From transforming agricultural practices to reimagining food production and ensuring food safety, the importance of foodtech cannot be overstated. By embracing technology, innovation, and collaboration, we can unlock the full potential of foodtech to create a sustainable, resilient, and inclusive food system that nourish both people and the planet.

THE PROJECT

Foodtech Innovation Network The concept behind the Foodtech Innovation Network project originated from a regional need for growth. Skåne, a region in the south of Sweden has long been a stronghold in food production due to the extensive agricultural opportunities resulting from its fertile soil along with the presence of three universities specializing in food-related studies in the region. In addition, Skåne has a strong start up environment with a diverse food culture. Hence, it was only natural for the initiative to be directed towards the food sector, aiming to develop and contribute to a more innovative and healthier food system — the food system of the future. THE PROJECT IS designed to provide assistance to small and medium-sized foodtech companies with their unique challenges and obstacles. When a company applies to become a member of the project, they are connected with a growth advisor to jointly assess whether the company would benefit from the project and if they meet the requirements for participation. Subsequently, the company’s upcoming milestones are identified, along with what is needed to achieve them. Interventions are then planned based on what the project can provide, either through in-house expertise from the project team or through external procurement. This plan is then presented to the project team, who make the final decision regarding the support.

are also held with a focus on creating new business opportunities. Networking opportunities are arranged among the member companies in order to exchange and share experiences with each other. Member companies are showcased at every possible occasion - including presentations, meetings, events and social media. All member companies are also presented on the project website which includes a marketplace where we actively attract traffic.

Meetings with experts are also conducted at a group level, where subjects or issues impacting multiple companies have been identified. These often concentrate on highly specific topics with the aim of enhancing knowledge and awareness in those areas. Matchmaking events with the public sector, established corporations, retailers and investors

Community meetings The heart of the project are the community meetings which focus on knowledge development with experts on different topics. The meetings always include devoted time for networking and knowledge sharing between member companies.

Masterclasses at LTH Faculty of Engineering Together with LTH, we arrange masterclasses on plant protein for all member companies, for example; Separation, Membrane, and Spray Drying.

Procured expertise and production facilities Tailored to the needs of the member companies, the project provide external expertise and venues for test productions and development.

Seminars Seminars are conducted, involving external experts who focus on specific topics to enhance our understanding of areas such as packaging, legislation, and health and nutrition claims.

Matchmaking events In order to increase business opportunities, we organize matchmaking events, both minor encounters and big conferences, with the public sector, established corporations, retailers and investors.

Public meals Our close collaboration with the public meal service department has made it possible for us to offer member companies the opportunity to pitch their products based on the presented needs for the future of public meal services.

Advisory board Member companies are connected with industry experts from diverse backgrounds to provide guidance and support as they progress on their respective journeys. These experts are directing the meetings towards addressing specific challenges that the members are encountering.

Individual coaching and support We offer one-on-one coaching with expertise from LTH, Packbridge and Innovation Skåne involving technical guidance, recipe development, packaging development, growth development, and team and business development.

Innovation Skåne

Packbridge

Innovation Skåne is Region Skåne’s innovation company that, together with private and public actors, guides and develops new opportunities for innovation and growth that improve both Skåne and the world. This is done in areas of innovation where Skåne has uniquely good conditions to meet global needs.

Packbridge is a member community that connects the packaging ecosystem for increased resilience and sustainable value. They are the largest packaging ecosystem cluster in Europe.

Lund University of Technology At the Department of Food Technology, research is conducted with products, processes and people in focus. Physical, chemical and process engineering aspects of industrial food production are part of this. At the Department of Chemical Engineering, research is conducted with the aim of analyzing and designing chemical processes. The research has a wide application area concerning both chemical engineering, bioengineering and biogeochemical processes.

Packbridge has members and partner organisations in business, academia and society that take part in knowledge-sharing, competence building and purposeful collaborations in areas within sustainability, digitalisation and AI, innovation and technology.

NetPort Science Park NetPort Science Park facilitates regional sustainable growth by increasing cooperation between private, public and academic sectors. This meeting place for entrepreneurs, students, researchers and investors is situated in Karlshamn in the region of Blekinge.

THE PROJECT WORDS FROM THE TEAM

Being a foodtech company can be highly demanding, and many startups face significant challenges, particularly during the acceleration phase of their growth. Our project steps in to provide valuable support during this crucial phase.

We offer practical and hands-on help to our members, enabling them to overcome obstacles, refine their strategies, and enhance their chances of success. The project also helps foodtech companies gain access to the market by providing valuable insights, industry connections, and opportunities for collaboration.

Foodtech Innovation Network contributes with customized support within all types of business operations, both in terms of knowledge and financial support. Thus putting the members and their needs in focus which I believe is unique and contributes to improving the driving force of the companies by them being encouraged and acknowledged. The network itself also helps the members get inspired and find new collaboration partners between them.

The project is needed because there is no other organization or project that both individualizes and provides the support needed for the companies to take them through their specific challenges without generalizing the solutions.

