas simbiontes (zooxantelas) que indispensablemente viven dentro del tejido del coral. Bajo esta situación es preciso que el buceo se realice lo más alejadamente posible de los corales, una fractura, herida o lluvia de sedimentos puede llevarlos a la muerte, ya que se encuentran en un precario estado de nutrición por la falta de sustancias alimenticias que le brindan esas zooxantelas. En ocasiones es necesario suspender el buceo en áreas con mucho coral blanqueado, como se hace en Bonaire, por ejemplo. Naturalmente, aún cuando los corales están en buen estado, no deben excederse las capacidades de carga de buceo turístico, internacio-nalmente recomendadas con valo-res de entre 4,000 y 6,000 buzos visitantes / punto de buceo / día. Este estándar presupone que los visitantes tengan control sobre su flotabilidad, así como que cumplan las normas de buceo y adquieran conocimientos sobre las precauciones que hay que observar en los arrecifes, que se pueden comunicar brevemente antes de ir al agua.

fish, and the Long Spined Sea Urchin (Diadema Antillarum). Unfortunately, the Long Spined Sea Urchin suffered a deadly epidemic of an unknown disease in the begining of the eigh-ties. Now the parrot and surgeonfish are the only ones remaining to do this task, and they too are becoming scarce. This is unfortunate, as it has demonstrated that where there is no control of algae by herbivores the speed of the reef’s recuperation in the face of hurricanes is a lot slower. It is also vital to avoid causing additional stress to the hard coral as it already suffers from the disease known as ‘whitening’. This disease is caused mainly by the abnormal rise in water temperature which occurs every certain number of years, principally with the occurrence of events of “El Nino”. It is a physiological, non-contagious disease consistent with the loss of symbiotic microscopic algae (zooxantelas) that lives inside the coral’s fabric. Due to this situation, it is essential that divers keep as far away as possible from the coral, a fracture, injury or sediment rain can cause death to the coral, as they are left in a precarious nutritional state due to the lack of substantial nutrition that these zooxantelas offer. On occasion, it’s necessary to suspend diving in areas with a lot of ‘bleached’ coral, as they do in other islands of the Caribbean, such as Bonaire. When the coral is still in good condition, the amount of tourist diving must not be exceeded. It is internationally

Las algas son también favorecidas por la contaminación orgánica ya que ésta genera sales nutrientes que actúan como fertilizantes, de ahí que merezca traerse a colación aquí este factor de origen humano. Por eso es importante aplicar tratamientos terciarios de aguas residuales y reciclar las aguas tratadas usándolas en la jardinería, descarga de inodoros, lavandería, labores de limpieza, etc. Los tratamientos primarios (filtrados de sólidos) y secundarios (lagunas de oxidación) no eliminan las sales nutrientes. Si bien los tratamientos terciarios son más eficientes en ese sentido, tampoco eliminan los nutrientes en la magnitud que necesitan los arrecifes. Por eso se insiste en el reciclado de las aguas tratadas por esta tecnología en vez de verterlas al mar. El uso de inodoros aboneros y de humedales artificiales para tratamiento de aguas residuales es también recomendado. Por otra parte, evitar urbanizaciones hoteleras y comunales cerca de los arrecifes es una medida económica y efectiva que impide daños importantes a los arrecifes, sobre todo cuando se trata de áreas de buceo. Los dragados no solo afectan a los corales a través de la fuerte sedimentación que provocan, pues también liberan sales nutrientes y materia orgánica atrapada en los sedimentos del fondo. Por eso hay que tener mucha cautela cuando

recommended that amounts are between 4000 and 6000 visiting divers/dive points per day. This standardizing assumes that visitors have control over their own buoyancy, and that they comply with the diving rules. It also suggests that divers attain knowledge about the precautions that have to be observed in and around the reefs, which can be explained briefly before entering the water. Algae are also helped by organic pollution since salt nutrients act as fertilizer. That is why it’s important to apply tertiary treatments to residual water, recycle treated water and use it in gardens, lavatories, laundromats, etc. The primary treatments (solids filtering) and secondary (rusting lakes) do not eliminate the salt nutrients. Even though the tertiary treatments are more efficient in this sense, it doesn’t eliminate the nutrients in the magnitude that the reef needs. That’s why it is necessary that the water needs to be recycled through this technology rather than emptying it into the sea. The use of systems that transform raw sewage into fertilizer for the treatment of residual water is recommended. On the other hand, an economic and effective way to stop serious damage to the reef is to simply avoid hotels and communities that are near the reef. Dredges not only affect the coral through the heavy sedimentation that they provoke, but they also free salt nutrients and organic material trapped in the sediment at the bottom of the ocean. That’s why there has to be a lot of caution when considering carrying out vital dredges and taking the necessary measures. Land filling with earth or dry materials for the construction of infrastructures (highways, hotels, and housing) near the coast constitutes a serious threat for the reefs nearby. These fills can be heavily eroded and washed away by IN RIVIERA MAYA

