Directions 1 Sweat the onions in olive oil for 3 to 5 minutes. 2 Add stock and bring to a boil. 3 Add pumpkin and bring to simmer. 4 Stir in maple syrup, clove, cinnamon, cayenne pepper, salt, amaretto, and heavy cream and simmer for 10 minutes. 5 Salt and pepper to taste. 6 Ladle in warm bowls and garnish with a spoon of sour cream.