Collaborating with various partners, experts, and stakeholders is vital to create a thriving ecosystem that fosters innovation and growth within the foodtech industry. Networking and the community plays a crucial role in creating opportunities, sharing knowledge, and fostering a supportive environment for foodtech companies.

I have got an insight into what type of challenges that are occurring depending on the product, and the background knowledge and contact networks of the entrepreneur as well as the wide spread of different food products being in the entry phase of the food market.

Seeing the positive impact on the participating companies’ growth and witnessing the connections and collaborations that emerged from the project has been amazing. It reaffirms our commitment to supporting foodtech innovation and makes us proud of the positive change we are fostering in the industry.

I´m especially proud of being a part of a great project team that has been able to complete each other’s strengths in an efficient way and work towards the same goals helping and supporting our member companies with a huge spread of issues resulting in improved development and growth of the companies.

The project has in a short time built a substantial community of SMEs that’s not only interacting with the project but also with each other, helping each other and using the collective knowledge. The project has solidified into a platform that’s grown outside the original framework and scope of the project, with a strong brand and great reputation in the food scene. This creates great possibilities for building a larger project with an even stronger value proposition to the food SMEs.

The project partners represent very strong and valuable expertise from the whole food value chain which with their networks and specific expertise has helped create fast tracks to market for the SMEs, saving time, effort, money and more. The project structure of granting support in steps is very effective to take the SMEs to the next level, which is very relevant to their business and creates great value for money regarding the project’s budget. The food landscape can be brutal, very competitive and complex. Many great SMEs and ideas are unable to reach their full potential due to the complexity and resources needed to reach market implementation. Having access to a community of SMEs and expertise that help visualize how the food value chain works and build a road map of which steps help SMEs get to the next step on the ladder towards market implementation, and then also get funding and support from experts to take these steps until the SMEs ready to run on their own, is very valuable and effective. It builds stronger and more competitive companies and a broader scope of innovative food products for consumers.

Foodtech Innovation Network contributed with knowledge and experience to overcome challenges that SMEs face within the food industry. Furthermore, during the three courses provided by Lund University, we educated the SMEs with relevant industrial knowledge on key units of operation in the food industry namely, membrane separation, centrifugal separation, spray drying and extrusion.

The project was needed to accelerate the development of products of SMEs and thus reducing their time to market. The key was easy and fast plus highly skilled support to overcome some of the daily and urgent challenges of SMEs. I learnt a lot of separation processes—apart from membranes—and it was very interesting to discuss with the processes of the SMEs. I was very happy about the separation courses and the involvement of industry in the courses.

Drinkable food waste for the future Based in Malmö, Sweden, Simply No Waste reduces food waste by optimising the use of brilliant, overlooked natural micronutrients and nutraceuticals from food waste streams using modern extraction technologies. They have developed a drink made from overlooked byproducts of avocado.

How does your product contribute to the food systems of the future?

Individual support

Climate change is undeniably one of the biggest crises of our time and there are several solutions that have been proposed by experts to overcome this challenge based on UNSDG-2030. Two of these solutions are to reduce food waste and improve our diet toward more nutritious and sustainable dietary patterns. Simply No Waste aims to retrieve natural micronutrients and bioactive compounds that are being considered food waste and put them back into the food system. This has a proven success in our current product.

How has Foodtech Innovation Network helped you on your journey? The project has given us the opportunity to test, verify, pivot, and promote our project. It has given us the possibility to have access to experts and the support to test and create our MVH and verify the market, and most importantly helped us promote our start-up through their events and seminars.

We harvest our fish with tractors in the fields, not with nets in the ocean. Most people are aware that fish stocks are rapidly depleting, and within our generation we must change our seafood consumption habits. We have created our products that give the same gastronomical sensation as eating real fish. We add omega-3 oil, proteins and vitamins into our products and therefore we can offer a complete nutritional plant based option for those who want to make a sustainable purchasing choice.

What is your next step? The next step for us is entry into Swedish retail. We have worked with a marketing and branding company and will be rolling out a brand new image and concept for the brand. Food service sales are the focus also — currently we sell to around 5-6 schools, but we aim to increase that to 40-50 or more for 2024.

Giving forward and giving back By combining the properties of Swedish oats and the healthy benefits of the African baobab fruit, ARWA Foodtech has developed a range of nutritious and tasty drinks and sauces while also contributing to and sharing their know-how with the communities where their baobab is grown.

How does your product contribute to the food systems of the future? Our company specialises in developing novel food products with health promoting properties. Our mission is to create nutritious and health promoting products from the baobab fruit, as well as giving back knowhow to the baobab countries of origin. “Giving Forward & Giving Back” is our motto. Our products are vegan diet adapted and offer tasty and healthy plantbased shakes, high protein fiber snacks, and savory sauces that boost iron intake. It is an excellent source of other essential nutrients: omega-3 fatty acids, calcium, magnesium, and potassium. We also contribute to a circular value chain by valorising our by-products. We are committed to green tech since we have health and sustainability in focus. For me personally, as well as my team, we aim to contribute to a more sustainable food system for sustainable health using science and technology as a tool.