La deforestación de las costas de manglar también es con toda seguridad muy peligrosa ya que quedan expuestos sus suelos que son ricos en materia orgánica y en sales nutrientes que se liberan con la acción de las mareas y las olas. Un arrecife frente a un manglar deforestado está se considera imprescindible efectuar un dragado, y tomar las medidas necesarias. Los rellenos con tierra o áridos para la construcción de infraestructura (carreteras, hoteles, urbanizaciones) cerca de las costas, constituyen una amenaza importante para los arrecifes cercanos. Estos rellenos pueden ser fuertemente erosionados y lavados por eventos extremos como los huracanes y marejadas fuertes, y luego afectar a los corales y otros organismos. Esos materiales de relleno son también ricos en sales nutrientes que favorecen al desarrollo de algas.

The deforestation of the mangrove coasts is also very dangerous as it leaves the ground, rich in organic material, exposed. When this occurs, the salt nutrients are freed by the movement of the tides and the waves. The reef, facing a deforested mangrove swamp, is without doubt condemned to its own degradation.

El Manejo Integrado Costero (MIC) es ampliamente reconocido como la base sobre las que todas las acciones de protección y uso sostenible de los arrecifes deben erigirse. Brevemente, el MIC se basa en la toma de decisiones de forma intersectorial, interdisciplinaria, transterritorial, transparente y con amplia participación de la comunidad, tomando en cuenta toda la mejor información científica y cultural disponible y en desa-rrollo. Este se aplica bajo la rectoría de una entidad con capacidad de convocatoria obligatoria e investidura legal para ejercer plenamente sus funciones de coordinación intersectorial, solución de conflictos intersectoriales y toma de decisiones en el planeamiento del desarrollo, entre otras. Si queremos arrecifes más sanos, así como un desarrollo sostenible y próspero del turismo, la pesca y de los asentamientos humanos, todas esas son medidas que entre muchas otras se deben aplicar, por el bien de la Riviera Maya, el país y la humanidad.

Integrated Coastal Management (ICM) is widely recognized as the model for all-protective action and sustainable use of the reefs. In short, ICM is known for making decisions based on scientific and cultural data that is gathered from many different areas. This process is closely governed by legal institutions to ensure its effectiveness. If we want healthier reefs full of marine life, responsible development, and flourishing tourism, the methods previously discussed must be applied for the good of the Riviera Maya, the country and all of humanity.

Women golfers from the southeast of Mexico, the United Status and other countries will gather in Cancun from June 11-13 to compete on the Elizabeth Norman Sutton ninth yearly commemorative Golf Tournament which will take place at the Hilton Cancun Golf Club.

of Elizabeth Norman Sutton, Richard D. Sutton’s wife, one of the directors of the company. Mrs. Sutton loved golf and lived in Cancun for over twenty years until she died in 1988. In her name a fund to support benefit projects in Cancun was established.

Con el paso de los años, el torneo ha crecido considerablemente y es hoy en día una de las competencias más importantes en México para damas golfistas amateur. Se juega de acuerdo con las reglas británicas Stableford.

Throughout the years the tournament has grown considerably and nowadays is one of the most important competitions in Mexico for amateur women golfers. It is played according to Stableford British rules. In addition to the competition and gathering among women golfers, the purpose of this tournament is to support groups and institutions that help those who needed the most. This year the winners of the tournament will give the Cancun’s General Hospital and the Challenge Group of Quintana Roo A. C., an association working against cancer.

On May third, 2007 The Natural Wonder Xel-Há found the perfect place to show the harmony and originality of a group of artists that included painters, dancers, musicians, singers, photographers and theater presentations that delighted the Fifth Avenue of Playa del Carmen with their art. The Natural Wonder Xel-Há offered three exciting evenings to present the outstanding art of painters such as Rodolfo Pacheco, Martha Fernández, Víctor Aburto, Alberto Sada, Enrique Sortres, as well as an authentic participation of the Dance School “Talulah”, a performance by Coco Bongo Disco, Mariachi La Parrilla, guitar player Oscar Castro and puppeteer Oscar Landeta, who all together created a marvelous show. Rafael sonríe y comenta: “La cocina es mi pasión, vengo de una familia gastronómica, es algo muy sacrificado, pero cuando tienes la pasión de cocinar, de ver salir tu plato y cuando sabes que sale bueno, no importa que sea sábado a la media noche y tú sigas trabajando”.

Rafael smiles and comments: “Cooking is my passion, I come from a gastronomic family, it is something very sacred, but when you have the passion for cooking, of seeing your dish go out and when you know that it goes out well, it’s not important that it’s midnight on a Saturday night and you keep on working”.