We gathered the industry to create the food system of the future Foodtech Forum, by Foodtech Innovation Network, gathered 400 attendees – indicating the great need to increase the power of foodtech and innovation to create the food system of the future. The Forum resulted in several concrete connections and discussions on new business opportunities, and actions on how to push the food system towards a more sustainable food consumption. SKÅNE HAS BECOME a hub for innovative companies working to create a sustainable and healthy food system. The startups are leading the way with new and alternative paths for a more efficient global food system. That is why Foodtech Innovation Network created the Foodtech Forum – to accelerate the pace, promote collaboration and highlight innovative solutions. It was an opportunity to come together and taste the most recent products on the market, learn about the latest developments in foodtech, discuss the future of food, and network with like-minded professionals. Attendees at the event included leading professionals in the industry and public sector, startups and established companies, investors, retailers, and experts in food science and technology.

The stage program was divided into three panel discussions on investments, public meals, and sales channels. The first panel included investors Erika Hombert from Hack Capital, Eric-Alan Rapp from Re:food, Daniel Skaven Ruben Angel Investor Foodtech and Hampus Jakobsson from Pale Blue Dot. They discussed trends, needs and the future of foodtech investments but also why Skåne startups are at the forefront of foodtech innovations.

The second panel included Eva Kvanta, Editor in chief at Magasin Måltid, Helena Rappe, Area manager Foodservice at Region Skåne, David Gustavsson, School chef of the year 2021 and Jenny Håkansson, Head of meal, health and care administration at Helsingborg Stad. Together they highlighted the impact new foodtech products have on public meals and what can be done to increase the range of local products to benefit the environment, society and its residents. The final panel included Sara Maxence, Future Foodsystem Avocate, Peter Ferngård, Strategic Purchaser at Sorundahallarna and Rickard Sandahl, Founder and CEO of Mylla. The discussion revolved around new innovative channels and opportunities to go to market, how to scale as a startup and how the market will develop in the future in terms of new products and reaching the consumer.

ACTIVITIES & EVENTS ICA MEET UP

Collaboration paves the way for the future Foodtech Innovation Network has collaborated with different retailers throughout the years, offering in-depth seminars and several matchmaking events. One of them was hosted together with ICA and the Federation of Swedish Farmers (Lantbrukarnas Riksförbund) in order to support innovative solutions and local suppliers in Skåne. OVER 100 RETAILERS and employees from local ICA stores, along with representatives from ICA Sweden, gathered in Malmö to explore the latest trends in food innovation. About 40 local startups and food entrepreneurs showcased their products and solutions to the attendees. – My absolute hope is that future food consumption looks exactly like what we see here today. That we witness new products challenging those currently on the shelves. That we have new solutions, new innovative products, and alternatives that are better for the planet, humanity, and our health, says Malin Komaiszko, Foodtech Innovation Network.

– For us at Yelte, the event was a great opportunity to meet decision-makers who might be challenging to reach under normal circumstances. Also, to receive feedback that is incredibly valuable. You can always test with friends and family, but getting an unfiltered spontaneous reaction from someone who is a purchasing manager or product developer is immensely valuable for us, says Peter Andersson, CEO, Yelte.

The objective of the event was to make new products accessible to retailers and, subsequently, to the end consumer. This aims to simplify and facilitate the transition to a sustainable food system of the future. – I believe it is our duty and obligation to be here and stand up for the Swedish green industry and make a real difference. Above all, to provide a marketplace for them in our stores, says Stefan Wieloch, ICA Kvantum Eslöv. One of the startups present was Yelte, a member of the Foodtech Innovation Network. They produce hemp milk that fulfil the needs of those seeking a highnutrient and sustainable product.

JOBS ARE CREATED, and new sustainable food is on the market. The Foodtech Innovation Network project plays an important role in this development and showcases a positive impact on the foodtech scene in Sweden. I say this from the perspective of the external evaluator of this project. Being an evaluator means acting as a sounding board to the project managers, following up on the project’s proceedings, and not the least supporting knowledge transfer between different projects. I have hence had the pleasure of following their journey from day one.

My main take away from their journey is that the network and the start-up support provided in the project clearly fills a gap in the innovation system. The large interest in the start-up community shows that the project meets a real need among foodtech companies.

I also want to highlight all the positive feedback the project has received from the companies in the network. Interviews and surveys among the network members show how the support from the team has helped many companies along their growth journey and given them contacts and opportunities that they would not have had otherwise.

Part of the secret sauce seems to be the project management’s exceptional skill in finding a balance between structure and flexibility. Structured in terms of administration, project meetings and coherent and professional communication. Flexible in terms of quickly adapting to the needs of the network members. The project management has put pride in creating a model where the companies constitute the core and

Foodtech Innovation Network’s focus on new and sustainable food products and services is also very timely. It fits well into other trends in our society such as increasing focus on healthy food and low environmental impact from food production and consumption.

From my perspective, this is an important contribution as healthy, sustainable and locally produced products are important aspects of a resilient and prosperous region.