Así, con esa pasión y la gastronomía como eje central de su vida, Rafael Olivera, originario de Montevideo, Uruguay, cuenta con una experiencia de más de 35 años como chef de alto nivel y ha recorrido el mundo con una búsqueda insaciable de crear, de mejorar, de siempre aprender los sabores que tiene cada país para así fusionarlos y ofrecerlos dentro de un plato, en una nueva combinación artística. Rafael Olivera comenzó a recorrer Sudamérica a bordo de cruceros, haciendo una pausa en Buenos Aires, Argentina, en donde trabajó con el Chef Martín Carrera, “el mejor chef que he conocido” asegura y quien le dio la oportunidad de conocer a Gianfranco Vissani, el chef más reconocido de Italia, con quien trabajó durante 15 años y colaboró entre muchas otras cosas en el Mundial de Italia 90. So, with this passion and gastronomy as essential parts of his life, Rafael Olivera originally from Montevideo, Uruguay, counts on more than 35 years of experience as a high level chef and has covered the world with an insatiable search for creating, improving, and constantly learning about the flavors that each country has in order to fuse them together and offer them on a plate, in a new artistic combination.

En Negrosal, Rafael Olivera es socio y hace sus propias creaciones, no se apega a un solo menú, pues conforme va conociendo los ingredientes de la región, va ofreciendo nuevas combinaciones. Su especialidad es la cocina mediterránea, al respecto dice: “me gusta porque es una cocina rápida, fresca, práctica, además utiliza productos naturales y frescos, convirtiéndolo en una comida ligera, fácil de digerir.” Como ejemplos de platillos que nacen de la creatividad y la fantasía del chef de Negrosal, están: para empezar, una sopa de mariscos con lentejas y semillas de girasol o tal vez un soufflé de langosta y de plato fuerte: venado con salsa de frutas tropicales. Ante la pregunta de qué tiene que ofrecer Negrosal al público de Playa del Carmen, Rafael sonríe y res-ponde entusiasmado: “Muchas cosas, para empezar, si tú no miras el exterior, podrías estar en cualquier parte del mundo: Nueva York, París o Roma; es un restaurante a la altura de los mejores, creo que el europeo se encuentra como en su casa, por el ambiente, el servicio personalizado, la privacidad y sobre todo por el tipo de cocina que se ofrece.” Rafael Olivera concluye reafirmando su interminable necesidad de aprender y enseñar, su búsqueda continua, así como profundo interés por capacitar a su equipo para fusionar la cocina italiana y mexicana, es por eso que les dice lo que él siempre aplicó para sí mismo: “Tú para aprender no puedes exigir, al contrario, te tienen que exigir, así aprendes. Para lograr el éxito, la suerte tiene que ir ayudada de conocimientos.” Es un importante valor de éste apasionado de la cocina: la humildad para aprender y la magia para preparar deliciosos platillos que deleitan paladares noche a noche.

Rafael Olivera began traveling South America on board cruises, taking a break in Buenos Aires, Argentina, where he worked with Chef Martín Carrera, “the best chef that I have known” he assures us and who gave him the opportunity to meet Gianfranco Vissani, the most recognized chef in Italy, with whom he worked for 15 years and with whom he collaborated on the Italia ‘90 World Cup among many other things. Nevertheless, Rafael Olivera decided to look for new horizons, traveling round many countries, like Morocco, where he learned everything related to the ingredients and the cooking of the above mentioned country. Some time later he arrived in Playa Del Carmen, a paradise that ensnared him and motivated him to join with Andrea Bastogui in the concept Negrosal, a place in which the architecture, decoration, ambience and of course the food are all connected in order to achieve exclusivity. In Negrosal, Rafael Olivera is a partner and makes his own creations, not sticking to only one menu, since he knows the ingredients of the region, he offers new combinations. His specialty is Mediterranean cuisine, of which he says: “I like it because it is quick, fresh, practical cuisine, it also uses natural and fresh products, making it a light meal, easy to digest.” As examples of dishes that are born of the creativity and the fantasy of the chef of Negrosal are: to start, a seafood soup with lentils and sunflower seeds or perhaps a lobster soufflé and as a main course: deer with tropical fruits sauce. Facing the question of what Negrosal has to offer the public of Playa del Carmen, Rafael smiles and answers filled with enthusiasm: “Many things, to begin, if you don’t look at the exterior, you might be in any part of the world: New York, Paris or Rome; it is a restaurant among the best of the best, I think that the Europeans feel at home, because of the ambience, the personalized service, the privacy and especially because of the type of cuisine it offers. ” Rafael Olivera finishes by reaffirming his endless need to learn and to teach, his search continues, as well as a deep interest in qualifying his team in being able to fuse Italian and Mexican cuisine, that’s why he says to them what he has always applied to himself: “in order to learn you can’t demand, on the contrary, you have to be in demand, that’s how you learn. To achieve success, luck has to go hand in hand with knowledge. It is an important value of this food lover: the humility to learn and the magic to prepare delicious dishes that delight palates night after night.
